COVER: Once again home in Newcastle, Wade William Ambler has had an adventuruois career since starting in hairdressing at the age of 14.

From the publishers...

- Led Zepplin

Recently I saw Sir Bob Geldof on TV talking about the music industry and why he and his band The Boomtown Rats have decided to relaunch their careers onto the world stage. He said that rock’n’roll was the social media of it’s age - I’m sure he was referring to the so-called golden age of rock’n’roll between the ‘50’s and the’70s when luminaries such as Bob Dylan, Joni Mitchell, Donovan, Crosby Stills Nash and Neil Young were writing socially conscious tunes heavy with political, ecological and spritual content. Sound familiar? In those days, the heavies of songwriting and rock music ruled the world through radio and television as those media raced to create more and more platforms to present the growing numbers of rock stars and musical icons while magazines and newspapers went into overdrive keeping up with the gossip. Well, nothing much has changed there. Differing schools of thought argue that the likes of Dylan and Young would have trouble finding a record deal if they were to try to launch their careers these days. That may be true, neither of those guys are, shall we say, pretty and they have unusual voices - But boy! can they turn a tune or two. Lyrically, those two artists have made the thought-provoking lyric the jewell in the crown of popular music, “old school music” that is. Yesterday I saw a Facebook meme comparing the poetic and colourful tapestry of Led Zepplin with Justin Bieber. Can such a comparison actually be made? Is it valid to compare the writing of Plant, Jones, Page and Bonham with a, dare I say it, child star? In their day, those big musical names (and many more) were arguably the voice of their generation; as Geldof put it, “the social media of their age”. He could be right. Can “If the sun refused to shine, I would still be loving you, When mountains crumble to the sea, there will still be you and me,” by Zep really be judged against Beiber’s “You could be my girlfriend until the world ends.” ?... Similar in meaning but somehow poles apart... That’s poetry right? (maybe it’s all in the delivery.)

Bob Geldof says that youth these days have “different social media things” to voice their opinions - It’s more immediate and more often than not, pretty shallow. “Rock’n’roll needs a context to exist. The political and social landscape then and now are very similar,” he said. Despite many believing that it has never really gone away - maybe that’s Bob-speak for “The time is again right for rock’n’roll.” - Steve Dunkley, Publisher.

Culture, food & fun in

When most people think of Perth, they think of a peaceful city, not much bigger than a country town, Story by Emily Pert small enough that even living here can feel like a holiday. Scratch the surface now though, and there is a new culture of small bars, funky cafes and some outstanding food coming out of Australia’s most isolated city. Perth is now mid-way through a muchneeded injection of cool. If you’re in the CBD, take a wander up from the main business drag of St George’s Terrace - a once a boring, stuffy street, prone to huge gusts of wind in the afternoon, but essentially a dead zone after 5pm. Now, just off this street of law offices,

4 social/life

banks and insurance companies, there is a slightly hip vibe. Best spots to be are The Greenhouse and Andaluz Bar, the place that gives a whole new meaning to great tapas in Perth. From here it’s over to the other side of the rail tracks to the corner of Roe St and William St, where the world of the small bar takes over. There really is something for everyone here. Before drinks though, head to Miss Brown. This eclectic store has something for everyone’s inner hipster, and is

tucked in the laneway behind the Perth Underground Train Station. Everything from moustache earrings to film for your Polaroid camera - you can get it at Miss Brown. There are two more outlets as well, one in Northbridge, on William St, and one in trendy Mt Lawley. Ezra Pound is quirky, with its prohibition theme. Here you can find the best long island iced tea in the city served in teapots no less. Another favorite, this time with the indie crowd, The Bird, also doubles as a

small music venue. Local acts, DJ sets and a simple, yet magnificent Apple Crumble Martini will set you in for the perfect night. Mechanics Institute is a must, a place that will ignite something in the hearts of boys everywhere and has a great cocktail list to keep the girls amused. If you need some nosh to keep you going, head to La Cholita, located on Beaufort and Aberdeen. This is Mexican done really well.

