Ingredients:

HOPE'S KITCHEN

Extra virgin olive oil

3 zucchini, cut lengthwise into ¼ inch slices

1 eggplant, cut lengthwise into ¼ inch slices

3 medium red peppers, cut into quarters, cored, and seeded Kosher salt and freshly ground black pepper

¾ c. mayonnaise

2 cloves garlic, minced

1 ½ tsp. sweet paprika

2 to 3 Tbsp. sriracha or harissa

12 slices of rustic, coarse-textured bread

Directions:

Make the aioli by combining mayonnaise, garlic, paprika, and sriracha (or harissa) in a bowl. Set aside.

Heat griddle over stove or outdoor grill to medium-high heat

Brush vegetable slices with olive oil. Season with kosher salt and pepper. Place vegetables on griddle or grill and cook on both sides until tender and charred. Remove eggplant and zucchini from grill and set aside. Remove red peppers from the grill and place in a zip-lock bag, seal, let rest for about 10 minutes, then remove skin

Brush bread slices with olive oil. Toast both sides on griddle or grill.

Assemble sandwiches and enjoy!
