Making the most of

OUTDOOR DINING AREAS

We’ve put together some key points to consider when planning outdoor dining and seating.

VISUAL APPEAL

A street frontage outdoor dining area is your best chance to captivate and entice passers by. If you have pavement and front end outdoor dining, does it reflect your brand and your story? Or if it’s out the back, are you blessed with natural landscapes to showcase, or do you need to create an area with interest and appeal? Always consider what the attraction is for each of your customers when laying out dining zones.

ATMOSPHERE AND COMFORT

Outdoor dining zones still need to address the key points of diner comfort – temperature, acoustics, ambience. Find a way to create intimate areas and group zones within your outdoor setup to keep everyone happy. Is there enough shade or is there too much? What is needed to allow it to easily transform to accommodate breakfast, lunch and dinner services? Perhaps heating might

be a consideration, or the addition of blankets and throws is a clever way to increase appeal and add warmth and character.

LAYOUT

Think about customer flow from front of house, seating and eating through to

payment and leaving. Also think about lines of sight for your staff, and service routes, can they efficiently and seamlessly reach all tables?

PRACTICALITY

Consider how much time your staff spend setting up and packing down your

outdoor dining – are there efficiencies to be made? Furniture needs to be durable and heavy enough to withstand weather and guests. Castor wheels are a great option to roll heavy tables and leaners in and out easily. Or do you have the ability to install your furniture permanently?

Built in outdoor booth seating is a real winner if you have the capacity for it, with removable squabs for easy pack up at the end of the day. A great way to bring warmth, softness and comfort into these outdoor areas.

OUTDOOR BANQUETTE SEATING

THE PERFECT SHADEThere’s Magic in

Kiwis and visitors alike love to spend the summer months in New Zealand outdoors where the sun can be relentless. With UV levels at an all time high, and borders open once again, creating a place for people to enjoy the sunshine from the safety and comfort of the shade is important.

Initially, the market for exterior sun protection was limited to umbrellas and fixed sun shades, but SunCraft saw an opportunity to help Kiwis optimise suntrap areas and fully make of use sun-bathed spaces using the Soliday retractable shade system.

Based in Austria, Soliday is one of the leading manufacturers of sophisticated manually and automatically retractable shade systems. Leveraging in-depth product knowledge, SunCraft, NZ Ltd. was created and is the exclusive distributor for Soliday products in the Oceania region.

SPOILT FOR CHOICE

When you select a Soliday shade sail from SunCraft, the options are almost limitless. Every installation is individually designed and fully customisable, so you have multiple choices – do you prefer manual or motorised opening and closing? Which style of shade best fits your location? What shape and colour of mast do you want? Would you like a rectangular or triangular sail? What kind of fabric suits you best? How many degrees should it be tilted? Are you looking for moderate or maximum UV protection? And of course, you can pick your favourite from a large palette of colours.

ENGINEERED FOR ALL WEATHER

The European-made retractable shades offer protection from direct sunlight and light rain, extending usable space outdoors while preserving an open-air ambience. SunCraft products are among the best and most versatile in the market, capable of standing up to the sometimes-harsh elements in New Zealand and Australia.

The combination of contemporary design, craftsmanship, and advanced technology makes them well suited to commercial premises. Derived from sailing technology, they are reliable, strong and hard-wearing. The fabric used is flexible, resistant to tearing under tension, and can be made water repellent or waterproof.

The masts (pylons) and ropes supporting the sail are constructed of durable materials with a high load-bearing capacity.

TRANSFORMING COMMERCIAL SPACES

‘Tis the season for guests to want to spend their days and nights outdoors. If you prefer to take it easy, motorised shade sails can be opened or closed with the press of a wall switch or the click of a remote control – or even through your phone.

On top of ease of operation, these models offer sophisticated optional features such as automatic adjustment based on sun and wind sensors. You can even set it to open automatically when the sun comes out so you can relax and concentrate on your guests.

The manual option is ideal for those who like to keep things simple, or who are on a tighter budget.