If you head back toward the Cultural Centre, you’ll find theatres a-plenty. Perth has now embraced a cultured feel, and there are plenty of shows to choose from.

new colour

Time your visit though. February has just seen our Fringe Festival, which was the biggest yet. The city was transformed into a colourful wonderland, and you can imagine

Alice felt toppling down the

proverbial rabbit hole. Magical. The city now looks forward to the coming Comedy Festival, and now we’re a little more on the map, international artists are beginning to start Australian tours in our little town.

You won’t find refried beans anywhere on this menu, but you will find some exquisite tacos, some traditional street corn, and about 100 different types of tequila. Vegetarians note, this might not be the place for you as dishes are a bit limited. That said, the service is great, but you’ll need to be early for a table.

Who or what inspired you to work in your field at the age of 14? I honestly don’t know. I feel as though I was always meant to be in the hair and makeup game its been in my mind since I can remember. Who are your hero’s? I love Trevor Sorbie’s and Vidal Sasoon’s work. Anyone who thinks outside the box I admire What do you consider to be your greatest accomplishment? I am most proud of my achievements in the hair industry. I was the first ever apprentice to win the Oceanic Grand Masters Award when I was a third year and I’m also the only person to have 6 social/life

ever won the title twice. And I have also won the International Hairstylist Society Australian Hairdresser Of The Year as well as Apprentice Of The Year. Was there a point that you knew “This is it I’ve arrived”? Honestly, although I have achieved alot I still feel like I have a super-long way to go. I am always learning and expanding my skills. I think to be successful you need to always be learning. How did you come to be involved in Donald Trump’s Miss Universe? Actually, I was chosen. It was a global competition where they chose 12 hairdressers to work in The Bahamas for the pageant and in was the Australian representative.

What kind of work load does a massive pageant bring? When 50 million people are watching world wide you feel a lot of pressure. I was looking after 16 contestants in a day so it was go-go-go but I loved it all. Everyone wants to know about your role with Lady Gaga. I was lucky enough to work backstage on her backup dancers at her Monster Hall concert in 2011 and was lucky enough to meet her and work on a hairpiece for her. She was so humble and down to earth.

and Jackie O, Fifi and Jules, Tammin Sursok, Jennifer Hawkins and Heidi Montag. Your career to date reads like a who’e who of celebrities and events... So, what’s your secret? I am a massive networker if you want to work for a company let them know. I have an amazing agency who finds me great work also you need to be very available and be able to drop what your doing to work at a moments notice take every opportunity.

Who else have you worked with?

Your TV credits include Project Runway, So You Think You Can Dance and the Wedding Show with Alex Perry... How does TV compare to live situations?

glamorised and fabricated a lot of hard work goes into making television. You often shoot for whole days for a single episode. You’ve worked in so many varied areas including TV, Live events, photography and studio ~ Is there one mode you prefer to work in over others? Not specifically that’s what I enjoy about the industry the variety you never know what’s coming up around the corner . How about some advice for beginners... Is there anything the should NOT do? n BE HUMBLE. Don’t burn bridges you have to work your way up the ladder. n You will have to work for free to get your name out there. n And always be open to learn new things, and don’t expect it to be glamorous.

8 social/life

Be prepared for 5am starts lots of travelling and uncertain finish times and a lot of standing around

n

What are you focusing on now? I have a few suprises in the mix like a book and a product line but you will have to wait and see. What’s on your professional horizon? I want to focus on training up other hairdressers there is a huge void in the industry and we need more hairdressers who share the passion. How does it feel to be back at home in Newcastle? I was away for about three years and have grown so much as a hair and makeup artist and although I loved it I’m happy to be back where I belong. n

Chris Mills 5 Sawyers, Darby Street

New to Darby street, Chris Mills has created 5 Sawyers, a small bar to reflect both the social lifestyle of Newcastle and it’s interesting past.

have a great time with truly delicious food, spectacular cocktails and an atmosphere that you just won’t find anywhere else.

