START SMALL

THE FACES & BRAINS BEHIND, WONKY BOX, NEW ZEALAND
Like many good stories, it starts with a campervan and a dwindling bank account! Owners and co-founders Angus and Katie were recent Covid returnees from the UK, doing seasonal harvesting work in Nelson. They were shocked to discover how many thousands of tonnes of produce were discarded because of stringent retail standards and impractical logistics.
Determined to get more produce onto plates, they turned their campervan into a makeshift veggie delivery service, picking up “wonky” or excess produce from growers and delivering them around the Wellington region.
Fast forward three years and Wonky Box has three rescue centres (or fulfillment warehouses) around the country - in Auckland, Wellington and Christchurch- and delivers to all nonrural addresses across the motu.

Wonky Box operates on the principle of reducing food waste. How significant is the impact of your operations on local food wastage statistics, and can you share any success stories?
We’re super proud to share that thanks to the support of our caring community of customers, we’ve rescued over 2 million kilograms of produce from becoming waste so far. One of our favourite Waikato growers is, of course, Karn and his partner Briar. Through our partnership, we rescued over 4,500kg of “mini” watermelons over the summer season and over 4,000kg of “too small” pumpkins. That’s four baby humpback whales worth of pumpkins!
Our success is not only about giving growers an additional source of income for their hard-grown crops. When produce makes it to plates and not to landfills, it prevents it from breaking down into harmful greenhouse gases. UNEP has said that if food waste were its own country, it would be the third largest greenhouse gas emitter, beaten only by China and the United States, so anything we can do to cut back on waste is important!
In what ways does Wonky Box offer convenience to its customers, and how does this service differ from traditional grocery shopping?
Our boxes arrive straight at customers’ doorsteps every Thursday or Friday, saving them a trip to the supermarket. Who doesn’t love that? Especially as the stormy Winter weather sets in.
Our customers tell us that having this regular delivery routine gets them into a better cooking routine in their household - they’ve started planning their meals and working around their Wonky delivery, which cuts back on impulse shopping trips and becomes a bit of a money saver.
At the supermarket, we’re spoiled for choice, which is great, but it can also make us a bit unfairly picky about the produce we choose! What you get in your Wonky Box varies weekly, based on what needs rescuing from growers at that time. Could you walk us through the journey of a piece of fruit or vegetable from being rescued to reaching a customer’s doorstep? What quality checks does it go through, and generally how long is this process?
We pride ourselves on getting the fresh goodness we receive back out the door to customers within 48 hours. Deliveries start rolling in from growers at the start of the week, and our team performs quality checks as the crates arrive to make sure that underneath any superficial quirks and curves, the produce is still fresh, delicious, and ‘pear’fectly edible.
Then we start packing Boxes on Wednesday, with customers starting to receive their Boxes the very next day.
How does Wonky Box’s innovative approach to ‘rescuing’ fruits and vegetables provide a costeffective and convenient solution for consumers looking to incorporate healthy, fresh produce into their daily lives?
At Wonky Box, we call it ‘grower-led’ eating - this is a way of enjoying what is abundant and seasonal in New Zealand at any given time…just as nature intended! Produce that’s in season is at its nutritional peak, likely to be of high quality AND more affordable too as there’s more of it around.

Do coffee beans have an expiry, and how long can they be opened for, until they’re off?
This all depends on the beans, roast, and whether they’re ground or not.
Typically, between 1-4 weeks post roast (depending on your grind size and recipe) is a rough estimate. But if you freeze beans, they can last and be delicious for a long time.
I’ve had beans 2 years old frozen, and the coffee was delicious!
Does the weather effect coffee beans (as in when they’re in the grinder of a machine, or a bag, yet to be used)?
Yes, humidity can severely affect the grind, wildly when pumping.
How often should a coffee machine (at home) be cleaned?
This depends on the machine and depends on how much coffee you make. I would suggest once a week would be a good start.
What are the top 3 things that can effect the taste of your coffee (i.e. Machine isn’t hot enough, machine is dirty etc).

