Insurance Services 101 • Advertising Partner since 2011

The best business decision I ever made was to advertise in South County Magazine - I’m proud to say that I have been participating since the very first issue. I have gained several hundred clients over the last decade due to my ad, and several hundred more from the referrals of my ad clients. I have a steady flow of business all year long, and South County Magazine has a lot to do with that.

“Local print advertising is an essential part of our marketing strategy. During all these years in business, I have found Jody’s HB Magazine to be the place to call home for our local print advertising. Not only is Jody very accommodating and easy to work with, she really cares about us and has become a part of our business family. Her magazine feels like Huntington Beach: friendly, smart, pro-business and fun. I highly recommend HB Magazine to anyone who is looking to advertise locally.”

Iwas doing a bit of research on word origins recently in helping my son with a high school assignment. I discovered the root “hospes,” which comes from “hostis.” But what was interesting was that the etymology actually branches off into “host,” “guest,” or “stranger.” And gives us the word hospitality.

As defined, hospitality is “the friendly and generous reception and entertainment of guests, visitors, or strangers.” In giving my son examples of real-life application, I thought of Jay Minor. As the owner of Assisted Living Locators, Jay lives the term hospitality as a daily discipline and practice. Those he serves would likely describe it as life-changing.

In March of this year, Jay purchased and opened Assisted Living Locations, a no-cost (to the client) senior living placement service whereby Jay and his team help those in need navigate the confusing landscape of assisted living and memory care.

"We take a very personal approach to helping our clients, from personally accompanying them on every community they tour to providing trusted resources to aid them in every step of their journey," he says. "We have a long list of specialists that we rec-

ommend for senior real estate transactions, reverse mortgages, moving, downsizing, insurance, healthcare options, insurance needs, hospice care and more."

Doing the hard work of researching, scheduling, and making phone calls is just the tip of the iceberg - the real job is to ensure that their clients find the right place for their loved ones to receive the care they need. Like the textbook definition of hospitality, Jay's goal is to be a helpful advocate and guide clients through the entire process at no cost to the client.

A Certified Senior Advisor® and Dementia Care Certified®, Jay was formerly a pastor for nearly 25 years and "always loved helping people navigate through life's transitions."

"When I was searching for a new career after transitioning out of the ministry, I remembered watching my parents and my in-laws all go through every stage of senior living, even up through memory care and hospice. It was an incredibly difficult journey and I often wished I had someone to guide me and answer questions," says the father of four grown children. "When the opportunity to open a senior living placement agency presented itself, it was a very easy decision. I wanted to give myself to serving my clients who might be going through a difficult time, and perhaps, give them the support that I wish I had been given when I was on my own journey."

Jay is also a member of the Foundation of Senior Services, a non-profit

organization whose mission is to provide seniors and their families with education, options and resources so they can choose quality care and support that will help preserve their independence for as long as possible.

"I understand how difficult and challenging searching for assisted living can be," says Jay, who lives in Ladera Ranch with his wife Traci. "I want to be your partner to help you find the care that your loved ones deserve." An act of kindness next on my list of word origins to look up.

Your Kitchen with kitchen tune-up

I’d go out on a limb pretty easily in support of the claim that most processes exist as a response to an existing problem. Such was certainly the case for local business owner Kim Wilbur when she found herself at the all-too-familiar crossroads between a kitchen contractor estimate and the final bill.

As a local owner of Kitchen Tune-Up (a national franchise with over 36 years of expertise and ranked the #1 Kitchen Remodeling Franchise on Entrepreneur’s Franchise 55), Wilbur is dedicated to serving South OC residents with a personal, straightforward, “no surprises” approach. No matter the level or complexity of your kitchen remodel, Kim and her team are committed to helping you make your kitchen just as you want it – a welcoming, serene and stylish space.

“We give you a detailed proposal before we start the project, and we stick

to it,” says Kim. “We put everything in writing so there are absolutely no surprises along the way.”

There’s also no second-guessing whether or not the photos you saw in the glossy magazine were an actual kitchen or a rendering. And the real kicker is that if you like the bones of your existing kitchen and your cabinets are structurally sound, then a tune-up might be all you need.

Kitchen Tune-Up specializes in five core services: the original kitchen tune-up, which is an artistic restoration of original factory finished cabinets, cabinet painting, redooring, refacing and custom cabinets. Every step of the way, you’ll be greeted with collaboration, and a bespoke solution to your specific needs.

Looking for an updated kitchen style? Refresh without replacing all the cabinets by simply replacing the doors and drawer fronts. Kitchen seem dark and dated? Crave a pop of color?

Kim’s cabinet painting service offers a cost-effective transformation whereby your cabinet doors and drawer fronts are whisked away for cleaning and painting and reinstalled for a fresh look.

Every step of the way, you’ll be greeted with collaboration, and a bespoke solution to your specific needs.

“Our commitment is to tailored fixes or custom creations right alongside outstanding service,” says Kim. “Ensuring your space remains functional and timeless no matter the update, we strive to truly make your kitchen the heart of your home.”

Discover Premium Designs and Tailored Solutions for Every Room

In interviewing scores of entrepreneurs over the last 20+ years, I’ve learned that sometimes a business owners’ career trajectory is a straight line. For others, finding their true calling might have taken a bit more of a circuitous route. But in virtually every instance, the most successful professionals are those who are passionate about what they do. So much so that their daily responsibilities don’t feel much like work at all.

Such is the case for Cesar Jimenez and his wife, Adria, who initially followed a different path before finding their shared passion for the home improvement industry. Today they own and operate a number of local businesses, including the San Clemente-based Coastal Shades, which specializes in motorized window coverings, blinds, interior and exterior shades, shutters and drapery.

“My previous career had me traveling all over the country selling hardware and software for a telematics company,” says Cesar. “After years of living the traveling-salesman life and missing out on a lot of time with my wife and daughters, I decided to look into other career options.”

Sitting on a park bench on a family vacation in Colorado, watching his kids ice skate, Cesar’s wife turned to him and asked why not start a business there? The very same day they started the search, they found a gentleman selling his window coverings company. When one door closes, a window opens, but not many blow open quite so quickly following the decision to make a life change. They immediately began the purchasing process, and a few short months later moved to the Centennial State to watch their new business flourish.

When deciding to relocate to San Clemente to be closer to his wife’s family, the couple were excited for the opportunity to “be a part of the community for which we have such fond memories.”

Although new to the area, Cesar and Adria bring years of experience to Coastal Shades, the sister company of North County Blinds, a respected name in the window-covering industry in San Diego since 1985.

“Continuing the legacy of excellence set forth by North County Blinds, Coastal Shades brings decades of experience, knowledge, and expertise to every project we undertake,” says Cesar. “Our team of highly skilled professionals are passionate about creating stunning window treatments that perfectly complement any space.”