Engineered to extend and retract smoothly even at the largest sizes, our manually retractable shade sails come with auto-release as a standard safety feature. These shades allow fine adjustment of the exposed sail area, while some models also allow height adjustment. Choose a manual shade if you prefer a hands-on approach to life.

A SUN SOLUTION MADE SIMPLE

Each SunCraft system is designed and manufactured specifically for each individual and can be tailored to your space and design style. A price estimation is generated from the initial design concept and the finalisation of the design process can begin. Once your order is placed, the installation time is usually within 4-6 weeks.

SunCraft is proud to service the whole of New Zealand, and although based in Arrowtown, the team make regular trips throughout New Zealand and would be more than happy to stop by your business.

Whatever you are looking for in a sunshade, SunCraft can match your preferences and help you choose the right solution to turn any outdoor space from an suntrap to a haven. And whatever your choice, SunCraft’s experienced team will make sure it is installed to perfection.

Stephen Gould

With the recent discovery that his great-grandfather was a hotel waiter in London in the early 1920s, it seems hospitality runs in the blood of Stephen Gould.

Like many, he fell into hospitality and was instantly hooked by the positive energy and endless possibilities. Now, he is the Cluster General Manager of two of the best luxury properties in New Zealand—SO/ Auckland and Sofitel Auckland Viaduct Harbour.

As the Cluster General Manager, Gould's role is to drive the commercial performance of the hotels, support all team members in their roles and deliver exceptional guest experiences aligned with their brand promise.

Prior to this role, he served as the General Manager at Sofitel Wellington and boasts a wealth of industry experience, including senior leadership positions at Shangri-La, Conrad, Sofitel, and SO/ brands in Thailand and Fiji.

Located in the heart of Auckland in downtown Britomart, SO/ Auckland is a luxury lifestyle hotel, a new concept

in New Zealand that distinguishes it from existing hotels in the competitive hospitality landscape

"More and more lifestyle hotels are coming on the scene, but achieving this at the luxury level and collaborating with award-winning designers and fashion icons is still extremely rare."

Over the years, luxury travel has become accessible to larger groups of travellers. With this, the demand for unique, memorable and personalised experiences has grown.

"Travellers are now looking for boutique hotels that can connect with them, tailoring the experience to their preferences," said Gould. "The increase in social media usage also means that these great hotel moments can reach wider audiences than ever before, which is ideal for hotels like SO/ Auckland, which is an Instagram users paradise."

Sofitel Auckland Viaduct Harbour's

point of difference is its long history of delivering French luxury, where guests are encouraged to 'Live the French Way' with an array of sophisticated and lively offerings.

As businesses navigate a COVID-19 pandemic-fuelled society, there has been a need for fewer specialists and more generalists to adapt to the changing demands.

At SO/ Auckland and Sofitel Auckland Viaduct Harbour, they have heavily prioritised cross-training and multiskilling in their teams. According to Gould, this has led to faster responses to guest requests and a more motivated team with broader career development.

The hotel industry is ever-changing as technology and consumer trends shift. With future guests in mind, both hotels are always on their toes, tweaking their product and service offering to guarantee guests the best service. l

Take Guests

BEYOND THE BOUNDARIES OF THEIR STAY

Gone are the days of asking the concierge for a dinner recommendation and simply ticking off boxes on a travel bucket list. Today's travellers are now seeking unique and authentic adventures off the beaten path.

Experiential travel is the buzzword right now. As globetrotters shift their interest to new destinations and activities, from bicycling to surfing to skiing, they are now actively exploring to create unforgettable memories and experience more that a destination has to offer other than just its tourist attractions.

With the competitive landscape for existing hotels more intense than ever, accommodations must constantly innovate to stay ahead of the curve to attract and retain guests.

Following the tough lockdowns of the past years imposed by COVID-19 restrictions, the tourism and travel industry is returning in full swing.

Giving travellers the freedom to explore the locale and curate their own experiences has a proven record of making stays more memorable and meaningful. l

YOUR REVENUE STREAMSDiversify

As hoteliers, you must be ready to capitalise on this surging appetite for adventure, and there is no reason why hotels should limit themselves to only offering room bookings.

