“Art may imitate life, but life imitates TV” From the publishers...

- Ani Difranc

Australian TV’s non-ratings period has always been a terrible time for the avid movie watcher. It’s a time, perhaps a few months long when television networks do two very different things at the same time. Firstly, we see an increase in the “coming soon” promotions that begin before Christmas and continue until about mid february when the first of the “blockbuster” series begin. The other thing we notice is the exact opposite - TV programming becomes a lame shadow of the preceding year with endless repeats of the “best” that the year had to offer. All this promises is a mild chuckle, an echo of a former belly laugh. Over and over I have seen Wesley Crusher outwit Sheldon while undermining Penny and Leonard’s relationship; the cupcake business finally moves into a shop; Mr Bates takes the fall for his scheming exwife’s greed and can’t marry his housemaid sweetheart; Walden goes back into business with his ex business partners but then has to explain to his girlfriend that one of them is his ex-wife. Comedy and tragedy so entertaining the first and second - or even the third time around but the laughing is a little hard to muster when you know that Jake is still missing the point, Charlie remains ironically self-serving; Penny: ditzy but street-wise. Thank God they aren’t repeating Big Brother! I was recently introduced a new show “Wedding Band” staring Brian Austen Green. A refreshingly oddball series about an “indi” wedding band. It’s a comedy. The music is really, very good. I immediately related to the characters. It’s not too deep, but a bit too much like real life in an band - maybe just a bit... Now, I wonder, how to survive The Block?? - Steve Dunkley, Publisher.

the Earthy Paradise Story by Putu Eka Sariningsih

Situated on the middle of the Indonesian archipelago, first discovered by European sailors, Bali is a truly tranquil island, an earthly paradise for lovers of sun, beaches, surfing and a lazy holiday, honeymoon or getaway. Australian visitors often talk of the hospitality of the Balinese people and the beauty of the scenery - And the shopping. Bali as one of the “must visit” world’s tourist destinations. Over 8 regencies offer beautiful places and sites to be visited. Further, each of them presents unique character of the culture itself. An important and interesting aspect of this island is the Hindu culture with a array of temples from an ancient age. There seems to be a celebration of some kind every day as the Hindu people’s daily life is filled in by ritual culture. Once you experienced Bali, the air of the island will capture your soul. The daily 4 social/life

life and activities of the people reflect their spiritual culture. Everywhere you go there is evidence of the spiritual life in ritual ceremonies and offerings on the street that are often sweet-smelling incence, food and flowers. The aroma of burning incense greet you every morning as you leave your motel or resort. A reminder that you’re definietly not in Darby Street any more. The locals believe that temples, big trees and other locations are the dwelling places of holy spirits. It’s fascinating for the tourist and some places offer ceremonial displays to help explain their beliefs to westerners. This is perhaps why Bali is known as Heaven on Earth and Island of Thousand Temples. By employing a local guide, you can visit many temples that are unique and amazing. They are centuries old and are often maintained by their villiage. Larger tourist destinations like Besakih Temple are well maintained and extremely popular.

Besakih Temple is the mother temple of all temples in Bali. It’s nestled on the slope of the highest mountain, Mount Agung. Uluwatu Temple meaning (head stone) and Tanah Lot are dramatic and awe insopiring sights on the coast. Uluwatu is on the edge of the cliff in which it’s inhabited by group of monkeys. Right below the temple, most surfers find Uluwatu beach as paradise for high wave lovers. On the other part, Tanah Lot Temple is the 16th century temple that beautifully perched at the sea, rocky silhouette where many people come during the sunset to spoil their eyes and feel the moment. Legend has it that it’s the home of a holy snake. It’s a popular spot for proposals at sunset. At low tide, it’s possible to walk to the temple from the mainland. For accommodation, there are “bunch of

hotels” can be hunted. From small hotels or inns offering decent rates for a standard service up to luxurious rooms, wonderful view and exclusive services. Not every place has air conditioning and those who are not used to the thick heat of Indonesia might want to do some homework. The cool air at the end of a hot day can be paradise in itself. The traveller can find places to stay almost anywhere. Bali, for the most part, is geared for tourism and there are guest houses, resorts and B&B’s all over. Surfers can find their pleasure at the south coast of Bali. Kuta Beach is about 15 minutes from Ngurah Rai Airport where the white sand’s beach stretch more than 10km from Tuban, Kuta, Legian, Seminyak and Echo Beach.