The hallmarks of Coastal Shades’ service includes top-quality craftsmanship, personalized attention to detail, and a steadfast dedication to ensuring that every customer’s vision is brought to life.

“We take pride in offering a wide range of design options, utilizing the latest materials and technologies to provide our clients with the best solutions for their unique needs,” says Cesar. “Our goal is to make your buying process as simple as possible. And our specialty is offering a customized, bespoke experience where we eliminate the headache. That’s it.” Sounds like a worthy goal to pursue after all.

The Artist Tree Experience Cannabis Reimagined

I’m not your typical art gallery-goer, but I have to say I was intrigued by the concept of a cannabis retail space that also happens to be a functional art gallery.

As the first licensed recreational cannabis dispensary in Laguna Woods, The Artist Tree differs from any other cannabis or retail brand. With nine stores and two consumption lounges across the state – with two more opening in 2025 – The Artist Tree was created with the mission of enhancing local arts through cannabis. Each of its dispensaries offer a distinctly unique, immersive shopping experience with a welcoming vibe that appeals to both regular cannabis users and novices.

Moreso, the Artist Tree’s origin story is fascinating. Lauren Fontein started her career as a corporate attorney in Los Angeles after graduating from UCLA’s prestigious law school. Sensing a need for direct service to the hundreds of medical dispensaries in the area, Lauren transitioned to the cannabis industry, and a few short years later founded The Artist Tree with her

partners. Serving as Chief Compliance Officer since 2018, Lauren handles licensing and legal matters, but additionally oversees the art program and community benefit efforts.

With deep roots in the cannabis community and having operated licensed dispensaries for over 13 years, Lauren and her partners sought to “shatter stereotypes surrounding cannabis consumption by creating welcoming, inclusive and innovative venues that promote cannabis exploration and local arts culture.”

“We want to be known for looking unlike any other cannabis dispensary,” says Lauren with a subtle nod to the closed-off, dim, big-box cannabis retailers. “Our open floor plans, floorto-ceiling windows, and numerous art displays all provide a unique venue for consumption, community, and classes.”

The Artist Tree features a variety of events that pair well with cannabis, including open mic nights, painting and sound bathing classes, stand-

up comedy nights, and even … (pun completely intended) “high” tea. Prefer to enjoy in the privacy of your own home? Delivery is available daily from 12 pm – 7 pm.

With over 900 different items, The Artist Tree has options for every customer – from traditional flower, prerolls and vape items and microdosed edibles and CBD heavy edibles to topicals and tinctures – and offers 30% to 50% off premium brands every day.

To Lauren and her partners, the business isn’t just for twenty-somethings chasing the next venue. As such, “we specifically tailor our spaces to the communities we serve - our Laguna Woods location caters to the many seniors who reside nearby with great deals on a wide selection of both traditional and non-traditional products.”

Cefali & Cefali, APC

Trusted Accident Attorneys for the Most Serious Injuries

It’s a remarkable feeling when you can find someone to take your side. In relationships, sports: you name it. That one person who believes in you, makes you better, fights alongside you.

Michael Cefali matched with his person (his wife Courtney) long before law school - but their partnership extended through the long years studying for the bar and paid off in an even match that has stacked up in their favor many times over. Graduates of Chapman Law and California Western, respectively, they started the San Juan Capistrano-based Cefali & Cefali, APC in July of 2019 and have been fighting for the little guy ever since. From setting clients up with top-tier doctors and specialists, to negotiating stellar settlements, Cefali & Cefali, APC handles cases from start to finish with client health as their top priority.

Focusing on all aspects of personal injury, the Cefalis are what you might expect in such a ring: passionate, aggressive, and most importantly, honest - all traits that have contributed to the couple having recovered millions of dollars per year on behalf of their clients since opening their firm.

“The insurance companies would like you to think that they get to determine the value of your injuries, your suffering,” says Michael. “We’ll fight for every last penny because we know that you deserve it.” Clients appreciate the work that the Cefalis do. In fact, as of the date of this publication, you won’t find a single negative review of their firm anywhere on the internet.

Client Jamie shares, “I am so grateful for everything that Mike Cefali and his team did for me! Not only was he able to help me get what I was owed in my settlement and then some, but he was so responsive and kind and it was very apparent that he cared about me and my case! He and his team are so HONEST and FAIR and it was clear from start

to finish that he had my best interest in mind! Not only is he a good lawyer but he is a good person which made a world of difference for me. I could not have asked for a better experience with a personal injury attorney! I have already recommended him to all of my friends and I will continue to recommended him to anyone looking for a good lawyer! Thank you so much Cefali and Cefali!”

Another client Carrie echoes Jamie’s sentiment, “My husband and I were rear-ended on the freeway. We felt bad thinking of contacting a lawyer, but after several months of continuous pain and medical treatments, a friend recommended Michael Cefali. From the beginning, he lived up to his core values of integrity, loyalty, and vigorous advocacy. Michael is a dedicated, friendly, and competent attorney who seamlessly represented our interests and ensured the outcome was in our favor. He treated us not like a client, but like family; he was there any time we needed him. He was empathetic to our situation and worked tirelessly with all parties to represent us. We don’t trust many people, but we trust Michael and his team and would highly recommend him to anyone seeking a professional, effective, and focused attorney.”

With five staff members to back up the stellar work Michael and Courtney produce, the couple remain incredibly hands on, based on a culture of empathy, integrity and advocacy.

“We craft each case personally, build each one for trial, and remain accessible to clients,” says Michael. “Personal injury attorneys get a bad rap when really we’re the good guys. I like to think of our firm as a pirate ship. Nimble, clever, and tenacious in spite of being outspent by the adversary, we pry money from greedy insurance companies and give it to our very deserving clients.”

Giving back is the spirit of the firm, and community work creates a direct link between Michael, Courtney, and their circle in San Juan Capistrano. The couple and their team proudly supports a number of local charitable and community organizations including: The Boys and Girls Club of Capistrano Valley (Courtney is on the Board of Directors), The San Juan Capistrano Friends of the Library (Courtney is also a board member), CREER, the Pacific Marine Mammal Foundation, and Project Coyote. Michael is a member of the San Juan Capistrano Rotary Club and has been recognized as a Paul Harris Fellow.

The Cefali team’s ethics, constant communication (every client is given Michael’s personal cell phone for easy accessibility), commitment to their clients and involvement in the community keeps everyone growing stronger and healthier together. Remarkable isn’t it, that feeling when someone takes your side?

What it Means to Age in Place

Home is a refuge of familiarity and comfort for many people. As we age, we are frequently reminded of the qualities and experiences that have bonded us to our homes, while tugging at our desire to retain our independence as we choose the familiar surroundings of home. We call this desire “aging in place.”

