Good food does so much more than nourish and fuel our bodies. It satisfies and comforts. Food can be nostalgic, certain aromas triggering memories long forgotten from childhood. It can be eye-opening, new and different flavor combinations so foreign our taste buds don’t know what to make of it: salty, sweet, bitter, tart… The combinations are endless and reflective of their geographic location in the world. Food is an experience for the senses and it can take us places we may not have the opportunity to travel to. Most importantly however, food – and the act of preparing and eating it – brings us together in the most delicious of ways. In a time when so many of us are at home and perhaps cooking more often than we normally would, we reached out to our agents and staff members to hear about their favorite dishes. We wanted to know what recipes bring your families to the table so we could compile them into a recipe book to share. From banana bread to persimmon salad, and Korean bibimbap to Israeli hummus, we’ve got you covered with something for everyone… we even included a drinks section with smoothies, cocktails and mocktails. So break out the cutting board, pull up some chairs to the table, and dive in! Save the take-out for another night and create something delicious with your family and loved ones. Heat olive oil in a large soup pot or dutch oven over medium heat. Add onion, cook for a few minutes, then add carrot and celery and cook until onion is translucent and veggies are softened. Add rice and stir for 30 seconds until all mixed together. Add 4 cups of the homemade chicken stock, bring to a boil, reduce heat to low and simmer for 15 minutes or until rice is cooked. Meanwhile, beat the eggs in a small bowl and add lemon juice. Once the rice is cooked, add the shredded chicken to the pot. Add one ladle of soup broth to the egg/lemon mixture and stir. Pour egg mixture into soup and mix thoroughly, the soup will start to thicken. Season with salt and pepper. Top with fresh thyme and a little freshly grated parm. Serve with crusty bread.

Throw everything in your electric pressure cooker, preferably in a steamer basket attachment, starting with the carcass first. Top with cold water just below the max fill line. Pressure cook for 1-2 hours, let release naturally, then strain with a mesh strainer to a separate bowl.

Preheat oven to 350°. Turn Instant Pot to the Sauté setting and heat oil. When oil is shimmering, add bell peppers and onion. Cook, stirring occasionally, until vegetables are starting to soften, about 5 minutes. Stir in garlic, oregano, cumin, and chili powder. Season chicken generously with salt and pepper then add to Instant Pot. Add remaining soup ingredients and close lid. Set Instant Pot to the ‘Soup’ setting and set timer for 7 minutes. Meanwhile, on a large baking sheet, toss tortilla strips with oil and a pinch of salt. Bake until golden, about 20 minutes. When cooking is complete and air has been naturally released from Instant Pot, carefully remove lid and use tongs to remove chicken breasts onto a plate or cutting board. Using two forks, shred chicken. Stir chicken and cilantro into soup. Season with salt and pepper, to taste. Garnish soup with tortilla strips, avocado, and cheese to serve.

Gently toss the tomatoes with 1/4 cup olive oil and layer on the prepared baking sheet in a single layer. Sprinkle with salt and pepper, to taste. Roast for 45 minutes. In a large dutch oven, heat olive oil and butter over medium heat. Add the onions, garlic, red pepper flakes, and a pinch of salt. Sauté until onions are translucent and start to brown, about 10 minutes.

Add the canned tomatoes, basil, thyme, roasted tomatoes, including the juices, and chicken stock. Season with salt and pepper, to taste. Bring the soup back to a simmer and cook for 40 minutes, uncovered.

Transfer the soup to a blender and puree until smooth. Add salt and pepper to taste. Top with a drizzle of cream or dollop of sour cream, fresh Parmesan. If possible, get day old bread from your favorite local bakery and make your own croutons.

Preheat oven to 400°. Rinse and thoroughly dry chickpeas with a hand towel. Lightly spray a baking sheet with non-stick spray or a thin, even layer of olive oil.

Bake dried chickpeas in the preheated oven on the prepared baking sheet for 15 minutes.

½ tsp. paprika ½ tsp. garlic powder ½ tsp. onion powder ½ tsp. ground coriander

*(this is the dry bake - do not add any of your other ingredients yet!)

In a small bowl, mix together your spices, salt, pepper and sugar (if using).

After 15 minutes, remove the chickpeas from the oven and carefully pour into a heat-safe bowl. Drizzle 1/2-1 tbsp. olive oil over them, tossing until evenly coated. If necessary, slowly add more olive oil until all the chickpeas are lightly coated*. Add your spice blend and toss until evenly coated.

½ tsp. curry powder ¼ tsp. sugar (optional but will help add depth of flavor)

*(you want just enough for the spices to stick - don’t drench them!)

Add chickpeas back to the baking sheet and bake at 400° for 10 more minutes, then stir/shake pan. Return the seasoned chickpeas to the oven and bake for an additional 5-10 minutes, checking after 5, until desired crispiness is achieved. The chickpeas will be lightly golden brown. DO NOT OVERBAKE.

Turn off oven and crack the door - let chickpeas cool in the oven to ensure maximum crispiness.

In a large bowl, combine 8 cups cold water with 2 tbsp. salt. Add dried chickpeas and let soak for at least 12 hours, or overnight.

