Estimadas amigas y amigos, Hoy tiene en sus manos la edición número 100 de nuestra revista, la que no solo ha sido testigo de la transformación de SKY durante los últimos años, sino que también se ha convertido en uno de los principales medios para transmitir el compromiso del equipo SKY para poner el cielo al alcance de todos. Uno de los grandes protagonistas de estas 100 ediciones ha sido la implementación de nuestro modelo low cost, el cual –junto con el cambio de imagen de la compañía– revolucionó la forma de volar en Chile; permitiendo que miles de personas puedan volar en avión por primera vez. Así, la democratización de los cielos y el respeto por el medio ambiente se han convertido en dos de los compromisos más importantes para SKY. En estas 100 ediciones, nuestros pasajeros han podido ser parte de la constante evolución de SKY, la que se concretará este año cuando nos convirtamos en la primera aerolínea en Latinoamérica con una flota 100 por ciento compuesta por aviones A320 neo, los más amigables con el medio ambiente. Dear friends, You are currently holding the 100th issue of our in-flight magazine. This publication has not only borne witness to the transformation of SKY over the last few years, but it has also served as one of the main means of communication of SKY's commitment to putting air travel within everyone's reach. One of the most common themes over these 100 issues has been the expansion of our low cost model, which –besides helping to change our image– has revolutionised the way people in Chile fly, giving thousands of people the chance to take a plane journey for the very first time. Bringing air travel within everyone's reach and respecting the environment as we do so are two of the most important commitments we have at our company. Throughout these 100 issues, our passengers have been able to read all about the constant evolution of SKY, which will hit another milestone later this year as we become the first airline in Latin America to have a fleet composed entirely of Airbus A320neo aircraft, the most environmentally friendly commercial jets in the world. Many things have changed since our first issue, but our spirit and commitment remain just as strong as they ever were, and we will continue to grow and to help travellers throughout the country broaden their horizons and cross new frontiers.

Por su arte callejero

No se entiende Bogotá sin observar sus muros. Famosa por su arte callejero, las paredes de la capital colombiana ilustran buena parte de su historia social y política reciente, marcadas por el conflicto armado con la guerrilla y otros problemas que comienzan a quedar atrás. La mejor forma de apreciar esto es con los recorridos de Bogotá Graffiti Tour (bogotagraffiti.com), que ofrece paseos a pie (de dos horas y media) para conocer las claves del street art bogotano, y ver lienzos de artistas como Guache, de marcada influencia indígena, y los de Bastardilla, famosa por sus trabajos con mujeres como principales protagonistas.

Por el Mercado de las Pulgas de Usaquén

En el sector norte de la ciudad, Usaquén es un pintoresco pueblo colonial que hasta hoy vive a su propio ritmo. Favorito entre turistas como lugar para ir de compras o disfrutar una comida por la noche, vale la pena visitarlo un domingo por la mañana, cuando su famoso y vibrante mercado de pulgas atrae a cientos de vendedores de cachivaches, comerciantes indígenas y artesanos que venden productos agrícolas y artesanías tradicionales. 12

Street Art You can't understand Bogotá without studying its walls. The city is renowned for its street art, which tells a large part of the Colombian capital's recent social and political history, with many murals dedicated to the guerrilla war and other problems that are only now beginning to be left in the past. Perhaps the best way to see it all is on the Bogota Graffiti Tour (bogotagraffiti.com), which is a walking tour (twoand-a-half hours) that will take you round all the street art highlights in the city, including works by Guache, which are heavily influenced by indigenous cultures, and Bastardilla, who is famous for her use of strong female protagonists. The Usaquén Flea Market In the north of the city, Usaquén is a picturesque little colonial township that still lives life at its own pace. It's a popular stop off for tourists looking to pick up a bargain or a tasty meal, and the best time to go is on Sunday mornings when the flea market attracts hundreds of bric-a-brac sellers, indigenous artisans and local farmers selling traditional food and souvenirs.

Por el Museo del Oro

Con una de las colecciones de objetos prehispánicos de oro –joyas, máscaras, estatuas, etcétera– más importantes del continente, el Museo del Oro de Bogotá es, además, una ventana para asomarse a uno de los capítulos más importantes de la historia del país. Hablamos de los españoles que, enceguecidos por El Dorado –la mítica ciudad de oro–, atravesaron la selva y, en su camino, entrelazaron su destino con el de las tribus indígenas; dando forma a la identidad del país.