The United States is seeing an unprecedented growth in the 65 and older population due to the aging baby-boom generation. According to the U.S. Census Bureau, by 2050,

the number of Americans aged 65 and older is projected to increase by 47% to 82 million from only 58 million in 2022.

According to the National Council on Aging, 88% of seniors want to live at home or age in place, for as long as possible, versus transitioning to other options, such as a senior residential or assisted living facility. The great news is that more older adults can meet their daily care needs in their own home, with some type of inhome support, allowing them to age in place for as long as possible. Many people assume in-home care is expensive, but in most cases, it costs less than moving into a senior living facility.

When considering aging in place, the types of care vary and are dependent on the needs of the aging adult. The key to aging in place is helping the older adult continue doing the daily activities needed to help them function comfortably and safely in their own home. In most cases, the support includes activities associated with companionship, which typically involves helping with errands, grocery shopping, light housekeeping, meal preparation, medication reminders, and social engagement. It also can include personal care, which involves help with bathing and grooming, dressing, bathroom needs, mobility assistance, and assistance with eating and drinking (activities of daily living or “ADLs”). Finally, it includes “respite care” which provides support for a family caregiver who has taken on the sometimes-challenging task of caring for their own family member.

There are significant health benefits of aging in place noted by multiple publications and research studies. The Journal of Applied Gerontology reported evidence that in-home caregivers not only provide functional support to aging adults, for example, mobility help, meal preparation, personal care, etc., but they also enhance and strengthen the physical and mental well-being of those they care for.

Keep in mind, if you are deciding between aging in place using in-home care or transitioning to other options, the first step is to consider the type of help you need now and what you may need in the future. There are other important considerations, such as how well your home meets or can be adapted to your current needs, future anticipated physical needs, and ensuring your surroundings are safe and secure. It is also important to talk with your family, friends, and even your healthcare provider about what they feel you need to successfully age in place.

The need for professional caregivers will continue to rise dramatically given the magnitude of the aging population in the U.S. Finding the best caregiver that is a great fit for you, your needs, and your personality is essential. The

caregiver selection process should not be overlooked and is an important part of the planning process.

It is strongly recommended that you work with an in-home caregiver agency that is licensed, bonded, insured, and directly employs the caregivers. The benefit of an agency is that they absorb the risk by conducting criminal background checks, DMV checks, drug testing, reference checks, ensuring completion of all State-required training, carrying liability and workers compensation insurance and by complying with all labor law regulations.

You should use caution when considering a private caregiver from a registry or hiring independently. Keep in mind that you become their employer, which means you assume all the risks, including work-related injuries, theft, violation of employment laws, keeping up with payroll and payroll taxes, liability insurance, and workers compensation.

Aging in place is a desire shared by most older adults as they progress on their aging journey. It is considered by an overwhelming majority of seniors as an important life choice goal that allows them to maintain autonomy, familiarity, dignity, continued strong social, community, and family engagement, as well as better physical and mental well-being. Aging in place is simply a better choice for many aging adults.

How Can I Tell If I Have Skin Cancer?

There are three main types of skin cancer: basal cell carcinoma, squamous cell carcinoma, and melanoma. Because each has many different appearances, it is important to know the early warning signs.

Look especially for change of any kind. Do not ignore a suspicious spot simply because it does not hurt. Skin cancers may be painless, but dangerous all the same. If you notice one or more of the warning signs, see a board-certified dermatologist right away, preferably one who specializes in diseases of the skin.

ACTINIC KERATOSIS

An actinic keratosis (AK) is a crusty, scaly growth caused by damage from exposure to ultraviolet (UV) radiation. An AK is considered a precancer because if left alone, it could develop into a skin cancer. AKs are the product of a lifetime accumulation of UV damage and typically appear on areas most commonly exposed sun, such as the backs of the hands, forearms, face, neck, and scalp.

SQUAMOUS CELL CARCINOMA

Squamous cell carcinoma (SCC) is an uncontrolled growth of abnormal cells arising in the epidermis, the skin’s outermost layer. SCCs often look like scaly red patches, crusty bumps, warts, or elevated growths with a central depression. SCCs may appear suddenly and some forms are tender to touch. They can become disfiguring and sometimes deadly if allowed to grow. More than 1 million cases of SCC are diagnosed each year in the U.S., which translates to about 115 cases diagnosed every hour. Incidence has increased by 200 percent in the past three decades in the U.S., and more than 15,000 Americans die each year from this type of skin cancer.

BASAL CELL CARCINOMA

Basal cell carcinoma (BCC) is the most frequently occurring form of all cancers, with more than 4 million cases of diagnosed in the U.S. each year. BCCs may look like open sores, red patches, pink growths, shiny bumps, or scars. Any skin lesion that doesn’t heal, or bleeds with even gentle trauma, such as drying with a towel, is concerning for a BCC.

MELANOMA

Melanoma is a very dangerous form of skin cancer. Melanoma is caused mainly by intense, occasional UV exposure (frequently leading to sunburn), especially in those who are genetically predisposed to the disease. An estimated 178,560 cases of melanoma are diagnosed in the U.S. each year and is fatal for an estimated 9,320 of these patients. Fortunately, if melanoma is recognized and treated early, it is almost always curable.

WHAT PATIENTS NEED TO KNOW

1. Everyone needs to perform a self-skin exam once a month.

2. Melanoma can appear anywhere on the skin, including the palms/soles, under your nails, and places...for most, have never seen the light of day (genitalia). For this reason, it is important to look everywhere. Lock the bathroom door, get out a hand mirror, and check, it could save your life.

3. What to look for: ABCDEs, and an ugly duckling

A - Asymmetry: If I draw a line down the middle, do the sides match?

B - Border: Is there a nice crisp border, or does the mole melt into the surrounding skin?

C - Color: Moles should be one color, one shade of brown. Is there a variety of shades or additional colors, such as black, red, white, or blue?

D - Diameter: Any mole larger than 6mm, ie the head of a pencil eraser, has a higher risk of becoming melanoma.

E - Evolution: Has it changed?

F - The Ugly Duckling Sign: Most people have a “signature mole,” their own personal mole appearance and architecture. Is there a mole that seems different from all the others?

4. Everyone needs a full body skin exam by a board-certified dermatologist once a year, more frequently if you have a family history of skin cancer, a personal history of skin cancer, or live in an area with substantial sunshine.

Ivan Ho, DDS – Pro Smiles OC Committed to Exceptional Care

Ask a teenager what career path they're interested in a pursuing and you'll likely hear a different answer in each year of his or her high school career. Which is why I was all the more impressed when I learned that Ivan Ho, DDS used to tell customers at his first job bagging groceries that he wanted to be a dentist. At the age of 15, mind you.

All throughout my youth, I wondered why people didn’t like going to the dentist. That all changed when I moved away from home to go to college, and had to find a new dentist for the first time. That experience opened my eyes to how intimate dentistry is and how vulnerable you feel if you are not comfortable in the dental office.

