U na sociedad armónica y pacífica, una altísima y bien
conservada biodiversidad, un país sin ejercito desde 1948, con un ¼ de su territorio protegido como áreas silvestres y un país elegido por segunda vez como el país más feliz de todo el planeta, conforman un conjunto de méritos positivos y muy inusuales en el mundo actual, todos reunidos en un pequeño gran país llamado Costa Rica. Como si todas estas ilustres distinciones no fueran suficientes, Costa Rica también tiene otra llamativa particularidad: Dentro de este territorio se encuentra la única Zona Azul de toda Latinoamérica. Zona Azul? La Zonas Azules son áreas del planeta donde la gente vive muchos más años de lo normal; zonas donde abundan las personas mayores de 100 años. A harmonious and pacifist society, a large and well preserved biodiversity, a country without an army since 1948, with ¼ of its territory maintained as wild life preserves and a country selected for the second time as the happiest country in the entire planet, add up to a series of positive and very unusual values in the present day world, all converging in a small country called Costa Rica. As if all these illustrious distinctions were not enough, Costa Rica also posses one other outstanding distinction: Nestled within its territory is the only Blue Zone in all of Latin America. Blue Zones? The Blue Zones are a few, small portions of the planet where people live much longer than the norm; areas where persons over 100 years old abound.

Although the study is an ongoing process, so far very few Blue Zones have been identified in the world, so few in fact that they can be counted with the fingers of a single hand, a widely open hand where the Nicoya peninsula would probably be the thumb. The other 4 Blue Zones are smaller areas found in California, Japan, Italy and Greece. Long, satisfying lives are abundant in Costa Rica’s Blue Zone, an area almost as extensive as the other 4 Blue Zones put together.

Por todo Guanacaste y doblemente en la península de Nicoya se ve una inusual cantidad de jovencillos de 80, 90 o 100 años, plenamente lúcidos y activos, paseando cotidianamente en bicicleta, haciendo sus compras, arreglando la casa, cocinando para toda su familia o hasta picando leña para el fogón. ¡Y se les ve usualmente sonrientes!
La receta nicoyana para una vida larga y feliz: En realidad en la inusual longevidad del área no hay grandes secretos sino un grupo de elementos físicos y sociales claramente identificados y que en conjunto son los responsables de ‘la magia’.
Ingredientes a nivel físico: · El rico contenido de minerales en el agua subterránea de la provincia, en especial sus altos niveles de calcio y magnesio que fortalecen huesos y músculos, mientras que el agua también aporta un suplemento diario de otros minerales e iones esenciales para un mejor funcionamiento celular en los adultos mayores. · Una dieta rica en frijoles y maíz, identificada como una combinación alimenticia benéfica y muy saludable. · Hacer actividades físicas regulares y nunca dejar de trabajar al menos un poco cada día. · Un clima seco y soleado que resulta especialmente benéfico para los mayores, garantizando menos enfermedades respiratorias y niveles más altos de vitamina D. Sin embargo, la receta nicoyana no se completa hasta que agregamos la visión social y filosófica que guía la vida de estos centenarios ciudadanos:
Throughout all of Guanacaste and doubly so in the Nicoya Peninsula, one can see an unusual number of young kids in their 80s, 90s or 100s, completely lucid and active, riding their bicycle, doing their shopping, fixing their home, cooking the meals for the family or even chopping firewood for the stove. And they are usually smiling!
The Nicoyan recipe for a long and happy life.
Truly there are no major secrets to the unusual longevity of the people of the Nicoya area. Rather exist a group of clearly identified physical and social elements that together make the magic happen. Physical elements: · The rich mineral content of the subterranean water of the province – particularly its high content of calcium and magnesium – fortify the bones and muscles. In addition, the water also contributes a daily supplement of other minerals and ions essential for better functioning at the cellular level, especially for older adults. · A diet rich in beans and corn have been identified as a beneficial and very healthy dietary combination. · Regular physical activities, along with doing at least a little work each day without skipping. · A dry and sunny climate, which is especially beneficial for the elderly, guarantees fewer respiratory illnesses and higher levels of vitamin D. However, the Nicoyan prescription is not complete until we add the social and philosophical vision that guides the life of the centenarians.

tendiendo una invitación del ICT (Instituto Costarricense de y de varias Cámaras de Turismo de la zona, nos fuimos de gira para descubrir la costa Sur de la Península de Nicoya, en 3 días turísticamente intensos y agotadores, pero que resultaron sorprendentes de principio a fin. Turismo)