Hotels can diversify their revenue streams by offering equipment for hire, such as bicycles, kayaks, skis, surfboards, and more, that guests can find directly at the foot of their beds. This allows them to embark on their day-to-day journeys without having to waste time and effort going through a rental agency.

Many hotels provide unique rental experiences. Let's look at how they attract today's travellers and new sources of revenue.

Kim Aliu

As a child, Kim Aliu was always the kid who owned the café when playing shops.

With a burgeoning passion for the hospitality scene, she worked her first industry job at age 13 in the Otautau Hotel pub, which she now owns with her husband.

Since 2017, Aliu has been the proud co-director and kitchen manager of The Otautau Hotel, a newly renovated country accommodation located in the heart of Western Southland, surrounded by beautiful rivers, mountains and native bush.

"It's great here because I always strive to improve and learn more. I love change and want to keep trying to be the best we can be!"

Otautau Hotel's point of difference is its food and service, with a change in the menu twice a year for summer and winter and a good selection of daily specials.

With an extensive menu, its old country pub greets every person who walks through the door as if they were locals with a friendly and welcoming atmosphere.

In the wake of the pandemic, the hotel's business model has undergone a few changes.

"We are trying to be more efficient and make a few changes that will make the

load easier for everyone as we struggle to fill a few gaps staffing-wise."

Due to the staffing shortage, the current focus for Otautau Hotel is to get through the summer, as Aliu and her husband plan to work long hours to cover some of these gaps.

In the dynamic landscape of the hospitality industry, it is essential always to be ready to change and adapt to move forward.

"My motto at the moment is: if you always do what you always did, then you'll always get what you always got." l

ROBOTS RISE TO THE CHALLENGE and don’t need breaks or pay rises

With a bold vision to enhance the service industry, G Robotics was formed out of necessity at the height of Covid lockdowns. The company recognised that many mundane and time-consuming tasks could be automated, increasing productivity by freeing up valuable staff to focus on more important aspects of a business.

Even before the global Covid-19 pandemic, there was talk of robots entering the hospitality industry. They save money and human resources, make fewer mistakes, reduce food waste, work 24/7 without a raise, and are becoming more and more popular around the globe.

Adopting technology like robots isn’t meant to replace humans, instead employers should see these as digital tools to make jobs more satisfying. Plus, they draw curious customers to your business.

CASH IN ON THE NOVELTY BEFORE IT BECOMES THE NORM!

The question you should be asking is not why buy a robot, but why not? In the right context these robots are the perfect employee companion.

• Wage Saving

No minimum wage increases to deal with when you hire BellaBot. At $46.49 per day on a 24-month lease to own, Bellabot’s hourly wage is less that $6 for an eight-hour shift!

No Breaks or Sick Leave

You never have to worry about BellaBot calling in sick. When fully charged the robot can work for 12 – 24 hours. The removable interchangeable battery allows it to work 24 hours+ without stopping and BellaBot is ready to serve guests with a smile and wink when charged up from 20 percent to full battery in a mere 4-5 hours.

• Customer Experience

BellaBot is a particular draw card for customers. Perfect for greeting visitors at the door or delivering room service so that other staff can concentrate on more important tasks. Guests will be begging to be served by a BellaBot.

• Smart Tech

In pursuit of higher safety, BellaBot is equipped with 3D sensors and a new modular chassis. It can stop at any angle and move away as soon as it encounters obstacles. This is one worker that won’t bump into you.

Try Before You Buy

The team at G Robotics assess an establishment to see if BellaBot is the right fit or if one of its other robot friends may be better. After a demonstration, Bellabot can be signed up for a trial and be put to the test

while the staff get to learn the easy settings.

“All businesses that employ our Robots are extremely happy and now say they couldn’t operate efficiently without them. We have reports that customers are requesting to be served by the robots, interact with them, and ask what nights they are working,” noted William Maile from G Robotics.