Tanah Lot

Bali is, of course, famous for surfing. There are breaks in amazing places. Some beaches are well-known and local hawkers will try and sell you everything from jewellery to food but there are lesser-known beaches with fantastic waves that are peaceful and private too. This is the magic of surfing in Bali. There are endless cafes and resaurants to satisfy. Again, you can surround yourself in the people traffic of the main areas or escape to a more relaxed location. There seems to be so many choices and they never seem to be too far away.

Uluwatu

Rice paddies - near Ubud

Inland, away from the beach, some villages offer the serenity of paradise. You can hide away from the crowd, up to the mountains where your can find peace and quite while surrounded by the lush tropical plants or green paddy fields. Central Bali and northern Bali are well known for terraced rice fields. If you’re a resort kind of traveller, there’s countless choices. In resorts you can meet other travellers and share experiences, meals and activities. For a less structured holliday, a wanderer’s experience can take you anywhere. You may see and experience things that other travellers will never get to see. An adventurous spirit can be enriching. Perhaps a bit of both is just the thing. n

a little Conversation “I’m fine, the family’s fine, the weather’s been spectacular” Story by Tegan Hughes

Over the weekend I had the pleasure of participating in hours of good conversation. It was a rainy afternoon, at a coffee shop providing the best environment for a good conversation to flourish. It could have been compared to the Australian Open men’s final, as one thought triggered a response from the other. I didn’t even notice the time tick by.

Conversation is an art reserved for the civilised human, yet I find having a good conversation can be hard to come across these days.

is passion involved, as ideas are exposed with the use of intonation, hand gestures and facial expressions: it cannot be monotone

It was a friend I hadn’t caught up with for a while, but with the technology of Facebook it wasn’t like we had years to catch up on. We knew of each other’s latest ventures and social expeditions, from online posts and photos.

Many literary geniuses in the past have also yearned for good conversation. Oscar Wilde describes conversations about the weather as unimaginative, Austen mentions conversation makes for good company and Capote thinks it is only possible with the random event of two intelligent members of society coming together.

There is etiquette that must be followed. It will not work if you are passive or if you only talk about yourself. A conversation is dialogue so it is important to be both generous with your thoughts and accepting of others– willing to listen, yet willing to share a secret.

As the hours passed we shared stories of exciting adventures and the trivialities of mundane life, to profound opinions and topics flowed about soymilk, Indian and Serbian trains, umbrellas, old age and smoking. There were the occasional moments of silence, but these were only natural, providing the opportunity to ponder on a new thought. The thing about good conversation is that just flows. It is spontaneous and unpredictable, as one person’s idea inspires another, leaving thoughts that reappear in your head for days after. 10 social/life

It is an intimate activity. As a participant you must be willing to abandon any inhibitions and offer those involved a truth or depth about you. Conversation differs to the general chitchat, gossip and pleasantries, exchanged throughout the day, about the weather or the weekend, as it takes time. It tends to break the rules; you can discuss the seldom-mentioned topics such as sex, politics and religion. A good conversation is exciting. There

There is one friend who I can always rely on, for a good conversation, and often a glass of wine. Our discussions have a rare honesty. There is a trust as we bare our opinions when debating both our political, and lack of, spiritual, beliefs and are willing to share our greatest fears, one of which is divorce and ending up alone, even though neither are married. It is amazing how once voiced, a thought is no longer as fearsome as it seemed. With the right person, any one can enjoy a good conversation. The next time you have the chance to indulge in a good conversation, savour it. n

Any of the following are possible health conditions that can arise due to excessive snoring while you sleep: High blood pressure, stroke, arrhythmia and enlargement of the heart. There are many anti-snoring devices created for the sole reason of stopping snoring for these individuals suffering from sleep apnea. The common solutions include CPAP machines, BIPAP machines, mandibular advancement devices, anti snoring pillows, and snoring mouth guards.

