900 ml Milk

Pinch Salt 150 g Durum wheat semolina 100 g Sugar 250 g Low fat curd cheese 3 Eggs 1 Lemon 500 g Jar of pitted cherries

Preriscaldare il forno a 200°.

1 Portare a ebollizione il latte con il sale. Aggiungere il semolino, abbassare la fiamma, cuocere a fuoco bassissimo mescolando fino a quando la purea non sarà densa ma ancora umida. Togliere la pentola dal fuoco, coprire e lasciar rinvenire per ca. 10 min. Incorporare lo zucchero e lasciar raffreddare un po’. 2 Mescolare il quark, le uova, la scorza e il succo di un limone. Aggiungere, mescolando, la purea di semolino. Unire le ciliegie e trasferire il tutto nella tortiera preparata. 3 Cuocere al centro del forno preriscaldato per 40 min.

Preheat the oven to 200C.

1 Boil the milk together with the salt. Stir in the semolina, reduce the heat, and simmer over a low heat while stirring until it becomes a thick – but still moist – paste. Take the pan off the heat and leave covered to swell up for around 10 min Mix in the sugar and leave to cool a little. 2 Mix together the curd cheese, eggs, and the grated rind and juice of one lemon. Add the semolina paste, stirring as you do so. Fold in the cherries and transfer the mix to the prepared cake tin. 3 Bake in the middle of an oven for approx. 40 min.

60 g di zucchero

50 g di cioccolato fondente

50 g di burro 50 g di farina burro per ungere

SOUFFLÉS

Preriscaldare il forno a 180°. Preparare quattro tazze (da 100 ml circa).

1 Mettere in una terrina l’uovo, il tuorlo, lo zucchero e il sale e mescolare con una frusta fino a ottenere un composto chiaro. 2 Sciogliere a bagnomaria il cioccolato e il burro, mescolando per un risultato liscio e omogeneo, poi unire al composto. 3 Incorporare la farina, versare il composto nelle tazze precedentemente imburrate e mettere su una teglia. 4 Cuocere per circa 15 min.

60 g Sugar 50 g Dark chocolate 50 g Butter

50 g Flour Butter for oiling

Preheat the oven to 180C. Set out four cups (approx. 100 ml).

1 Beat the eggs, egg yolk, sugar and salt in a bowl using the balloon whisk until the mixture turns lighter. 2 Melt the chocolate and butter in a bowl over a gently simmering bain marie, stir until smooth and add to the mixture. 3 Fold the flour into the mixture, pour into the pregreased cups and place on a baking tray. 4 Bake for approx. 15 min.

UOVA DI QUAGLIA & CAVIALE

Quail eggs & caviar

16 uova di quaglia

2 cc di latte acido

20 g di caviale svizzero sale e pepe aneto

1 Cuocere le uova in acqua appena portata a bollore per circa 5 min, togliere dalla fiamma e far raffreddare. 2 Sgusciare le uova, tagliarle a metà nel senso della lunghezza, rimuovere delicatamente i tuorli e passarli in una ciotola attraverso un setaccio. Aggiungere il latte acido e condire. 3 Versare il composto in una sac à poche con bocchetta seghettata (di ca. 3 mm Ø). Riempiere le uova e decorare con caviale e aneto.

16 Quail eggs

2 tsp Soured milk 20 g Swiss caviar Salt and pepper Dill

1 Boil the eggs in barely simmering water for around 5 min until hard, take them out of the water and set aside to cool. 2 Peel the eggs, cut in half lengthways, carefully remove the egg yolks and press through a sieve into a bowl. Mix with the soured milk and season to taste. 3 Transfer the mixture to a piping bag with a serrated nozzle (approx. 3 mm Ø). Fill the eggs with the mixture and garnish with caviar and dill.

CREMA AL SUCCO DI MELA

Cream of sweet cider

1 limone

500 ml di succo di mela 70 g di zucchero

1 Cc di amido di mais 4 uova 100 ml di panna anelli di mela essiccati

Da preparare anche il giorno prima. Conservare in frigorifero.

1 Grattugiare la scorza del limone, spremerlo e versarne un cucchiaio in una padella insieme alla scorza e al succo di mela. 2 Aggiungere lo zucchero, l’amido di mais e le uova e mescolare il tutto con una frusta. Continuando sempre a mescolare a fiamma media, portare a bollore. Non appena il composto si sarà rappreso, togliere immediatamente la pentola dal fornello e continuare a mescolare per circa 2 min. 3 Passare la crema al setaccio e raccoglierla in una ciotola. Coprirla e lasciarla raffreddare in frigo per circa 1 ora. 4 Mescolare la crema finché risulta liscia. Montare la panna e incorporarla con movimenti dal basso. Servire con anelli di mela essiccati.