Para apreciar la biodiversidad colombiana vaya al Mercado de Paloquemao, una pintoresca y aromática feria donde cada mañana llegan decenas de tipos de frutas y otros vegetales, desde distintos puntos del país. Perfecto para un contundente desayuno típico, pruebe un jugo de frutillas, mango o lulo, fruto que mezcla a la perfección dulzura y acidez. Ojo, aquí también encontrará buenas artesanías, a precios más convenientes que en otros puntos de la ciudad.

La Candelaria The streets of La Candelaria are a magnet for travellers from all over the world, with their colourful colonial architecture, souvenir stores, university bars and top-quality cafés that are a perfect place to taste true Colombian coffee. It's run by chef Leonor Espinosa, and the dining experience here is a tour de force of the country's many ecosystems and cultures. There's good reason it has been included on The World’s 50 Best restaurants list.

Por la vista desde Monserrate

Si el estado físico no lo acompaña, entonces tome el teleférico o el funicular hasta la cumbre del cerro Monserrate, para obtener la mejor panorámica de la ciudad. Más que solo buena vista, el lugar es uno de los hitos turísticos más importantes de Bogotá y, al mismo tiempo, un punto de gran importancia religiosa, pues aquí se encuentra la Basílica del Señor de Monserrate, que desde su inauguración en 1920 se transformó en el santuario de peregrinación más popular de la ciudad. 16

The View from Monserrate If you don't feel up to the walk, take the cable car or funicular up to the top of Monserrate Hill for the best views of the city. But besides providing a great photo opportunity and being a tourist hotspot, this is a deeply religious place that houses the Basilica of the Lord of Monserrate, which since its inauguration in 1920 has become one of the most popular pilgrimage sites in the capital. Sunday Mornings A large part of Carrera 7 -one of the main drags in the capital- is closed down to traffic on Sunday mornings, allowing locals and tourists alike to take to the street to get some exercise. Try out some of the aerobics or yoga classes, or indulge in some of the other sporting activities on offer. Finish your morning off with a freshly squeezed fruit juice from one of the many stalls that line the street. Quinta Camacho Quinta Camacho, one of the quietest and most charming neighbourhoods in Bogotá, provides a much-needed escape from the frenetic pace of the rest of the city. Despite being mostly residential, the area has changed in recent years, with many boutiques and art galleries popping up alongside lovely hotels and restaurants. De aires residenciales, en el último tiempo la zona ha cambiado su fisonomía gracias a una serie de nuevas boutiques, galerías de arte, coquetos restoranes y hoteles. Compruébelo en Abasto (abasto.com.co), un restorán para comer comida tradicional de alto nivel, en la tienda de diseño contemporáneo Las Heroínas (lasheroinas.com) o en el café-librería Wilborada 1047 (wilborada1047.com), uno de los puntos de reunión más importantes del sector. 18

The Nightlife Love it or hate it, there's no place in Bogota quite like Andrés Carne de Res (andrescarnederes.com), an enormous restaurant with almost four decades of history. But despite being on The World 50 Best Latin America ranking, what's most famous here is the party atmosphere. It's in Chía, around half an hour from Bogotá, but still hundreds of people flock here every day to be part of the "rumbeo", and to drink in the bright lights, chandeliers and heartshaped decorations. If you don't want to make the trip, try the Andrés DC branch, which is inspired by Dante's “Divine Comedy”, which has themed floors for purgatory, heaven and hell. Of course, the food is excellent. Finally, you might consider Gaira Café (gairacafe.co), an eclectic resto-bar owned by singer Carlos Vives, which is famed for its effervescent atmosphere and live "vallenato" music and other Latin rhythms.

Puerto Maldonado is small, and its main attractions can all be easily visited on foot. La Reserva Ojos Indígenas se encuentra dentro del complejo Puntacana Resort & Club y está abierto a todos los visitantes que quieran conocerla. El lugar tiene una superficie total de 1.500 hectáreas y cuenta con una entretenida red de senderos que conducen a doce lagunas de aguas frescas, perfectas para terminar cada paseo. La reserva es hábitat de una gran variedad de aves e iguanas y, además, está cerca de la llamada Fundación Ecológica Puntacana, donde los visitantes pueden aprender sobre apicultura y compostaje con lombrices.