n response to an invitation from the ICT (Costa Rican Institute and several Tourism Chambers of the area, we embarked on a tour to discover the Southern Coastal area of the Nicoya Peninsula. of Tourism)
Históricamente Nicoya Sur había quedado fuera de los circuitos turísticos más frecuentados, pero no por falta de méritos sino por problemas de accesibilidad. Hoy, en la medida que los caminos desde Guanacaste y la conectividad vía ferry desde Puntarenas han mejorado sustancialmente, el turismo ha venido creciendo y la oferta diversificándose a pasos agigantados. En una decisión visionaria, las comunidades vecinas de Paquera, Tambor, Cóbano, Montezuma, Santa Teresa, Playa Carmen y Mal País se han unido y organizado para en conjunto dar forma a un destino diferente y con muchísimo para ofrecer.
Our three intense and tiring days of exploration turned out to be surprising from beginning to end. Historically, Southern Nicoya had been left out of the most visited tourist circuits - not because of lack of merit but rather due to lack of accessibility. As the roads network from Guanacaste and connectivity via ferry from Puntarenas have improved substantially, tourism has been growing and the available offerings have been diversifying by leaps and bounds.
La Ruta de la Diversidad como conjunto es una ruta distinta, un destino que se las trae. Sin duda una joya latente que en lo posible se conservará en bruto, sin pulir demasiado, pues sus habitantes han decidido conservar su espíritu rústico y su esencia natural como guías presentes y futuras de su desarrollo.
In a visionary decision, the neighboring communities of Paquera, Tambor, Cóbano, Montezuma, Santa Teresa, Playa Carmen and Mal País have come together and become organized to shape a different destination, one that has plenty to offer.
La aventura hacia Nicoya Sur, comienza en Puntarenas donde en un día nublado y fresco abordamos el cómodo ferry Tambor III para cruzar las aguas del Golfo de Nicoya y llegar al embarcadero de Paquera en la esquina sureste de la península. Nos reciben con gran hospitalidad y acto seguido nos montamos en una lancha para salir a recorrer la costa y las decenas de islas e islotes que pueblan las aguas locales.
The Diversity Route as a joint entity is a different circuit, is a destination that is truly something else. No doubt a potential jewel which will be conserved as much as possible in its untamed form – without much polishing – as their inhabitants have decided to preserve the rustic spirit and its natural essence as present and future development guidelines.

Our adventure toward the southern Nicoya starts in Puntarenas, when on a cloudy day we boarded the comfortable Tambor III ferry to cross the waters of the Gulf of Nicoya and reach the pier at Paquera on the southeast corner of the peninsula. We were received with great hospitality, and immediately boarded a boat to go on a tour of the coast with its tens of islands and isles that populate the local waters.

Despite the proximity to Guanacaste, visiting the southern part of Nicoya is a radically different experience. Coastal seascapes of calm waters, a climate less dry in the summer, a smaller scale and very personalized tourist industry, plus small and picturesque little towns, provide a background very different to that found further north, in the progressive and modernized Guanacaste.

A pesar de su cercanía con Guanacaste, recorrer el sur de Nicoya es una experiencia radicalmente distinta. Paisajes costeros de aguas calmas, un clima menos seco en verano, una industria turística de pequeña escala y muy personalizada, junto con pequeños y pintorescos pueblitos, proveen un telón de fondo bien diferente al que se tiene más hacia el norte, en la progresista y modernizada Guanacaste.

At the flora and fauna level, the area has a unique quality that translates into a large variety of species: this being an area of climatic transition between tropical dry forest and tropical rain forest, it’s possible to simultaneously observe in this area the species from both ecosystems – thus broadening not only the diversity of fauna that can be seen here, but and also the possibilities of interactions that can be observed.

When it comes to landscapes, diversity is also manifested in a grand way: countless bays hidden among the rocky estuaries, dense coastal mangroves, beautiful islands and little isles sprinkled all over the coast form quiet canals surrounded by rock formations and mountains covered by an evergreen jungle which hangs towards the ocean as if seeking to dive into it. And amid this scenery, also hidden between bays and forests, you find elite boutique hotels accessible only by sea. This is the ideal area to enjoy quiet sessions of kayaking, sport fishing, diving or snorkeling. West of Paquera, after visiting Curú, we come to Tambora picturesque fishing town inserted in a spectacular bay and a gigantic beach, intersected by the mouth of several rivers and estuaries. In addition to beach activities, Tambor is an ideal place to observe the fauna, particularly the fowl, either while touring the Pánica River or the mangroves, or by land, while riding on horseback through the beaches and forests. Tambor is also a perfect spot from which to take a tour of the Tortuga Island, a nearby archipelago of gorgeous scenery, beautiful vegetation and impressive turquoise waters.

Continuing to the west moving away from Tambor, the landscape changes and the diversity route offers us new sights. Arriving at Cóbano we can choose to take the road to the left towards Montezuma or follow the one on the right to reach the area of Manzanillo, Mal País and Santa Teresa, famous surfing destinations. We choose first the left route heading to Montezuma, once a famous hippie enclave transformed today into a pleasant tourist town with a very familiar atmosphere during the day that turns into a party town at night. In addition to the usual beach activities, from here you can visit magnificent waterfalls, the unusual Cemetery Isle or the Absolute National Preserve of Cabo Blanco.
Ya de camino hacia el oeste, alejándonos de Tambor, el paisaje cambia y la ruta de la diversidad nos ofrece cosas nuevas. Llegaremos a Cóbano donde podemos tomar la ruta izquierda hacia Montezuma o seguir por la derecha rumbo a la zona de Manzanillo, Mal País y Santa Teresa, famosos destinos para surfistas. Nos vamos primero hacia la izquierda rumbo a Montezuma, un famoso por enclave hippie, hoy transformado en un agradable pueblo turístico, con un aire muy familiar en el día y bien fiestero por las noches. Además de actividades de playa, desde aquí se puede visitar hermosas cascadas, la inusual Isla Cementerio o la Reserva Nacional Absoluta de Cabo Blanco.

En la ruta hacia Cabo Blanco, vale la pena parar en Cabuya a conocer este ancestral Higuerón de más de 22 metros de diámetro, declarado por el INBIO ( Instit. Nacional de la Biodiversidad) como “Árbol Excepcional del 2009”, no solo por su gran tamaño sino por la cantidad y variedad de especies animales que puede encontrarse en su tronco y sus ramas. On the way to Cabo Blanco, it is worth the time to stop at Cabuya to see an ancestral ficus of over 72 feet in diameter, declared by the INBIO (National Biodiversity Institute) as the “Exceptional Tree of 2009”.

