Unfortunately I have had to miss quite a few of them due to holidays and work, ie getting this mag delivered to your door, which is a little later this month. There was a couple of big organised events I was really bummed to miss but hopefully next year!

Now on a very sad note, John Moran who was featured in the SIG section last month as the contact for the Dalbeattie Angling Association passed away 11th of June after a short illness, but the article had already gone to print by the time I found out. So sincere apologies if seeing the article caused any upset, and deep condolences to John’s friends and family, he was a lovely man and I had he pleasure to meet him more than once. Castle Douglas Food Town Initiative Newsletter Calling all readers to help make next years Food Town Day even better… Please fill in our survey for the chance to win a £50 voucher Well another Food Town Day has past and we are happy to report that the town saw many visitors and locals on the 28th of May. Overall the town was exceptionally busy considering the weather on the day. The businesses in the town were pleased to see the town so busy which helps to promote the town with its great independent shops offering a great selection of services and shopping opportunities. The local producers marquee was very successful and attracted good crowds able to taste and sample the Flavours of Galloway. Our Community also responded to our invitation to be involved on the day and we had an excellent number of community stalls on King Street showcasing their interest group and taking the opportunity to raise funds for their activities. The day had a great diverse selection of entertainment for the family that helps to make the day a fun family day for all. We had the Feral Choir, Scottish Country Dancers, Young Musicians, Stewartry Wind Band, Young up and coming chefs in the Foody Marquee, Sulwath Jazz at the Brewery, Cooking Demos from Local chefs and the Cooking Bus was here for the week offering fresh foody tips to the school children form the local primary schools. Fairtrade were also offering Fairtrade tasters. The Food Town Day event happens due to money and time offered and given by the towns businesses and local volunteers . We believe all had a good time but for future planning it would be good to hear from you the public about Food Town Day and what your thoughts are and what improvements we could consider for future years. This historic image comes from an advert in a 1908/09 Castle Douglas guidebook in the Stewartry Museum collection in Kirkcudbright. It shows James Gordon’s Motor and Cycle Works at 165 King Street, Castle Douglas, now the site of the Gifts and Home shop. James Gordon started business in the town in 1865, moving to these premises in 1875. The show room was in the front with the workshops behind, down the entry on the left. Derek Smith of Kirkcudbright has kindly identified the cars as (left) an Arrol-Johnston 1909 model made in Paisley and (right) a Coventry Humber 1908/09 model. The advert states ‘Any make of Car thoroughly overhauled and repaired’. One hundred years on, the business is still to the fore in Castle Douglas as agricultural equipment suppliers and engineers.