Researchers of sleep apnea found a common link with fluid retention in patients that they were studying. During this study, men who were wearing thigh-high compression stockings every day of the week cut their snoring problems by three times the amount of those that weren’t wearing them.

Paul Searles composer

Residing and working in Singapore, Novocastrian, Paul Searles lives a creative life in music, film and photography. Interview by Steve Dunkley

How’s life in Singapore? Life’s good! I have a recording studio in Chinatown. Ben Rosen, an old mate of mine from Sydney, started a music company here and when he needed a new composer, I was the lucky guy. Ben’s a legend bassplayer who’s played all over the world. I used to live in a scary house in Redfern with him but now life’s a little easier. Where we are is a really interesting part of town, loads of great food and traditional local flavours. Across the street I can get amazing Char Siew for a few dollars and around the corner there’s world class Tapas for a few hundred. But my favourite dish is probably the humble fishball noodles for breakfast, mainly because it is a MIRACLE hangover cure. There’d be lot’s to see and do... Singapore is a really great place to live if you want to put your head down and work. Lots of friends do stopovers here. It’s great for a short stop. There have been some fantastic festivals on lately, excellent dance and theatre productions. But best of all I guess are the weekend getaways. I’ve travelled a lot touring with touring bands over the years but hadn’t seen much of Asia. Now I can

18 social/life

whip off to amazing places every weekend if I want. It’s a great base. Tell us about your early musical experiences in Newcastle. I played keys in a whole bunch of local bands, with some great musos in bands like The Yesmen and Flashback. I was studying architecture back then so I guess I wasn’t so serious about it. Mostly played covers but I was writing some pretty odd music at home. There weren’t so many bands doing original stuff back then unfortunately, perhaps because the record industry was so daunting. Wish we had Soundcloud back then. I went back to live in Newcastle a few years ago and there was some really awesome original stuff going on, particularly electronic. It’s a shame I never played in a band with my brother Darren, he’s a great guitarist working around town, I’m sure we’ll do something one day. ... And your working life in Newcastle began in architecture? ... Can we see your work here still? Ha, it’s probably all fallen down by now. I was lucky enough to work for Brian Suters, doing a lot of heritage work. I started work the week after the Newcastle earthquake and we had to act fast to save a bunch

of old buildings from developers. One of my first jobs was the Wesley church in Hamilton. It had twisted like a corkscrew in the quake and I had to draw it up brick by brick. Made for some very pretty drawings. I’m glad I had a chance to work in pen and ink. Brian also has an amazing knowledge of classical music. I learnt a lot from him and we still catch up when I’m in town. How long were you with Sydney funk band Skunkhour? I took a year off Architecture (which became 20) when I met the boys from Skunkhour for a jam. Funnily enough it was Ben Rosen who set me up, he’s a mate of theirs. I really had every intention of returning to architecture, but Skunkhour was just too much fun. We toured for nearly ten years, did the hard yards in a Toyota Tarago mostly. There were some awesome tours of Europe, US and Japan. I think the most memorable gigs were towards the end when we played for the troops in East Timor. It wasn’t so long after the troubles there and it was a very emotional experience. One of the gigs was in Balibo, we could see that famous house from the stage. After the gig a sniper came into our band room, he had been covering the crowd while we played. Not your

average groupie. Skunkhour was an awesome band, filthy hard funk, unbeatable groove. Such a chunky rhythm section, and guitarist, Warwick Scott is a legend. I just bought a Fender Telecaster guitar in his honour. The band’s rapper Del had some great things to say about Australia. Aya Larkin, the singer and I are doing a bit of music at the moment, trying out some stuff online. The band has been doing a few shows lately I see, but it’s too hard to get away from here. I hope I get to play again sometime. What fills your days now?

piano piece I wrote for an ad here. What do you do is your own time? Outside of work I’ve been into making films. It’s so cheap and easy to get around Asia from here. Last year I shot a documentary about an African kick boxer. We went to fights in China, Bangkok, Hong Kong and Singapore. Complete seat-ofour-pants “behind the scenes” stuff. We were backstage with the fighters, at Thai kids’ fight schools in old temples, and in limos with promoters. I’d never seen a fight before and it was an awesome way to check it out. Got me thinking that it’s time to lose the beer belly.