Ballenas en Samaná

Es cierto que Samaná, en la costa norte de República Dominicana, es un destino en sí mismo. Pero desde Punta Cana también se puede ir por el día, sobre todo por la siguiente excusa: de diciembre a marzo es posible avistar ballenas jorobadas, que llegan a reproducirse en estas tibias aguas del Caribe. El viaje incluye un recorrido por tierra pasando por pueblos como La Colonia o El Cedro, para luego iniciar una navegación en lancha desde Samaná o Las Galeras en busca de estos cetáceos. El

Limón, donde comienza una tranquila cabalgata que se adentra en la selva tropical y conduce hacia una cascada que alcanza 55 metros de altura. Si hace mucho calor – lo que es probable–, abajo se forma una piscina natural donde la zambullida es obligatoria.

Tirolesa y safari

Ubicado dentro del complejo Cabo Cana, con más de 100 hectáreas de superficie, el Scape Park es una de las atracciones más populares de Punta Cana. Un parque de ecoaventura con una extensa tirolesa entre los árboles y un impresionante cenote conocido como Hoyo Azul.

March it’s a great place to go humpback whale spotting, as these gentle giants come to the warm Caribbean to mate. The trip includes a stretch on land, passing through towns such as La Colonia or El Cedro, before you head out on the boats to Samaná or Las Galeras in search of cetaceans. The trip that most agencies run also includes a stop off at Cayo Levantado, on Bacardi Island, in all its lush, tropical glory.

Horse Riding in Limón This stunning waterfall, situated on the outskirts of Limón, is also a great spot for a day trip from Punta Cana. The trip takes in some picturesque country roads that head down to the port town of Miches, and from there passengers are taken by boat out to Santa Bárbara de Samaná. Once everyone’s on shore, the group begins a safari up to the town of Limón, where you’ll take horses on a relaxing walk through tropical vegetation, finishing at a 55m waterfall. If it’s very hot –which is likely–, a dip in the plunge pool is a must.

a tarde de un martes de febrero, Holger Paulmann está en su oficina luego de una extensa y concurrida sesión de fotos junto a una decena de diversos trabajadores de la aerolínea, que se realizó para ilustrar esta entrevista y la portada de la edición número 100 de Revista SKY. El aniversario, dice, resulta una buena oportunidad para hablar del auspicioso presente de la compañía que encabeza, la que después de comenzar a operar en Perú en abril pasado, en 2020 volará a nuevos destinos internacionales, como Cancún, México; Punta Cana, República Dominicana; y Bogotá, Colombia, a la espera de anuncios sobre nuevas rutas durante lo que queda del año. El contexto de estas noticias es el ya reconocido modelo low cost que SKY Airline comenzó a implementar durante el segundo semestre de 2015, y el mismo que, aclara Holger Paulmann, debió superar una serie de obstáculos antes de concretarse con éxito. —Antes de anunciar el cambio al modelo low cost notábamos bastante resistencia por parte de la gente de la industria, incluso poca fe. Y eso pasó en distintas áreas: en el ambiente de los pilotos, mantenimiento, de parte de la autoridad aeronáutica, las agencias de viaje… Todos tenían temor y, bueno, también cierto nivel de ignorancia sobre qué significa ser low cost para nosotros. En medio de ese ambiente de incredulidad y reticencia, a fines de agosto de 2015 se hizo oficial el anuncio, y la respuesta de los pasajeros, dice Holger Paulmann, fue muchísimo mejor de la que habían imaginado. —La reacción fue potentísima. Salimos en la primera plana de LUN [Las Últimas Noticias, el diario más popular de Chile] con el titular “No voy en bus, voy en avión”, además de muchas otras coberturas periodísticas súper destacadas, en las que se trataba de explicar en qué consistía nuestro modelo low cost. Fue tanto el impacto, que ese mismo año 2015 fuimos el tercer concepto más buscado en Google en Chile, después de “Bono Marzo” y “Copa América”. Y también la única marca o empresa presente dentro del top 10 de búsquedas en ese período.