70 g Sugar 1 tbsp Cornflour

4 Eggs 100 ml Cream

Dried apple rings

Can be prepared a day in advance. Keep refrigerated.

1 Grate the zest of the lemon and squeeze out a tablespoon of juice, then put both in a pan with the apple juice. 2 Add the sugar, cornflour and eggs and stir with a whisk. Bring to the boil over a medium heat, stirring constantly. As soon as the mixture starts to thicken, remove the pan from the heat and continue to stir for approx. 2 min. 3 Pour the crème mixture through a sieve into a bowl, cover, allow to cool and set aside for approx. 1 h. 4 Stir the crème mixture until smooth. Beat the cream until stiff and fold it in. Serve with dried apple rings.

2 Egg whites 100 g Sugar Pinch Salt

Preriscaldare il forno a 80°.

1 Montare gli albumi a neve ferma con il sale fino a ottenere una spuma così liscia e ferma che, girando la ciotola, non scivola fuori. Incorporare metà dello zucchero e continuare a sbattere finché il composto non risulterà estremamente denso e lucido. Unire il restante zucchero e sbattere ancora un pochino. 2 Versare il composto in una sac à poche con bocchetta seghettata e con dei movimenti circolari formare delle meringhe su una teglia ricoperta di carta da forno. 3 Cuocere al centro del forno per 1 ¾ ore, lasciando il forno leggermente aperto usando un mestolo in legno. Togliere dal forno, staccare le meringhe dalla carta da forno e far raffreddare su una griglia.

1 Beat the egg whites with the salt until they are firm and very smooth and do not drop out when you turn the bowl upside down. Add half of the sugar, continue beating until the egg whites are very stiff and shiny. Add the remaining sugar and beat for a little while longer. 2 Transfer the mixture to a piping bag with a serrated nozzle and pipe the meringues onto a baking tray lined with baking paper in circular movements. 3 Bake in the middle of an preheated oven for 1 ¾ h, keeping the oven door slightly open using a wooden wedge. Take them out of the oven, remove from the baking paper and place on a cooling rack.

OMELETTE

À LA FRANÇAISE

8 uova

8 Cc di acqua minerale

250 g di verdura a scelta: pomodori, porro … sale e pepe crescione, prezzemolo

8 Eggs

8 tbsp Mineral water

250 g Vegetables of your choice: Tomatoes, leeks Salt and pepper Cress, parsley

1 Sbattere le uova, condire, versarne la metà nella padella, cuocere a fuoco basso per circa 5 min in modo che si rapprendano. 2 Distribuire pomodori e porro su una metà dell’omelette, farla scivolare su un piatto e ripiegarvi sopra l’altra metà. Ripetere la procedura. 3 Tenere calda l’omelette in forno a 60°.

1 Beat the eggs, season, pour half of them into the pan, cook through over a low heat for approx. 5 min. 2 Spread the tomatoes and leeks on one half of the omelette, slide onto a plate, then fold the other half over. Repeat the process. 3 Keep the finished omelettes warm in the oven at 60C.

When the snow covers the Alps, the people of the mountains fortify themselves with nutritious egg dishes such as versatile Tatsch.

100 g di farina

1 Cc di zucchero

125 ml di latte 2 uova

1/4 cc di cannella 30 g di zucchero 25 g di burro

Pz di sale composta di prugne

TATSCH

Pane svizzero Swiss bread

1 Mescolare in una ciotola la farina, un po’ di zucchero e un pizzico di sale. Sbattere i tuorli d’uovo, aggiungere il latte e mescolare. Aggiungere la farina setacciandola, aggiungere la cannella e sbattere finché l’impasto risulta liscio e si formano delle bolle. Coprire e far riposare per 30 min. 2 Montare a neve gli albumi con il sale. Incorporare lo zucchero restante e continuare a sbattere finché il composto non risulta lucido. Unire delicatamente all’impasto con movimenti dal basso. 3 Scaldare del burro in una padella. Abbassare la fiamma, versare l’impasto e far cuocere per 3 min circa fino a quando il lato inferiore, dorato, non si stacca dalla padella. Quindi girare delicatamente. Aggiungere del burro e terminare la cottura per altri 2 min. 4 Ricavare dei pezzetti con due mestoli di legno, spolverare con zucchero a velo e servire con la composta di prugne.