Well, that all depends on how much coffee you drink! Coffee in the evening hasn’t affected me for years but 6pm would be the latest I’d drink coffee these days but for my mum it would be 12:00pm.

Whole Milk Ricotta Cheese
Prep Time
25 - 30 Mins
INGREDIENTS
• 2 litres fresh whole Kaipaki milk.
• 1 tsp sea salt.
• 80ml white vinegar.
Cooling / Freezing Time
2 - 4 Hours
• 100ml filtered water.
• Muslin or cheesecloth.
INSTRUCTIONS
1. Place the milk in a large saucepan over low heat, and stir until the milk starts to steam, and reaches 90C. Do not allow it to boil. Remove from the heat, and stir in the salt, vinegar and filtered water.
2. Allow to rest for a few minutes, the milk should start to curdle and separate.
3. Place a sieve or colander on top of a bowl, then line with a large piece of muslin, allowing the edges to fall over the side. Using a slotted spoon, transfer the curds into the sieve, allowing the whey to drain while it cools.
4. Transfer the ricotta into an airtight container. Store in the fridge, and enjoy within three days.
To make the Cream Cheese:
• Rinse the curds with cold water. This will help to get rid of any extra whey, clinging to the curds.
• Squeeze the curdled milk as much as possible to drain any last drop of the liquid whey.
• Put the strained milk into a food processor/blender. Within 1-2 minutes ( this may vary depending on how powerful your machine is) you’ll have a light and fluffy cream cheese.

French Vanilla Ice Cream
INGREDIENTS
• 1 1/2 cups whole Kaipaki milk.
• 1 1/2 cups heavy cream.
• 3/4 cup (150 grams) granulated sugar, divided.
• 1/4 teaspoon salt.
• 1 vanilla bean, split in half lengthwise and seeded.
• 4 large egg yolks.
INSTRUCTIONS
Prepare the ice bath:
• Fill a large bowl with ice cubes and a cup or two of water.
• Place a medium bowl fitted with a fine strainer inside ice bath.
• Set aside.
Begin the Custard Base.
In a medium saucepan combine the milk, cream, 1/2 cup (100 grams) of the sugar, salt, vanilla seeds and vanilla pod. Set over medium heat, stirring occasionally, until the mixture is warm and begins to steam, about 5 minutes.
Temper the eggs:
In a medium bowl, whisk together the egg yolks and the remaining 1/4 cup (50 grams) of sugar until very well combined and lightened in color. Carefully and slowly ladle half of the warm milk mixture into the egg yolks, whisking constantly, until the egg mixture is gently warmed. Slowly whisk the egg-milk mixture back into the saucepan.
Cook the custard:
Cook over medium heat, stirring constantly with a wooden spoon, until thick enough to coat the back of the spoon and registers around 175°F on an instant-read thermometer, about 5 to 7 minutes. Be careful not to boil the mixture.
Chill the custard:
Immediately strain the mixture through the fine strainer into the prepared ice bath. Discard the vanilla bean pod. Cool the custard in the ice bath until it’s at room temperature, stirring often. Press plastic wrap against the surface of the custard and refrigerate until chilled, about 4 hours or up to 1 day.
Churn the custard:
Pour the chilled mixture into an ice cream maker and freeze according to the manufacturer’s directions. Place in an airtight container. Cover the ice cream surface with plastic wrap before placing the lid on. Freeze until the ice cream is firm and flavor is ripened, at least 2 hours.
If the ice cream has been in the freezer for more than a couple days, it’ll need to soften before scooping and serving. Allow it to sit in the fridge for 30 minutes before scooping for best results. Remember to tag @kaipakidairies!