I work in a music production house called The Gunnery (www.the-gunnery.com) We do a whole bunch of interesting stuff. I just came back from a play reading with a fantastic local company called Wild Rice. I wrote music for a production of Romeo and Juliet earlier in the year. That was fun. It was a complete mashup, shouting raps over the fights scenes, little “Mozarty” vignettes.

I’ve also been taking photos, for a few websites, charities, that kind of thing. I’m back in Cambodia soon for a week of portraits, music lessons and model house building at my friend’s orphanage. Next week I’m taking photos of an island in Palawan for a friend.

But mostly we do ads, which is fun. Loads of variety and quick turnarounds. Really good for the “chops.” One of my happiest musical moments here was discovering a bunch of “how to play” videos on youtube of kids trying to play a

I’m not really doing any gigs over here. My last gigs in Australia were with Jenny Morris and Steve Balbi. I really miss those guys, it was really an honour to sing with them. They helped me find my singing voice.

Does your musical side get to play live?

I’m working on an album now, kind of a bunch of chilled “hangover” songs. I’m probably going to go to Prague to record some strings, because I’ve always wanted a good excuse to visit there. I really feel like my years of hard work have paid off now. I always followed my gut and went on mad learning binges including Film, editing, screenwriting as well as any kind of musical style you can imagine. I never thought of them as hobbies. I always started out visualising the “new life” they could lead to, and it has led to more than I imagined. So, you’re loving life in Singapore? Singapore is an exciting place, and it’s getting better all the time. I love the fact that everyone has a serious work ethic here. It’s a young country in many ways of course, and still finding it’s voice. Now is really a great time to be here. The more I travel, the more I realise how lucky I was to grow up in Newcastle. I miss the bush around Glenrock where I grew up, fishing on the beach with my dad. It really is such a beautiful place, I hope you’re looking after it ! n

justin townes earle ...bringing his guitar Appearing: Lizottes, Newcastle, Wednesday, 13 February 2013

Sometimes you don’t need a reason to do something, desire itself being enough justification. Such is the impetus for Justin Townes Earle returning to Australia to play another run of shows - he just wants to spend time in the country where he feels a special affinity with both the people and the land.

He’s probably been writing a swag of awesome new tunes, as is his wont; or travelling the US impressing all and sundry with his modern-day take on the authentic country music of yore, which was schooled into him from a young age by his legendary old man, Steve Earle.

Even customs have lost track about how many times the lanky country singer-songwriter from Nashville has been to Australia since his first foray in 2008 (possibly the 6th visit), he’s basically one of us now. He’d like that, we reckon.

We’ve heard whispers of him curating celebrations for Woody Guthrie’s centennial celebrations in New York, which sounds like something that he’d do. But he certainly made his debut at producing when he tool the helm of the legendary Wanda Jackson’s new album Unfinished Business.

He was last here in April for Bluesfest and a national run of headline shows in support of his presciently-titled fourth album Nothing’s Gonna Change The Way You Feel About Me Now, but we aren’t really sure what he’s been up to since then.

At the end of the day it doesn’t really matter what he’s been up to, only that he’s returning to Australia, and he’s bringing his guitar and incredible knack for writing odes for the downtrodden and brokenhearted, something of a speciality for the young man.