1 tbsp Sugar

125 ml Milk 2 Eggs

1/4 tsp Cinnamon 30 g Sugar 25 g Butter

Pinch Salt Plum compote

1 Mix flour, a little sugar and a pinch of salt in a bowl. Whisk the egg yolks, add the milk and mix. Sift in the flour, add cinnamon, stir everything into a smooth batter using the whisk until bubbles form. Cover the batter and leave to stand for 30 min. 2 Beat the egg whites together with the salt until stiff. Add the remaining sugar and continue beating until the egg whites are shiny. Carefully fold into the batter. 3 Warm up a little butter in the pan. Lower the heat and add the batter, then cook for approx. 3 min until the underside comes away and is golden brown, then turn over carefully. Add a little more butter and cook for another 2 min. 4 Shred with two wooden spoons, dust with icing sugar and serve with plum compote.

100 ml di vino bianco 300 ml di latte 3 Cc di panna senape sale e pepe noce moscata prezzemolo / crescione

1 tbsp Flour 100 ml White wine 300 ml Milk 3 tbsp Cream Mustard Salt and pepper Nutmeg Parsley/cress

1 Tritare finemente gli scalogni, soffriggerli nel burro senza che prendano colore. Aggiungere la farina e far cuocere per altri 2-3 min. Aggiungere, mescolando, prima il vino bianco, poi la farina e lasciar sbollentare per circa 10 min per ottenere una salsa cremosa. 2 Condire e aggiungere senape e panna. 3 Cuocere le uova a fiamma media per 6 min, poi passarle in acqua fredda. Sgusciare delicatamente. 4 Versare la salsa in ciotole, aggiungervi le uova e cospargere con prezzemolo o crescione.

1 Finely chop the shallots and fry them in the butter without letting them change colour. Add the flour and cook for another 2–3 min Pour in the white wine while stirring, then add the milk and simmer for around 10 min to create a creamy sauce. 2 Season, add mustard and cream. 3 Boil the eggs for 6 min over a medium heat and then rinse with cold water. Peel carefully. 4 Pour the sauce into bowls, add the eggs and sprinkle with parsley or cress.

FOTZELSCHNITTEN

French toast alla svizzera Swiss-style French toast

4 uova sale

150 ml di latte 2 cc di cannella 100 g di zucchero burro per soffriggere 500 g di treccia composta di mele

4 Eggs Salt

150ml Milk 2 tsp Cinnamon 100 g Sugar Butter for frying 500 g Plaited loaf Apple puree

1 In una ciotola mescolare bene uova, latte e sale. In un piatto mischiare la cannella allo zucchero. 2 Mettere a scaldare il burro in una padella antiaderente. Abbassare la fiamma. Passare nell’uovo una ad una le fette di treccia e farle dorare nel burro su entrambi i lati per circa 2 min. 3 Toglierle dalla padella, rigirarle nel mix di cannella e zucchero e servirle con la composta di mele.

1 Mix together eggs, milk and salt in a bowl. Mix cinnamon and sugar on a flat plate. 2 Heat the butter in a nonstick frying pan. Lower the heat. Turn the slices of bread in the egg piece by piece and cook for approx. 2 min on each side until golden brown. 3 Remove from the pan, turn in the cinnamon and sugar mixture and serve with apple puree.

SPAGHETTI

ALLA CARBONARA

500 g di spaghetti

150 g di speck a cubetti 4 tuorli 80 g di pecorino romano ¼ cc di sale per la cottura sale e pepe

1 Cuocere gli spaghetti in acqua salata. Mettere da parte un po’ di acqua di cottura. 2 Nel frattempo far rosolare i cubetti di speck in una padella senza utilizzare grassi. 3 Mescolare i tuorli con il pecorino e il pepe. Quando gli spaghetti sono al dente, trasferirli con una pinza direttamente dalla pentola nella padella con lo speck. Un po’ di acqua di cottura della pasta non guasta. 4 Aggiungere il composto di uova e pecorino e mescolare bene. Se necessario, aggiungere ancora un po’ di acqua di cottura per ottenere una salsa cremosa. Servire subito. Cospargere con pecorino romano.

150 g Diced bacon 4 Egg yolks

80 g Pecorino romano ¼ tsp Salt for boiling Salt and pepper

1 Cook the spaghetti in salted water. Reserve a little of the cooking water. 2 In the meantime, dry fry the diced bacon in a frying pan until golden brown. 3 Mix the egg yolks with the pecorino cheese and pepper. Once the spaghetti is al dente, use a pair of tongs to scoop it straight from the saucepan into the frying pan with the bacon. Don’t worry if some of the pasta water comes with it. 4 Add the egg and pecorino mixture, mix well and if necessary add a little more pasta water to create a creamy sauce. Serve immediately. Sprinkle with Pecorino romano.

A carnival tradition

At the start of the new year in the Saas Valley, egg-rich “Ponscheggla” pastries are conjured up according to an old carnival tradition.

