No need to skip the bread, these gluten-free

rolls enhance meals

A light and airy roll can enhance any meal. However, many people have to skip the traditional rolls come the holidays or during other times of the year because of food allergies and intolerances. Those who avoid gluten because they have celiac disease or for other reasons can rest easy knowing there is a delicious option that can be whipped up in no time at all.

These “Easy Yeast Rolls” from “It Just Happens to be Gluten-Free” (Do Life Inspired Publishing) by Jen Fiore are a welcome addition to any table.

Easy Yeast Rolls Makes 12

21⁄2 cups Gluten-Free AllPurpose Flour blend (see below)

2 teaspoons salt

2 tablespoons extra virgin olive oil

1 large egg

1 cup warm water

2 tablespoons cane sugar

21⁄4 teaspoons fast acting yeast

1 egg white (about 1 tablespoon)

1. In a medium mixing bowl, mix together yeast, water and sugar. Let sit for 5 to 10 minutes to allow the yeast to bloom.

2. In a separate bowl, mix together flour and salt.

3. Add the yeast mixture to the dry mixture along with the egg and oil. Mix together for one minute.

4. Cover the bowl with a towel and let it rise for 30 minutes.

5. Divide the dough evenly among the 12 spots in the muffin pan. Smooth the top and sides with a tiny bit of water on a small spatula for a nicely shaped, evenlooking roll.

6. Lightly brush the top of the dough with the egg white.

7. Bake at 400 F for 20 minutes until the tops are golden brown.

All-Purpose Flour Blend (Bread)

11⁄8 cups tapioca flour

11⁄8 cups potato starch

1 cup fine brown rice flour

1 cup fine white rice flour

3 teaspoons xanthan gum

In a large mixing bowl, mix very well with a whisk until all the ingredients are well

blended. Store in an airtight container.

Neither the writers of the wishes or the recipients are ever divulged. But it is vital that you include your name and phone number with your wish. Follow up calls must be made and without a name from the wish submitter WE CANNOT FOLLOW-UP.

Unfortunately it seems every year we receive wishes that we want to help, but have no way of contacting anyone… and that does not help the people that wishes are submitted for. Please, please put your names and phones numbers on your wish.

In years past we have provided gift certificates for groceries, Christmas trees, gifts for children… help with bills... and some things as simple as a gift basket.

Halloween kicks off people’s tendency to consume more desserts and candies, and Thanksgiving, and later Chanukah and Christmas, may round out the year on a sugary note. Desserts can be made a bit healthier with the right ingredients. Nuts certainly can pack nutrition into each sweet bite. This recipe for “Pecan Cream Cheese Cookies” feature pecans prominently. With only 4 grams of carbohydrates per serving, pecans fit into plant-based diets, a keto diet, a Mediterranean diet, and other healthy eating plans. One serving of pecans contains 18 grams of unsaturated fat, including oleic acid, making them hearthealthy, according to the American Heart Association. Pecan Cream Cheese Cookies

Yield: Around 24 cookies

1cup pecan pieces

1⁄2 cup pecan meal

21⁄3 cups all-purpose flour

1 teaspoon kosher salt

4 ounces cream cheese, softened

2 tablespoons unsalted butter, softened 11⁄4 cup sugar

11⁄2 tablespoons vanilla extract

1. In a large bowl, whisk together the flour and salt, set aside. Using an electric mixer, cream together the cream cheese and butter until well combined. Mix in the sugar and vanilla. Reduce the speed to low and gradually mix in the flour. Mix in the pecan pieces.

2. Roughly divide the dough in half. Wrap each portion in plastic wrap or parchment paper, forming the dough into a log about 2 inches wide. Wrap well and freeze until firm, about 2 hours or overnight.

3. When ready to bake, preheat the oven to 350 F. Line a baking sheet with parchment paper or a silicone baking mat. Unwrap one log and carefully roll the outside in the pecan meal, coating it well. Slice the log into 1⁄4-inch rounds and place them on the prepared baking sheet.

4. Bake for 18 to 20 minutes or until the middle is just set and the cookies are just starting to turn light brown on the edges. Cool the cookies on wire racks. Work in batches until all of the dough has been used. Store the cookies in an airtight container.