Restaurant Review Cavens House Hotel After several years of driving past the entrance to the Cavens House out at Kirkbean and almost every time wondering what it was like, I came across one of their leaflets that had been doing the rounds in Dalbeattie. The menu and attached price caught my eye and decided this time I will actually drive up and find out what it was all about . Having had a quick look around the place I decided I needed to come back with a couple of ‘foodie’ friends and descend on the Cavens Restaurant as a foursome one evening. After parking up we were a little unsure of where to find the entrance. It looked as if it was at the front of the house behind the wrought iron gate, but that was locked so we wandered round what felt like the back of the house thinking we were going to end up at the kitchen door when there, at another large entrance, was stood the maitre d’ to welcome us through a small but grand, ancestral looking office to a very open but plush sitting area complete with piano and french doors overlooking the gardens (including a croquet lawn, sticks available at the entrance should you wish to have a go at some point during your stay). Our Maitre d’ for the evening ensured we were comfortably seated, brought the evening’s menu and took our drinks order, (it is all waiter service, there is no bar neither does it allow mobile phones in the sitting and dining areas to preserve the tranquility for all the guests). Also it is a set menu which changes every night. Some people like a plethora of choices but it was actually a nice change to have only two or three choices instead of spending the first half an hour just reading through menu before even starting to decide what to have. And if there really was nothing you liked on the menu Chef was quite happy to see what else could be rustled up just for you. I did raise an eyebrow to the fact that the wine list was only offered to the men of the party especially I was paying for the night and I know just as little about wine as does my husband but the really good choice of wines made up for it once I was passed the list to read myself. We gave our orders and was soon asked through to the dining area. The table was a good size as I hate playing chess with the side dishes because there isn’t enough room. The dining room décor was quite a simple affair however you could tell the silverware and china was of the highest quality, even down to the little salt pot which had the miniature spoon rather than a shaker, so Cavens was definitely going for the authenticity of the ‘Laird Country House’. It was not quite as contemporary as I personally like but it had an old world charm with a certain elegance to it. The overall feeling was one of peace and tranquility. Between the four of us we tried just the ‘smoked products’ and the ‘goats cheese tartlet’. I was told the tartlet was exceptionally good and was enjoyed so much I didn’t get a chance to try a sly mouthful. I had the smoked products. The presentation was elegantly simple with a little green side salad and lemon garnish, perfect for the high quality local produce. When food is that high a quality I don’t like mucking around with it too much, I like to enjoy it for the luxury that it is. Two of the party had the fish (ling) and two had the fillet steak. The ling was a lovely fleshy white fillet, nice flaky chunks set off nicely with the slightly salty, vinegary flavour of capers. (I managed to sneak a taste of that one) My steak, medium rare, was to die for as was the sauce. It was just so tender, inside was still very moist & pink and outside you were getting the first hints of the caramelised beef. The green peppercorn sauce was not too peppery, I like peppercorn sauce but I like to be able to taste the beef through it and I feel it is a common mistake that the pepper too overpowering for the steak. This managed to be a complimentary flavour rather than the main flavour so can not recommend it high enough. Veg was nicely cooked too - al dente as they say. For our dessert we managed to get a taste of all four choices onto the table but I missed the lemon brulee. My summer pudding was superb, made with real brioche and beautifully tart summer fruits topped off with fresh cream served in a separate jug.

I tried some of the cheeses too, being a fan of Loch Arthur, one however was just too strong for me, it made my eyes water. It will be to some taste-buds I am sure, as would be the chocolate pudding. It was very rich, perfect for the chocoholic but I don’t think I could have quite finished off the pot it was so rich and velvety. I would of course have given it an honourable attempt. The service through-out the meal was highly attentive, once or twice it almost bordered on the ‘over enthusiastic’ but I think that might be because a) it’s not often you get that level of service so you really notice it when you do and b) we went on an evening early in the week so was a little quieter than usual, therefore they had less tables to attend to, but the staff were really pleasant and accommodating. Once we had finished our meal we were asked back through to the sitting room for our coffee and chocolates. I loved the fact we were brought a full cafetiere and a decent sized jug of milk so we could all have more than the one cup and I could pour it how I liked it, (which you may know from previous reviews and I am a coffee heathen and like it very milky). If we had been staying at the hotel I would have quite happily ordered a bottle of red and settled in to read a good book it was so laid back. To summarise; this was a lovely quiet night out. It is plush but welcoming. No you don’t get your cheap happy hour for under a tenner, you get a full 3 course meal plus coffee all inclusive and silver service for £35. The evening’s menu: Considering I have paid over £20 for just a steak and no extras from some Salad of hot smoked salmon with poached egg topped with al a carte’s with inferior service I hollandaise sauce thought this was extremely reasonable. It is what it says on the tin - a fine dining experience in a tranquil environment - and the fact it doesn’t cost the earth is a fantastic bonus.

Rating 4.5 out of 5 Loved the quality of the food, service was really good although a little old fashioned on the odd occasion. A lovely evening out, perfect for a romantic night or even to impress the boss/motherin-law. Not somewhere to take the kids unless you know they will appreciate the fine dining.

