Welcome to our Summer issue. We have continued to receive some great feedback since we revamped the look of your local magazine. We are a local, independent, family run business and are very proud of our magazine. Inside you will find a different look but the same quality and we have a full magazine for you to read, lots of community, charity and local events on the community pages as well as of course all our quality advertisers. Chocolate Raspberry Truffle Cake Ingredients

Cake 350g butter 150g caster sugar 200g soft light brown sugar 6 eggs 300g gluten-free self raising flour 100g cocoa 2 tbsp freeze-dried raspberry* Approx 8 drops of raspberry essence** (Optional)

but I bet you will be surprised at what temperature your oven is, compared to what it says it is on the dial!

To fill & decorate: Approx 500g fresh raspberries, washed and dried

Method Make the ganache first, so it has time to slightly set. If you have never made ganache then this is the easy peasy way I make it…

This is an indulgent treat that will surprise everyone, as it is actually gluten free! I created the recipe for Feast Hinckley two years ago, and it was hugely popular over that weekend. Chocolate and raspberry is such a delicious combination, and this deliciously gooey chocolate cake is packed full of fresh and dried raspberries making it perfect for a dinner party dessert or just an afternoon treat! A note on oven temperature - people often ask me why their cakes never bake right, and my answer is always to get to know your oven. Baking at the wrong temperature is one of the reasons that cakes fail, but often you don’t KNOW you are baking at the wrong temperature! Most recipes recommend baking at 160-180C, but I never do. I use the ‘long & low’ method when baking, turning the oven right down to 140-150C (depending on the size of the cake), which means that the cakes come out evenly baked with flat tops. Also invest in an oven thermometer, they are not expensive,

Heat the cream in a medium pan over a medium heat, and whilst it is coming up to temperature, break the chocolate into pieces. Once the cream has reached boiling point, let it bubble for about 10 seconds then take it off the heat and tip in the chocolate, then just leave it for about 5 minutes before giving it a good stir. Keep stirring slowly until you get a beautiful glossy ganache, then set it to one side away from children, they WILL eat it by the spoon. If you have bits of chocolate that haven’t quite melted don’t worry too much about it for this cake. Grease & line two 8” sandwich tins and preheat the oven to 150C/GM 2 ½. Either by hand or in a stand mixer, cream the butter and sugars together, and once light and fluffy add the eggs one at a time, beating well after each. Sift the flour and cocoa into the mix and either fold by hand or use the slow setting on the stand mixer.

Add the freeze-dried raspberry, and essence if you are using it. Split the mixture between the two tins and bake for 20-45 mins, depending on your oven. Keep checking after 20 minutes until a cake tester comes out clean, or the middle springs back when pressed. Once baked remove from the oven and leave to cool in the tins on a cooling rack for 10 minutes before turning out. Take about half the raspberries and mash them slightly with a fork. Once completely cool place one cake on a plate, slather a couple of spoonfuls of ganache on, spoon on the mashed raspberries, then top with the next layer. Using a knife and a jug of hot water to help it go on smoothly, cover the cake with the rest of the ganache, then top with the raspberries, and a sprinkling of icing sugar and there you have it! * Sainsbury’s sell freeze-dried raspberry and strawberry in the home baking aisle ** I use Foodie Flavours for all my flavourings they are concentrated flavours so you only need a few drops We are not responsible for the outcome of any recipe you try from the magazine. Cyber Crime Did you know that there is now more reported crime online than in the real world? Would you be surprised to learn that Leicestershire Police have a dedicated Cybercrime Unit? And a dedicated Cyber Protect Officer, whose role it is to raise awareness of Cybercrime, fraud and scams? My name is Samantha Hancock and I am your Cyber Protect Officer. I want to share with you a few pointers that will help keep you safe online. First and foremost, whatever devices you use to access the internet and email, always ensure they are running the most up to date software. When you get a notification saying there is an update available, please do install it ASAP. If it’s an option, choose auto-update. Secondly, make sure you have antivirus installed and running. These two steps alone will protect you greatly. Next up, make sure that you have a backup (copy) of any important files, and of course all those precious digital photographs! You can do this by setting up a cloud account that automatically updates, but personally I also have a separate hard disk/memory stick too. There are many reasons to have backups, devices can break, files can become corrupted and there is the ever present risk of malware or ransomware. Another important rule to adhere to is to never click on a link in an email JUNE / JULY 2019 EDITION