The future of service is here, don’t miss the boat.

the next generation of secure Video conferencing and event software, and the Bluejeans studio bringing powerful production tools with the ability to easily create stunning, TV-quality live streams that can engage your audience and elevate your brand.”

He continued "our new range of digital meeting technologies opens up the world for any NZ business and a core locational use of that technology is in Hotels.” Implementing MICE customised technology services into a hotel infrastructure is a way of securing long term valuable growth and market share.

The latest Convention Industry Council report claimed that 85% of meetings in the U.S. are conducted at venues with lodging, generating more than 275 million room nights annually. The expenditure of MICE travellers is much higher than leisure travellers. According to Cvent, depending on a

hotel’s set-up, MICE can generate over 50 percent of a property’s revenue. If you are in this space it is not to be ignored. With new convention centres set to open in Wellington and Christchurch this sector is positioned for exciting growth.

In the past, most of these event types were held in person. In recent years, the trend of moving smaller gatherings to virtual spaces was on the rise. However, demand for hybrid and virtual events have skyrocketed due to COVID-19, impacting the MICE industry.

Since the pandemic began, MICE and Event planners have become more technological and virtually oriented. Not only will in-person events incorporate a virtual element, but you will also need to consider technologies that reduce face-toface contact and increase guest safety.

reach and bring attendees together from all over the world. In a Post Pandemic world, this sort of event is set to become all the more critical. With the emergence of 5G and other technologies, your digital infrastructure needs to be topof-the-line, robust and able to adapt to customer requirements. Video Conferencing platforms like Bluejeans from Verizon can have up to 150,000 delegates participating in an event. This requires screens, microphones, cameras and an entire range of technology options.

The Smart Digital Lectern is at the centre of that, alongs platforms with improved security protocols.

Virtual and in-person are about to meet in the middle. Before the pandemic, hybrid events were a way to increase

Mr. Butterworth said “we are lucky that our Partners like MAXHUB, Bluejeans by Verizon and Video Window are world leaders and have pioneered these new solutions worldwide. You will see this technology in use at a MICE hosting hotel near you soon.”

Sarah Hedger

Originally from California, Hedger was always fascinated with granola and the idea for YUM came about while she was working as a chef at a lodge in Wanaka and couldn’t find a cereal that tasted fresh.

“As a chef, it was also important to make a solution for our kitchen that still tasted home-made.”

In the current climate of labour shortages and rising costs, YUM Granola is the answer to the question, How can

I save time as a chef, and still offer my customers something that is not only satisfying, but also tastes scratch-made?

Yum Granola caters to a whole range of dietary needs, something that is important to consumers who are shifting their mind-set when it comes to what they choose to eat.

“I am one of those people who gets tummy aches from most things wheat/ gluten, so I wanted a solution that had only the good stuff, to fuel my brain and body, minus tummy pains, which meant no grains so it is easier for everyone to digest.”

All YUM breakys are gluten and grainfree, with options that cater to low carb and vegan dietary requirements. YUM uses premium, organic ingredients to craft its nutritious and tasty breakys with a unique macronutrient profile that offers whole food sustenance.

LOCALLY OWNED, LOCALLY GROWN

From the early YUM days, the brand has used organic ingredients as it maximises flavour and nutrients, while minimising environmental impact, meaning there are no pesticides, preservatives, or sulfites in any of their products.

“It is undoubtedly more expensive to

make, but this is a cost we see as one we have to take on board in order to be better stewards to our planet,” explained Hedger.

“We also prioritise locally grown New Zealand ingredients as we want Yum to taste like New Zealand, whilst supporting local farmers. They have also travelled the least, which equates to less CO2, less fossil fuel being burnt in transport as well as a fresher ingredient.”

Hedger and the team source over 17 delicious, local ingredients from Aotearoa including West Coast and Manuka Honey produced by amazing bees and harvested by Nelson Honey just over the hill from Yum HQ, blackcurrants grown organically by Viberi in Timaru, linseed grown organically by Functional Wholefoods in Geraldine, and macadamias grown organically by Top Notch in Patetonga to to name a few.