Macrobiotics..? Bill Tara explains the Modern Macrobiotic Diet… Every time a rock star or movie star eats a piece of tofu they claim to be macrobiotic but what does that mean? Is it the latest fad diet or is there some reason we hear about this approach to a healthy life so often? Macrobiotic dietary principles have been developed over the past 50 years in America, Europe and Asia. The macrobiotic diet came into the news in the 1980’s through a series of books written by cancer survivors who claimed that the diet helped in their recovery and is often associated with a strict healing diet. Over the years there has been controversy around the diet from medical professionals but times have changed. The diet as it stands is one of the few that conforms to the latest nutritional theories and recommendations of such bodies as the World Health Organization. The overwhelming evidence of contemporary science is that food is a major contributing cause of many cancers, stroke, diabetes, heart disease and a variety of major illnesses. The particular dietary factors most implicated in this relationship are: Over consumption of meat, dairy and simple sugars. Diets that are dominated by these foods are also usually devoid of whole cereal grains, vegetable protein, adequate fresh vegetables and fruits, seeds and nuts. These are the foods that are the foundation of macrobiotic eating. The macrobiotic diet is again gaining popularity simply because it works not only as a detoxifying program, or a healing diet but is excellent for health maintenance. One of the main reasons that people are drawn to macrobiotics is that the food is delicious and filling. Modern macrobiotic diets generally feature a fusion of European, Mediterranean and Asian cooking. Remember all those movie stars? The reason they follow this program is because it is often noted that when people eat this way they look younger, have greater vitality and physical flexibility. While specific dietary patterns may be suggested to suit specific health issues, the application of macrobiotic principles to nutrition is not an attempt to therapeutically cure the illness. The macrobiotic approach to eating is focused on assisting the body to recover from nutritional stress, often the result of the modern diet, and return to a more sensible state of biological balance. In the process of returning to a more balanced state the body is able to recover its own self-healing capacity. Britain is a nation of bad-back sufferers. Four out of five of us are affected by chronic lower-back pain during our lives, and according to the Brain and Spine foundation it accounts for 5% of sick days. The term ‘bad back’ describes everything from a torn disc to a compressed spine. Poor posture is the cause of many back problems. It sounds odd, but the sudden pain we might experience when lifting a heavy object is not caused by the act of lifting, but by the 30-odd years of sitting badly that preceded it! Drivers and office workers are the most susceptible to lower back pain. When we sit at a work station we tend to hunch, forcing our spine into a C shape. Sitting properly means that your thighs are parallel to the floor and your feet are flat (you may need a thick book to raise your feet slightly to achieve this). Your screen should be just below eye level so you don’t have to stoop or stretch to see it. In this position your spine forms the correct S shape and your weight is distributed correctly. When driving, our back should be relaxed into the notch of the seat back, which should be angled at 10-15 degrees from vertical. Our elbows should be comfortably bent by 70-80 degrees and our arms should be relaxed. Anyone who sits for much of the day might want to invest in an orthopaedic lumbar support like the eezzeebak, which can be attached to any chair, including a car seat, and which encourages correct posture, helping to reduce back pain. Surprisingly, the best treatment for back pain is exercise, not rest. This is because movement increases the blood supply to the spine joints, nerves and surrounding muscles. Improving stomach muscle tone helps to support the spine and so reduce back pain. Gentle exercise such as walking, cycling and swimming is best. Pilates and Yoga are also good as they improve core strength. Osteopaths can be very helpful if pain is acute. Don’t forget that a regular maintenance check up once every six months or so can keep back-pain at bay. Acupuncture has also been found to be useful for reducing inflammation and relaxing deep tissue muscles in spasm. The good news is that only 1% of back pain cases require surgery, usually for a trapped nerve or a damaged disc. Problems like tumours or serious nerve damage do occur, but are extremely rare. Recipe of the Month:

Perfect Autumnal Food Serves 4-6 Preparation time 30 minutes Cooking time 30-40minutes

Ingredients: 900g / 2lb apples, peeled, cored and sliced apples (you will probably need 1.5K / 3lb g of whole apples to achieve this) 1 tsp ground cinnamon Juice of 1/2 lemon 115g / 4oz brown sugar 75g / 3oz butter, cut into bits 40g / 1.5oz cup rolled oats 75g / 3oz plain flour 25g / 1oz flaked almonds (optional)