La Reserva Nacional Absoluta de Cabo Blanco es la reserva natural más antigua del país y refugio de una amplia variedad de aves marinas y también mamíferos como puercoespines, osos hormigueros, coyotes, venados, monos y pizotes junto a escurridizos felinos como Jaguarundís, tigrillos y ocelotes. La reserva combina áreas de Bosque Seco con otras de Bosque Tropical Nuboso, reuniendo más de 160 especies arbóreas entre los que se cuentan gigantes especímenes de Pochote de 45 mt. de alto o un Caoba de más 60 mt.

Another area attraction is the Isla Cabuya, a very old cemetery some 100 meters from the coast but accessible on foot during low tide. This ancient graveyard that the indigenous people used since preHispanic times continues being used these days as a cemetery but it has also become an important tourist attraction.
The Cabo Blanco Absolute National Preserve, very close to the cemetery, is the oldest natural preserve in the country and a sanctuary for an ample variety of marine fowl and as well as mammals such as porcupines, anteaters, coyotes, deer, monkeys and coatis along with elusive felines such as jaguarondis, margays and ocelots. The preserve combines areas of dry forest with others of tropical cloud forests, hosting in excess of 160 arboreal species – among which are gigantic specimens of Pochote 150 ft. high or an American mahogany over 200 ft. high. 19
Once more taking the route to the north, the calm waters seen in the protected southern area soon become more dynamic and restless, making it obvious that we are now looking towards the west, towards the open seas. The coastal area of Mal País, Playa Carmen, Santa Teresa, Playa Grande and Avellanas is an extensive chain of beaches and communities where surfing and their nightlife are the absolute main attraction although it also has many other possibilities such as diving, fishing, snorkeling, canopy, wild life observation, horseback riding and observation of cetaceans. You can go via the Puntarenas Ferry or one can choose to fly from Liberia or San José to Playa Tambor on either Sansa or Nature Air. Another option (albeit somewhat lengthier), is to go from Guanacaste on route 21 from Nicoya to Paquera. An option reserved exclusively for the adventurous is going to Manzanillo from Sámara, on the western part of the Peninsula, taking route 160 – but this route can only be travelled during the dry season and in a 4x4 vehicle.

A new challenge awaits adventurous souls in Guanacaste! In December 2012, a new and very exciting rafting route opened up along the skirts of the Rincón de la Vieja Volcano. The descent along the Cucaracho River offers a total of 72 rapids (level 3 and 4), all grouped together in a stretch of only 18 km, on a route that starts right at the meeting of the Cucaracho with other 3 rivers: Rio Azul, Rio Penjamo and Rio Negro. After these rivers converge they form a wide river that is framed by a beautiful canyon, primary forests, frequent waterfalls and innumerable wildlife.

The companies responsible for this new attraction are Rios Tropicales, Flow Trips and Blue River Resort, which after months of research and preparation are now ready to receive visitors intrepid enough to attempt this challenging river and its intense rapids. Johnny Caldero director of tour operator Flow Trips – which offers adventures down many rivers in Costa Rica – explains that “this route is really unique due to its remote location, the quantity of rapids, the magnificent natural surroundings and the special dynamics of its descent, which create spectacular conditions that compare only to one other river in the country: the worldwide famous Pacuare River.”

2012 fue un año en que los Mayas estuvieron en boca de todos, injustamente inculpados de haber predicho un supuesto fin del mundo. Sin embargo durante ese mismo año, de una manera más silenciosa y bastante más científica, una verdad oculta acerca de los Mayas estaba saliendo a la superficie. Un secreto sumergido por más de 2.000 años fue finalmente develado trayendo nuevas luces sobre las raíces de esta enigmática civilización.
Sporamabaj es un asentamiento Maya que muchos siglos estuvo sepultado e invisible bajo 25 metros de agua en el Lago Atitlán en Guatemala. Fue identificado por Roberto Samayoa en 1998, pero los arqueólogos debieron esperar hasta el 2012 para poder estudiarlo a fondo. Un proceso de varios años de recolección de pruebas junto a fastidiosos procesos de solicitudes y trámites con el gobierno, llegó finalmente a buen puerto permitiendo que en el Año de los Mayas, un grupo de arqueólogos de talla mundial (Michael Coe, Karl Taube, Sonia Medrano, David Friedel y James Brady), acompañados del
equipo cinematográfico de Standoff Studios, pudiesen bajar a cartografiar, desenterrar y documentar a fondo las hasta entonces misteriosas ruinas, que resultaron ser toda una ciudadela sumergida con una extensión de 15.3 ha (equivalente a 21 canchas de futbol): Un inmenso centro de veneración con gran cantidad de estructuras ceremoniales en una densidad nunca vista hasta ahora en ningún asentamiento maya del periodo preclásico, revolucionado mucho de lo que hasta ahora se sabía (o se creía saber) sobre las etapas más tempranas de esta civilización. 24
2012 was a year in which everyone was talking about the Mayas, unjustly blamed for having foretold a supposed end of the world. However during this same year, in a much more scientific and quiet manner, a hidden truth about the Mayas was surfacing. A secret submerged for over 2,000 years was finally rising to the surface shedding new light about the roots of this enigmatic civilization.
Smanyamabaj is a Mayan settlement, which for centuries was buried and invisible under 80 feet of water in the Atitlán Lake in Guatemala. Roberto Samayoa identified the place in 1998, but archaeologists had to wait until 2012 to get permissions to study it in depth. Finally a long process of several years of collecting proof, along with tedious processes of applications and red tape with the government, came to fruition making possible that in the Year of the Mayans, a group of archaeologists of international stature (Michael Coe, Karl Taube, Sonia Medrano, David Friedel and James Brady) accompanied by the cinematographic team of Standoff Studios, could descend to chart, unearth and document in detail the up to then mysterious ruins, which turned out to be quite a submerged fortress with an extension of 37,8 acres (equivalent to 21 soccer fields): A very big sacred site with numerous ceremonial structures in a density never before seen in any Mayan site of the pre-classic period. The ancientness and sacredness of the site have been revolutionizing what had been known to date (or what had been believed to be known) about the earliest stages of this civilization.