How did the 5 Sawyers theme come about? People will know you from your other venues... (The Exchange, Mark Hotel, Pippies, CBD) Yes, I have already seen some familiar faces in 5 Sawyers. It’s been great to work with a number of high profile, successful venues in Newcastle over the years and it is such a great thing that people remember me and come in to say hi. We think we have something pretty special here and, judging by the response, so do lots of other Novocastrians.

What do you love about being a Novocastrian? The climate and the proximity of everything. It’s sort of like the cross between the closeness of a small town but with all the features and benefits of a city – lots of events to go to, always something interesting happening. The geography is fantastic as well – who doesn’t love the beaches – we’re also a proud lot. We love this place and we are proud to be from Newcastle.

What’s the perfect local weekend for you? Mainly spending some time with my kids but, being a weekend, there’s always plenty to do in 5 Sawyers. If I get a chance, we might dine out at The Bistro but, really, between 5 Sawyers and my family, there isn’t much time left over. It will be even less when we start opening for lunch on the weekends.

Putting a beautiful new bar in Darby street must feel great... Yes, it does. We have some great ideas for the future evolution of the bar but the main thing for now is to ensure that our patrons 10 social/life

The concept behind 5 Sawyers was developed for us by Artbeat who delved into the identity of the city and Cooks Hill in particular. We went for a blend of local history and the quirky artworks that seem to reflect so much of the area’s character. The guys at the Agency worked to build a concept for the bar that was more than ‘just a bar’ - we wanted something that told a story – our story!

There’s a history behind the 5 Sawyers name... Indeed there is! In the early 1800’s a boat was sent by Governor King to use the resources of the Hunter to benefit the colony. As well as convicts and other scoundrels, the crew of 60 contained 5 sawyers, whose job it was to saw the timber from the vast cedar forests in the area. It was the timber these 5 sawyers worked on that was used for the buildings, the ships, etc. That was such a part of the colony growing and flourishing. Their contribution has not been recognised . . . until now!

What is the 5 Sawyers experience for your guests? Relaxed and intimate with the focus being on interaction, a real cruisey feel. Exceptional food, wines, cocktails and coffee.

Tell us about the interesting décor. We wanted to create somewhere you could relax amid the artwork and history, look around at interesting things without taking the focus off the interaction with your friends. Like the concept, it is a bit historical (with a twist) and a bit quirky - it tells our story

in a number of ways and people love it. We wanted things to be authentic - the floorboards are from an old warehouse and the big round frame near the front door originally came from well known local company Forgacs.

Did you get some help choosing the pieces? Yes, we were very ably assisted by a wonderful Interior Designer by the name of Eleanor – she just ‘got’ what we were after and sourced some amazing pieces.

There’s a real sense of intimacy in the place... Yes, that was deliberate. People really want to be in their own space while still being a part of the overall crowd and atmosphere - and that’s not easy to achieve. We have created discreet areas within the whole space, each with a slightly different feel but each designed to create a sense of intimacy in its own individual way.

Tell us about the interesting menu you’ve created? In keeping with the 5 Sawyers brand, the menu itself is contemporary whilst giving a “nod to the past”. Fresh, local ingredients are sourced daily allowing our chefs to create classic 12 social/life

seafood, meat, poultry and vegetable dishes with a quirky culinary twist. The menu is a mixture of small share plates and larger meals…eight hour slow roasted lamb fills fresh warm taco shells, house-made char-grilled veal sausage becomes the 5 Sawyers hot dog, whilst grain-fed, char-grilled wagyu beef is teamed with an old Aussie favourite “diane sauce”.

How did you settle on the tasty menu? Research in the form of focus groups indicated to us the style of menu that was required for this unique venue. Our consultant chef and head chef then researched and tasted many of the food offerings in Sydney, Melbourne and locally, before devising the current menu, which is proving an instant hit with the locals!