Lizottes Newcastle, Friday, March 1, 2013

Panthers, Newcastle - Friday March 1, 2013

It was February 1980, 10 months before the untimely death of John Lennon, that Australia and possibly the world’s, first tribute show THE BEATNIX was conceived and produced by Tony Dean - founding member and now owner/manager. Coming from a show band background, popular in the ‘70s and touring Australia wide, Tony was used to playing covers including The Beatles, Doobie Brothers, Beach Boys, Hollies, Bee Gees, & The

A press release from early 2009 suggests that Chan Marshall a/k/a US songstress Cat Power, suggested her days with Dirty Delta Blues (her illustrious backing band including members of Dirty Three and The Jon Spencer Blues Explosion) maybe drawing to a close. Turns out that was no idle threat... her current touring band includes just one former-DDB member, keyboardist, Gregg Foreman. The remaining members, all female, having been drawn from lengthy auditions. Sun, the first Cat Power album of all selfpenned material in six years, also follows that reinvention with all tracks bar those on lead single Ruin (the sole contribution by Dirty Delta Blues) having been played and produced by Cat Power herself. “Written, played and produced on her own, this is the rebirth of Cat Power... It’s an inspirational album that’s musically very strong.” - Yen Magazine “Her most joyful, sonically adventurous album to date, the best record she’s ever made... One of 2012’s biggest surprises and best records: an irresistible collection from an inspired, fearless and curious artist.” - NPR

Eagles which are all great harmony groups. The songs were derived directly from the top twenty but, as Tony tells the tale, “Punk came along and harmonised music became somewhat unpopular.” “It was suggested we play more Beatles music, everybody loves The Beatles.” he

said. From that simple suggestion Tony decided to only play Beatles songs.” Originally formed for a four-week season in Perth, the shows proved so popular that after 18 months it was decided to make the move to Sydney where the show is now based and is available to travel worldwide. The Beatnix Show includes fully authentic musical instruments identical to those used by The Beatles. www.beatnix.com.au 22 social/life

Visually too, changes are apparent. Gone are the trademark locks, replaced instead by a mohawk. Mad Max style. A statement of intent. While the revised stage show takes on arena-like proportions. This is Cat Power circa 2012. “When I moved to New York in 1992, I had a severe breakup and I cut my hair superduper short. And that’s the Sun album cover,” Cat explained. She describes her period of hair cutting like a mid-life awesomness. “I kept going shorter and shorter. The Cherokee video is kind of apocalyptic. I had a mohawk the summer of seventh grade, but I had never dyed my hair before, so this time I did. With all that awesomeness in mind, Feel Presents are proud to once again bring Cat Power to Australian and New Zealand shores. Touring at the invitation of Meredith’s Golden Plains Festival and the Perth International Arts Festival, this is Cat Power’s most extensive antipodean tour to date and follows 2010’s sold out national tour. The enigma that is Chan Marshall (aka, Cat Power) has done nothing to solve the mystery of the driving force that is her being. The enigma remains intact. Her stage show is merely complementary to the body of work that is as imposing as any artist in the past 12 years. And, she’s still getting better.

Leila encouraged artists to share their ideas on how they would like Newcastle to look in twenty years using pastels, pencils, shapes and ink. Popular Newcastle Herald cartoonist Peter Lewis was on hand to teach small groups of people how to create caricatures and cartoons using simple linear drawings. Peter has a wealth of experience teaching drawing and has a special knack for keeping his students engaged and having fun! Kate Burton’s (pictured far right) unique bus ticket collection (a special interest) served to be the media of choice for Kate to create portrait’s. Other activities throughout the day included mandala drawing and drawing onto old surfboards using surf music as inpiration. Visitors learned how to create chalk pavement art in a “sea creatures” theme and stensils to achieve a creative result. At 15 years of age, Jerry Ray from The Hunter School of Performing Arts was the guiding hand for artists to create a group drawing on an oversized canvas. The theme of the combined work was “dream, imagine, inspire.” Those who braved the soaring temperatures on the day could also enjoy the innovative rows of fan spriklers - Just the thing to cool off after a creative day. n Event: Location: Story: Photos:

Mind Heart

Quieting the Opening the

Story by Christopher Stewart

To put it simply, the act of meditation involves quieting the mind so you can open the heart. That’s it in a nutshell.