It’s a Tuesday afternoon in February, and Holger Paulmann is sitting in his office following an extensive photoshoot with a dozen or so SKY employees that was organised especially for this interview in the 100th issue of our magazine. The event, he says, is a great opportunity to talk about the promising current situation the company has been working towards since last April, when they set up their first operations in Peru. In 2020, more new international destinations will be added to the portfolio, with Cancun, Mexico; Punta Cana, Dominican Republic; and Bogota, Colombia all confirmed, while more announcements are expected throughout the year. All of this comes, of course, as part of SKY’s low-cost model, which the company began to roll out back in 2015, and which Holger Paulmann tells us had to overcome a number of significant challenges before breaking into successful territory. —Before we announced our move into lowcost travel, we could feel a degree of reluctance to move in that direction throughout the industry. No one had faith in the model. And that goes for almost all areas: the pilots, maintenance crews, the aviation authorities, tour agencies... Everyone was worried and, well, I think we were all a bit ignorant about what low-cost actually meant. And it was in that environment of resistance and lack of belief that they launched the model in August, 2015. The response from passengers, however, was far in excess of what anyone could have imagined. —The response was amazing. We went on the front cover of LUN [Las Últimas Noticias, Chile’s most popular paper] with the headline “Forget the bus, I’m taking the plane”; and the broader press coverage was really strong, too, as we needed to communicate the insand-outs of low-cost flying as clearly as possible. The impact was such that in 2015 we were the third most searched-for term on Google in Chile, after “Bono Marzo” and “Copa América”. Of the entire top ten searches that year, SKY Airline was the only brand or company to make the list.

—Entonces, efectivamente había un gran público esperando el aterrizaje del modelo low cost en el país. —Sí, y de inmediato generamos un impacto gigante en muchos viajeros. Fue tan potente la reacción de los clientes que, además de una gran alegría, nos dio un alivio instantáneo al confirmar que realmente existían muchas ganas de que hubiese un modelo low cost en el país. Eso fue reconfortante y, al mismo tiempo, nos sirvió para eliminar las barreras de las personas y grupos que no querían que nos convirtiéramos en low cost. Más allá de nosotros, el cambio provocó modificaciones en la industria en general y, por ejemplo, el operador dominante en el país tuvo que adaptar su modelo de negocio para reaccionar ante la buena respuesta que tuvimos de parte del mercado.

—So, there had actually been a huge demographic just waiting for the low-cost model to take off in Chile. —Yes, and we had an immediate impact on a lot of travellers’ lives. The reaction was so powerful that we actually felt, apart from very happy, relieved that there were so many people waiting for the model to come along, and that we could help them. It was comforting, and helped us to break down barriers with people and groups who had been against us making the change. Also, the move brought about more general changes in the industry as the most important air-travel company in Chile had to adapt its business model to compensate for the shockwaves that we caused.

THE SKY WAY —What was the key to your success? —I think it was the tweaks we made to the traditional low-cost model. At SKY, our goal is to be the best low-cost airline in South America, and that means that as a company we have to build up relationships of trust with everyone we work with: from suppliers to passengers and, of course, the whole SKY team. Over time, we have built a company culture with very clear values, and

Seventy-five per cent of SKY employees are millennials, or even from Generation Z. —Another important aspect of the company’s development, apparently, has been the changes to its policies regarding women. —It’s vital. “Tratamos de promover que en ambientes que habitualmente han sido masculinos se integren mujeres, como en las áreas de mantenimiento o los mismos pilotos” las mismas. En nuestro directorio, además, contamos con dos mujeres de un total de cinco integrantes, aunque ellas están ahí por méritos propios. Para nosotros no se trata solo de un tema de cuotas, porque realmente buscamos a los mejores talentos. Tratamos de promover que en ambientes que habitualmente han sido masculinos se integren mujeres, como en las áreas de mantenimiento o los mismos pilotos. Así, en Perú ya estamos con cerca del 15 por ciento de los pilotos mujeres. Una cifra poco usual en nuestro rubro. 56

We really want to attract the best talent, and of course that means hiring more women. We try to encourage women to apply for jobs that have traditionally been occupied by men, such as maintenance workers or pilots. In Peru, around 15% of our pilots are women, and we have been there for less than a year. That’s not common in aviation.