repentino cataclismo que sepulto a la isla, lo sagrado del lago Atitlán, el fuerte rol ceremonial de Samabaj y la ubicación junto a los 3 volcanes, inquieta hoy a los arqueólogos ante la similitud con el mito Maya de la Creación, ocurrida ‘junto a las 3 piedras sagradas’, con el lago Atitlán como ‘el ombligo del mundo’ desde donde todo emergió, y con un reino subterráneo (¿o sumergido?) como morada de 2 importantes dioses. Por ello arqueólogos a nivel global estudian hoy la posibilidad de que Samabaj pueda incluso haber sido la cuna religiosa de la civilización maya y que los relatos orales sobre la existencia y desaparición de Samabaj hacia lo profundo, puedan a la vez haber sido la raíz del mito de Xibalba, el misterioso hogar de los dioses del inframundo.
A new origin of the Mayan world? The sudden cataclysm that buried the island, added to the sacredness of the Atitlán Lake, the strong ceremonial role of Samabaj and its location by 3 volcanoes, places the archaeologists on alert at the similarities with the Mayan myths about creation, which took place “by the 3 sacred rocks”, with the Atitlán lake as “the umbilical cord of the world” from where all emerged, and with a subterranean (or submerged?) kingdom as the home of 2 important deities. Because of this, today’s world renowned archaeologists study the possibility that Samabaj may even have been the religious cradle of the Mayan civilization and that the oral legends about the existence and disappearance of Samabaj into the depths may have in turn be the root of the myth of Xibalba, the mysterious home of the gods of the underworld.

An exquisite documentary which through a stylized cinematography transforms a slow and tedious archeological process into a veritable visual feast, a seductive journey, artistic and profound, that takes us through the history and the many enigmas of the Mayan World. Directed by Rafael Garcia and produced by Standoff Studios from Georgia, USA, Mayan Blue included a strong participation from Guanacaste via the contribution of experienced divers and submarine cameramen based in this province: Nicolás Ghersinich, Cristiano Paoli, Edward Herreño, Danny Pérez, Ofer Ketter and Lawson Barnes, who as a group were the responsible of all the underwater scenes of the film, that from beginning to end, enrich the documentary with beauty and mysteries. In addition to the Atitlán Lake, Mayan Blue includes original frames of other sacred spots such as Tikal, Chichen Itzá or Palenque while at the same time submerge the spectator into the somber waters of the cenotes, where some of the most sublime images of the documentary were taken.

En tanto Lawson Barnes, hoy miembro permanente de Standoff Studios, estuvo desde el 2010 encargado de la preproducción y también participó en filmación e iluminación de algunas escenas submarinas. Le preguntamos sobre su experiencia con Mayan Blue y esto es lo que nos contó. ¿Que sientes al ser parte de un proyecto como este, haciendo arte e historia al mismo tiempo? “Bueno… (risas), sobre eso de ‘haciendo arte’, prefiero que sea el público quien juzgue. En cuanto a lo de ‘haciendo historia’, el ser miembro de un equipo de documentalistas grabando a arqueólogos mientras liberan una pieza de cerámica maya oculta bajo 2000 años de sedimento y 25 mt. bajo el agua ya era en sí algo emocionante. Sin embargo, a medida que las evidencias empezaron a llegar y todos empezaron a darse cuenta de la real magnitud y posibles implicaciones del descubrimiento, ‘la emoción’ inicial dio paso a un sentimiento de recogimiento ante la oportunidad de ser parte de ese equipo y a la vez comprendiendo que eramos testigos de excavaciones en un asentamiento Maya sagrado afectado por un repentino cataclismo. Uno no puede evitar pensar como era la vida en esa isla y el impacto que el desastre natural tuvo en quienes vivían o rendían culto en este lugar”.
Meanwhile, Lawson Barnes, now a permanent member of Standoff Studios, was in charge of the preproduction started in 2010 and then the logistics during the documentary, as well as the filming and lightening for some of the submarine scenes. We asked him about this varied and exciting experience of being part of Mayan Blue and this is what he told us. How do you feel about being involved in a project like this, making history and art at the same time? “Well, (laughing) as for ‘making art’, I prefer the viewing public to judge. As for ‘making history’, to be a member of a documentary film crew chronicling the archaeologists as they lift a piece of Mayan pottery hidden under 80’ of water and 2000 years of sediment was extremely exciting. As the evidence started coming in, and everyone began to realize the magnitude and the possible implications of the discovery, ‘the excitement’ for me quickly gave way to being humbled, not just from being part of that crew, but also realizing that we were witnessing the excavation of a sacred Mayan settlement affected by a sudden cataclysmic event. One cannot help but consider what life must have been for the island site’s inhabitants, and the impact the natural disaster had on those who lived and worshipped there”. 27

