t first glance, Scotland’s capital city may not seem like a haven for wildlife, but look a little closer and there’s plenty to be found. From the skies, to the sea, to the cobbled streets of the city itself, there’s a wild side of Edinburgh just waiting to be explored. The term urban wildlife brings to mind perhaps the best known and most controversial animal 8 |

seen in our city: the fox. With myriad gardens to explore and thousands of bins to pillage, the numbers of these sly critters are rising rapidly and they are growing in boldness, prompting a debate on the best way to deal with them. green spaces such as golf courses, they occasionally wander into roads or railway lines after being spooked by dogs and walkers. Just last year, a young deer in the city made national headlines when the SSPCA were called out to attend to the animal, which appeared to be in shock by tram tracks. Once secured in a crate, the animal was then taken (by tram of course) to safety, before being SF EDINBURGH

in search of night flying insects and moths from their roosts in the roofs of city tenements. Pipistrelle bats are the most common and can be seen around St Margaret’s Loch in Holyrood Park, the Hermitage of Braid nature reserve and over Blackford Pond. Keen bird watchers can also spot the occasional bird of prey over the city with regular sightings of sparrowhawks; over 100 of their nests are dotted around Edinburgh. As in most cities, pigeons are a regular sight and are often viewed as pests. The Scottish

Inchcolm The island can be visited on many of the boat trips that run through the Firth of Forth and is known for its wealth of wildlife. Parliament has become so fed up with them that hawks and falcons are regularly brought in to fly over the buildings in order to deter the birds from making them their homes. The city beaches are another excellent place to spot wildlife. The Firth of Forth is home to plenty of marine mammals. Seals are a common sight and have

even been known to make their way onto Portobello beach. Dolphins and harbour porpoises also regularly make an appearance in the waters off the city and earlier this year a pod of at least three humpback whales was spotted frolicking off the coast. It’s not just the outskirts of Edinburgh which is teeming with wildlife. The capital’s only natural freshwater loch is in Duddingston and supports the largest reedbed in the city, which is an important area for breeding and wintering wildfowl. Species of birds include the water rail, great crested grebe, tufted duck, mute swan and mallard, while otters have even been spotted swimming along the shore in winter.

‘Spring sees the city’s toads take to the streets as they migrate’

Edinburgh’s Holyrood Park is home to many butterflies, including the northern brown argus. In 2005 it was rediscovered after over a century’s absence caused by overzealous collectors, land use changes in the park and a new road in the area. It is hoped that the rediscovered butterflies will thrive and a pioneering conservation project aims to provide space for the city’s insects. The ‘A Square Meter for Butterflies’ campaign encourages companies to use their outdoor space to promote wildlife and support the city’s butterfly and bee population by providing space, food and shelter on roofs around the city centre. There are other wild residents of Edinburgh who also need a helping hand from time to time. Spring sees the city’s toads take to the streets as they migrate from the shelter of Arthur’s Seat to Dunsapie Loch to spawn. For two weeks at the end of March, Historic Environment Scotland help the toads on their journey by closing roads, covering drains and organising toad patrols to help them navigate their way and avoid being run over by cars. The park also sees a migration during the summer months when the tadpoles turn into ‘toadlets’ and make their way from the loch to the drier land of Arthur’s Seat. WWW.SFEDINBURGH.CO.UK

The story of the Shellycoat During the construction of the wet docks in Leith, a large shell-covered rock had to be moved. From it was born the myth of Shellycoat, a creature donning a coat of seashells who would imitate the cries of drowning people. Shellycoat would cause a flurry of panic amongst locals who, after following the screams, would find the creature laughing in place of the drowning victim they were expecting. Although Shellycoat was said to be mischievous rather than dangerous, there was a report of one attack. An Englishman, Dick, drunkenly challenged his friends’ notions of Shellycoat and went to find him. Dick’s friends found him the next day, washed up with two broken legs. He swore Shellycoat had repeatedly pushed him off the Shellycoat Stane.