Your smile/mouth is the first thing people notice when they speak to you. Finding someone you trust to take care of your dental hygiene is im perative to enjoying the confidence a beautiful smile gives you. Dr. Ho is one of those select few dentists you can trust. From the moment you meet him, you are immediately touched by his warm nature and empathy.

Dr. Ho has been caring for patients for over twenty years and has won numerous awards and reviews that focus not only on his excellency within dentistry, but also the warmth with which he treats his patients - as welcome guests and friends.

As a University of Southern California School of Den tistry graduate and an award-winning boardcertified dentist, Dr. Ho lectures nationally and internationally about both cosmetic and implant

dentistry and was recently named a Diplomate of the International Academy of Dental Implantology (IADI). His expertise and warm demeanor have earned him the respect and trust of both colleagues and patients.

“As a doctor myself, extensive knowledge and expertise is important, says Patient Steve H., MD. “Dr Ho is truly an expert!”

Local school teacher Angela P. echoes the sentiment and adds: “I’ve been searching for a dentist with honesty and compassion, I found Dr Ho through a co-worker and refer all my friends and family to him.”

Dr. Ho has had more than his fair share of time in the dental chair as a patient. This has given him the unique perspec-

“I had extra teeth and gum issues that required multiple gum and oral surgeries from my childhood all through my adolescence,” says Dr. Ho. “Despite the many and varied procedures I went through, I was fortunate enough to see wonderful providers and I was extremely grateful for the care they gave me. The experience of rectifying my own oral health led me to pursue dentistry. I wanted to give back to a profession that changed my life.”

In 1992, Dr. Ho started his practice in Laguna Hills and added a second office in Rancho Santa Margarita and with great dedication and hard work, cared for residents of both cities.

“As my children started to grow up, I realized that I wanted to spend more time with them while I could,” he says. “So I sold my Laguna Hills location and focused on RSM, which is where I lived."

Now that his children are grown, Dr. Ho relocated back to Laguna Hills and is thrilled to be back caring for patients who got him started over two decades ago.

“It is not just fillings, crowns, implants, cosmetic dentistry or cleanings: it’s ‘beyond the nuances’ dentistry,” he says. “Your oral health plays a very important role in your overall health and your ability to enjoy the simple pleasures of life like eating good food. After all, your smile is an indication of what is within.”

California Gun Services Safe Gun Storage, Ownership and Disposal

After my grandfather passed away, I moved in with my grandma, doing chores around the house and helping to maintain the garden.

One day, I was looking for my grandfather’s whetstone, to sharpen an old pair of shears, and I stumbled across his Colt Python 357 Magnum. I thought it might be a relic from one of the movies he worked on in the 50’s, but according to my grandma, it was just “one of those things your grandpa just insisted on having.”

Jeff McCabe has gotten more of his fair share of calls from people like myself, who accidentally come across family firearms in their home and don’t have the first idea of what to do with them. The owner of California Gun Services (CGS), Jeff is in the business of safe gun storage, ownership and disposal. The first step? Following California gun laws. I had zero clue that by driving the Colt to the Army Navy to try and turn it in, I’d be breaking a couple laws. According to Jeff there are laws restricting gifting or selling a gun, receiving a gun, borrowing a gun, transporting a gun, even storing guns. New laws come out every year, and it is almost impossible for anyone, even aficionados to keep up with them. Jeff and his team work closely with local law enforcement to ensure the process is easy and safe.

My grandma was afraid the grandkids might find it and would “just feel safer without it.” A sentiment shared by Jeff’s friends, family and fellow church parishionersmany of whom have sought his assistance over the years to ensure the proper storage or disposal of firearms they found themselves in possession of upon the passing of a loved one.

A BUSINESS IS BORN

What initially started as a favor for a friend has grown into a bonafide side business as word has spread about Jeff’s particular skill set and confidence in handling firearms. As the owner of the Orange-based One Way Painting, Jeff often encountered situations whereby he would come across a firearm when moving furniture around for a client prior to starting a painting project.

“Many times, the firearm belonged to my client’s father, grandfather or late husband and she never touched it because she was afraid of guns, but didn’t know how to get rid of it safely,” he says. “So many times these guns are loaded and just stuck in a nightstand or stored under the bed.”

Over the years, Jeff has encountered a variety of different circumstances where individuals seek his assistance in disposing of unwanted firearms. All situations call for professionalism and expertise, but some also require a more delicate approach. One such case was a recent call by a family whose patriarch was once a responsible gun owner, but was now suffering the early signs of dementia. “His family wanted the firearms removed for safety reasons, but the gentleman lawfully owns the guns so it’s important to have a heightened sensitivity so as not to create upset,” says Jeff.

In addition to lay people looking for help, Jeff and his team also assist estate and probate attorneys representing

clients who are surviving family members in possession of unwanted firearms to navigate the process of safe gun disposal.

Raised in a family that had firearms for hunting and sporting, Jeff was taught early on how to handle, be respectful and always be safe when handling firearms. Jeff adds that “ … we as Americans have a great privilege to be able to own a firearm, but with that comes an even greater responsibility to not only protect ourselves legally by complying with Federal and State laws, but to protect ourselves, our neighbors and most importantly, our children from all possible dangers associated with firearms.”

San Clemente resident Rhonda Murphy couldn’t agree more. “There are many things to deal with when a loved one dies. In 2010, when cleaning out my husband’s closet, I came across several of his guns. I didn’t want to keep them and was unsure of what to do with them. My daughters didn’t want the guns and I didn’t want to deal with the hassle of storing them as my grandkids are often at my house. A friend suggested I call Jeff. He was very nice, easy to talk with, trustworthy and knowledgeable. He came to my house, checked all the guns to make sure they were unloaded and removed them. Jeff also told me that one of the guns was a collector’s item and was able to sell it for me. One less thing to have to worry about. I can’t recommend Jeff enough.”

As part of their auditing procedures, California Gun Services gives clients the option of a Voluntary Registration Form (in the case where the weapon was inherited). Many of Jeff’s clients are like my grandma who just prefers that the gun is destroyed. Jeff holds a Federal Firearm License and as such, is able to take possession of firearms without a Gun Transfer. He can also inspect firearms to ensure they are still in working order, and even tell you if the gun, or guns, you have is California Compliant.

“Most people are unaware that firearms that were purchased legally from a gun shop just a year ago may now be illegal in California,” says Jeff. “If we find a firearm that is out of compliance with the law, you’ll receive solid advice on how to make it compliant, sell it out of state, or potentially dispose of it. Our process is approved and certified by local law enforcement, it’s legal, safe and adheres to all state and federal firearms laws.

“Since firearms last more than a lifetime, families often have small and large collections of guns in their home. Knowing what you have and what to do with those firearms is important. Whether it’s from a death in the family, inheritance, or just a need for clearing out some that you know you will never use, we can help. Following California gun laws is essential. We come to you. It’s a safe, easy and professional process.”