In a large pot over high heat, bring 10 cups water and 1/2 tsp. baking soda to a boil. Drain the soaked chickpeas, discarding the soaking water, and add them to the pot. Return to a boil, reduce heat to medium and cook until the skins are falling off and the chickpeas are very tender, about 45-50 minutes.

*Depending on the size of your chickpeas, you may need to boil for an additional 10-15 minutes longer to reach this point.

*Be sure to do this while the chickpeas are still hot from the boiling water - this will ensure a lighter, smoother end result. Cold chickpeas will form a gluey and thick paste.

Stop the processor and add the tahini. Continue to process until the mixture has lightened and is very smooth, about 1 minute. Use a rubber spatula to scrape down the sides and bottom of the processor bowl.

With the machine running, add 3/4 cup of the cooking liquid along with the lemon juice. (You may need more liquid if the hummus is too thick add the extra 1/4 cup cooking liquid to reach desired consistency.) Process until combined. Taste and season with salt if needed.

Transfer hummus to a shallow serving bowl and garnish with olive oil, parsley, paprika or cumin. Serve warm. Enjoy with pita, crackers or fresh veggies!

FOR THE GARNISH:

1-2 tbsp. extra virgin olive oil chopped fresh parsley paprika/cumin

Once cooked, strain the chickpeas reserving 1 cup of the cooking water. While still hot, transfer the drained chickpeas to a food processor, add 1 tsp. salt and process for 3 minutes.

*To re-warm hummus, gently heat in a microwave-safe bowl, thinning with warm water as needed if too thick. Do not overheat! Your hummus will dry out and become crumbly if it gets too hot.

Pour yourself a nice glass of wine. Dice all of the vegetables as small as you can. You can use a Cuisanart to if desired to get it to a nice paste. Heat olive oil in a deep pan on medium to medium high heat. The pan has to be deep enough to hold 3 pounds of meat. “Everybody in the pool” - Cook the onions, carrots and celery until they are nice and soft. About 15-20 minutes. Season generously with salt. Stir frequently until nice and brown. Now add and brown the meat. Season generously with salt and cook for 15-20 minutes. Now add the tomato paste. Mix well - cook for 4-5 minutes. Pour another glass of wine. Now add an entire bottle of red wine. Stir - cook in wine for 5 minutes. It should be reduced about half.

Now add enough water (yes water) to cover the meat. Bring to a boil and reduce to simmer. As the water evaporates, you will gradually need to add more, about 2–3 cups at a time. This is where the rich flavor begins. Stirring occasionally, reduce and add water for about 2.5 to 3 hours. Slow and go.

6 oz. penne pasta

Bring a large pot of salted water to a boil. Once boiling, add penne to pot. Cook, stirring occasionally, until al dente, 9-11 minutes. Reserve ½ cup pasta cooking water (1 cup for 4 servings), then drain.

Meanwhile, wash and dry all produce. Trim and discard woody bottom ends from asparagus; cut stalks crosswise into 1-inch pieces. Dice tomato. Mince chives. Zest and quarter lemon. Melt 1 tbsp. butter in a large pan over medium-high heat. Add panko and almonds; season with salt and pepper. Cook, stirring, until golden brown, 3-4 minutes. Turn off heat. Add a pinch of lemon zest and chili flakes. Transfer to a small bowl.

Heat a drizzle of olive oil in same pan over medium-high heat. Add asparagus and cook, stirring often, until bright green and tender, 2-4 minutes. Add tomato and cook, stirring, until slightly softened, 1-2 minutes. Season with salt and pepper.

Add penne, garlic herb butter, half the parmesan (you’ll use the rest later), and ¹/3 cup reserved pasta cooking water (½ cup for 4 servings) to pan with veggies; stir until thoroughly combined. Season with salt and pepper.

Add 1 tbsp. butter (2 tbsp. for 4 servings), half the chives, remaining lemon zest, and as many remaining chili flakes as you like. Cook, stirring, until everything is thoroughly coated in sauce, 1-2 minutes. (TIP: If needed, stir in more reserved pasta cooking water a splash at a time.) Turn off heat; stir in a squeeze of lemon juice to taste. Taste and season with salt and pepper.

Divide pasta between bowls. Sprinkle with panko mixture and remaining Parmesan. Drizzle each bowl with olive oil. Garnish with remaining chives. Serve with remaining lemon wedges on the side.

Lay out a tortilla, spread a dollop of sour cream in the middle of the tortilla vertically. Add 1/8 of the chicken on top of the sour cream. Add 1-2 tbsp. enchilada sauce on top of the chicken. Add cheese (to your preference) on top of the enchilada sauce. Then roll enchilada and place seam-side down in pan.

Repeat step 3 until all tortillas are filled and placed in the pan.

Cover the top of the tortillas with enchilada sauce (about 1/2 cup) then cover enchilada sauce with cheese.

Bake cake according to package directions for a 9x13 inch pan; cool on wire rack for 5 minutes. Make slits across the top of the cake, making sure not to go through to the bottom.

Carmel topping warmed and poured on cake. Warm fudge topping also pour evenly on cake. Slowly pour the warm topping mixture over the top of the warm cake, letting it sink into the slits; then sprinkle the crushed butterfingers across the entire cake while still warm.

Let cake cool until warm to the touch, then top with whipped topping. Decorate the top of the cake to your liking. Refrigerate or serve warm.