S

oaked in history, the Shore area of Leith has been hand-picked by royalty as their preferred port of call both past and present. The Shore runs perpendicular to Ocean Drive down to Sheriff Brae, alongside the Water of Leith, a 24-mile river originating in the Pentland Hills. In the 1990s, archaeological findings from the area dated the port to the 11th century, making it one of the oldest in the country. It became Scotland’s principal port in the 14th century when its predecessor, Berwick-upon-Tweed, was captured by the English during the War of Independence. The harbour was visited by Mary, Queen of Scots and King George IV. The former

arrived in Leith in 1561 after a 13-year absence in France. Arriving earlier than expected, Mary rested in Lamb’s House, a local merchant’s house which stills stands today at the corner of Burgess Street. King George arrived in Leith in August 1822 on the first monarchical visit to Scotland since 1650. A plaque commemorating his visit is still visible today, next to The Ship on the Shore restaurant. The docks have a lucrative past. They were home to a busy shipbuilding industry for over 600 years with the final shipbuilding yard, Henry Robb, closing in 1984. Whaling proved another profitable trade. Seen as unethical today, whale meat and blubber were vital sources of food, oils and

materials before the 20th century. In the early 18th century, a ‘boiling house’ was set up in the Timber Bush area of the Shore and created a strong, pungent, oily smell when blubber was boiling. In 1834, the last whale was caught in the Firth of Forth, but Scottish whalers carried on their work in the South Antarctic in the 19th century. Leith has also contributed more than its fair share to Scotland’s booming whisky commerce. The Vaults on Giles Street date back to the 18th century and were originally used for storing wine imported from overseas. The building is one of Scotland’s oldest

commercial premises. By 1960, 85 whisky warehouses stood in Leith and the area was responsible for maturing 90% of all Scotch whisky. The Vaults are now the headquarters for the Scotch Malt Whisky Society, an international club offering a collection of rare, single cask whiskies to its members. The port went into decline after World War Two due to de-industrialisation. Slums sprouted up where crime and prostitution flourished. Famously the setting of Irvine Welsh’s Trainspotting, Leith gained a reputation as a decrepit, dangerous place. However, the 1980s saw a remarkable improvement in Leith. Abandoned industrial sites were converted into homes, arts venues and restaurants, and today the Shore is a hive of activity. From eateries specialising in fresh

fish and seafood such as Fishers and The Ship on the Shore, to the Michelin-star fare on offer at Martin Wishart and The Kitchin and more casual, recently-opened venues like Toast wine bar and The Pantry, the Shore has become one of Edinburgh’s foodie centres. It’s also an important arts hub, with Leith Jazz Festival taking place each June, and the Hidden Door festival, a ten-night extravaganza of music, theatre, visual art, dance and spoken word events, returning for its fourth edition this year. In 2018, the festival will take place in Leith Theatre, a cultural icon of the area, which was gifted to the people of Leith by the people of Edinburgh when the two burghs were joined in 1920. 20 |

The theatre opened its doors in 1932 but the auditorium suffered bomb damage in 1941 and didn’t reopen until 1961. During the 1960s and 1970s it was used as a venue by the Edinburgh International Festival and hosted bands including AC/DC and Kraftwerk, but eventually it closed its doors in 1988. However, thanks to a campaign by the Leith Theatre Trust, and with high profile ambassadors such as author Irvine Welsh and filmmaker Danny Boyle, it is now on its way to becoming a creative centre once again for Leith. Leith’s motto is ‘persevere’ and it certainly has. Historical yet forward thinking, the Shore, which has quite literally been through the wars, has emerged as an all-encompassing experience and a hotspot for visitors and locals alike.

A day in the life of... From parades to meeting the Royals – it’s all in a day’s work for the military mascot, Shetland pony Cruachan IV

mall in stature but big in personality, nine-year-old Shetland pony Cruachan IV has spent six years as the Royal Regiment of Scotland’s mascot. To date his career highlights include trying to eat the Queen’s posy, relieving himself in front of a crowd of thousands at the Royal Edinburgh Military Tattoo and, most recently, trying to nip at Prince Harry’s fi ngers at an event in the capital. Having recently been promoted to the rank of Corporal, Cruachan IV is a popular sight at parades,

‘He is a regular visitor to Balmoral whilst the Queen is in residence’ charity events and is also a regular visitor to Balmoral whilst the Queen is in residence during the summer. When not working at events, Cruachan IV – named after Ben Cruachan, the highest hill in Argyll – lives at Redford Barracks, where he is cared for by his handler, Pony Major Mark Wilkinson. Day-to-day life in Edinburgh involves regular fitness sessions like the rest of the soldiers on the base, and even the occasional trip to Portobello or Cramond for a well-deserved dip in the sea.