Method 1) Preheat the oven to 200C / Gas Mark 6. Toss the apples with half the cinnamon, the lemon juice, and 1 tbsp of the brown sugar. Place the fruit mixture into a lightly buttered 9-inch / 22cm round baking pan. 2) Combine all the other ingredients, including remaining cinnamon and brown sugar, in the container of a food processor and pulse a few times. Process for a few seconds more until everything is roughly incorporated. If you do not have a food processor, soften the butter slightly, and toss together the dry ingredients, then work in the butter with your finger-tips, a pastry blender, or a fork. 3) Spread the topping over the apples and bake 30-40 minutes, until the topping is browned and the apples are tender. Serve hot, warm, or at room temperature with cream or ice cream.

CatStrand’s Cultural Section The Glenkens Community and Arts Trust (GCAT), the organisation behind the success of the CatStrand Community, Arts and Visitor Centre in New Galloway has now turned its attentions and considerable skills to initially saving but ultimately expanding one of the most popular and innovative events in Dumfries and Galloway. Doors Open Days is Scotland’s largest free annual built heritage event. It is coordinated nationally by the Scottish Civic Trust and is part of European Heritage Days and is supported by Historic Scotland. The event provides free access to many buildings, cultural and archaeological sites that members of the public would not normally gain entry to, or where a charge is usually made. Doors Open Days is now in its 21st year and in Dumfries and Galloway, Doors Open Days has taken place since 1993. The regional event, successfully run for many years by the environmental agency Solway Heritage, had recently come under serious threat until GCAT and its partners stepped in. The Dumfries and Galloway Doors Open Days event will now definitely go ahead on the 24th and 25th September 2011 following the successful rescue plan created by GCAT, with support from Dumfries and Galloway Council and The Holywood Trust. The theme for this year’s Doors Open Days is ‘The Key of the Door’, reflecting both the fact that in Scotland Doors Open Days celebrates its 21st birthday this year and also GCAT’s aspiration to increase the involvement of young people across the region. Despite the shortage of time to develop D&G Doors Open Days 2011 between 20 and 30 wonderful venues are expected to open this year. In recent years the event has opened everything in the south west of Scotland from thatched cottages to castles, from a farm using working horses to the jail cells under the Sherriff’s Court. The team at GCAT has been joined by Jean Atkin, who worked on Doors Open Days between 2002 and 2007, and Glenkens freelance Alison Caldwell. The team are now hard at work creating a full programme of events and a new website is currently under construction to promote the event along with highlighting the work of GCAT and the other projects it is engaged with. Outdoors… Giving the guys a run for their money… And quite a few tips by the sounds of it! Sue McNiven tells us how she became the only woman to hold Advanced Instructor Status.

