Hi Everybody, Welcome to November’s edition. We have the winner for the Cavens Country House Hotel competition - Demi Powell from Dalbeattie was the lucky one. We have still to hear how she got on but was quite excited. She said it was the first time she had ever won anything. I have always wanted to start a joke section and was sent this one and thought now might be a good time. I have been told it was a true story, I have no idea if it is but would like to think so. The ‘Church white lie’ cake Jean was to bake a cake for a Church fundraising but forgot to do it until the last minute. She remembered it the morning of the bake sale and after rummaging through cabinets, found an packet cake mix & quickly made it while drying her hair, dressing, and several other Mother’s chores. When she took the cake from the oven, the centre had sunk flat. With no time to bake another and desperate not to let anyone down Jean got creative. She looked around the house for something to build up the centre and found a loo roll. She plunked it in the middle and then covered it with icing. Not only did the finished product look beautiful, it looked perfect. Before she left the house to drop the cake off at the fundraising and head for work, Jean woke her daughter, gave her some money and specific instructions to be at the bake sale the moment it opened at 9:30 to buy the cake and bring it home. When her daughter arrived at the sale, she found the perfect looking cake had already been sold! When Jean found out was horrified-she was beside herself! Everyone would know! What would they think? The next day,Jean promised herself she would try not to worry and would attend the fancy luncheon at the home of a fellow church member and try to have a good time. She did not really like the hostess who was a snob but some friends were going so she thought it would take her mind off the cake. The meal was elegant, the company was fun and to Jean’s horror, the loo-roll cake appeared. Jean went white, she started out of her chair to tell the hostess all about it, but before she could get to her feet, one guest said "What a beautiful cake!" Jean, stunned, sat back in her chair when she heard the hostess (who was a prominent church member) say, "Thank you, I baked it myself..." Restaurant Review The

Selkirk Arms Hotel Bistro I’d been looking forward to reviewing the Selkirk Arms for a while but was unsure which to try, the Artistas Restaurant or the Bar Lounge & Bistro. For a slightly less informal evening we went for the Bistro. We knew it got busy by 7:30 so tried to get there before 7pm and we were rather glad we did. The Bistro was already filling up and there was one couple waiting for a table. We were invited into the little two seater snug at the bar while we waited and asked to see the menu. It was quite extensive plus there was a specials menu. We only waited perhaps 5 or 10 minutes before the next table was ready for us. I was still having trouble choosing, but eventually plumped for the Belly Pork and Prawns, followed by the Duo of Beef Galloway both taken from the main menu. My other half had already made his mind up as soon as we sat down and took the Thai Style Fish Cakes and the Roast Duck Breast, both from the specials. The service was very friendly and relaxed. The front of house guy, (apologies but I didn’t catch your name) was outgoing and chatty, very welcoming. The décor was warm with Mediterranean colours while still managing to look both like a welcoming Scottish bar and a well lit, fresh dining area. Without even trying the food hubby commented he would like to come again, perhaps bring his mum, they obviously had the ambience right. The starters arrived and the fishcakes were excellent, there was a definite Thai flavour through them. My pork & prawn starter presented a slight problem in how to tackle it. It is a personal bug bear when prawns arrive on a skewer because there is no graceful way to either eat them off the skewer or get them off the skewer. And the Pork arrived in a 2” cube, and although I love crispy crackling, because it was attached to the meat and the meat stood so proportionately tall it was difficult to cut it without fear of it pinging off the plate. However both the prawns and the pork was very tender and juicy. Really nice once I managed to get a fork into them. Not sure what the pile of plain noodles were doing on the plate though. They had no flavour other than the drizzled sweet chilli dipping sauce and not being dressed they had started to stick together. They just didn’t quite go with the dish somehow, and seemed like the gooseberry of the trio, not really wanted or required. With the arrival of the main courses it was clear my husband chose wisely, the duck was beautifully pink and moist, perfectly complimented by the braised sweet cabbage. The only slight minor complaint was that he personally prefers a crispier skin, but he thought it was lovely and would order it again. My Duo of Galloway Beef was lovely. The feather blade, one of the slightly cheaper cuts of beef, was cooked to perfection. As with the slightly cheaper cuts if butchered and cooked expertly are often far more flavoursome than the likes of a sirloin and the Chef had hit this nail on the head. I actually preferred it to the medallion of beef for its flavour, even though the medallion was again cooked beautifully, pink and moist in the middle with the outside seared and caramelised just right. Would highly recommend both our main courses. The only negative thing I would say was the portion size of the potatoes. We both