Fazenda 102 George St, EH2 3DF ‘Would sir like some more meat with your mountain of meat? Or perhaps I could instead interest you in a tsunami of steak?’ Except for a steakhouse in New Zealand’s art deco capital, Napier, where I unwisely took on their gut-buster challenge back in 1990 and ate a pizza-sized 90oz steak (I was ill for a week, don’t be tempted) I’ve never seen as much meat as I did at Fazenda. This beautifully appointed 175-seater restaurant on George Street is a gleaming temple to South America’s love affair with meat in general and steak in particular. It is, in effect, the poshest, swankiest all-you-can-eat restaurant you will ever visit. The deal is a pretty simple one, and like most meals comes in three stages. First of all you pillage a salad bar that includes everything from fresh salads and cheeses to cured meats, sushi and the national dish of Brazil, a bean stew called feijoada that is served with rice. The next stage is to turn over the little red sign you’re given so that it’s green for ‘Go!’, which is when a tidal wave of meat hits you. A neverending stream of waiters wander over bearing skewers of 13 different meats (signature steak Picanha, rump, lamb, chicken thighs, pork belly, pork sausage, bottom sirloin, tenderloin, skirt, sirloin, spicy chorizo, chicken with bacon, chicken hearts) and will cut off a chunk of each for you at your table. This goes on until you are virtually begging for it to stop. We loved the picanha, tenderloin, skirt (all the steaks are cooked medium rare) and especially the lamb, but the chicken was way too dry. All of the above can be preceded by cocktails and washed down with some really good and mainly South American wines, which start from £21.65. The meal ranges from £19.50 (midweek lunchtime) to £32.50 (evening). Puddings (in the unlikely event you have any space left) are around £6 extra – we had the selection of petit fours (good) and the Brazilian creme caramel (strange, came with a banana). We shared a delicious baked Époisses to start and for mains I had the Madras spiked hake while my friend raved about the flat iron steak, which was cooked to perfection and cost just £15. Daruma 215 St John’s Road, EH12 7UU By day Cafe Rosa serves up a selection of brekky and lunch goodies, but by night it transforms into Daruma, an authentic Japanese restaurant. The highlights for us were the pork gyoza, and the soft shell crab roll, which were almost too pretty to eat, but boy am I glad I did. Prices are very reasonable, allowing diners to try out lots of little dishes; it’s perfect for anyone who hasn’t much experience of Japanese food, and it’s BYOB. Makars Gourmet Mash Bar 91 Shandwick Place, EH2 4SD When it comes to the ultimate comfort food nothing can compete with good old mashed potato, at least in my opinion. So you can imagine my delight when I walked down Shandwick Place the other day and did a double take when I spied a new Makars Gourmet Mash Bar, which had seemingly sprung up overnight. Occupying the site of an old burger restaurant, the new premises appears to confirm the success of the original restaurant located on The Mound – with the original restaurant always packed, a second premises seems like a good idea. Unsurprisingly, the menu is packed with potatoes in all their guises. Mash, rosti and potato skins form the bulk of the options along with a good selection of meats, a couple of vegetarian options, plus a variety of sauces and seasonal vegetables. We went for the roasted crispy potato skins to share as a starter following a keenly fought discussion with my dining companion. In my experience, potato skins are invariably the default fodder in high street chain pubs, and they arrive swimming in oil. Thanks to Makars, my opinion has now changed. Rotisserie roasted, these potato skins were well seasoned and crispy, and topped with freshly chopped tomatoes and a side of cool sour cream. For mains we both went for the sausage and mash option. I plumped for the traditional skirlie vegetarian sausage with whisky and peppercorn sauce and a side of wholegrain mustard mash, while my companion went for the smoked sausage with cheese and chive mash. The sausages were substantial and well cooked and the mash was perfection, with not a lump in sight. The pudding menu was a list of classic favourites; we went for a brownie and stocky toffee pudding, both great and a nice way to finish off the meal. We went for nachos to start with, which were tasty enough, followed by a hearty naked burrito and a delicious Yucatan buttermilk chicken burger. The bar definitely takes advantage of the student population with student discount offered, a sports bar vibe and tasty, reasonably priced food along with a good selection of cocktails, beer and spirits. Tapa This Leith eatery in a converted warehouse tucked away just off The Shore in Leith is where we often go as a family for a lazy Sunday lunch with friends as it’s relaxed, child-friendly, able to cope with big groups and there’s always space. The £15 set lunch is good, but we like the costillas, sea bass ceviche, pollo al infierno and blue cheese croquettes. It’s not cheap but the service is good and the quality is consistent.