—A propósito de Perú, ¿cuál es su balance a ya casi un año del comienzo de la operación en ese país? —Empezamos a volar el 8 de abril y la meta original para 2019 era transportar, aproximadamente, 900 mil pasajeros. Al final, llegamos a 1 millón 175 mil, casi 1 millón 200 mil pasajeros durante los primeros ocho meses y medio de operación. Superamos con creces la cantidad de pasajeros que queríamos transportar originalmente, así que estamos súper contentos. Sin embargo, lo que más me da orgullo es ver que la cultura que tenemos acá en Santiago allá se ha replicado, como si siempre hubiese existido esa cultura organizacional. Los mismos valores que nosotros proyectamos en Chile, el equipo de Perú logró hacerlos propios desde el día uno.

—¿Ya está consolidado el modelo low cost de SKY? —Como las personas, las compañías nunca deben dejar de evolucionar. En nuestro caso, como aerolínea low cost, siempre se buscan nuevas oportunidades para poder entregar nuestro servicio de forma más eficiente hacia el cliente. Más allá de eso, diría que los grandes cambios terminan ahora con la renovación completa de nuestra flota de aviones. —¿Qué avances destacaría de la nueva flota? —En abril vamos a dejar de operar los Airbus 319 y vamos a volar solo con Airbus A320neo. De ese modo, vamos a ser la primera línea aérea en el mundo en tener una flota compuesta en un ciento por ciento por este modelo, que es más amigable con el medio ambiente. Esto es motivo de un gran orgullo para nosotros, pero creemos que además debería ser motivo de orgullo para los chilenos tener la aerolínea comercial que menos emisiones genera por pasajero-kilómetro. —¿Cuáles son los planes para el futuro próximo? —Queremos que los chilenos comunes y corrientes, los de la clase media, puedan viajar mucho más hacia fuera de Chile. Darle acceso a destinos que antes no pensaban visitar. —¿En esa línea apunta la llegada a destinos como Bogotá, Cancún y Punta Cana? —Estamos ofreciendo pasajes por la mitad del precio del que solían estar. Esto, además de hacer reaccionar a la competencia, que deberá bajar un poco los precios, estimulará a que más y nuevas personas puedan viajar a estos nuevos destinos. Pienso que llegará un momento en que el pasaje de avión será más barato que el hotel, y eso hará que muchas personas ya no viajen fuera de Chile necesariamente por una o dos semanas, para así justificar el costo del ticket. Pronto los viajes van a ser más cortos, de menos días, pero también mucho más frecuentes.

—Speaking of Peru, how would you evaluate your progress in the time you’ve been there?

—Our first flight there was on 8th April, and the original goal for 2019 was to transport around 900 thousand passengers. In the end, we have flown almost 1.2 million people in just eight months. So we smashed the original target and we are very happy. Nevertheless, I’m most proud of seeing how the company culture has been transposed so easily from Santiago to Lima. It’s like we’d always been there. The same values we cherish in Chile were installed in Peru from day one. A NEW HEADING —Would you say SKY’s low-cost model is now consolidated? —Just like people, companies never stop evolving. In our case, as a low-cost airline, we are always looking for new opportunities to provide our services more efficiently. But besides that, I would say that the large-scale changes will come to a close for now with the renovation of our fleet. —What can you tell us about the new fleet? —We are going to stop using Airbus 319 aircraft completely as of April, and we’ll be exclusively using Airbus A320neos. We will be the first airline in the world to have a fleet composed entirely of that model, which is much more environmentally friendly. We are very proud of this move, but we think all Chileans should also be proud that the airline with the least emissions per passenger and kilometre is from their country. —What are the company’s plans for the near future? —We want to get the average Chilean flying abroad much more often than they do right now. We want to give them access to places they never thought they could visit. —Is that the thinking behind the incorporation of Bogotá, Cancun and Punta Cana? —We are offering tickets at almost half the price they used to cost. In addition to the reaction from the competition, who are reducing their prices, this is also encouraging more people to fly to new places. I think that we will get to the stage where a plane ticket costs less than the hotel, and that will mean that people won’t have to leave Chile for two weeks or more simply to justify the price of the ticket. We will start to see people taking mini breaks more often. Fewer days, but more frequently. 58

Esa es la sencilla premisa que guía la propuesta de Verde Sazón, el restorán vegetariano de Barrio Italia, que ofrece una cocina colorida, creativa y sabrosa basada únicamente en vegetales y hortalizas. “Uno de los prejuicios que tiene la gente con respecto a la comida vegetariana es que va a ser insípida, sin sabor; que te va a llegar una lechuga con limón. Y también que van a quedar muertos de hambre”, cuenta Roberto Luque, dueño y cerebro detrás de las ingeniosas preparaciones.