commented on it, the duck came with 3 bite-size roasters and the beef came with a 2” cube of dauphinoise potatoes. For a bar lounge / bistro I would have expected slightly bigger portions of carbs. On the plus side this left room for us both to try a dessert. I was tempted by the Selkirk Mess which I assumed was a take on the Eton Mess but it didn’t mention meringue in the description so went for the Ecclefechan Butter Tart instead, so hubby went for the Selkirk Mess. When it arrived it did have meringue and was light, fruity, lovely and I was miffed I didn’t have the pleasure of eating it all. But my Ecclefechan tart was lovely, the slight sweet spices in a very moist mix was delightful against the whisky ice-cream, which had been spooned into a brandy-snap case. In fact I would have been quite happy with the ice-cream in its case it was so tasty. In summary - the menu is extensive, the atmosphere is friendly and informal, the food is very good. Negative comments are minor points that wouldn’t stop me wanting to go back very soon or recommending to others. Only advice is to either get there early, it is busy for very good reason, or enjoy a pint of Sulwath’s Galloway Gold or Selkirk Grace before you get a table. Dalbeattie High School A Day at the Races In September the DBTMcNish Racing Team from Dalbeattie High School took a trip down to the famous racing circuit at Silverstone. One Friday the team travelled down to Milton Keynes where they were given a very special tour of the Red Bull Racing Factory, which was arranged by former formula 1 driver David Coulthard. Then on the Saturday, the team were privileged enough to be given VIP passes for the circuit and given a tour of the BRDC clubhouse. Allan McNish, the teams mentor, greeted the team and showed them around the Audi pit lane. The team then spent the Sunday in the BRDC farmhouse and watched the 6 hours le mans from the VIP stands, watching as Allan raced, and unfortunately crashed! Nevertheless, Allan managed to pick up the speed and finish fourth. The team then retreated back home to Dalbeattie after a fun filled weekend!

HELP REQUIRED: The team are now currently seeking sponsorship from local businesses to help them compete in the formula gravity races this academic year. Time Out

Parton Village

This month’s historic photograph from The Stewartry Museum collection is taken from a post card view of Parton village dating to about 1910. This picturesque terrace of cottages was built in 1901 by Benjamin Rigby Murray, who lived at nearby Parton House and owned the Parton Estate. The building immediately on the left with the clock tower was a communal laundry and behind the terrace was an octagonal-shaped privy, serving all the cottages. In the distance can be seen a granite horse trough set with an obelisk. The Murray family originally came from New Galloway, but became very successful as cotton mill owners in Manchester from the late 18th centuary. The Weather Outside is Frightful. So what should you do if, unlike the revellers in the song, you have places to go? Debbie Singh-Bhatti knows.

One Boxing Day morning several years ago, I made a mad dash to a neighbouring town to hunt through the sales for a Christmas present I’d forgotten. I was low on fuel, but couldn’t find a service station open so decided to risk it. I ended up on the hard shoulder of the motorway. The police officer who came to my aid admonished me. “Don’t you realise how dangerous it is to head out in these conditions not fully prepared?” So, how can we best prepare for winter driving? The first and most obvious thing is to conduct regular maintenance checks on our vehicle. Ensuring that the oil, water, tyres, lights, battery, wipers, screen wash and brakes are all topped up and in good working order can help avoid breakdown or accident. And don’t forget to keep an eye on fuel levels too! In addition, it is a good idea to kit the car out with a basic winter survival kit. This could include de-icer, an ice scraper, shovel, tow rope, jump leads, torch, first aid kit, map, blanket, energy food, bottled water, spare clothing and footwear, regular medication, and breakdown membership details! In addition, never venture out without cash or cards and a 12