El Quijote Established eight years ago by a bunch of Spanish pals who moved to Edinburgh in 2003, this fantastic little tapas restaurant strives for authenticity, so there’s no paella, tortilla or Spanglish flourishes, just the sort of dishes you’d find down a backstreet in Andalucia, with a huge accent on the use of Iberico pork. There’s also a good selection of Spanish wines, plenty of choice for vegetarians, and (certainly by the usual tapas standards) huge portions.

Lasal This very cheap, relentlessly cheerful and authentic little tapas restaurant is very popular with Edinburgh’s Spanish community and well worth a visit. It shares space with a flamenco school, so you’ll sometimes have a soundtrack, but this is everything you’d want in a neighbourhood restaurant: friendly, convivial, affordable. Cafe Andaluz This city centre joint is a bit touristy thanks to its prominent position on George Street, but it has stayed true to the values which made the mothership in Glasgow’s West End a runaway success (there’s also a branch in the Old Town). The Moorish decor is wonderful, but the flipside of the lightning speed which this Spanish food for Scottish tastes arrives is that I wonder how much has been freshly produced. Still, it is a slick operation that specialises in giving people what they want and remains resolutely popular.

Indaba Warning: this cosy eaterie is not your standard tapas joint. This is partly because it is owned by Spanish chef Begoña and her South African husband Charlton, who does front of house. The result is not so much a fusion restaurant, as one which serves a smorgasbord of Spanish, South African and South American sharing dishes from boerewors and boquerones to haggis and tacos. The chunky specials board changes daily, and while meat dominates there’s a always a fish of the day. The staff are friendly, while the open kitchen is a treat for committed foodies and casual cooks alike.

Malvarosa The battle for the final spot on our Six of the Best came down to Serrano Manchego on Leith Walk or Malvarosa, with Portobello’s finest getting the nod because of its hugely loyal local following (although this means you have to book ahead and watch the staff chatting to regulars). There are some off-piste tapas options, but the menu is dominated by the usual suspects (boquerones, patas bravas etc), with its paella the pick of the mix. Iconic building DRUMSHEUGH BATHS As the oldest private swimming club in the city, Drumsheugh Baths has a rich and interesting history. The building was designed by architect Sir John James Burnet and opened in 1882, but was destroyed by fire only a few years later and had to be rebuilt on the same site. Its Moorish style is typical of baths built at the time and the building boasts dramatic red brick arches, an open timber roof resting on seven bays of iron columns and two glass cupolas. The pool itself has remained unaltered over the years and the rings and trapezes suspended over the water are still used to this day. www.drumsheughbaths.com

My city garden After 35 years in their Hermitage home Tony and Maureen Toft have created their perfect garden. ‘Because of the size we’ve had to become keen gardeners,’ explains Tony. ‘It would either be that or it would be overgrown so we’ve learned on the job.’ The garden is just over a third of an acre and has two rockeries of alpine plants as well as a large herbaceous border which is at its best in the summer months. ‘We have a lot of rhododendrons and we plant a lot of tulips,’ says Tony. Each year the couple plant around a thousand

tulips, adding spring colour and character to their garden. ‘We just use the tulips for one year,’ he says. ‘Other people allow them to try to flower again but it’s very difficult to do in a climate that’s not hot enough, so we plant new ones. It’s great fun actually deciding which ones to put in. ‘Some plants don’t do as well in certain positions so we are constantly changing things, but not dramatically. It’s good but we’re never completely satisfied – that’s part of being a gardener.’