We often believe our hearts are open and we can feel much of what is going on in our lives. Yet to truly open the heart means we have to stop the thinking, the judging, the opinions, the analysing, the questioning, the doubting, and just love. It’s all that unconditional stuff. The act of doing this, takes practice and patience. Learning to meditate means learning to love. To love our self. To love all others. To love the oneness of all. To love more. The connection you feel when you ‘plug in’ to this oneness is the most irresistible state of love you will ever feel. Makes it sound like it’s worth the effort doesn’t it? Maybe you’ve had glimpses of this - moments when you felt it, and your heart expanded. The beauty of nature in a spectacular sunset or a magnificent rushing waterfall, a child’s innocent embrace, a long awaited accomplishment, an exhilarating sport or excursion, being with the one you love. These can make you ‘feel’ in the biggest sense of the word. And the feeling can be described as wonderfully peaceful, coupled with a glorious uplifting, a lightening up of the heart. What these experiences all have in common is an external factor. Something had to be there, something had to be seen,

in order to involve our senses. These ‘things’ serve to trigger this feeling.

Meditation serves the same purpose. It teaches you to connect with this feeling all on your own, without any outside stimuli. The source of that loving feeling is always within you. But what happens most often is that you don’t know how to access it on our own. You wait for the triggers, look for the triggers, and in fact even seek out the triggers, because you believe they are the source. When you quiet your mind, you are closing down the outside stimuli. You are holding the mirror up to yourself, deep within yourself, and waiting to see/feel the love. It’s there, but the practice is necessary to learn to wait quietly, build patience, and stroke and nurture your loving heart. Most of us have shy hearts and loud minds, and meditation serves to reverse this so we can truly feel the bliss and the joy and the ‘highs ‘we so crave in our lives. Now, meditation can be made to be much more complicated than what I have described. There are countless books, tapes, courses and workshops that deal with the core principles of meditation, and then expand upon them. They go into many, many aspects, avenues, theories, understandings, types, etc. It can be quite overwhelming for the beginner. But it’s perfect for the intermediate student of meditation.

When you are beginning, the less said the better. Keeping it simple is very important, because the process of meditation is so simple. If it’s not working, or if you want to know more about it, or you are ready to know more about it, then by all means read, study, learn. It’s like taking the same route to the supermarket every day and then finding out there are other ways of getting there, other roads that lead there, other journeys you can take. Study and practice of meditation has the potential to open up many layers of your heart. Everything in your life therefore opens up with it. Relationships bloom, work purpose is found, vibrant health is allowed, because love affects your belief system, your attitudes, your choices. Anger dissolves before it ever manifests, frustration mellows out, the pit of sadness and depression are filled up like never before. These are the promises of meditation. These are the long-term rewards. But in the beginning, meditation is simply quieting your mind so you can open your heart.

Searching for Meaning in the Language of Dreams Story by Aura Wright

Using the language of dreams can show us the way to achieve both our waking dreams and our greatest satisfaction in life. The landscape of dreams the sort we have at night when we are sleeping can hold the key to unlock our greatest human potential. The language is tricky. Its not quite like solving a math problem. Its more like solving a riddle or those picture puzzles that you played with in school. Remember, they were set up to show a series of pictures and symbols and you were supposed to piece them together in order to solve the puzzle.

is the domain of the left-brain.

It might show something like: (a picture of an eye) 8 2 (a picture of a bird) grrr. This particular puzzle would mean, I ate two burgers. These types of puzzles use phonetics, pictures and symbols all combined to convey a meaning that makes sense once it is strung together into one message.

The reason for this is simple, when we work directly with the right or symbolic brain, there is no resistance, and it is usually more truthful. It is truthful precisely because it is symbolic and takes things literally. It does not have language capacity to trick or cover up information from itself or anyone else.

This sort of language and the tools you need to understand it can be learned with some specific techniques. The example above is very similar to the way that the unconscious sends messages, signals and information to your conscious mind. The conscious mind the part of you that is aware and reading these words has learned to communicate in specific linear ways. It is very logic and language oriented, and it appears to be factual. This is how our culture has developed and evolved. The unconscious however, usually speaks to us through the right brain. The right brain is all about images, color, symbol and metaphor. It can be very literal as well. But it is not logical and linear that

Dream interpretation, therapy, psychotherapy and advertising such as what you see on TV or a billboard on the side of the road are all aimed at either understanding, changing or manipulating the language of your right brain.