charged up mobile phone. So what else can you do once behind the wheel to increase your chances of safe winter driving? Whether facing snow, ice, rain, fog or wind, the advice is basically the same – stay alert, slow down and keep your distance. Remember to look ahead as you drive. For example, watch for early signs of ice – does the road ahead glisten, and does the steering feel suddenly light? Drive more slowly than usual, and make sure you accelerate, steer and brake gently to reduce the risk of skidding. Apply the two second rule, (time the gap between your vehicle and the one in front) to give yourself more stopping time. In addition, it is important to see and be seen, so use dipped headlights in rain, snow or fog, and keep the air conditioning or demister on to keep your windows clear. If, however, you do find yourself in a skid despite your best efforts, it is important not to panic! Your instinct may be to brake and steer out of trouble, but the best plan is to take your foot off the brake, step on the clutch, and steer in the direction of the skid. To do this, look where you want your vehicle to go and steer towards that spot, being careful not to over steer. Although the advice we often receive these days is to stay at home when the weather is bad, we all know that sometimes this is unavoidable. In addition to following the advice above, before setting out on any journey let your family or friends know where you are going, what route you plan on taking and what time you expect to arrive. Allow yourself extra travel time, keep the radio on for regular weather or road reports, and don’t forget to clear snow and ice from windows, mirrors and the roof!

Working with Salon Director Gill Goldie, Carolyn devised a comprehensive 100 week in-house training programme to run alongside the Level 2 SVQ in hairdressing to give the trainees the best in house salon training at the pace that suits them as individuals. Since Prana prefers to ‘grow’ their own Stylists. And hair product company Aveda has a fresh approach to the Hair and Beauty industry, Carolyn was driven to develop the training side of the business with High School Students and approached Castle Douglas High School to identify school leavers who had a passion to work with hair. This relationship has developed over the years with the Salon being involved in many areas of the school’s life - Prana’s approach to training and working collaboratively with education providers was highlighted on a DVD for the Scottish Executive outlining the curriculum for excellence. Last year a 5th year pupil approached the salon, taking this joint working a step further. The pupil requested timetabled weekly work experience in the salon. This gave her a greater insight into the career than a week’s work experience could every provide – she realised over the period of the academic year that this was the career path she wanted to follow and is now working at Prana and studying for her SVQ Level 2 Hairdressing qualification. Taking it a step further the Salon is now working as an Outreach Centre for Castle Douglas High School involving a long-term work experience programme where students can receive a qualification. Working alongside the High School Prana is set to achieve accreditation by the SQA Intermediate 1 and Intermediate 2 Hairdressing modules in Salon. Currently 2 pupils, Hannah Malcolm and Nadine Wright, pictured above, are working on these programmes and is hoped pupils from other schools will soon be able to get involved. Through her focus on training and a commitment to enhancing the guest experience Carolyn has created a thriving business that’s at the very heart of its local community, actively supporting local fundraising initiatives and events.

Kid’s Winter Health Don’t let the bugs win the health battle this winter. We have an innate power to heal ourselves as long as we take care and prepare. We thrive in happy, stress and pollution-free environments, with sufficient healthy foods and drinks, fresh air, sunshine, exercise and sleep. However our immune systems can take a battering at this time of year and children are particularly vulnerable. Vegetables and fruit are essential eating, due to the antioxidants, vitamins and minerals they contain, especially vitamin C and the B vitamins that help deal with stress. They are also alkaline-forming, neutralising acids formed by fizzy drinks, additives and high sugar levels associated with junk food. If your children won’t go for the greens try hiding them by finely chopping and mixing with minced meat. Make smoothies and blend soups. They can even grow their own cress for egg and cress sandwiches. Sprouted seeds contain many more enzymes than just fruit or vegetables. Enzymes are destroyed in cooking so some food should be eaten raw. Try carrot, celery and cucumber sticks. Children need 3 meals and 2-3 snacks a day to sustain energy levels. Tiredness reduces immunity. Choose wholegrain cereals for breakfast such as oats, rather than refined sugary cereals. Soak overnight and then top up with honey and hot milk, preferably full fat and organic. Try goat or buffalo milk if your child is hyperactive and over-emotional, as this may indicate difficulties digesting casein, the cow protein. Add chopped nuts, seeds, fruit and live yogurt. Protein breakfasts will fill them up and aid the brain. Scrambled eggs or sardines on 14

