ORGANIC WINERY GEORG TOIFL: DISTINCTIVE WINES WITH CHARACTER

“We are the third generation of the Toifl family to run the winery, so on the one hand we maintain the old winemaking tradition,” Helga and Georg Toifl point out. “On the other hand, we work with modern, biologically sustainable techniques to bring out the best in our vines.” For the Toifl family, one thing is clear: nature is in a constant state of flux. It is incredibly diverse, and the interplay of climate, soil and grape variety opens up almost limitless possibilities. “For this reason,” says Helga Toifl, “we try to cultivate the vines as naturally and carefully as possible.” It makes sense, then, that the Georg Toifl winery was one of the first agricultural businesses in Austria to commit to the production methods of the Regenerative Organic Alliance, thus placing issues such as organic viticulture, soil conservation, humus forma28

tion, sustainability and fair treatment of people and animals at the centre of its activities. The Georg Toifl winery produces three lines of wines, ranging from fruity and dry, to multi-layered and elegant, to deep-flavoured, high-end wines. “Our main focus is on Grüner Veltliner in different vinification styles.” When asked about the typical characteristics of their wines, the Toifls' answer is clear: “Our wines are certainly not mainstream! We give each wine the time it needs to fully develop its individual potential. For us, each vintage must be recognisable, so typicity is desirable. Their uniqueness is what makes our wines special.” For the two winemakers, it is clear that wine is not just a luxury food, but also a cultural asset. “We want to give our guests a holistic
understanding of viticulture, from the vineyard to the bottled wine. That's why we offer wine tours, wine tastings and guided bike tours through our vineyards. We also open our winery for events and offer a varied programme throughout the year, a mixture of music and art that allows our winery and the topic of wine to be experienced from a completely different angle,” says Helga Toifl. “Wine is not superficial, it is not easy to understand.