This is why therapy is effective. When we (or a therapist) can read the symbolic language your unconscious is speaking often without your knowledge then that therapist can speak back and help work out conflicts, desires, or fears that emerge in the language of symbol. In much the same way, mainstream advertising; magazines, television, billboards are all aimed at convincing your subconscious to make a positive parallel between a favorable emotion or desire and their product. This is why you see beautiful smiling young people holding up beer glasses. Unconsciously you associate positive feelings or desires with the product. It doesn’t matter if you are smart, or onto their

technique, the imagination is captured, and the advertisement has done its job. The instant you become aware of the advertising campaign, you can make a decision as to what you want to do with that information you always have free will. It is extremely useful to educate yourself to the language that your own symbolic brain is using. Your mind holds the keys to whatever you want, need, desire and hope to accomplish even if those things are not in the realm of your waking awareness. Try keeping a dream journal, or taking time to listen for pictures, images and symbols that may emerge from your inner mind. These are keys, and they can unlock the inner meaning of personal happiness for you. You can learn to become more aware of this symbolic language, and through this awareness you will begin to have mastery over it and yourself. Story by Steve Dunkley

Busy, stressed workers are being encouraged to reawaken their taste buds by a leading psychologist after 60% of the British population admitted to never or rarely tasting what they ate.

social/life magazine

The majority of workers eat at work most days with just 13% leaving for lunch, with only 28% saying they savour their food and almost half describing lunch as a means to an end to refuel their body. Incredibly, with multicultural nations being a melting pot of global cuisine, awareness levels around food nutrition and healthy eating never higher, it seems the ability to actually taste food is under threat. The scientific research into lunchtime eating habits was led by Dr David Lewis with scientists at

Mindlab (UK). The 1,000 participants were able to only correctly identify 35% of ingredients and most did not detect flavour swaps - 93% were unable to tell the difference between beef from Chinese pork, 92% couldn’t tell ham from tuna, 82% could not detect Quorn from chicken, while 78% could not distinguish pork from chicken. Researchers found that, on average, 79% of people were unable to detect when basic flavours had been swapped, rising to 88% when people ate whilst distracted and 93% for people eating against the clock. Dr David Lewis says: “The abundance of great flavours food experiences have never been more diverse, yet our findings suggest consumers are lazy when it comes to tasting and appreciating their food. “I doubt there’s ever been such a rich tapestry of food and flavour combinations at our disposal, yet we’re not savouring what we eat.” he said. n

A campaign has been launched to encourage consumers to take time to taste their food after research showed that nearly 80% of people are unable to identify even basic sandwiches.

Elle’s easy recipe

Raspberry & White Chocolate Bread From The Shops: • 2 cups plain flour • 2 tsp baking powder • 125g unsalted butter, softened • 230g caster sugar • 1 ½ cups frozen raspberries • 2 eggs, lightly beaten • 1 cup white chocolate buttons, roughly chopped • 1 cup milk • Icing sugar, to serve • Butter, to serve In The Kitchen • Preheat oven to 18OºC. Sift flour and baking powder into a large bowl. • Mix butter and sugar together. Add eggs, white chocolate and raspberries and combine. • Add dry ingredients and fold gently. Add milk and fold until combined, careful not to over mix k. • Pour batter into a lightly greased and floured loaf tin and bake for 1 hour and 15 mins, or until bread is cooked by testing with a skewer (keep in mind the white chocolate will still be moist when pulling skewer out). Leave to cool in tin for 10 min before turning onto a wire rack to cook through.

• Once dry, dusk the top of the bread with icing sugar. • Serve thick slices with butter, warmed or at room temperature.

Elle Enjoy : )

When mixing batters, you will sometimes see the words ‘do not over mix’. This is so you don’t work the gluten in the flour that will result in your mixture becoming tough and dry. A loose mixture gives a moist and delectable result.