wholegrain toast are healthy options, with fruit for morning playtime. Muesli bars are useful standbys but check for excess sugar, which lowers immunity. Buy the homeopathic remedies, Aconite and Gelsemium 30c, helpful at the first signs of a cold. Give one Aconite pill if they come home chilled and can’t seem to get warm. Chills lower immunity so stock up on warming spices. In America cayenne was sprinkled in shoes, so lots of cosy orange feet! You may prefer to add it to stews and soups? Homemade chicken soup with drumsticks and extra onions is very nourishing. Add fresh garlic, sage and thyme to boost immunity. Lemon, ginger and honey tea will keep them warm and ease sore throats and coughs, as will Propolis lozenges. The herb Echinacea aids healing and regulates the immune system. Echinoforce by Vogel is suitable for children over 5 years of age. Give the maximum dose at the first sign of a cold and once a day as a preventative. A vitamin D supplement is also a good preventative. Always follow instructions for children and remember that any aspirin based cold treatments are unsuitable.

Recipe of the Month:

A Warming Autumnal Recipe

Ingredients: Sauce 60ml tomato ketchup 4 teaspoons rice wine 4 teaspoons soy sauce 2 teaspoons sugar 2 teaspoons pureed apple or apple sauce 4 teaspoons rice wine vinegar 4 teaspoons mustard 1/4 teaspoon ground allspice 1/8 teaspoon ground clove 1/4 teaspoon garlic powder

Enough for four large peppers

Filling 350g cooked brown rice 1/2 onion, finely chopped 1-2 cloves of garlic, crushed. 2 teaspoons fresh ginger, finely chopped. 120g any squash, chopped into small cubes (butternut is lovely) Note: You can add any finely chopped leftover vegetables of your choice. This is a very versatile recipe. Method For the Sauce, place all the ingredients in a sauce pan and bring to a boil, stirring all the time. Then reduce heat and simmer 20 minutes, stirring occasionally. Preheat the oven to 180C (160C fan) Gas mark 4. Combine the filling ingredients in a big bowl Keeping the peppers whole, cut a hole around the stalk then remove it and the seeds. The hole should be large enough to make stuffing the peppers easy. Stuff peppers with the filling Sprinkle with Panko breadcrumbs Place in a greased, ovenproof dish and bake for 35-40 minutes. Serve with the sauce. Note: Panko is a Japanese crunchy breadcrumb topping, which can generally be found in the oriental aisle at the supermarket. If you can’t find them, use ordinary lightly- toasted breadcrumbs instead. 18