Jeff will come to you and inspect your firearms to make sure they are in proper working order and that they are California Compliant. If your firearm is not compliant with the California Law, you will receive solid advice on how to make it compliant or possibly dispose or sell it out of state.

GUN DISPOSAL

If a firearm is found to be unsafe to use, cannot be repaired and has no historical value. California Gun Services will permanently destroy it by torching the receiver or frame into three parts or cutting it with a saw into five parts. Jeff will document this with photos and log it for the Alcohol, Tobacco and Firearms and email you the proof of destruction.

GUN TRANSFERS

Private Party Transfers happen between two individuals and will need to take place at a Federal Firearm Licensed Dealer. Since this needs to be done at a Gun Shop, Jeff cannot offer this as an in-home service. If you have inherited or legally obtain a firearm, he can provide you with a Voluntary Registration form or you can download it from the California Department of Justice which is NOT required to do at a gun shop. California Gun Services has a Federal Firearm License and can legally come to you and take possession of a firearm without a Gun Transfer.

GUN PURCHASES OF UNWANTED FIREARMS OR COLLECTIONS

California Gun Services will come to you and appraise a single gun or an entire collection of any size. You will receive an explanation of how guns are legally sold and transferred. California Gun Services can then make you a fair market value offer and/or explain how a gun can be put up for sale on consignment.

AMMUNITION AUDIT

California Gun Services will make sure you are using the right ammunition for the firearms that you have and that it is legal in the State of California. Jeff will inspect the ammunition to make sure that it has been stored correctly, is in good condition and will ensure that the ammunition is being stored properly, using the right type of container and stored in the right location in your home.

Lazy Dog Restaurants

Featuring the First Taste of Fall

For some reason, the soft entry into fall for the rest of the country seems like a magical amber-hued 90’s film, probably with Tom Hanks and Meg Ryan. The issue is that while everything east of the California border starts turning golden and brisk, summer is still in the air and you have to turn to earlier sunsets as trademarks of the shifting seasonality.

If watching the weather doesn’t do it for you though, you could simply walk into Lazy Dog Restaurants, where the seasonal menu leans into slow cooking and handmade sauces, marinades, and dressings. Each ingredient they use is carefully picked and prepared, and exists as an ode to the small mountain town vibe where food and family so often coexist.

Just in time for fall, Lazy Dog Restaurants, a casual dining concept known for its handcrafted American food and drinks, welcomes a selection of new seasonal offerings, including 10 new craveable dishes and seasonally-inspired cocktails. The new fall menu will be available at Lazy Dog Restaurants nationwide starting October 9th.

I’ve long been a fan of appetizers as entrees – ordering several starters to cobble together a meal that indulges my penchant for combining a range of flavors in one sitting. So suffice it

to say I was particularly thrilled to sample several of Lazy Dog’s latest small plate offerings including the Pie Tin Nachos and trio of “Tots” – street corn, loaded chili cheese and lemon pepper and tomato soup – housemade with red peppers and topped with garlic croutons.

The Pie Tin Nachos puts an inventive spin on a traditional favorite with lager cheese sauce, guacamole, tomatoes, pickled jalapeño, tapatío crema, queso blanco and cilantro. There’s an option to add chicken tinga or carnitas.

You’ll have your work cut out for you in deciding between the “tots” options. Street Corn arrives with melted mozzarella, charred sweet corn, tomatoes, tajín-lime sauce, queso blanco, housemade hot sauce, cilantro while the Loaded Chili Cheese lives up to its moniker topped with chili con carne, jack and cheddar, pickled red onion, sour cream, green onions. The lemon pepper seasoned tots with housemade buttermilk ranch for dipping might just be my new fave.

Sure-to-please mains include a trio of dishes including a tender, flavorful slow-cooked Poblano Pork entrée (think creamy poblano sauce, sweet white corn + bell peppers, topped with tapatío crema and cilantro, served with Spanish rice and blue corn tamale cake).

Nonna’s Giant Meatball + Baked Pasta arrives as a huge beef meatball, four-cheese baked pasta, topped with slowcooked marinara + walnut pesto while the Braised Beef Birria Noodles starts with yakisoba noodles tossed with tender slow-cooked beef, bean sprouts and cabbage and topped with queso blanco, radish, cilantro and cheddar cheese crackle.

Want handcrafted cocktails for the season? There’s a new yummy Hibiscus Margarita (Lunazul tequila, housemade spiced hibiscus syrup, agave sweet + sour, house salt rim) and Tequila Old Fashioned (Altos tequila, ancho reyes chile liqueur, crème de cacao, cointreau, orange juice, agave nectar, mole bitters, chocolate-dipped orange with sesame + chili).

Get ready for cozy vibes – sample the new seasonal specialties or simply dig into familiar favorites like the Campfire Pot Roast or Grilled Lemon Chicken. If you’re in a rush to get home to cuddle up by the fire, indulge in a Roadtrip Bowl® or TV Dinner.

Superhero Celebration & 5K Walk Outlets at San Clemente

Sunday, October 20, 2024

A resident of Laguna Niguel, Monica Cline founded Live Like Jojo Foundation after her son, Jojo (Jordan) passed away at age seven in 2018.

Jojo was born with mitochondrial deletion syndrome and endured many years of health complications; however his diagnosis did not prevent Jojo, Monica, her family and friends from enjoying every little moment with him, making ‘ordinary’ moments into extraordinary memories.

From this celebratory approach to living, Monica founded Live Like Jojo Foundation. From initiatives to events, lemonade stands to volunteer relationships, Monica is dedicated and devoted to the foundation’s impact and longevity. She has witnessed firsthand the power of sharing Jojo’s story and honoring his life through tender acts of kindness. One of her first big initiatives was the annual Superhero Celebration & 5K

Walk where So Cal kids living with rare diseases are truly celebrated as superhero’s walking a red carpet and experiencing a day of family fun to escape from but also be recognized for their bravery and tireless efforts battling serious health challenges.

Through the Foundation, Monica is not only supporting children and their families through special moments of joy (sunshine boxes, Superhero experiences, photos, 5K walk), she is also advocating for

change though Jojo’s Rule and The Jojo Blanket and Sacred Education for nursing staff, this helps educate and share the importance of best practices for end-of-life pediatric care. Her efforts are ongoing, and her passion is contagious.

“Moments matter, and we as a foundation set out to gift moments that will be far-reaching and long-lasting in impact,” says Monica. “Many children and families navigate an unknown and tireless journey of therapies, blood draws, doctor visits, and hospitalizations. When a family with a child facing chronic healthcare challenges is given the opportunity to pause, step into, and embrace in a joy-filled moment, this family will savor these moments for a lifetime.”