PONSCHEGGLA

Dolce tradizionale con pane di segale Traditional sweet pastry with rye bread

1 kg di farina

150 g di zucchero

1 uovo

125 g di burro

250 ml di vino bianco 100 ml di distillato

Ripieno

500 g di pane di segale sbriciolato 375 g di zucchero 1 limone

150 g di confettura olio per friggere zucchero a velo

1 kg Flour

150 g Sugar 1 Egg

125 g Butter 250 ml White wine 100 ml Schnapps

Filling

500 g Rye bread, crumbled

375 g Sugar 1 Lemon

150 g Jam Oil for frying Icing sugar

1 Mescolare il burro, l’uovo, lo zucchero, il vino e il distillato. Aggiungere la farina fino a ottenere un impasto compatto. 2 Lavorare la pasta finché non si attacca più e lasciar riposare per 1 h. 3 Per il ripieno, mescolare il pane di segale sbriciolato, lo zucchero e la confettura. Unire il succo e la scorza del limone. 4 Stendere la pasta e ricavarne dei quadratini (di ca. 7 cm Ø). Mettere un cucchiaino di ripieno su ogni quadratino, inumidirne il bordo con acqua, formare delle mezzelune e premere bene il bordo con una forchetta. 5 Riscaldare l’olio a circa 180° e cuocervi le Ponscheggla per 3-4 min finché non saranno dorate. 6 Cospargere di zucchero a velo prima di servire.

1 Mix together the butter, egg, sugar, wine and schnapps. Add flour until you have a stiff dough. 2 Knead the dough until it is no longer sticky and leave it to rest for 1 h. 3 For the filling, mix together the crumbled rye bread, sugar and jam. Add the juice and grated rind of the lemon. 4 Roll out the dough and cut into small squares (approx. 7 cm Ø). Put a teaspoon of filling on each square, moisten the edges with water, shape the squares into crescent shapes and press the edges together with a fork. 5 Heat the oil to approx. 180C and fry the pockets for 3–4 min until golden yellow. 6 Sprinkle with icing sugar and serve.

LIQUORE ALL’UOVO E VANIGLIA

Vanilla eggnog

100 ml di panna

50 ml di latte

2 bacche di vaniglia 4 tuorli 80 g di zucchero a velo 200 ml di Kirsch

Premunirsi di una bottiglia (di ca. 500 ml) e di un imbuto. Si può conservare in frigo per qualche settimana.

1 Sterilizzare la bottiglia e l’imbuto riponendoli per 5 min in acqua bollente. 2 Portare a ebollizione la panna e il latte con la polpa delle bacche di vaniglia, togliere la pentola dal fuoco. 3 Lavorare i tuorli d’uovo freschi con lo zucchero a velo fino a ottenere una crema, aggiungere mescolando la salsa di vaniglia calda, passare al setaccio e lasciare raffreddare. 4 Aggiungere il Kirsch, versare nella bottiglia e lasciare in frigorifero per una settimana. 5 Agitare bene prima di servire.

50 ml Milk 2 Vanilla pods 4 Egg yolks 80 g Icing sugar 200 ml Kirsch

Have a bottle (approx. 500 ml) and a funnel to hand. Will keep for a few weeks in the fridge.

1 Sterilise the bottle and funnel in boiling water for 5 min. 2 Bring the cream and milk to the boil with the contents of the vanilla pods, remove the pan from the heat. 3 Mix fresh egg yolks with icing sugar until frothy, pour in the hot vanilla sauce while stirring, sieve and allow to cool. 4 Add the kirsch, fill the bottle and leave it to stand in the fridge for a week. 5 Shake well before serving.

1 Far sciogliere il burro a fiamma media. Mescolare i tuorli con le spezie e il succo di limone, quindi aggiungere il burro continuando a mescolare. 2 Portare a bollore acqua e aceto e abbassare la fiamma. Aprire singolarmente le uova in una tazza e farle scivolare con attenzione nell’acqua leggermente bollente. Lasciarle cuocere per 4 min senza far bollire l’acqua. Togliere le uova in camicia dal fuoco e lasciarle scolare. 3 Rosolare il prosciutto e nella stessa padella abbrustolire anche i bagel. Toglierli dalla padella, spalmarvi sopra il burro, mettere il prosciutto, poi l’uovo e versarvi sopra la salsa olandese. Condire e decorare con erbe aromatiche.

Break the eggs into a cup one by one and carefully slide them into the simmering water. Cook below boiling point for around 4 min. Remove the poached eggs and drain off the excess water. 3 Fry the bacon. Brown the bagels in the same pan. Remove, spread with butter and top with the bacon, place the egg on top and pour the hollandaise sauce over it. Season and garnish with herbs.