hen interior designer Rachel Richmond and her husband Adrian moved into their New Town property in 2015, they knew that it would take a lot of work to create their dream home. The five-bedroom home on Northumberland street includes two reception rooms, three bathrooms and is arranged over three f loors, with the addition of a basement, which the family use as their utility space. ‘When we moved in, the property hadn’t been touched for about 25 years and so it was in a ver y tired state,’

explains Rachel. ‘A theatre set designer had lived here and the whole place was adorned with murals and really quirky features. We knew it was going to be a hefty project.’ With the bathrooms and kitchens dating from the 1980s, these spaces were a key focus. Clean lines and pops of colour were used throughout the property to bring it up-to-date and create a home that functioned for their family. ‘On the ground f loor we have the kitchen, television room and the spare bedroom. The middle room is ver y much our f loor and the kids have the top f loor.’ Renovating a period property had its

challenges but it was a project that Rachel felt passionately about. ‘I loved the high ceilings and all the original features, I wanted to restore and reinstate as many as possible. It was a case of celebrating the old, original features but we added our

The colour is ‘Salon Drab’ by Farrow and Ball and it’s such a lovely colour in the evening; ver y atmospheric.’ The finishing touches to the house were important to the couple with careful choices being made in regards to furniture, lighting and art. ‘My husband and I tend to always pick our artwork together. We see differently on so many things but it is one of the things we do have in common.’ As an interior designer, Rachel’s home is an important way to showcase her style. ‘My style is quite eclectic; I’m not scared to mix up looks,’ she says. By design Furniture designer Hugh Parsons’ modern rustic style and attention to detail is taking the design world by storm

aking the decision to turn his woodwork hobby into a business has certainly paid off for Edinburgh furniture designer Hugh Parsons, whose work has been sold in high-end design stores and even occupies a place in Edinburgh Castle. He was introduced

‘Hugh puts a lot into his designs in terms of complexity’ to the craft at a young age. ‘My dad is a conservation architect and he’s always been quite hands-on teaching me woodwork from an early age,’ he says. ‘Before I started university I decided to do a wooden boat building course which then led me on to cabinet making which turned into a business in 2012.’ Hugh’s best known piece is the Monarch Chair which, just a few years ago, caught the eye of an interior designer working on one of the rooms in Edinburgh Castle. Hugh was commissioned to create a collection of furniture based on the chair for Edinburgh’s most iconic building.

More recently he created a cribbage board from the fi nest sycamore and walnut wood with 24 carat gold plated components which was sold in the Conran Shop in London and Paris. ‘It was a dream opportunity to sell things through them as they’re known all around the world.’ Describing his style as ‘modern rustic’ Hugh puts a lot into his designs in terms of complexity, ambition and cultural influence, including incorporating elements of celtic designs. ‘I’m moving more into the design of furniture rather than making it so I work with a network of cabinet makers who create the pieces. I’m also specialising in marquetry design; an art form that’s been around for a long time. I focus on using contemporary designs in marquetry.’ www.hughparsonsdesign.com

I was born in Simpson Memorial in 1960, which I think was part of the Old Royal Infirmary on Lauriston Place. My mum and dad lived in a council housing estate in Magdalene down near Portobello. It was a plain, working class upbringing in Magdalene Gardens. My parents said that when I was a baby I wouldn’t stop crying until they put on Jimmy Shand records. They would park the pram beside the radiogram and stack up maybe eight or ten Jimmy Shand records on the spindle to keep me quiet as a youngster. When I was four years old, my parents put a toy accordion in my Christmas sock and mum said that within two or three hours of taking it out of the box,

I was playing Oh Susanna and these type of tunes on it. I was a member of Edinburgh Zoo from about six years old. There used to be lectures in the big house and I would go and listen. The next phase of zoo visits will be going with my god-daughter.

Myself and Aly [Bain] play the Queen’s Hall, and I also do it a couple of times a year when I do my Christmas show, The Christmas Songbook. I live out in South Queensferry now. Where I live is kind of like living in the country but it’s only 20 minutes from Edinburgh.