The Foundation exists with a mission around three goals: support, advocacy and activities – each goal helping to infuse joy and enrich the lives of children and families impacted by chronic healthcare challenges in Southern California.

Catamaran Resort Hotel and Spa

San Diego’s Premier Fall Stay-Cation Destination

School seems to be starting earlier and earlier each year. Perhaps it’s just that when I was a kid, it felt like summer went on for an eternity. Long days riding bikes and crafting friendship bracelets, going to the beach and roasting marshmallows in the dusky twilight hours.

As a mom, I’ve been trying to find ways to recreate some of that summer magic for my kids, and one of the most wonderful ways I’ve found is to craft experiences that expand time. Each fall, our family heads to the Catamaran Resort in San Diego to take advantage of California’s real summer: fall. Just when the beaches empty, unforgettable memories begin.

With a prime location on Mission Bay, the resort offers more than 300 beautifully appointed rooms with breathtaking views. Kiddos dine free in October at Oceana Coastal Kitchen, and you can pick up a free SUP or kayak rental throughout the month to ensure both inside and outside time are jam-packed with excitement!

Spend the morning at the world-famous San Diego Zoo and the afternoon relaxing at The Catamaran Spa, or spend your day checking bucket-list items off as you save on attractions at Balboa Park or museums and meals with the whole family. Whatever your endeavor, Catamaran Resort Hotel and Spa is the perfect “home base” to take full advantage of everything this beautiful coastal city has to offer.

Swaying palm trees, lush vegetation, tiki torches, koi ponds and waterfalls

define this Polynesian-themed property. An array of area attractions are but a stone’s throw away, including theme parks (SeaWorld, Legoland, Sesame Place), the aforementioned zoo, USS Midway, Old Town and the Gaslamp District. But for our part, our family has found that the Catamaran offers so many fun-filled fall activities and events – from outdoor movie nights, festive Oktoberfest and Halloween cruises and more – that it’s extra special to stay on property for a true “stay-cation.”

ACCOMMODATION OF DISTINCTION

Each of the resort’s 310 beautifully appointed suites, studios and hotel rooms reflect the upscale coastal lifestyle that is synonymous with Southern California. The coastal décor and color palette brings the panorama outside indoorseach with its own balcony or patio with breathtaking views of Mission Bay, the Pacific Beach neighborhood and coastline or the resort’s gorgeous tropical gardens.

The open-air eatery at the water’s edge, Oceana Coastal Kitchen dishes up equal parts inventive, seafood-centric California cuisine and sweeping waterfront views. Guests can opt to dine indoors or select a table on the terrace, but either way you’ll be hard pressed to think of a more perfect pairing: delicious culinary creations against such a beautiful backdrop.

The menu highlights the purity and flavor of California local produce and a commitment to sustainable ingredients in both its culinary offerings and the regional wines and brews to enhance your meal. The menu focuses on ocean- inspired fare (which is great for my son and I as the “seafoodies” in our family), but also offers plenty of options for my meat-and-potatoes husband, Tim and pasta-loving daughter.

My choices for can’t miss starters? Fragrant steamed black mussels (white wine, fennel, linguisa sausage, fresno butter and cilantro) and my personal fave – a super delicious Hamachi crudo with white miso and micro cilantro.

Other popular picks include the crispy pork ribs enhanced with passion fruit

Families planning a fall getaway can enjoy big-time savings on guestrooms during Kids Free Month. Book directly with the Catamaran resort using exclusive promotion code KIDS24 to receive up to 25% off room rates from October 1-31, 2024.

Making a splash on Mondays (5:307 p.m.) at Oceana Coastal Kitchen is the new Maki & Sake Special, featuring a select signature sushi roll and glass of premium all-natural Soto Junmai Sake for $30. To complement its outstanding sushi creations, Oceana also introduces a tasty new sake menu this fall.

barbecue sauce, toasted macadamia nuts, pickled chili and cilantro and the kids’ “go-to” fennel and sausage flatbread.

For the main course, Tim’s 16 oz. dry aged New York prime was grilled to perfection and accompanied by potato, truffle butter, broccolini and mustard bordelaise sauce while the caramelized scallops were melt-inyour-mouth wonderful.

KIDS FREE SAN DIEGO MONTH

The Catamaran Resorts rolls out the welcome mat for children aged 12 and under during Kids Free San Diego Month in October. All month long, October 1-31, kids stay, eat, and play for free. Hotel guests who dine at Oceana Coastal Kitchen can enjoy a complimentary kid’s meal for each paid adult entrée. Additionally, Action Sport Rentals is offering kids a free stand-up paddleboard or kayak rental with the purchase of one adult one-hour or longer rental. With two onsite locations (one right at the Cat amaran pier), it couldn’t be easier to explore the scenic environs by bike, boat (power or sail) and board.

Blissful autumn escapes await at The Catamaran Spa – San Diego’s only beachfront spa debuting a brand-new menu of spa treatments, developed to be more authentic to the resorts’ unique and relaxing coastal environments. Guests can relax, renew, and revitalize with new massages like the Restorative CBD Massage; new skincare therapies like the Gentlemen’s Facial; new body wraps like the Coconut Kukui Wrap; and new body exfoliating treatments like the Hawaiian Jasmine Scrub.

Taking advantage of San Diego’s mild autumn weather, the Catamaran Resort hosts complimentary outdoor, family-friendly Movies on the Bay for guests every Friday night at sunset (September 6-October 25), with a stunning backdrop of Mission Bay.

Alisal Ranch The Jewel of Santa Ynez Valley

I heard someone say recently that a tried and true method to find happiness is watching someone else’s face light up with excitement. After spending a few days last month at the bucolic Alisal Ranch in Solvang, I think there’s certainly some truth to

the adage. My husband, Tim, was positively gleeful as he realized the “classroom setting” anniversary surprise I’d been hinting at for weeks was in fact 30 state-of-the-art grills and smokers - and his instructor at Barbecue University was Barbecue Hall of Famer (yes, ladies, that’s a thing) Steven Raichlen.

If you grill anything at all, there’s a big likelihood that you own a copy of Raichlen’s book, The Barbecue Bible, or perhaps have seen an episode of one of his popular television shows, like Project Fire. Each class, as Tim learned, opened with a demonstration of the day’s menu, and the best technique to execute, followed by actual grilling all manner of meat, vegetables and even dessert under Steven’s tutelage and supervision.

So where does this annual fantasy class exist? Alisal – a 10,500-acre working ranch in the heart of the San-

ta Ynez Valley where guests lodge in gorgeous cabins, have access to private fireplaces, golf by the river’s edge, a full day spa, fitness center and abundant indoor and outdoor activities (with more than 100 horses on property, horseback riding for all skill levels is a highlight).