Sue McNiven - Damsel Fly Fishing

If someone had told me when I was sixteen, and newly introduced to the intricacies of salmon and trout fly fishing, that I would one day be earning a living by teaching others I would have thought they were mad. Over 40 years later I am doing just that. Originally taught by my future husband I really only took it up as he was keen to teach me and I wanted to see him occasionally, and living on a Perthshire estate with its own loch helped. 15 years later with 2 children, a divorce and a new life in Berkshire I found myself fishing on small stocked lakes and started looking after one for the owner regularly. Some of the men who fished there would ask me for advice to improve their casting and so I looked into instructor qualifications to make sure I was teaching the right things. I put my name down for Level 2 Game Angling Instructor certificate. I quickly realised that what I had been doing, though effective, was not quite technically correct. Meeting some of the great casters in the country at Sportfish in Reading gave me an insight into what would become a compulsive self imposed and rigorous training programme. Having passed level 2 with ease in 2003 my next aim was to become a top flight caster and instructor and the first woman to qualify at advanced level. The following spring I enrolled for with AAPGAI (Association of Advanced Professional Game Angling Instructors). Helped enormously by other members, I spent every spare moment in the water in all weathers practicing the numerous casts required to pass the Trout and Sea trout exam for single handed rods. After a gruelling and nerve wracking exam of demonstration, written examination and presentation I failed the first time, not surprising with only a 27% pass rate but I now knew what to expect. I passed the following year and went on to pass Advanced Salmon double handed in 2006. Damsel Fly Fishing was born! I am the only woman in the UK to hold both advanced certificates. In addition I have a better understanding of how hard some of these casts can be to folks with less muscle mass, ideal for office based people, kids and of course women in general. I think they are happier having another woman teach them as they don’t feel as if they are being overwhelmed with technicalities. Although most of my clients are men, we get a lot of couples staying at our B&B in Twynholm looking for a mutual hobby. Some clients already fish and just want a tidy up, some want the real in depth stuff and come back on a regular basis for top up instruction. I am really delighted to be living in such a great part of Scotland and doing something I really love. Letterboxing in Dumfries and Galloway I must confess I had never encountered Letterboxing until I happened to hear a program on the radio which described it as being like a treasure hunt where you followed clues or solved puzzles. When combined with being out in the countryside and an activity to do as a family or with a group of friends, it sounded just perfect. Wikipedia provides a good explanation: “Letterboxers hide small weather proof boxes in publicly-accessible places and distribute clues to finding the boxes in printed catalogues, on one of several web sites, or by word of mouth. Individual letterboxes usually contain a log book and a rubber stamp. They may also contain an ink pad, but since the ink sometimes makes a mess of the interior of the box, most do not. Finders make an imprint of the letterbox’s stamp in their personal log book, and leave an impression of their personal stamp in the letterbox’s log book – as proof of having found the box”. So where did the unlikely name come from? Well it all started in 1854 in Dartmoor when James Perrott, a well known Dartmoor guide, placed a bottle in a cairn at Cranmere Pool. His idea was that people visiting this remote spot would leave their visiting card there with a message for the next visitor. Later other boxes were established and the pastime evolved into hikers leaving letters or post cards, addressed to themselves, a friend or relative, inside the box. The next person to find it would put it in the post. Letterboxes have been planted in increasingly more accessible places and the hobby has evolved into its current form. How do you get started? First up you need some letterboxes to find - well you are in luck as there are plenty in this region, with Dalbeattie being at the centre of them. Next you need to choose a trail name: this can be for you as an individual or for a group of friends or family. Once ready head to the Dalbeattie Visitor information Centre in Dalbeattie High Street, where you can pick up a sheet of clues. Note that all of the boxes on the sheet have been planted with ink pads and pencils included so you can try letterboxing without too much hassle. Finally have fun searching for the boxes and tell your friends about it. Are there any rules? Well very few. First of all you need to respect the environment: don’t trample or uproot plants, and if planting new letterboxes only place them in natural holes or crevices – do not make new holes. Leave everything as you find it, remember to repack the box contents and replace it where you found it. Try not to draw attention to yourself if you are searching for a box or have just found one. Not everyone is letterbox friendly and may not leave the box in situ for the next letterboxer to find. Fancy a steak and a bottle of wine? Try your local health food shop ~ now celebrating their 20th year Sunrise Wholefoods opened their doors in a slightly drafty, very cold port-a-cabin in 1991. Still in Castle