YUM offers bulk solutions for all foodservice needs and can supply 1 kg compostable bags, 4 kg bags and even in 8 kg pails if you are motoring through.

CATERING FOR THE HEALTH CONSCIOUS AND GRAZING TRAVELLER

YUM NZ isn’t just for breakfast, it’s also perfect for an on-the-go snack –think a granola bar but without all the

sugar that normally holds one together. In the aftermath of the pandemic, health and wellness are still topping consumer trends. According to Ingredion, 42 percent of consumers want to reduce the amount of sugar they consume in their diet.

Indulgence has taken on the new definition of ‘Self-Care’. Where indulgence once was considered the simple act of pleasure-seeking, in 2022 indulgence means that consumers are looking for ways to indulge purposefully, and what better way to start the day than with an indulgent, yet health forward breakfast and snacking.

It’s also evident that consumers are becoming less concentrated on three

large meals a day, and instead choosing products that more closely fit an active or on-the-go lifestyle.

YUM offers a number of their craft granolas in 50g single serve compostable packs. A perfect solution for accommodation mini bars, or as grab and go snacks.

A POSITIVE IMPACT ON THE PLANET

Yum was founded on two goals, to produce the best quality, delicious, breaky ever, and to do it while making a positive impact on the planet. Hedger and the team at Yum are thrilled to have shifted their range of breakys into innovative earth friendly, home compostable, recyclable packaging.

This means 87 percent of all Yum sold is now in plant based, compostable packaging. The other 13 percent will be phased out by the end of 2022, resulting in 100 percent earth friendly packaging.

“Even though we are a smaller company, this change alone will prevent over 2 tonnes of non-degradable plastic packaging from heading to the dump

every year.”

YUM has also achieved Climate Positive Business Operations certification with Ekos, measuring and offsetting 120 percent of its carbon footprint with certified carbon credits. These certified carbon credits are sourced from projects that grow and protect indigenous forests in New Zealand and the Pacific Islands, while helping to deliver climate resilience, waterways protection, erosion control, biodiversity conservation and community economic development.

“We are continually seeking ways to make Yum better— better for the people that eat it, better for our community and better for our environment.”

At the end of the day, YUM Granola is just that, yum! A simple concept of creating a wholesome and delicious cereal has turned into the perfect kitchen and snacking solution.

“Life is made up of choices and we have chosen a life full of YUM goodness. It makes us happy because it makes others happy, and this is a damn good thing.”

STAAH PARTNERSHIP OPENS NEW DOORS FOR PROPERTY OWNERS WITH RENTHIA

Long-stay booking platform, Renthia and STAAH have announced a partnership that will help property owners elevate their distribution strategy by improving their reach to long-term tenants via the STAAH channel manager.

The partnership is enabled via a seamless API connection between the two platforms to synchronize and distribute content, rates, and availability in real time via STAAH’s cloud-based technology.

Discussing the motivation behind the partnership, Karzan, CMO at Renthia said that travel and relocation trends have evolved greatly, particularly post the peak of the Covid-19 pandemic, with expatriates relocating for longer stays, as well as travellers looking for oncein-a-lifetime and longer holidays. This corresponds to long-stay accommodation, which is rising.

“Our partnership with STAAH enables more expatriates and long-stay travellers to find a suitable place from Renthia’s growing base of property listings,” added Karzan.

Renthia is a long stay booking platform

offering the opportunity to increase occupancy up to 100 percent. Renthia’s solution helps in reducing the number of vacant units by providing property managers and -owners with verified longterm tenants. The minimum stay of a Renthia guest is three months. Moreover, all monthly payments are also securely handled through the platform. Up to 95 percent of guests using Renthia are expatriates or professionals relocating abroad for work.

“Renthia is a classic example of a forward-looking enterprise with a high growth in long-term rentals,” said Tarun Joukani, Commercial Director of STAAH.

“We are delighted to offer Renthia an integration to our advanced distribution technology to achieve their commercial goals.”