“Básicamente, cuando se habla de cocina vegetariana, todo el mundo piensa en una ensalada”, agrega. Pero en este coqueto restorán de dos pisos, cocina a la vista y diseño cuidado, están lejos de esos conceptos. Abierto hace poco más de dos años, lo que comenzó como un food truck veggie en el balneario de Maitencillo, en la Región de Valparaíso, se transformó en uno de los mejores comedores vegetarianos de la capital. Su oferta, por supuesto, va más allá de los vegetales crudos junto a un aderezo; ya que cuenta con pastas, guisos, currys, risottos y hamburguesas, pero con una

El mejor ejemplo de esto se encuentra en uno de sus platos más nuevos: el original Verde Nigiri (8.900 pesos), perfecto para compartir: pequeños bocados de queso crema y plátano maduro frito envueltos en panko de masa madre, con pepinos encurtidos en salsa teriyaki, pasta de kimchi, gajos de pomelo, salsa de crema de coco con wasabi y cochayuyo. Una preparación compleja, de sabores intensos, pero balanceada. “Buscamos enfocarnos en el sabor, que en cada preparación estén todos los componentes, como lo dulce, lo salado, lo ácido, lo picante y el umami; que sea visualmente atractivo, que tenga todas las texturas y que sea abundante”, explica Luque.

has now been open for just over two years, and is now considered comfortably one of the best restaurants of its kind in the capital. Of course, the dishes here go far beyond dressed salads, with pastas, stews, curries, risottos and hamburgers all on the menu, with tasty twists such as local, Asian, Caribbean and Mediterranean influences all thrown into the bargain. The best example of the restaurant's unique style can be found in one of its newest dishes: the original Verde Nigiri (CLP 8,990), which is ideal for sharing, and includes delicious morsels of cream cheese and ripe banana fried in panko breadcrumbs, pickles in teriyaki sauce, kimchi pasta, slices of grapefruit, and a coconut milk sauce with wasabi and cochayuyo seaweed. It's a complex, yet perfectly balanced dish. “We wanted to focus on flavours, and to have all of them present in all of our dishes: a touch of sweet, savoury, sour, spicy and umami. It also has to be visually attractive, to have a range of textures, and it must be a generous helping”, explains Luque. More than Veganism Instead of merely pushing the healthy or conscious eating vibe, or imposing a lifestyle, Verde Sazón seeks to captivate the palates of carnivores and offer food that everyone can enjoy (without losing sight of its sustainable 71

Más allá del veganismo

Más que ofrecer una cocina saludable, consciente o imponer un estilo de vida; la idea de Verde Sazón es cautivar al paladar carnívoro y ofrecer una cocina para todos; aunque siguiendo principios sustentables. “Queremos competirle a cualquier restorán que trabaje con carne, pero sin necesidad de utilizar proteína animal. Y eso es un desafío”, dice 72

Luque, quien afirma que al menos la mitad de su público hoy es carnívoro. Eso lo han logrado gracias a originales y contundentes preparaciones y, por cierto, buenos precios. Como la cremosa Palta grillada (6.900 pesos), rellena de queso de cabra ahumado, quínoa y salsa de yogurt; la adictiva reversión del Gado gado (7.900 pesos), un plato frío clásico de Indonesia, que aquí sirven caliente acompañado de