With regard to the latter, guests (like me) can join the “university” experience at a discounted, “non-student” rate, and simply enjoy the on-site amenities the Ranch has to offer. Students come from all over the world to join, and while you could walk into the pit with zero grilling experience, smoke aficionados like my husband and seasoned grillers had more than enough to keep challenged and take their skills to the next level.

For my part, I thoroughly enjoyed the history and environs of the Ranch, along with Alisal’s spirit of exploration and dedication to the finest service.

Perfect for a families with youngsters, a romantic retreat or the ever-popular multi-generational family vacation.

OUTDOOR ENDEAVORS

A recreation center unto itself, the 100-acre spring fed Alisal Lake, filled with bass; trout; and bluegill, offers “catch-and-release” fishing. You can rent a boat or fish off the dock. This sportsman’s paradise attracts bird watchers and water enthusiasts with Bass Boat Pro rentals, canoes, rowboats, peddle boats, kayaks and stand-up paddle boards.

For those seeking to hit the links, Alisal showcases two 18hole championship golf courses – the par 72, 6,500-yard Ranch Course and the par 72, 6,800-yard River Course with four lakes - provide impeccably manicured fairways and greens with spectacular views of the Santa Ynez River and nearby Santa Ynez Mountains.

reason. Leaving at dawn, guests enjoy more than 50 miles of equestrian trails on horseback circling the magnificent hills and sycamore groves. Twice daily group rides, private rides and breakfast rides to the historic Adobe

Barbecue University

bass and local halibut. Specialty dishes such as the Apple Cider Braised Short Rib and Oak Grilled Chicken are prepared with the freshest ingredients for the guests’ dining pleasure.

ACCOMMODATIONS

Camp (on horseback or in a wagon) round out a stay.

DINING

Visitors rarely leave the property during their stay and for good

The Chefs at Alisal have a deep reverence for the region’s bounty and a commitment to timeless food made from seasonal ingredients. Whether you’re having a casual bite on the golf course, or a more formal dining experience in the resort’s signature restaurant – the Ranch Room, your meal will beautifully embrace the essence of California cuisine and the heartiness of Western ranch cooking.

Dinner at the Ranch Room is a formal affair (collared shirts and sportcoats are required for men over the age of 16) and “dinner dressy” for the ladies. Since opening the ranch in 1946, it’s been customary to “dress up” for dinner - and keeping the “country-formal” tradition alive is part of the property’s charm. Entree options include frontier-size portions of juicy barbecued steaks, tender prime rib of beef and the fresh catch of the day including Ora King salmon, striped

Alisal’s 73 pastoral suites and studios blends the charm of a gracious bygone era, decorated in authentic Western decor. Each guest unit, designed for maximum privacy and com- fort, includes a wood-burning fireplace with complimentary firewood, high-beamed ceilings and Western art. In keeping with the resort’s timeless ambiance, there are no in-room televisions or telephones.

With such close proximity to Orange County, it is a wonder that such a treasure would remain as secluded and satisfying as it is. Finding time with the family to create new traditions in the world of endless screens may seem impossible, but that’s just the beginning when you step away, and get back to what really matters.

Healing Hearts EMERGENCY ANIMAL

HOSPITAL

In writing this editorial, I recalled a friend once asking me to explain the premise of a book called “All Creatures Great and Small.”

It’s about giving veterinary care to animals like you’d give pediatric care to children in your community - with grace, and love, and an incredible amount of passion. James Herriot’s example was set long ago

through the tales of extraordinary and ordinary circumstance, but the level of service, specialization, and care lives on in clinics like Healing Hearts Emergency Animal Hospital in Laguna Hills.

Since opening its doors last August, the team of compassionate professionals here have provided the highest level of emergency medicine to dogs, cats, avian patients and even most exotics. Dr. Berschauer, the CEO and founding veterinarian behind Healing Hearts, strives to put together the best option for treatment for each patient on an individual level.

“We do this by working with each pet owner to determine what the optimal plan looks like for the care of your beloved pet,” says Stephanie Yun, office

manager. “With a fully equipped ICU, advanced monitoring systems, oxygen cage, full in-house lab, we’re ready to handle almost any emergency.”

In the rare instance that your pet needs treatment outside of Healing Hearts’ capabilities, they’ll help you coordinate the transfer and care to an outside facility. “We’re not kind or compassionate within our four walls alone - the nature of community is that it exists beyond our front door and we’re willing to go to any lengths to ensure your pet’s needs are met, wherever they end up.”

Dr. Berschauer and his staff’s warmth and dedication to caring for our furry (and sometimes not so furry) family members truly sets them apart. Each came from a different medical field, but their love of animals brought them to where they are today. Ensuring that we can bring back the “oldschool feel” of veterinary medicine “where your animal is assessed and treated from head-to-toe with stateof-the-art equipment” comes first. For all creatures, great and small.

Dr. Berschauer

Then the Medicare Annual Enrollment Period (AEP) is the time for you to make a change to your current plan. All changes made during this time (10/15 – 12/7) go into effect 1/1/25.

The biggest way to save money is to see if a Medicare Advantage plan would work for you. If it does meet your needs, then you cancel your Medicare Supplement and Medicare Drug plan for 2025 because the Medicare Advantage plan gives you that type of coverage and financial protection from medical bills. You’re no longer paying a premium for Medicare Supplement and a Medicare RX plan if you decide to enroll in a Medicare Advantage plan. These plans in Orange County typically have no or low premiums and are both HMO’s and PPO’s.

Regarding a “standalone” Medicare RX plan. These plans used to not have a name brand drug deductible and now most do. The annual deductible for brand name drugs is increasing up to $590 in 2025. Have your prescriptions changed since you enrolled in your current Medicare RX plan? If they’re expensive medications (the $35-$100 range or higher when you fill them) then it’s time for a review. Also, familiarize yourself with the “Inflation Reduction Act” changes to your prescription drug coverage in 2025. It will lower your out-of-pocket drug costs, which is great news! However, as a result, your monthly Medicare RX plan premium will go up.

The Medicare Annual Enrollment Period (AEP) ends December 7th. If you’d like to schedule a no cost Medicare options review, contact my agency soon, and either I or a well-qualified Medicare broker from my team will be happy to help you.

Mission Viejo Wigs: Where Customers are “Family”

Mission Viejo Wigs is truly a family business. Not in the traditional sense, where its owners and operators share the same genes. But rather in such a way that every person who has walked through Owner Betty Darroch’s doors in the 30+ years she has been in operation immediately felt like a member of Darroch’s extended family.

As a professional hair and wig stylist since 1962, Betty began her career at CBS where her résumé reads like a celebrity screenplay starring the coifs of a veritable “who’s who” of Hollywood: Ann Margaret, Carol Lawrence, the Midnight Specials and the Sonny & Cher Show. She went on to work for the Hallelujah Hollywood Show at the MGM Hotel in Las Vegas.