Las imagines submarinas y en cavernas son impactantes ¿Como se consigue escenas así de puras en locaciones y condiciones tan complejas? “Se logra buscando a tus camarógrafos submarinos… en Guanacaste! (risas). En realidad no fue nada fácil. El lago Atitlán está a una elevación de 1562 m en las tierras altas de Guatemala. Más allá de la logística habitual de manejar costosos equipos de cine, coordinar la alimentación y hospedaje del grupo y mantener a todos a salvo, tuvimos la complicación adicional de bucear en cavernas o en lagos a gran altitud. Como todo buzo sabe, las inmersiones en zonas elevadas requieren una planificación mucho más cuidadosa y se requiere tablas y programas diferentes a lo requerido en buceos a nivel del mar. Fuimos muy afortunados de poder reunir un selecto equipo de buzos profesionales, todos especialistas altamente calificados. Gracias a ellos y su experiencia, a pesar de que nos tocó filmar en ambientes muy desafiantes, a lo largo de todo el proceso no tuvimos ni una sola lesión”.

The caves and underwater images are outstanding. How do you get images of that quality in those complicate places and conditions? “You get them by finding your underwater videographers... in Guanacaste! (Laughs) Just kidding. Actually it was not easy at all. Lake Atitlan is at an elevation of 5125 ft. in the highlands of Guatemala. Beyond the usual logistics of maintaining expensive film gear, feeding and housing the team, and most importantly, keeping everyone safe, we had the additional complication of high altitude diving. As many divers know high altitude diving requires careful planning as the dive tables change relative to the tables used at sea level.We were fortunately able to assemble a team of highly skilled, professional divers, and through their management did not have a single injury in an otherwise very difficult diving environment.”

En cuanto a la disponibilidad para el público general, Mayan Blue ya ha recibido una oferta para su distribución internacional en cines y también estamos en negociaciones para una futura emisión televisiva. Como sea, pronto llevaré una copia a Guanacaste y haremos una premier local abierta al público”. ¿Qué sigue ahora para Standoff Studios y cuales son los planes a nivel personal ? “El estudio está ahora trabajando en varios proyectos simultáneos, tanto en cine documental como de cine narrativo.Yo por mi parte, muy feliz de continuar trabajando con este talentoso grupo de jóvenes y creativos artistas.También espero volver pronto a las hermosas playas y los cálidos mares de mi adoptiva Costa Rica y volver a relajarme nuevamente al más dulce estilo Pura Vida”.
In which stage is Mayan Blue and when it will be available for the general public? “Mayan Blue is finished.The movie of 1hr. 22min is a full feature documentary edited initially for Film Festivals and is already entered into the upcoming 2013 festivals season. As for availability for public viewing, Mayan Blue has already caught the attention of a large international distributor, and we are currently in negotiations with other company for worldwide television broadcasting. I can’t provide any dates yet, but you can follow Mayan Blue on Facebook for any future announcements (facebook.com/MayanBlueTheFilm). However, I promise to bring a copy to Guanacaste soon and arrange a mini-premier open to the public”. What are the next steps for Standoff Studios and for you at a personal level? “The Studio is presently working on several projects both in the areas of documentary and narrative film features. I am fortunately continuing to work with this talented group of young, and very creative film artists. Eventually I hope to return to the beautiful beaches and warm seas of my beautiful, adopted country of Costa Rica, and relax back into that sweet Pura Vida lifestyle”.

igan lo que digan, cuando un restaurante cambia de chef, el restaurante entero cambia, a veces para bien … muchas otras para mal. A La Dolcevita, uno de los restaurantes más emblemáticos de Playas del Coco, le sucedió lo segundo tras la partida del chef Marcos Zanni. Un alto prestigio construido durante 8 años, cayó al suelo en cosa de meses. Poco tiempo después los dueños que reemplazaron a Zanni partirían también, dejando al restaurant nuevamente a la deriva. Ese fue el nada dolce panorama que le tocó enfrentar a José Piedra desde el momento en que decidió arriesgarse como chef y como empresario para asumir el reto de devolverle la vida a este alicaído sitio. Para suerte para él y de los comensales de la zona, su apuesta funcionó a la perfección. Le bastó solo meses para borrar cualquier sombra pasada y poner nuevamente a la gente a hablar positivamente de su restaurante. Han llegado nuevos sabores, ha vuelto el buen servicio y ha vuelto esa cálida y hogareña experiencia que definía a este lugar. Amante de la vida costera y autodefinido como ‘un loco por los mariscos’, este chef costarricense formado en Italia, está dando mucho de que hablar en Guanacaste. Curiosos por la rapidez de su éxito, quisimos conocerlo más a fondo. ¿Como se inició José Piedra en la gastronomía? “Fue por azar que empecé a cocinar, casi como un hobbie y fue la reacción de la gente la que me llevó a tomarlo en serio. De servir a 6 u 8 huéspedes y amigos en un pequeño hotelito que tuve en Playa Avellanas, en cosa de semanas me vi recibiendo hasta 50 personas por noche, muchos de los cuales esperaban largo rato en sus carros hasta disponer de una mesa. Parecía que a la gente le gustaba lo que yo estaba cocinando y yo me divertía mucho haciéndolo! Que mejor! Por eso tomé la decisión de irme a estudiar a Roma a la escuela A Tavola Con Lo Chef y sin buscarlo, al tiempo recibí ofertas de varios profesores para prácticas en restaurantes de 1 o 2 estrellas Michelin, en los cuales pude perfeccionar mucho mi cuchara y a la vez coquetear muy de cerca con el mundo de la alta gastronomía. Complementariamente tomé especializaciones en mariscos y pescados y también otras en panes y pasteles.Tiempo después, volví a los estudios para sacar mi titulo como Chef Profesional en la Escuela Gambero Rosso.