What can people expect over the bar? We have a pretty big range of bottled craft beers and 5 of these are on tap. We also have cider on tap and in the fridge. There’s a large range of exceptional wines, with many available by the glass and of course there’s some sensational bubbly as well. One of the most popular selections is our Cocktail List – our guru Shane is in the process of building a list that will be amazing! n

Movie Review: Goddess ( Review by Flick Chick

Adapted from Weinberg’s stage show, Elspeth Dickens (Kelly) is a frustrated wife and mother, stuck in rural Tasmania with twin toddlers as her husband James (Keating) sails off to Antarctica every few weeks to record whale songs. Elspeth is a Brit import and has struck a deal with her Irish husband to move to Australia so he can follow his dream of studying whales. When their twins go to school, he will take over the main child rearing duties. She’s finding it hard to make friends and is snubbed by the local mothers group who sneer at and judge her behind her back. Aware that his wife is lonely and unhappy, James gives her a webcam so they can keep in contact while he is away saving the whales. Unable to contact her husband, Elspeth sets up the webcam and shares her Sink Songs with the world. Frustrated that she has no viewers, she calls in the local tech geek/ supermarket employee Neil (Lyon) who sets her up online and BAM….. she has an enraptured audience. It’s not long before the webcast catches the eye of a PR company searching for a woman to spearhead a webisode campaign for a new range of ipads called Goddess. Elspeth is quickly flown to Sydney where she is mentored by corporate bitch with a heart Cassandra Wolfe (real life Aussie Goddess and icon Szubanski) into becoming the face of this new Goddess range of computers. Elspeth is faced with all the realities and tough choices that comes with success and motherhood. She sets up a nanny cam to keep an eye on her sons while she is away and inadvertently sets it to broadcast from her website. The world watches, completely mesmerised, as her hunky husband comes home and deals with his children, his life and their new cute and perky nanny Cherry (Durack). I am not a fan of movie musicals. I’m just not. They bore me and I have even avoided the much-lauded Les Miserables because I didn’t want to be murdered as I slept and snored my way through a Hugh Jackman movie. For those who don’t know, sleeping your way through a Hugh Jackman movie is actually a punishable crime here in Australia …… *winks* And may I add that the house used in the movie is my absolute dream house and I would give almost anything to own it *sighs* So with this in mind, I cannot believe I almost missed this movie because of my aversion to musicals. This move is wonderful. 14 social/life

PG)

Unashamedly a chick flick, it has all the elements that make a truly feel good piece of modern musical escapism. It is fun and funny, quirky and charming, with lots of cute and catchy songs throughout. Laura Kelly is a gorgeous and divinely adorable leading lady. She can sing and is not a bad actress. Her scenes with her twin sons, who have quirks of their own. One refuses to remove his butterfly/angel/bee wings and the other refuse to poop. Yep. Poop. They are endearing and delightful. Every single mum in the cinema will shuffle awkwardly and laugh out loud as Elspeth deals with her sons throwing a terrifyingly familiar tantrum in the local supermarket as everyone looks on, full of judgement. Ronan Keating is an absolute hunk. This is the Boyzone guy right? He was always a good-looking man but this mature, gorgeous, tatted up creature is something else. And that Irish accent - are you kidding me? “Beware of blue-eyed Irish boys” my Irish grandmother used to say. Oh Nanna but why, *sigh* Magda Szubanski is, as always, beyond fabulous. And she is looking amazing, absolutely amazing. She plays the highly strung, highly ambitious PR woman to high camp perfection. She stays just this side of being over the top and she is simply wonderful. Full of insight and insincere PR wisdom, she stole every scene she was in. This whole movie made me laugh and smile. I don’t think I went for more than a few minutes without a grin on my face. It did have a few sombre moments as the relationship between Elspeth and James began to unravel and as the choices a mother has to make weighed heavily on our heroine. I would absolutely recommend you go and see this movie. Take a few girlfriends and make a night of it. It has everything a chick flick should have. A nice script, not too demanding or mentally taxing but what are we here for? Lots of catchy songs, cute kids, a gorgeous leading man and lots and lots of Aussie humour. Oh and speaking of Aussie, not one single cringeworthy stereotype was spotted during the entire movie. Lots of modern stereotypes, of course, but not a single g’day mate or thick ocker accent. Phew! Go and get yourself a pair of hot pink washing up gloves and support our local movie industry. I promise you will have a great time as well. n

Bali Babies Benefit Raising funds for Bali’s Bumi Sehat Clinic.