Douglas but now in a spacious deli they have reached their 20th Anniversary in September. Now this isn’t your normal health food shop where you find just dried beans, vitamins and vegan chocolate, this is an amazing fusion of … well… “Good Food”! I was amazed at the variety of wonderful local healthy produce, including beef, lamb, a full deli counter of cold meats, cheeses & olives (told you it wasn’t your normal ‘heath food’ shop) wine, veggies and a huge array of spices. I even found the much sought after palm sugar and shrimp paste for your Thai cooking. It is an absolute Cornucopia of Ingredients for healthy home cooking from any part of the world really. Proprietors Steve & Pauline Tilbury were already growing organic vegetables in a walled garden at Parton and there wasn't an outlet for organic and local food before 1991 nearby so they decided to open a shop themselves. Although quite successful they were off the main street. Then in 1995 the opportunity came to buy Stevenson’s shop on the High Street and the business grew steadily, stocking fair trade foods and championing local food and low food miles before it became fashionable. Keeping the good selection of speciality teas and coffees from their predecessor’s time they have continued to expand their range to include local beers and Scottish country wines from Cairn o Mohr, local honeys, artisan bread and free range eggs. And the meat comes from Steve and Pauline’s own small herd of Galloway cattle, rare breed sheep and pigs, all happily living over in Southwick. And having always been a bit green they have become the first business on the high street to be generating our own electricity from photovoltaic panels (solar panel to you & I) on the roof of the rear shop. POLKA DOT WIN IT'S FIRST AWARD At the recent Thornton's Awards ceremony held in Nottingham POLKA DOT, Castle Douglas was delighted to win STORE OF THE YEAR in the newcomers category. They were also successful in the best Easter incentive and community involvement award,and nominated for the Smiles Award. Lorraine and two of the team travelled to Nottingham for a Thornton’s event unaware they were even nominated. Garden View September ~ Miniature Narcissi Think of daffodils and you’ll probably think of the large yellow variety. They look fabulous while in flower, but can present some problems for small gardens. They are tall, unstable in high winds, heavy rains and snowfall, and they produce masses of green foliage which must be left to die down for six weeks after flowering. Only then can you shear them off to ground level. Miniature narcissi however were made for small suburban plots. They are under 12 inches / 30cm tall and are much more stable in bad weather, even heavy snow. As a bonus their foliage is neat so not particularly unsightly during the dying-down period. Just like the big varieties, if you plant them now they will provide pleasure for many years. All daffs, be they large or dwarf, need a good start. Make a hole roughly four times deeper than the bulb. It will seem like overkill, but the biggest mistake most gardeners make with bulbs is shallow planting. They will still flower well during the first seasons, but because they are too near the surface, they will find it difficult to take in enough nutrients and water to make reserves for the subsequent years. The result will be a show of green leaves and not much else! So plant them deep and they’ll return year on year, looking more beautiful each time. Another great way to enjoy miniature narcissi is to plant them in pots. 25cm /10 inch pots are about the right size. Put some drainage material in the bottom then fill with potting compost. Plant the bulbs just below the surface then stand the pot in the shelter of a wall. Water the compost when it looks dry. Come the spring you should enjoy a pot full of colour. Once they’ve finished flowering you can plant them more deeply outside and they’ll continue to flower each year. Miniature Narcissi Suggestions ‘Minnow’ - A profusion of multi-headed lemon-yellow flowers. ‘Jetfire’ - Bright orange trumpet and deep yellow petals. ‘Cotinga’ - Dainty ivory flowers with petals that look like they’re windswept backwards and trumpet flushed with apricot. Very unusual. ‘Golden Bells’ - Free-flowering with a large trumpet. These are just suggestions. You can’t really go wrong with any miniature narcissi. The only problem you’ll have is deciding where to plant them all! 26

The Stewartry Camera Club returns to The Tolbooth after the summer break at 7.30 p.m. on Wednesday 14th September 2011. It meets throughout the winter months with a break over Christmas. It comprises a group of around 30 members interested in various types of photography including landscapes, portrait, flowers and nature. Some members get very involved in the regular competitions, others prefer to observe and enjoy the work of the more active members. There are opportunities to learn more about photography and get individual help where required. The competition judges this year are Allan Wright, Dave Symonds FRPS, Kim Ayres, Keith Kirk, Alwyn Howes, Pauline Saul and Vivienne Dania. Allan Wright will talk on 'Approaches to Photography' in his studio at Parton, Patrick Bealey on 'The Shroud of Turin', Bill Allan on 'World Photography', Dave Symonds on 'Brush with a Weirdo', Steve Richard on 'Decay and Darkness to Light & Beauty', Keith Kirk on 'A Life through the Lens'. There will be a 'Lantern Slide Soiree' led by Ray Purdey and Kim Ayres will provide a 'Self Portrait Seminar'. The full programme can be found at www.stewartrycameraclub.wordpress.com.