Tall plane trees line the driveway; large copper beech frames the Cottage, stately urns overflowing with thyme and abundant flowers; a dream spot for Georgia, her husband and three daughters to make them forever home.
Georgia grew up on the family farm “Ataahua” which is just south of Cambridge. She lived in this very Cottage as a baby before her parents and siblings moved into the main homestead on the farm and where her parents still reside today.
She trained as a lawyer at Waikato University and now works at Lewis Lawyers parttime while raising her daughters and tending her garden beds.
She comes from a great line of gardeners and tree enthusiasts. Her grandmother and parents, who lived in the Cottage before her, have planted an abundance of well-established trees and hedges. In between drafting contracts,
you’ll find Georgia in the garden planting, watering, feeding, and de-heading her flowers. She is well supported by her husband, who mows lawns, digs holes, and lumps many a wheelbarrow of compost and mulch. Georgia loves to forage over the 400-acre farm for greenery to make fresh wreaths.
This summer, Georgia hosted an exquisite floral event at the Cottage. A group of women sipped Prosecco, wandered the garden, arranged bouquets and sat in the sun savouring canapés and margaritas. The perfect afternoon for any birthday, hens, bridal event or just to take in some fresh country air. Dates for the upcoming floral events will be announced during the year.

Briar and I (Karn’s partner) have a passion for farming and growing. Many in our generation are finding the pathway to farm/orchard business ownership challenging. We wanted to prove that this is still a goal that our generation can achieve, even starting with nothing. So, we set out a five —and ten-year plan to make it happen.
The average age of a farmer is 55 and increasing annually, so we see this as an industry we can grow into, but also bring some fresh thinking.
I come from a farming Agriculture background and Briar a Horticulture growing background. We saw growing as the biggest opportunity to allow us to progress through the early years and that is how Ohinewai Harvest was born! We now grow blueberries, melons, kiwifruit and pumpkin.
What inspired Ohinewai Harvest to embark on this journey with blueberries, and how did you determine that these vibrant berries were the perfect starting point for your business?
One of our first goals was to own our farming operation, including the land. So we sold our house and found what is our now farm. We did not initially know what to grow on the property, but we knew it had to be a permanent crop to protect the soils from the depletion of annual cropping, had to have an export market and have an excellent supporting industry (pack-houses, marketers, logistics) so that we could concentrate on growing and expanding the footprint of the crop. Blueberries ticked all those boxes.
It has been a great learning curve and a lot of hard graft, but as we come to the end of our third commercial crop we are happy we chose blueberries!
Could you share how Ohinewai Harvest Collaborates with Wonky Box to breathe new life into rescued fruit and vegetables and what that partnership means for your mission towards sustainability?
We are focused on using our resources inside the farm gate to produce a valuable product for our customers. However, outside of the farm gate, some of our produce may never see its true value just because it is outside of certain retail specifications. What we love about Wonky Box is that the team bridges this gap.
Wonky Box understands the care and stewardship the farmer/grower has invested into their crop, acknowledges it is still equal from a quality and nutritional perspective and delivers it to consumers, helping them to fill their households with good tucker at an affordable price point. It is a win-win and kiwis have really got behind it which is a genuine success story.

How does Ohinewai Harvest navigate the challenges faced by various weather patterns?
Our crops are harvested between January - May. Usually, we have droughts in North Waikato, so we have built the business to withstand these with reliable irrigation; however, last year, cyclone Gabrielle wiped out a big portion of our crops and income.
Although it was devastating, it did challenge us in how we farm and grow, and we have since invested in building more resilient cropping systems with better results. This includes dropping any floodrisk sites, cropping only above-average yielding blocks, and investing in people and machinery to maximise efficiencies and weather windows.
Could you give us a sneak peak into some of the exciting plans or projects Ohinewai Harvest has in the pipeline that you’re particularly thrilled about sharing with our readers?
One of our goals was to build and own a Kiwifruit orchard. After five years of hard work to get the project off the ground, we kicked off our first 5-ha block, with the next 5-ha currently in development right here in North Waikato. We are growing the new Ruby Red variety.
New Zealand is the best in the world for growing, packing, and marketing Kiwifruit. Kiwifruit allows us to offer more employment opportunities to existing and new staff, fits our sustainability goals and allows the land to be utilised to its highest potential.

Little‘Lato was built out of a pure love of gelato - one could say I am a gelato fanatic!
In 2015, I received a scholarship to travel to Italy and attend the Carpigiani Gelato University.