In Bali a woman must pay hospital fees to have her child delivered in a safe and caring environment. The general cost equates to around $70 AU for the clinic fees, for a standard birth. For a C-section, it can range to $800AU. Most wages are around $8 a day and families must save for months leading up to the birth to cover these costs. In the event that you can’t afford to pay these fees, the child is held within the hospital, til your balance is paid. Families only have three months to pay the owed balance or the child is placed in an orphanage. Many believe this practise is tantamount to holding the child for ransom; an extortive practice and inhumane. At Bali’s Bumi Sehat Clinic, expecting women can come and deliver their their child in a safe place and all costs are covered. The child and mother are both taken care of. Karly Franze from Newcastle took this clinic and it’s founder, Robin Lim to her heart. After doing quite well with a simple ‘High Tea’ for her closest friends last November, Karly raised close to $3000 for the clinic. Karly along with her friend, Jo Fredericks invited forty of their close family and friends along to Reading Cinemas at Charlestown, to enjoy a private showing of the movie, Safe Haven - A romantic thriller from the writer of The Notebook, most arguably the highest rated DVD this past Valentines Day. The girls were greeted upon arrival with a glass of wine and some tasty morsels courtesy of the great catering at Reading Cinemas. Cinema Manager Ben Deighton loved the idea and was quite keen to get involved with the cause. Karly and her husband David will head back to Bali in April to hand over these much needed funds and to see the work that this much needed clinic is doing for these precious little souls. n

killerheels Story & Photos by Cat Cossettini Sweet Living Newcastle

OMG! These shoes are to die for. Opening on Valentines Day 2013, Harvey Patrick, is the creation of local girl, Nicole Withers. Primarily the idea for the store was born out of frustration. With Nicole’s sister getting married they were on a mission to find bridal shoes, comfortable, exquisite, something really special. Tired of finding shoes lacking in craftsmanship, Nicole decided to open her own store. Providing women with the highest quality, handcrafted, most glamorous heels available. Walking into this store I felt spoilt, everything about the store is

centered around making you feel special. The glamorous interior, the range of exquisite and quirky seating and of course Nicole’s warm and welcoming nature. Even if you’re not looking for shoes go into the store and pretend your Carrie Bradshaw. Not all the shoes are bridal. Nicole carries other ranges which I would simple classify as ‘killer heels’. All the shoes are exquisite

16 social/life

in some way, the detail or craftsmanship, there are flats, low heels and high, detailed or simple, bridal, mother of the bride and general evening shoes. If you are in search of beautiful shoes Nicole makes some suggestions. For the wider foot open toed can be a good option or buy a half-size bigger and use inserts under toes and at back of heel for comfort.

Keep in mind when buying heels that the higher quality shoes will have more padding under the toes making them far more comfortable in comparison to more commercial brands. Visit Harvey Patrick - Shop 2/78 Glebe Rd, The Junction 2291

Review / Skypoint Likes of You (Independent) Australian quartet Skyepoint, Liv Gritten (lead vocals), Tim Hickey (guitar), Tom Bofinger (drums, vocals) and Joel Speechly (bass), are making all the right noises – literally. They mix up a contemporary rock style with infectious alt. pop hooks, and the result is a four-track debut that impresses throughout its 15 minute duration, and sticks around the subconscious long after the pretend needle has left the imaginary platter. Gritten’s voice, always mixed good and high, and with a hint of All About Eve’s Julianne Regan, provides a powerful vehicle for the songs, and the musicians in the band are all fine players, without ever sounding showy or overly slick. Guitarist Hickey pulls a number of intense solos out of his bag of tricks, and the rhythm section provides considerably more swing than you’d expect. Remember, this is a debut release from a relatively new band. They begin with “Take the Fall”, which builds pace and unadulterated oomph at a significant rate. The title track belongs on daytime radio and includes some wonderful work from Hickey, and final track “Avalanche” ends proceedings on a muscular high. Probably best to play it again. www.skyepointband.com www.facebook.com/skyepointmusic www.reverbnation.com/skyepoint