ay what you will, but when a restaurant changes its chef, the entire operation changes – sometimes for the better, but more often than not for the worse. La Dolcevita, one of Playas del Coco’s most emblematic restaurants went through exactly this following the departure of Chef Marcos Zanni. The prestige he accumulated during his eight-years of tenure dropped dramatically in a matter of months. Just a short time later, the temporary owners that replaced Zanni left too – leaving the restaurant floundering again. This was certainly not a dolce (sweet) situation that José Piedra was facing the moment he decided assume the challenge of injecting life back into the restaurant. This was risky business for a chef/ entrepreneur. It was Piedra’s good fortune - as well as that of the area’s restaurant patrons - that his risk paid off in such great success. It took only a few months to erase any negative shadows and before he knew it, people were once again speaking favorably about the place. Fresh new flavors now grace the menu, excellent service has returned and that warm, homey experience that used to define this place has once again returned. A lover of the coastal way of life and self-described as “crazy about seafood”, this Costa Rican chef - trained in Italy - is generating a lot of buzz in Guanacaste. Curious by his quick success, we wanted to get to know him a bit better. How did José Piedra get his culinary start? “I started cooking by chance, practically just as a hobby. The reaction from people is what led me to take it seriously. From serving six to eight guests and friends in a little hotel that I had in Playa Avellanas, in only a matter of weeks I found myself receiving up to 50 guests a night. Many of them would sit and wait in their car for a long time for an available table. It seemed people liked what I was cooking and I was having fun doing it! What could be better? That is the reason why I decided to go to Rome and study at A Tavola Con Lo Chef Culinary School and soon, without looking for it, I began getting offers from various professors to do practices at their restaurants with 1 or 2 Michelin stars, where I could polish my skills while also flirting closely with the world of high cuisine. As a complement, I did specializations in seafood and fish and others in breads and pastries. Later, I got back to school to get my Professional Chef Degree in the Gambero Rosso School.
Ya de vuelta en Costa Rica…tenía claro que mi lugar era la costa y es aquí donde estoy, viviendo y disfrutando de esta magnífica Playas del Coco.” ¿Como describes tu cocina? “Mi filosofía como chef se centra en respetar la esencia de cada ingrediente y desde esa base, busco lograr combinaciones y acompañamientos de sabores redondos y armónicos, capaces de dar un mayor valor al conjunto y a la vez lograr enaltecer al ingrediente principal. Es una cocina 100% orientada a hacer felices a los comensales, no una cocina impersonal dirigida a satisfacer mi ego como chef. No propongo platillos extrañamente complejos, ni ‘creaciones moleculares’ diseñadas para ganar premios de cocina moderna o seducir a unos pocos conocedores altamente entrenados. Mi cocina más bien es una invitación a la gente común y corriente, que gusta de comer muy bien, disfrutar un buen vino y de una buena experiencia.” ¿Que pueden esperar los comensales en un restaurante con el sello de José Piedra? “El objetivo que busco siempre es que los visitantes tengan una experiencia muy placentera, experiencia que comienza con un servicio profesional y muy dedicado. Mediante una cocina italiana de corte muy tradicional y unos cuantos platos de impronta más moderna, ponemos sobre la mesa sabores bien logrados y porciones muy generosas, como las que sirve una ‘nonna’ en su casa. Pero además es una cocina muy técnica y de procesos bien cuidados, junto a ingredientes de alta calidad en todas las preparaciones. Soy un apasionado por los ingredientes y por ello los selecciono con extremo cuidado. Aunque hace más compleja la logística, traigo cada uno desde un sitio distinto. Por ejemplo las almejas y langostas vienen de Isla Chira, los camarones desde Nicoya Sur, capturados artesanalmente, sin el dañino sistema industrial de arrastre. Algunos pescados los recibo cada mañana aquí en la playa y otros como el congrio lo traigo desde el norte, donde las aguas más frías nos ofrecen un mejor balance de lípidos musculares. En la pizza usamos masas que reposan refrigeradas durante 48 horas, logrando así una perfecta digestibilidad y en su relleno solo usamos los mejores ingredientes como mozarelas importadas o finos jamones ahumados. En resumen prometo una altísima calidad de ingredientes, procesos, sabores y servicio. Una riquísima experiencia general, pero sin tener que pagar altas sumas por ello.”
Once back in Costa Rica I was clear that my place was at the beach, and here I am, living and enjoying this magnificent Playas del Coco.” How would you describe your cooking? “As a chef, the core of my philosophy is to respect the essence of each ingredient and from this base, I try to achieve combinations and companion flavors that round it up harmoniously, capable of adding a new dimension to the dish while at the same time, enhancing the main ingredient. Is a cuisine 100% oriented to making my guests happy, not an impersonal cuisine oriented to the satisfaction of my ego as chef. I don’t propose dishes that are strangely complex, nor “molecular creations” designed to win awards in modern cuisine, or to seduce a few highly trained connoisseurs. My cooking is more like an invitation to regular people who like to eat very well and enjoy a good wine and a good experience.” What can your customers expect in a restaurant with the stamp of Jose Piedra? “I will always focus on offering our guests a very pleasant experience, which must always starts with a highly professional and dedicated service.Through a very traditional Italian cuisine and a few dishes of more recent vintage, we place on the table tastes that are well done and in generous portions, like those served by a “nonna” in her home. However, we offer also a very technical cuisine of careful processes along with the high quality of the ingredients in all the preparations. I am passionate for the ingredients and thus, I select them with extreme care. Even though this makes logistics more complex, I bring each ingredient from a different place. For example, clams and lobsters come from Chira Isle, shrimp from Southern Nicoya, catch by artisanal fisheries, without the harmful industrial system of trawling. Some types of fish I receive each morning right here on the beach and others such as kingclip I bring from further north where the colder waters offer a better balance of muscular lipids. In pizza we use dough that reposes refrigerated for 48 hours, thus making for a better digestion and for toppings we utilize only the best ingredients such as imported mozzarellas or fine smoked hams. In summary, we offer very high quality ingredients, processes, flavors and service. An excellent and flavorful experience in general but without having to pay high sums for it.”