But it wasn’t until she opened her own business in Mission Viejo that she felt as though she were “truly doing God’s work.”

Her clients today include people who are experiencing hair loss due to chemotherapy treatment, alopecia or other medical conditions. Betty specializes in wigs, hairpieces and toupees for women, men and children and carries only the highest quality brands. Each wig or hairpiece is custom fit to the client for the most natural look and feel – no one will know you’re wearing a wig unless you tell them.

received many compliments on her “new do” and no one was the wiser.

It’s been over nine years since my mother completed treatment and is now leading a cancer-free life. Although her own hair has long since grown back, she still often prefers to wear Betty’s wigs on “bad hair days.”

Thank you Betty!

“Hair loss, whether it is the result of illness, the aging process or heredity, can be a traumatic and emotionally draining experience,” says Betty. “We work with people on a daily basis who are facing the issue of hair loss for the first time. Our goal is to help you find the solution that works best for you and do so in a caring way that makes you realize that you are not alone.”

There are wonderful testimonials from longtime customers on her web site (missionviejowigs. com), but for me, the best testament to Betty’s genuine, caring nature came from a source closer to home.

When my mother was diagnosed with lung cancer six years ago, there were so many aspects of what she was facing - including the side effects associated wit chemotherapy treatment – that were out of our control. But my mother’s appearance was something she felt she could dictate. We knew she would lose her hair, but she was determined not to “look like a sick person.”

From the moment my mother met Betty, she knew she had found the right place and more importantly, the right person to help her. Betty shared so many stories of survival – of longtime customers and friends who fought a similar battle and won. Her warm embrace and inspired  hope and help steel her resolve to maintain a positive, fighting attitude when she was diagnosed with lung cancer.

The wig Betty selected was the perfect color and style for my mother’s face (and head) shape. The wig was so natural looking that my mother

AEP- It’s About Saving You $$

Calling all existing Medicare Beneficiaries, are you looking to save some money on either your monthly premiums, your co-pays, your prescription drug co-pays or perhaps a trifecta and you get all three? Then contact my agency soon to review your Medicare plan options.

The biggest way to save money is to see if a Medicare Advantage plan would work for you. If it does work, you cancel your Medicare Supplement and Medicare Drug plan for 2025 because a Medicare Advantage plan gives you that type of coverage and financial protection from costly medical bills. These types of plans in Orange County typically have little to no premium. The savings can be life changing to some people, especially married couples over the age of 70. Medicare supplement plan premiums go up as you get older in addition to the annual premium increases related to the cost of medical care for their enrollees.

Most people on a “standalone” Medicare prescription drug plan don’t realize when their monthly premium increases in the new year because if they’re taking social security the premium is typically being directly deducted from their social security check. Insurance companies have increases in their monthly RX plan premium and their annual deductible. Have your prescriptions changed since you enrolled in your current Medicare drug

plan? If they’re expensive medications (in the $35-$100 range when you fill them) then it’s time for a review. Also, familiarize yourself with the “Inflation Reduction Act” changes to your prescription drug coverage in 2025. It will lower your out-of-pocket drug costs, which is great news! However, as a result, your monthly Medicare RX plan premium will go up.

Also, while the Annual Enrollment Period is NOT the time to change your Medicare supplement plan (The months around your birthday month are, it’s called the “birthday rule”) it could be a time to get educated about what other carrier’s premiums are for the Medicare supplement plan that you’re on. Medicare Supplement plans are all standardized by the government. A Plan F, Plan G or Plan N, for example, are all the same, no matter what insurance company you use. However, some insurance carriers have upped their game, adding additional benefits such as routine vision and hearing, acupuncture and more to their Medicare supplement plan for a more “value added” experience. The additional premium for these extra benefits is minimal.

Ask a SOMM

A good sommelier is a helper, a guide to finding the best wine for your food and experience. For this month’s installment, we again approached South County-based sommelier Micah Sampson for a bit of education about the wine/food pairings, whether the size and shape of the glass makes a difference and whether wine should be decanted before its served.

Q Does white really go with fish/seafood and red with red meat or is there some overlap?

A When in doubt the white with seafood and red with red meat is a good rule. But of course, there’s definitely some overlap here when getting into the details. There are some fantastic lighter bodied red wines out there that can easily be paired with fish and other seafoods. Some of my favorites are Pinot Noir, Beaujolais, and Grenache, each of them have a light body with very light tannins, won’t overpower the delicate fish. And for red meats you can easily pour a full bodied white wine that has high acidity, think California Chardonnays, white Rhone blends, Rieslings and Chenin Blancs. All of these have nice body that can stand up to high fat red meats, and nice acidity that can shine through some of the more robust seasonings and marinades that are used to cook them.

Q Does the shape/size of the wine glass make a difference?

A This is one of those topics that I wish people took more seriously! In short, yes, the shape and size of the glass makes a huge difference! Wine glasses are designed with very specific shapes and sizes to help deliver wine aromas to your nose. If search “red wine glass” and “white wine glass” you’ll notice red wine glasses are much bigger and more bowl shaped, that’s because there are vapors coming off the wine as the alcohol slowly evaporates, those vapors are filled with compounds that help you taste the wine. White wines a typically chilled and won’t give off as much aromas, therefore the glass doesn’t need to be as large. Another reason for the smaller shape for whites is they don’t need need to aerate like reds do, less surface area reduces aeration and keeps the wine cooler. Reds on the other hand love to aerate and

therefore need all the surface area to slowly oxidize (in a good way). The bowl-shaped narrower opening at the top of the glass does two things that are both very important: 1) It helps trap the aromas into a smaller area to help you small them. Think about how much more difficult it would be to smell wine in a cereal bowl with an 8 inch opening than a wine glass with a 2 inch opening. 2) It helps keep the wine in the glass when you swirl the heck out of it, which you should do! I love swirling wine, it introduces oxygen (good oxidation) into the wine and gets all those great aromas swirling around the glass for you to smell!

Q Should I decant wine before I drink it?

A Decanting can do wonders for your wine, but it isn’t always necessary. You should have a nice decanter at home if you’re serious about enjoying some great red wines (don’t worry about decanting white wines), and that decanter should have a nice wide bottom that creates a ton of surface area when the wine is poured in, and a narrow top that keeps too much air from getting introduced and makes it easy to pour a glass. The types of red wines you’re decanting are usually full bodied reds that usually have a some age on them (like 5-10+ years), not those cheap red blends you’re buying for $8.99 at the market. The idea behind decanting is you’re introducing oxygen into the wine and a chemical change is happening, a lot of those volatile compounds (bad aromas) are evaporating off and the harsher tannins are softening up a bit, which allows you to enjoy the wine more. So, if you have a 2010 Barolo or a 2015 Napa Cabernet, let those bad boys decant for 30-60 minutes, maybe take some small sips and smells during that time so you can see how the wine changes.