And that's a challenge”, says Luque, who assures us that at least half of the diners at his restaurant on a given night will be meat eaters. It's something they've been able to achieve thanks to their original, generously portioned and affordable dishes. Take the creamy grilled avocado, for example (CLP 6,900), which is stuffed with smoked goat's cheese, quinoa and a yoghurt sauce; or their addictive take on "gado gado" (CLP 7,900), a classic cold dish from Indonesia that they actually serve hot here with peanut sauce and rice noodles. Then there are the desserts, such as the "Se me cayó el Cheesecake" (CLP 5,800), which is served with a dried fruit crumble and red berry sauce. The cocktails are not to be missed, either. Under the watchful eye of botanical bartender Nicolás Aguilar, the bar is run under the same principles as the restaurant: everything is made with natural ingredients, using sweeteners like agave or natural syrups and infusions that are made in-house. What's more, all the cocktails are vegan friendly. Try, for example, the "Nube de Jalisco" (CLP 4,800), which is a fresh new take on the Tequila Margarita, with grapefruit-infused tequila, lemon and ginger syrup. For Luque, the trend in vegetarian restaurants can only continue to grow. “In three years' time, there will be twice as many veggie restaurants in Chile, and

Esa es la consigna en BOA, el restorán en base a productos locales y de estación que desde hace dos años suma adeptos en Santiago, y que acaba de estrenar una ingeniosa carta de cocktails con infusiones y fermentados caseros. Aquí su dueña, la diseñadora Francisca Dibán, cuenta por qué el refrescante Moscow Mule, creado en Estados Unidos en 1941, es uno de sus cócteles preferidos. “El Moscow Mule, que incluye vodka, ginger beer y jugo de limón, es uno de mis cócteles favoritos. Aunque no recuerdo la primera vez que lo probé, sí sé que me empezó a gustar harto hace unos tres años, cuando empezamos a experimentar con fermentados en BOA; como kombucha, keffir y mi favorita ginger beer, una bebida en base a jengibre. Entonces me di cuenta de que hay un sinfín de opciones y preparaciones caseras increíbles que, aparte de ser muy buenas para la digestión,

That’s the philosophy at BOA, a restaurant built around local, seasonal ingredients that has an ever-growing fanbase in Santiago and has just added a fun new cocktail list to its repertoire using homemade infusions and liqueurs. Here, owner Francisca Dibán tells us why the refreshing Moscow Mule, invented in the USA in 1941, is one of her favourites. “The Moscow Mule, which has vodka, ginger beer and lemon juice, is definitely one of my go-to cocktails. Although I don’t think I can remember the first time I tried it, I know that I really started to enjoy it about three years ago, when we started experimenting with fermented drinks at BOA, like kombucha, kefir and ginger beer made with real ginger. I realised that there’s no end to the incredible things you can make with them. And besides being great for your digestive system, they work very well in mocktails and cocktails. I don’t really like sweet things. I don’t drink soft drinks, and I prefer simple, fresh recipes. So it’s quite hard for me to find a cocktail I really enjoy. The Moscow Mule is fresh, simple and easy to prepare, and quite flexible in terms of the spirts you can use, which makes it interesting. At our bar we use Träkál, a spirit made with apples and pears from Chilean Patagonia. It’s great for the summer months, as we usually serve it in a copper mug that conducts the cold almost instantly, so you really get that kick of freshness. And it’s not sickly sweet, so you can have it at brunch, lunch, dinner or at a party. You can pair it with cold food as well, such as vegetable tartars, salads, fish and oysters”.

Save Water The supply of fresh water is now one of the main environmental problems in many places around the globe, so saving as much water as we can is a vital task. One great tip in this regard is to avoid buying single-use plastic bottles and to take a reusable bottle with you, ideally made from non-polluting or recycled materials.

LLEVE SUS AMENITIES ¿Alguna vez ha pensado dónde van a parar todos esos diminutos envases plásticos que suelen contener jabones, shampoos y cremas? Pues bien, aunque algunos se reutilizan y otros se reciclan, un buen número va a parar a la basura pues, lamentablemente, la mayoría no son biodegradables. Por eso, el consejo es llevar su propio shampoo, acondicionador, etcétera, en sus propios envases reutilizables; y así alentar a los hoteles a implementar prácticas sustentables.