to log in to any sort of account. We need to be alert to phishing emails that are trying to trick us. If ever you have an email about a refund, a purchase or a problem with any sort of account, log in via a browser or an app, never by clicking on a link in an email. Unfortunately it’s very easy for fraudsters to send emails, text messages and alter Caller ID to make their scams look legitimate. Please never disclose any personal details via email, text or over the phone until you have verified the contact is legitimate. For more information on this I urge you to visit www.takefive-stopfraud.org.uk If you ever receive a call claiming to be from the bank or Police about suspicious activity on your account requiring you to withdraw money, or transfer funds to a “Safe Account”, this WILL be a fraudster. The Wistow Moon Walk To mark the 50th anniversary of the first man to walk on the moon, the award-winning Wistow Maze has been designed in the shape of an astronaut. As I write this, the day has been sunny and hot, but by the time it’s published it could be hammering it down with rain – who knows?? There’s so much going on in the housing industry currently it’s hard to know where to start. There are new laws appearing every month (with conflicting advice) which makes it all very confusing, but we’re keeping up with it and ready to offer our input. Some Landlords have even decided to “throw in the towel” and sell, which is a shame for the renters but good news for first time buyers! If you know anyone thinking of selling or renting their home, contact us for professional advice! Seven years ago, I bought out Piink Estate Agents. Remember them? I dropped myself in at the deep end, inherited 45 unsold properties and entered the sales market. Some of the stock had been available for a very long time and I found myself being dis-instructed daily by frustrated sellers. It was a steep learning curve and I’ve never forgotten it! One particular seller was struggling, not because it was overpriced, or that the house was in poor condition, but because of the style of the interior. You see the seller, although a nice chap, was a Goth, who worked in a Gothic warehouse storing and selling Gothic goods to other Goths. Can you imagine what his house looked like? Think dark reds, black, deep purples and generally the darker side of life and yep, you’ve got it. Needless to say, although the marketing and price was spot on, unfortunately there wasn’t a run of Goths looking to purchase a house at that particular time. It was down to me to give him the bad news. In order to sell his home, he must neutralise the décor. He was crest fallen. However, after a week he called me over to retake the photos and I was impressed. The house was white and looked huge. Of course, there was the odd purple here and there, but the photos looked amazing. It went online and within a couple of weeks the house sold! So, the moral of the story is that although you may think your house looks amazing, you’re not the person buying it. Keep it light, spacious, clutter free and neutral and buyers will be attracted to it. Except Goths... The dreaded Tenant Fee ban is upon the industry! From our perspective it’s all doom and gloom, but I want to be positive and find that chink of light streaming its way through the Private Rental Sector. It’s great news for tenants who have struggled to apply through an agent because the cost has held them back. Application fees are now history, deposits have been capped at five weeks, and there’s even discussions about the Section 21 notice being reformed which will stop “revenge evictions”. Some Landlords have decided to sell because they know that their costs will rise, or they’ve just had enough. Which is good news for first time buyers as more stock hits the resale market. Those horrible things stuck on a pole outside houses saying “To Let” or “For Sale”. You’ll find a glut of them outside blocks of flats generally making the place look untidy. Ours tend to go missing but I’ll blame the competition for that! Bless em (I once found a load of mine on a bonfire, but that’s another story). Some houses do actually sell without a board and often sellers ask us not to place one outside their house “because they don’t want the neighbours to know”. Which is funny because as soon the house goes online, it’s the neighbours who’ll check out the listing first! One particular seller was adamant that she didn’t want a board outside her house and I just couldn’t persuade her otherwise. That is until she mentioned the house she wanted to buy; “It’s on the Hollycroft and at the weekend we took a drive around the Estate to see what was available and spotted it”. “Great”, I said “How did you know the house was for sale?”. If you genuinely want to sell your home, you must use all the marketing tools available and boards help tell the world that your home is ready to view. Animal Aid In April last year a stray Lurcher came into the Centre, just six days later she gave birth to seven beautiful puppies. Fast forward a year and our training barn is full of barks and laughter as the litter and their new forever families are brought back together for a fun-filled first birthday celebration. Thanks to the love and care of the staff at the Centre, Jasmine was given all the support she needed as a new mum and her seven fur babies thrived and were soon ready to find their forever homes. We care for more than 400 dogs and cats each year who have been lost, abandoned, neglected or because their owners find they can no longer care for them. We don’t receive any Government funding and rely on the generosity of the community to help us to continue to help dogs in need like Jasmine. Many of our supporters have joined our Membership Scheme, regular Membership donations provide a strong and sustainable source of income to help us plan for the future. By becoming a member of our community, you can help to make sure we can continue to help dogs and cats in need of a second chance. We have four different membership levels from Bronze starting at just £3 per month, Silver from £10 per month, Gold from £20 per month and Platinum from £40 per month. me & dee charity – making special memories My name is Maria Hanson MBE. I set up the me&dee registered charity in July 2006. It was born from a desire between myself as an extremely ill woman enduring multiple rounds of life saving surgery, and my very close cousin Delia who had cancer. me&dee has a simple mission, to ensure families going through difficult and uncertain times are gifted with memories they can treasure, never losing sight of what truly matters. Because it’s those special moments shared with the ones we love, no matter how complicated circumstances may be, that are most precious of all. This is done by means of a free holiday in one of our 2 luxurious static caravans situated in Mablethorpe. Each family is given as much of my time as is needed to make sure that an often-last holiday together is as memorable as possible. They also receive a beautiful memory elephant cuddle toy and a hand made packed full memory box. Each family also has use of a private sea front beach hut with sink, fridge, kettle and comfy seating. Every effort goes into making the holidays as special and memorable as we can – that is what we are about – creating memories. We are a self-funding charity. As we have no tick boxes on our forms, and our criteria is very wide, we do not fit a criterion for grants and funding. It costs around £50,000 to give 100 holidays, and maintain the caravans and beach huts, cleaners and repairs, site costs etc. I am unwaged and we exist and sustain our charity by working 7 days a week, 52 weeks of the year. So many of our families are parents in their early 30’s who are facing very short futures themselves or their little children are. 1. ***** is a young mommy with terminal cancer who has a 5 year old daughter, making memories as quickly as possible with daddy too on holiday was imperative. 2. **** is a single daddy with 14 year old twins, boy and girl. His daughter has terminal cancer and in between finishing a course of chemotherapy and having her leg amputated to try and give a little more time, this holiday away from all the stress and pain and hospital life will create just a few days of special time together by the sea. 3. **** is a young single mommy to a little girl who was diagnosed as a toddler with neuroblastoma child cancer, and an autistic toddler. To mark the 50th anniversary of the first man to walk on the moon, the award-winning Wistow Maze has been designed in the shape of an Astronaut stepping out onto the lunar surface. It’s a great way to celebrate the most memorable leap for mankind, when Neil Armstrong successfully stepped out of Apollo 11 and landed on the moon. The giant 8 acre maize maze has a fun Quiz Trail hidden amongst its 3 miles of pathways, with high level bridges and towers giving stunning panoramic views. Visitors must find 12 quiz boards which will feature other historic first achievements. Visitors can also take part in a variety of mini mazes and games in the Activity Funyard, which includes a space-hopper track, hoopla, beanbag throwing and a football shooting game. These include a large redeveloped Victorian garden, canal side gardens, gardens with south facing views, established and recently developed gardens. They include vegetable gardens and wildlife areas as well as more formal lawns and flower beds. Also visit the Pocket Park with its formal garden, conservation and wildlife areas. Refreshments, including home-made cakes, are on sale at the Village Hall. Drinks are also available in the church. £5 entry per adult, accompanied children free. All proceeds go to Macmillan cancer Research.

