Fresh potato chips can’t be beat

Snack foods can be categorized as comfort foods — and potato chips (or “crisps” as they’re known across the pond) are no exception. Try this recipe for “Homemade Potato Chips” courtesy of home cook, and country living blogger Kathy from Beyond the Chicken Coop.

Homemade Potato Chips

6 medium russet potatoes

2 tablespoons white vinegar

Water

Oil for frying (vegetable, canola or peanut oil)

Salt

1. Peel potatoes and place potato in a bowl filled with water.

2. Slice potatoes to 1⁄16 inch thick. Use

a mandoline to get an even, consistent size. Immediately place sliced potatoes in another bowl filled with cold water and 2 tablespoons of white vinegar. Allow potatoes to soak for at least 1 hour.

3. Drain potatoes and rinse with cold water. Leave potatoes in colander and allow all water to drain.

4. Place drained potatoes on a clean, dry kitchen towel. Pat lightly to remove any remaining water.

5. Fill pot with 2 inches of oil. Preheat oil to 380 F. Use a thermometer to test temperature of oil.

6. Test oil temperature. Ideal temperature will vary from 370 to 380 F. Fry one or two slices in the oil and cook until they are nicely browned. If the potatoes brown quicker than 3 minutes, lower the temperature by 5 degrees.

7. Place one handful of sliced potatoes

in the oil. Stir gently to prevent potatoes from sticking to each other. Cook until golden; 3 minutes.

8. Scoop out and place on a baking sheet lined with a baking rack.

9. Sprinkle with salt immediately and repeat until all potatoes are cooked. Tips: Soaking the potatoes helps remove excess starch and prevents the potatoes from sticking together.

1 medium yellow onion, chopped Kosher salt

1 28-ounce can diced tomatoes

2 15-ounce cans kidney beans, rinsed and drained

1 pound Texas-style beef brisket (see below), chopped

Remove the Dutch oven from the heat.

Tailgating at the big game is a time-honored and beloved tradition for millions of football fans. Tailgates tend to be parties in parking lots, and no party is complete without food. The best teams in the National Football League will battle it out on the gridiron in their quest for a championship this January and February. Despite chilly temperatures, fans of those teams will undoubtedly be tailgating outside the stadium before and after the games. A hearty dish that sticks to the ribs can make it easier to withstand winter weather at this year’s playoff tailgate. This recipe for “Brisket Chili” from Will Budiaman’s “The Essential Kamado Grill Cookbook” (Rockridge Press) can be just what football fans need to stay warm at this year’s tailgate. Better yet, it makes excellent use of leftover Texas-style beef brisket, giving football fans

1. Bring the grill to 500 F with the cooking grate installed, then preheat a 5-quart cast iron Dutch oven on the grate with the lid closed.

2. Pour the oil into the Dutch oven and close the grill lid. Once hot, add the cumin seeds and cook for about 15 seconds or until they start to pop.

3. Add the onion and stir until coated with the oil. Close the grill lid and cook for 8 to 10 minutes or until softened and browned.

3. Place the brisket fat-side up on the grate over the drip pan. Close the lid. If desired, wrap in aluminum foil after 5 to 6 hours or once the bark (crust) is dark brown.