CatStrand’s Cultural Section At the start of November (Friday 4th) to help launch our new Winter programme of events, the CatStrand will be packing its bags for Dalry Town Hall which will play host to Uncharted Waters, a haunting contemporary circus performance which tells its story using Chinese pole and aerial fabrics – be mesmerised by the story and amazed by the skill of the performers. The audience travel through the ebb and flow of worlds on the edge of reality swept away by stunning imagery and haunting music. We are very grateful to the Lochinvar Hotel, Dalry for supporting this production. The truly inspirational Mark Inglis will be appearing at the CatStrand on Wednesday 9th Nov at 7.30pm to take us on another fascinating journey inspiring us all to embrace challenge and to develop the attitude to excel in all we do. Between losing his legs at 23-years-old due to frostbite and then going on to be the only double amputee to have stood on the summit of Mount Everest, Mark has carved out careers as a scientist, a world recognised winemaker, sportsman, trekking guide and a leading International Motivator. In 1982, Mark was stuck near the summit of Mount Cook for 14 days. As a result he lost both legs below the knees to frostbite. He went on to become a research scientist with a first class honours degree in human biochemistry, developing molecular genetic techniques to aid in the diagnosis of leukaemias. That career later evolved into winemaking with one of New Zealand’s leading winemakers. This event is funded through the Oxygen project - a partnership between Creative Scotland and The Royal Commonwealth Society. On 27th November, fiddlers Jenna & Bethany Reid take us on a journey on The Shetland Bus, the secret operation between Scotland and German occupied Norway during WWII. This astonishing story uses a mix of music and narration to follow a story of survival in the hazardous terrain of Norway. We hope you will join us as we embark on a fascinating journey through Uncharted Waters to Everest and World War II Norway but we also look forward to welcoming you at our other events, workshops and activities taking place at the CatStrand this winter. There is a misconception that mountain biking is a seasonal sport, but that couldn’t be more wrong. The 7stanes offers cycling all year long and Autumn/Winter is especially beautiful. Why not try the blue-graded Moyle Hill route at Dalbeattie. A good introduction to riding 7stanes singletrack - and to the granite rock that gives Dalbeattie a character all of its own offering some cracking views and fun riding. It is classed as moderate and is suitable for cyclists and mountain bikers with basic off road riding skills. The trail starts at the skills area and takes the easy line through the red & black grade options before joining up with the red route for the long, straightforward sections of raised timber trail that take you across the bogs of Richorn Plantation.Exiting onto a forest road you now climb steadily around the side of the Moyle Hill to a welcome rest at the high point. Back on your bike and a short road descent leads to a section of fast-flowing singletrack that eventually spits you back out on to the road again near the bottom of the hill at Barnbarroch. Another steady climb takes you around the fringe of the forest before easing off to take you on a loop into the middle of the forest and the open marshland of the 'Dry Loch'. Cloak Hill, a very sweet Photo by Stuart Pitkeathly section of trail now follows with a few small rocky and rooty sections thrown in, before more easy forest road and singletrack take you around Cloak Hill to meet the outward route. Heading back down the road leads to the final section of trail around Volunteer Ridge and back Moyle Hill: Distance: 14km, 40% singletrack to the trail head - a fitting Estimated time to ride the route: 2 - 3 hours end to this fun-filled ride.

It’s Panto Time Again! (altogether now - oh no, it’s not . . . oh yes, it is!) This year The Birchvale Players’ pantomime is the old favourite Goldilocks and the Three Bears - although with a new twist in this version. The junior members will all have some input in the show, mostly as actors, but some helping with make-up, making props, painting, working both front of house and backstage. Familiar adults will be in the typical panto parts; Kris McGhie as Dame Dolly, Stephen Carruthers as the ‘baddy’, Matthew Pumphrey as the eccentric Professor, Barbara Johnstone as his assistant Igor, Pam Winter, again, as the Fairy Godmother and Glyn Bone playing ‘the fool’ as usual! Beth Dixon is playing her first leading role as Goldilocks, with young Louie Forsyth as Baby Bear and poor Christopher Wilson as the back-end of Buttercup the Cow! Other juniors will back them up as villagers, brownies and in various cameo roles. Rehearsals have started in ernest now the October production is over. The show will be ‘on stage’ from Monday 5th - Saturday 10th December at The Birchvale Theatre (Dalbeattie’s little theatre) in the grounds of the Primary School. Party Politics How to survive the office bash The annual Christmas knees-up is a social occasion that gives employers the opportunity to reward staff for their hard work during the year, but it is still a business event and has an unwritten code of conduct. Here's how to get through it without making a faux pas that will have you cringing for months. First of all, do attend – if only for half an hour. It’s disrespectful and shows indifference if you do not, and could hurt your reputation. Be on time and don’t forget to thank the person responsible for the planning and coordinating of the party. The office party is an opportunity to improve relationships with co-workers and management, so create a good impression by showing respect and courtesy to everyone (remember you are being constantly observed). Be friendly and remember that the party isn't the place to persuade your boss to promote you, or provide you with that new type of chair that's good for your back! Dress to impress, but don’t overdo it! Check if the dress code is formal or casual, and resist the urge to wear anything too revealing or too flashy. Though the party's a chance to wear what you like, be aware of the impression you are putting across. Keep your reputation for good taste intact.