Story and Photos by Jonathan Vega Axl takes time to meet the fans

Guns – n – Roses is back in Australia with legendary front man Axl Rose! Their recent concert rocked the NEC on the 13th of March and exceeded all the fan’s greatest expectations! Showcasing new hits and old, loyal fans from the band’s beginning and a new generation just discovering a taste for Rose’s incomparable style; there was certainly something on offer for everyone. Originating from Los Angeles, California, the classic Guns-n-Roses line up was formed in 1985 and soon after released their debut album ‘Appetite for Destruction’. The group, along with other great rock ambassadors of the day, were most famously revered for their hard rock rifts and bangin drum beats that featured heavily on their albums. Forward thinking singer/ songwriter Rose also aided in the birth of, and dominated the much loved rock ballad scene. For Rose and his team of rock rebels, theirs was a sound and style of music that would continue to echo through the 80’s, 90’s and beyond. Welcome to The Jungle was the gutsy first release from the group and introduced the world to Rose’s own unique sound and we instantly fell in love. Sweet Child of Mine, the second single from the album would

Axl on stage with GnR guitarist DJ Ashba

soon follow and although it was certainly a love song (dedicated to his then partner Erin Everly) it was still more rock than ballad. It wouldn’t be long before we would have our hit ballad though and when their second album GNR Lies was released Rose delivered, offering us the beautiful ‘Patience’. By 1991 their third and fourth albums Use Your Illusion I and Use Your Illusion II were released. Songs like You Could Be Mine (originally released as the theme song for James Cameron’s film Terminator II), Don’t Cry and of course, the unforgettable November Rain burst on to our radios and televisions securing the band’s place as one of the greatest rock groups of our generation. Guns-n-Roses were here and here to stay but unfortunately the same could not be said for band member Steven Adler who was the first to exit the multi talented team. More changes in the band’s line up would follow in the years to come and currently includes Dizzy, Ricky, Ron Bumblefoot and DJ Ashba. Though members have changes over the years, with Axl still firmly at the helm, the essence and soul of the band could never be diminished. Performing these hits and a bevy of others

with all the on stage vibrancy and Rose’s unmistakeable raw, rock voice that had seen him shoot to stardom around the world; it wasn’t hard to see why his following is still so strong today, almost 30 years since the original band’s inception. With guest performers, Texan supergroup ZZ Top and Aussie rockers, Rose Tattoo, the night did not disappointment. Angry Anderson thrilled fans with classics like Bad Boy For Love and We Can’t Be Beaten while the ‘boys’ from ZZ Top, now well into their 60’s, wowed the crowd with their unforgettable chart toppers including Sharp Dressed Man and Legs. Fans were rocking in the rows but the highlight of the evening would finally come as silence and darkness fell over the venue, then, with a pyrotechnics display that could rival any New Year’s Eve event, the great man himself, Axl Rose, emerged from the wings oozing an energy and passion that simply cannot be replicated. As the evening came to a close, Novacastrians were thrilled by Rose, who traditionally indicates that it has been a great gig by throwing his mic into the crowd, being undeterred by a recent event at their Perth show (where a man had accidently been

struck in the face by the flying microphone). For one lucky fan in particular, the moment would become a night to cherish for years to come as Axl performed his signature move and they were able to claim a piece of GNR memorabilia. Almost 6000 Guners lovers from all around the world who had converged on The Newcastle Entertainment Centre as early as 7am to try and secure for themselves a prime position in the pits, now had ample time to reminisce their favourite pieces of GNR nostalgia. Comparing tall tales of past concerts and encounters with the 80’s superstar, now in his 51st year, or showing off thematic tattoos and irreplaceable items of memorabilia, the crowd had been well and truly psyched to see a musical line up of rock and roll heroes and for these very faithful few who were willing to wait outside for hours after the concert ended, an even rarer treat. Travelling from as far as Victoria, Perth and even Colombia, South America and waiting until the wee hours of the morning with only guns-n-roses fever to keep them warm, this was definitely a dedicated group of disciples. They had been dreaming of the chance to see their favourite idol perform one more time and now they shared with each other