Ldistinción a provincia de Guanacaste en Costa Rica tiene la de albergar el mayor remanente de Bosque
Tropical Seco de toda América. Técnicamente, un bosque seco recibe mucho menos lluvia que un bosque húmedo, y típicamente tiene una temporada seca que abarca unos ocho meses, de lo que es testigo cualquiera que vive aquí. Aunque el bosque seco contiene una muy rica biodiversidad, esta pasaba cada vez más desapercibida gracias a la constante reducción de los bosques. Su uso como potreros para pastar apresuró el deterioro e, irónicamente, cuando quitaron el ganado, se apresuró el decaimiento de los terrenos según la hierba Jaragua que había sido plantada para alimento del ganado, invadió la flora local y se convirtió en combustible para los incendios de la temporada seca, las cuales disminuyeron los boques aún más. De pronto hace su entrada Daniel Janzen, un entomólogo Americano que realizaba trabajos en la zona, quien se dio cuenta de la magnitud de la riqueza de vida aquí y la fragilidad al tratar de descubrirla y estudiarla dado que en unos pocos años se convertiría solamente en una memoria. Y aquí comienza el libro “Green Phoenix” o “El Fénix Verde” escrito por William Allen. Un equipo de científicos Costarricenses y Americanos junto con voluntarios pronto se aventuraron fuera de las aulas, entrando a la arena política, ecológica y el mundo social. El propósito era no solo la conservación de los bosques que rápidamente iban desapareciendo sino además audazmente proponer el recrecimiento del bosque, conectar las pequeñas islas de bosque que quedaban y convertirlo en un corredor emulando su estado original. Al principio esta noción se consideró estrafalaria pero la determinación y el apasionamiento de los proponentes logró impulsar la idea contra obstáculos que parecían ser insuperables. Allen hace una buena labor en este libro dándole vida a los personajes principales y a los detalles de cada carácter, y comunica muy bien el modo en que todos los participantes logran hacer a un lado sus egos en favor de una causa mayor. Allen incluye también algunos detalles increíbles sobre el delicado y complicado balance de la eco-estructura completa, el modo como plantas, arboles, pájaros, 38
T he province of Guanacaste in Costa Rica has the distinction of containing most of the remaining
Tropical Dry Forest in all the Americas. Technically, a dry forest receives less rainfall than a wet forest, and typically has a dry season that spans about eight months, as anyone who lives here can attest. Although it is rich in biodiversity, it remained largely unnoticed as it shrank in size. Its use as pasture land expedited its decay and ironically, when the cattle were removed, the decay escalated as the jaragua grass that had been planted to feed the cattle overran local flora and became fuel for dry season fires, which further diminished the forest. Enter Daniel Janzen, an American entomologist working in the area who realized the magnitude of rich life here and the futility of trying to discover and study it if it would become only a memory in a few short years. This is where the book “Green Phoenix” by William Allen begins. A team of Costa Rican and American scientists and volunteers soon ventured out of the classroom and into the political, ecological and social world arenas to not only preserve the quickly vanishing forest but to boldly propose to regrow the forest, to connect the tiny islands into a corridor resembling its original status. The notion was initially considered outlandish, but the determination and passion of those involved pressed the idea ahead, against seemingly insurmountable odds. Allen does a good job of portraying the main characters and their character flaws in this book, as well as how all the participants are able to put aside their egos for the cause. Allen also includes some incredible detail about the delicate and intricate balance between the entire eco-structure, how plants, trees, birds, mammals and insects are interdependent on one another. Retrasando sus esfuerzos, el equipo es confrontado con obstáculos diarios como cazadores ilegales, mineros de oro, precaristas y hasta hostiles finqueros cercanos al parque. Sin embargo ellos perseveraron y a lo largo del camino aprendieron a ser creativos. El resultado final podrá apreciarse dentro de unos tres siglos, pero mientras tanto, los costarricenses pueden estar muy orgullosos de lo que ellos han preservado y devuelto a la naturaleza para las generaciones futuras. breakthrough revelation was the discovery that this same interdependency occurs between the rain forest and the dry forest through migratory mammals, birds and even insects. But they persevered, and along the way they learned to be creative. The final result can be viewed in about three centuries, but until then, Costa Ricans can be very proud about what they have preserved and returned to Nature for future generations.