VIAJE LIGERO Llevar más equipaje que el realmente necesario tiene muchas más consecuencias que cargar más peso en la maleta o la mochila sin motivo. Por cierto, además de ayudar a ahorrar dinero en algunos casos, al no pagar sobrepeso; viajar ligero también ayuda, por ejemplo, a reducir las emisiones contaminantes de los aviones. ¿Algunas ideas? Prefer Local Products In San Pedro de Atacama, for example, never order tilapia or other products that have travelled thousands of kilometres to get to your table. Prefer local businesses, including travel agents, hotels and restaurants, and help boost the local community. SKY y BancoEstado incorporan nuevo sistema de pago SKY AND BANCOESTADO LAUNCH BRAND-NEW PAYMENT SYSTEM SKY junto a BancoEstado habilitaron un nuevo sistema de pago para comprar pasajes, especialmente para aquellos pasajeros que tienen cuenta RUT o bien, prefieren pagar en efectivo y de forma presencial. Con este método de pago, cerca de 12 millones de personas podrán acceder a la compra de pasajes y también a la adquisición de otros servicios propios del modelo low cost, tales como el equipaje adicional o la selección de asientos. Cabe mencionar que, por ahora, esta modalidad solo estará disponible al momento de la compra inicial del ticket. ¿CÓMO FUNCIONA? Al momento de realizar la compra del ticket a través del sitio web www.skyairline.com, los clientes deberán seleccionar la opción: “Pago presencial/pago online” del BancoEstado. Luego, se generará un voucher, que además se enviará al correo electrónico como copia de respaldo. Con este documento y en cualquier Caja Vecina o ServiEstado, será posible realizar la compra del ticket de manera presencial dentro de un plazo de dos horas y media. También se puede pagar mediante transferencia electrónica, a través de la página web del BancoEstado.

SKY and BancoEstado have just launched a brand-new payment system for purchasing air travel tickets. It has been specially designed for BancoEstado customers with an account linked to their Chilean ID number or people who prefer to pay in person or with cash. Under this new system, close to 12 million people will be able to easily buy plane tickets and other services that are offered within the low-cost model, such as additional baggage allowances and priority seating. It should be made clear that, for now, this system is only available when making the initial ticket purchase. HOW DOES IT WORK? When purchasing a ticket on www.skyairline.com, customers should select the option: “Pay in person/ online” from BancoEstado. The system then creates a voucher that is also sent to the customer's email address as a back-up. The voucher can be paid for at any "Caja Vecina" or "ServiEstado" centre in Chile within the following two-and-a-half hours. Users can also transfer money from their account through the BancoEstado website.

Calilla Flor de calilla (Ochagavía litoralis), planta endémica de Chile, pariente de las piñas y los chaguales. Se encuentra solo entre Valparaíso y San Antonio (Región de Valparaíso), y entre Tanumé y Topocalma (Región de O’Higgins). El arbusto mide unos 20 centímetros de alto y se puede distinguir porque tiene hojas verdes grisáceas, alargadas, con la base más ancha. Florece en verano y crece en la costa, de preferencia en laderas

rocosas de orientación polar, formando grandes manchones. Su estado de conservación es vulnerable por el daño que ha sufrido su hábitat y por su uso ornamental. / The “calilla” flower (Ochagavia litoralis), endemic to Chile, is a relative of the pineapple and other bromeliads. It can only be found between Valparaíso and San Antonio (in the Valparaíso Region), and between Tanumé and Topocalma (in the O’Higgins Region).

The stout plant grows to around 20cm in height and can be recognised by its long, wide-based grey-green leaves. Calillas flower in the summertime, and tend to prefer south-facing rocky slopes on the coast, often appearing in large groups. —What’s your first memory of travelling? —My first time on a plane, to Arica, when I was 17. But the most exciting trip was to Hawaii in 1999. I fell in love with the place, the waves, the weather and the people. —North or South of Chile? —Both are incredible. We are blessed with some of the best tourist destinations and natural landscapes on Earth. We have to look after them. Tourism is the way we solve future problems. —Cities or nature? —I’ll always choose nature. I just don’t feel comfortable in big cities. —¿Aceptas encargos de los amigos? —Siempre. Tablas, bolsos, camillas de rescate, etcétera. No tengo problemas, porque a mis amigos les pido lo mismo.

—Do you ever bring back things for friends if they ask? —Always. Boards, bags, stretchers, etc. I don’t mind, because I ask my friends to do the same.