Garden View November ‘Protect & Insure’ You'd be forgiven if you thought this was an article about finance, but it's important to protect tender perennials and take cutting material to over winter as a ‘plant insurance policy’. Although it's now too late to take semi ripe cuttings (this should be done in July/August) the best way to protect your tender perennials such as Salvias and Pelargonium’s is to lift them and bring them into a greenhouse. If you have a heater, this should be set to the frost setting (or ideally around 5C) and if you bubble wrap your greenhouse for additional heat conservation, the heater will only need to kick in on those extremely cold days and nights. Tender bulbs and tubers such as dahlias should now be lifted (once the foliage has been blackened by the frost) and placed in a box of sand in a dry, dark, frost-free location. Borderline hardy perennials such as Agapanthus, which are generally happy to be left in the ground with a little protection, are best left undisturbed, but with a generous quantity of well rotted compost or bark mulch added to the top. This can be removed from directly around the crown of the plant in spring, and will help retain moisture throughout the spring growing season. Leaving plants like this outside after last winter is a risk, but short of moving the garden into the garage each winter, I figure the line has to be drawn somewhere! For those hardy horticulturalists who like me, enjoy working in the garden on a cold crisp day, November sees the beginning of the bare root planting season. Before the invention of the plastic pot, November to March was the only time in which plants such as roses, hedging and trees could be moved, and those planted in winter, in my experience do exceptionally well. Jobs to do this month: Spring bulbs should now have been planted, however it’s not too late if you have them still to do. In particular, tulip bulbs are best left until this month, as the less time they are in the ground the less chance they have of getting a virus called tulip fire blight. Plant garlic cloves if you have a free draining soil. The general advice is 'only if you live in a mild area' but after mine survived last winter in a raised bed, I think it's probably more to do with heavy wet soils than the temperature. Dig over the vegetable plot, leaving clods to break down over winter Finally, leaves should be regularly collected from lawn areas where they will deprive the lawn of what little light we have at this time of year. SCOTLAND’S BIRD CLUB - THE CLUB FOR BIRDWATCHERS Interested in birds and birdwatching? If ‘yes’, why not come along to the Stewartry birdwatchers’ meetings? Officially we are called the Scottish Ornithologists’ Club (always shortened to S.O.C.), but do not be put off by the scientific-sounding name! The word CLUB is the important one. The Stewartry Branch of the S.O.C. is a group of birdwatchers who meet for talks once a month on a Thursday from September to March or April in Kells School, New Galloway and the more active members go out birdwatching at least once a month throughout the year – weather permitting! These excursions are usually to interesting places here in south-west Scotland looking for butterflies, flowers, insects and mammals as well as for birds. However, this year to celebrate the 35th anniversary of our local Stewartry Branch, two special trips took place. The first was a cruise of the Paddle Steamer “Waverley” around Ailsa Craig to view the magnificent spectacle of the thousands and thousands of seabirds which nest on the cliffs of that island and the second was to the lovely gardens and castle of Culzean. As well as going on local walks Stewartry birdwatchers arrange short breaks of three or four days to other parts of Scotland and this October Montrose was the venue to see the thousands of wintering geese and waders. In addition our annual week ‘up North’ in May or June has included destinations such as Lochinver, Islay, South Uist, Speyside and Skye. The S.O.C. founded in 1936 is 75 years old this year, and now has 14 branches throughout Scotland. The headquarters are in Waterston House, Aberlady; four times a year a well-illustrated magazine is published; two conferences are held every year; and a programme of eight lectures is arranged for each of the branches.