Por qué los Bill Gates o los Steve Jobs no nacen en Honduras? Quiero decir, ¿Por qué en el Tercer Mundo no surgen más personajes creativos capaces de desarrollar productos innovadores y construir empresas que los comercialicen, creen empleos, generen grandes beneficios e influyan decisivamente en el destino del planeta? Si algo sabemos sobre la inteligencia y los rasgos de carácter de la especie humana es que están diseminados más o menos equitativamente. Los finlandeses que han creado Nokia y viven en un opulento paraíso en el norte de Europa no son más inteligentes que los dominicanos o los ecuatorianos aplastados por la pobreza. Álvaro Vargas Llosa se propuso responder a esta irritante pregunta en un libro extraordinariamente importante para el debate sobre el desarrollo, titulado ‘Lecciones de los pobres’. La obra comienza por desmentir la premisa anterior: En el Tercer Mundo sí surgen esos especímenes a los que antes llamaban ‘’capitanes de industria’’, gente emprendedora, psicológicamente marcada por la necesidad de crear, convencer y vencer en el mercado. Gente que tiene un ojo especial

hy are the Bill Gates and Steve Jobs of the world never born in Honduras? I mean, why is it that creative personalities capable of developing innovative products and building the companies that sell them - in the process creating employment, generating great social benefits and influencing in a decisive manner the destiny of the planet - are not born in “third world” countries? If we know anything about the intelligence and the character traits of the human race, it’s that most qualities are more or less evenly distributed. The Finnish, who have created both Nokia and an opulent paradise in northern Europe, are no more intelligent than the Dominicans or the Ecuadorians that have been oppressed by poverty for years. Alvaro Vargas Llosa set out to answer this irritating question in a book that is extraordinarily important to the development debate called, “Lessons from the Poor.” The novel starts by denying the preceding premise and asserting that the third world does in fact produce specimens capable of being what would be called in earlier times “captains of industry” - enterprising people marked psychologically by the need to create, to convince and to triumph within the market place. These people have both a special eye for discovering society’s needs and posses the indispensable energy needed to satisfy those needs with adequate goods and services. The book, written by several important economists and compiled by Vargas Llosa, covers five cases of notable entrepreneurial successes attained by poor people in very adverse conditions. Two of them are in Peru, another is in Argentina and the others are in Nigeria and Kenya. Within those five cases are peculiar personalities – intelligent, disciplined, industrious, determined and with no specialized education – that are propelled by a psychological need to achieve success and obtain social recognition. These people have usually been guided by the only method that truly works within the economic realm: trial and error. This is how businesses surge, grow and prosper – on the go, experimenting, improvising and discovering each and every day which are the correct roads to follow and which roads lead to failure.

El en cambio, dedicó ese último contacto a explicarme un plan que tenía para desarrollar una industria alimenticia nueva a partir del fruto de la palma. Para el que siente el fuego de los emprendedores, el placer esta en crear, luchar y, claro, en triunfar. Ahora hay que reformular la pregunta con que comienza este artículo: ¿Por qué no hay más gente emprendedora en el Tercer Mundo? Y la respuesta es clara: Porque el Estado está de varias formas ‘organizado’ para obstaculizar a las personas provistas de este fuego creativo. No hay más que inconvenientes, corrupción, funcionarios parásitos que exigen coimas para no paralizar los proyectos y gente bien conectada con el poder político que protege sus negocios de la libre competencia perjudicando, de paso, a los consumidores. Ni Bill Gates cuando puso en marcha Microsoft ni Steve Jobs cuando empezaba Apple tuvieron que pagar a un empleado público para registrar sus empresas, o a la policía para que no los asaltaran.Y cuando discutían con cuatro amigos en un garaje sobre cómo iban a desarrollar sus planes, daban por sentado que nunca les faltaría la electricidad, el agua o la manera de proteger sus derechos de propiedad. Ninguno de los dos, ninguno de los millones de empresarios que hay en el Primer Mundo, tienen que enfrentarse todos los días a la deficiente infraestructura moral y física que hace tan cuesta arriba las labores empresariales en casi toda América Latina. El Tercer Mundo es una maquinaria implacable dedicada a exterminar a los emprendedores. No es que no nazcan. Es que los asfixian en la cuna. Ese es el problema.
I will never forget the example of Domingo Moreira, a fundamentally intuitive entrepreneur of this kind who went on to create in Cuba – probably before anyone else in the world – a chain of fried chicken restaurants. I went to visit him shortly before his death (he was nearly ninety years old by then). I was shaken up by what I knew would be our last goodbye; he, on the other hand, dedicated our last meeting to explaining an exciting new plan he had to develop an innovative food industry derived from the fruit of the palm tree.

For those who feel the fire of entrepreneurship, the real pleasure is in creating, struggling and – naturally – in triumphing. Now the question posed at the beginning of this article must be reformulated: Why there aren’t more enterprising people in the third world? And the answer to this is clear: Because their governments are in several ways structurally “organized” to provide obstacles to the people who feel this creative fire. There is nothing but inconvenience, corruption, and parasitic functionaries who demand bribes to not paralyze projects and a few lucky, well-connected people with the political power to protect their business from free competitionhurting the economy and the consumer in the process. Neither Bill Gates when he started Microsoft or Steve Jobs when launched Apple had to pay a single public employee to register their business. They didn’t have to pay the police to avoid being assaulted. And when discussing in their respective garages with four friends how to develop their plans, they were able to assume that their electricity, water and protection of proprietary rights would not fail. Neither these two famous entrepreneurs, nor any of the millions of others in the first world have to face the deficient moral and physical infrastructure that make it such an uphill battle on a daily basis for entrepreneurs in practically all of Latin America. The third world is an insatiable machine dedicated to exterminating entrepreneurs. It is not that they aren’t born here. It’s that they’re smothered in the crib. That’s the problem.