Burbage Crusaders Bowling Club Lawn bowls is a game that people of any age, gender and ability can take part in and enjoy. It is a very accessible game and many players

take it up with the intention of just playing socially for a little 45 fun and exercise in the fresh air with friends. As they gain more understanding of the game and develop their own skill (and make no mistake it is a game of skill) they quickly progress to competitive bowling. If you would like: some gentle exercise in the fresh air, a little friendly competition, to learn a new sport requiring skill and judgement and friendly and encouraging company. U3A Hinckley We are a growing local organisation, celebrating our 25th anniversary this year, covering a wide area which includes not just Hinckley itself but Burbage, Earl Shilton, Barwell and the surrounding villages. With over 400 members, we have 38 interest groups, offering something for everyone, such as Coffee and Current Affairs, Scrabble, Walking, Singing, Bridge, French Conversation, History, Reading, Lunch Groups, Croquet. Despite the title, the U3A, ‘University of The Third Age’, need not necessarily be academic. Run by members for members, it’s for anyone retired or semi-retired. Our main monthly meetings are on the 3rd Tuesday of the month, at Mary Forryan Centre, St Peter’s RC Church, Leicester Road, Hinckley, open from 1:30pm, when we meet other members, hear what is going on, listen to an invited speaker and enjoy tea and biscuits and chat, for £1. Burgess Bowls Club, Burbage Come and join a friendly local club for some outdoor bowling. Burbage Parish Council opened the green at Bridge Road on Saturday 6th April. There is no joining or annual fee in the first year and coaching will be available on Saturday mornings during April and May. We bowl socially against other local clubs both on Saturdays and during the week so come and try this sport whether you are experienced or a beginner.