the stories of their journey to Newcastle to try and catch a glimpse of this ageless icon of 80’s and 90’s rock. Fans such as Kimberly from Victoria described how she had worked hard and saved even harder just to be able to follow the Australian Tour from start to finish while Diana all the way from Bogota, Colombia beamed as she explained that the most exciting part of her trip to Australia was knowing that her holiday would culminate with the experience of witnessing one of her favourite musical masters perform again. She hadn’t had this opportunity since the band had visited her homeland in 1992 after unfortunately missing out on the 2011 tour. She recalled how the concert held in November had had an amazing impact on her especially as Axl began to croon the lyrics to November Rain and right on cue the rain had begun to fall. “The moment was just magical’ she smiled, ‘and this has been one of the greatest nights of my life since then. Tonight I actually got to meet him!’ Well known for staying back and working hard for hours after his performance has ended to ensure that everything has been cleaned up and properly packed away, Axl knows a thing or two about dedication and

his fans were just brought to life when the obviously exhausted star gave even more of himself and his time for the ones who he acknowledges make this amazing life possible. Axl, who is so often portrayed as “aggressive” when confronted by cameras instead saw the love of this loyal few who had waited until 3am just hoping to catch the smallest glimpse of this larger than life character and he rewarded them by coming out for a quick chat. Warm and friendly, this down to earth man was a far cry from the media portrayed menace that is sometimes shown on screens and magazines. With as much love for his fans as they had for him, Axl had one more gift to share. Posing for pictures, he was all smiles and ‘peace signs’ instead of smashing cameras like you might be lead to believe. Hall of famer and giant of the music industry, Axl was nothing more than gentle and appreciative of those who appreciate him so much. A superstar shining his light on Newcastle for just one evening, in the hearts of his fans, this rock and roll icon’s legacy will undoubtedly last forever. n

preparing

prawns

top tips

some do’s & don’ts

The versatile prawn is a favourite amoung seafood lovers and the careful preparation of this little morsel can mean the difference between loving your meal and ... not. Story by Charuka Abhayawickrama

Prawns are a delectable item that is enjoyed by many the world over which can complement just about any meal or even as a scrumptious dish standing on its own. But there is a long process before your prawns are transformed from raw ingredients in to a finished product. When buying your prawns make sure that they are in good condition visually which means that there shouldn’t be any bruising or any other obvious damage to the prawns as this will greatly affect the taste of your final dish. Shells should also be firm and possess that shiny look as if they have just been caught. In case you are storing your prawns for

later use, the proper way to store them in the fridge would be to house them in a drainable container or strainer. Always remember to put something underneath to catch the juices or risk spoiling your fridge. To further preserve your prawns covering them with a sheet of ice and a sheet of glad bake will also help further. If you’re going to keep them for a longer period then the freezer is your only option. Storing them in the freezer is best done by keeping them in a frozen block form and this can be done both raw or cooked. The next step is the thawing process which is also vital in the delayed preparation process. You can follow the usual process of

thawing from the freezer by placing it in the fridge but a better method is utilizing a brine. To create a brine all you have to do is fill your sink with cool tap water and add some ice to create a slurry of sorts (water filled with solid chunks of ice). Next add some rock salt to the mixture and wait a while before tasting it. If it tastes salty like the sea then you have successfully created a brine. Then add the prawns to the brine and let them thaw. Wait till they are clear of ice but are still firm before removing them. So remember always follow these steps when preparing to cook your prawns it will ensure that you keep your prawns safe to easy as well as delicious.
