Welcome to our August edition. Saturday afternoons at Project House in Leeds have taken on a different guise, attracting a host of daytime disco revellers for the Dayfever events. We spoke to two of the events founders – Vicky McClure and Jon McClure (no relation) about it ahead of an expansion. It is set to get even bigger come the autumn and will be appearing in many more towns and cities.
On the food front we dine at two different restaurants - one in the city and one in the countrysideand have our new regular ‘Dish of the Month’.
We turn also turn our attention to

A new era of luxury UP NORTH
Harrogate is getting ready to welcome a new rare watch
The luxury watch market has exploded in recent years with many purchasers seeing them, not just for their aesthetic beauty but as a longterm investment. Indeed, a well-maintained luxury watch has the potential to remain consistent in value or even appreciate over time, making it a prudent choice.
The most recent ‘boom’ in the luxury watch market came around the time of the pandemic. Factors like increased disposable income and restricted supply of popular models created a surge in demand and speculation. While the peak of this boom has passed, the secondary market remains strong, and prices are still higher than prepandemic levels.
The pandemic also disrupted supply chains and manufacturing, making certain popular models like Rolex Daytonas and Patek Philippe Nautiluses scarce.
Someone who would consider himself ahead of the curve is Curtis Bitton-Price, a self-confessed luxury watch obsessive who started trading in rare and exquisite pieces ten years ago.
Curtis grew up in LS17 Alwoodley, attending high school in Harrogate before pursuing a career as a professional footballer. Unfortunately his career was cut short very early due to injury but it was during his time playing for teams such as Leeds United, Bradford City, Wrexham and Harrogate Town that he developed an

Once his friends started picking up on the fact that Curtis knew everything there was to know about watches, and started asking for advice, he decided it could become a new career.
After retiring from professional football and running a successful events business for almost six years, Curtis started trading

“It was tiny,” he recalls. “I had one table, ten watches, me on one side, client on the other… but then I started an Instagram page and from there it spiralled out of control.”
Up North Watches deals in luxury brand timepieces such as Audemars Piguet, Cartier, Patek Philippe, Richard Mille, Rolex and Vacheron Constantin as well as

His favourite brand is Patek Philippe – his day-to-day watch is a 5711/1A, the nickname for which is ‘piano dial’, a glossy, enamel-like white surface with piano keys – but it’s the rare Rolex sports models that are currently capturing his clients’ attention.
“Anything from steel GMT Master IIs to hard-to-get steel Daytonas and regular stainless steel Date Just models all the way up to your precious metal sports watches, such as solid gold pieces,” Curtis says.
Buoyed by his success, a few years later Up North Watches relocated to the

With an opening date of September currently pencilled in, Curtis will be moving Up North Watches from the centre of Leeds to Harrogate, a town he knows well and where he currently lives.

“It’s going to be amazing,” says Curtis. “I’ve completely refurbed it from top to bottom and have left no stone unturned. It will be real luxury experience and far different from more familiar watch and jewellery stores.”
Curtis has worked with north Leedsbased Amelia Joy Design for the shop modelling and can’t wait to share it with customers old and new. He is planning on hosting two separate launch events – keep on eye on the website and Instagram for further information.
Thanks to a strong presence on social media, Curtis counts clients from all over the world – from Spain and Belgium to the UAE and USA. But for now, his focus is very much on Harrogate. The move to the new premises will also allow to stock more in-demand ladies watches and in future he




will also be stocking high-end rare handbags such as those from Hermés and Chanel.
Whilst much of the focus will be on retail, Up North Watches will have an in-house watchmaker, boasting 30 years’ experience, and will be offering servicing, repairs, and polishing as well as customisation and diamond setting.

nee pain can start as an occasional nuisance, but for many people it becomes a chronic problem that affects everything from walking the dog to enjoying time with family.
If you’ve already tried painkillers,
even joint injections but your symptoms are still impacting your day-to-day life, then it may be time to consider whether knee replacement is the right option for you.
One of the most important questions we hear from patients is: how do I know when it’s time? Typically, people begin to explore surgery when pain becomes more constant, even interfering with sleep, or when stiffness, swelling and weakness
comfortably, or remain active.
It’s not just about what your X-rays show, it’s about how much your quality of life is being affected. When the simple pleasures in life become a struggle, and previous treatments have done all they can, that’s the point at which a discussion with a specialist becomes essential.
Once you’ve reached that stage, it’s



reassuring to know that knee replacement surgery today is more advanced and personalised than ever before. The most well-known procedure is the total knee replacement, where the damaged surfaces of the entire joint are carefully removed and replaced with smooth metal and high-grade plastic components. It’s a highly successful operation, with most implants lasting for over 20 years, and for many patients it and mobility.
However, not every patient needs the entire knee replaced. For some, the wear and tear is limited to just one part of the joint, commonly the inner side, and in those cases a partial, or unicompartmental, knee replacement may be a better choice. This involves a smaller incision, preserves more of your natural anatomy, and usually results in a quicker recovery. Patients often describe a more “natural” feel to their new joint, and many return to normal activity within a few weeks.
More recently, robotic-assisted knee surgery has emerged as a cutting-edge option that adds an extra level of accuracy

Summer means one thing - barbecues. Tying in nicely this month is National Burger Day (21 August), giving you the perfect excuse to try all manner of combinations.

Slow-cooked beef brisket biryani

Ingredients
This recipe, from MasterChef UK’s and international award-winning Indian restaurant consultant Chef Bobby Geetha, elevates the humble biriyani to a culinary masterpiece using slow-cooked beef brisket.
For the Brisket Curry (yields approximately 1.5kg cooked meat & sauce):
800g beef brisket (boneless, whole) cut into 2-3 large chunks for easier handling
2 medium onions, sliced
30g ginger-garlic paste
75g chopped tomato
7g turmeric powder
3g chilli powder (very hot)
60ml oil
150ml thick yoghurt
7g salt
21g coriander powder
500ml hot water
7g garam masala
10 coriander shoots (for fragrance during cooking)
8 strings fresh coriander leaves, sauce)
To Layer & Finish the Biriyani: 60ml oil
1kg cooked beef brisket meat & sauce (from above)
1kg cooked basmati rice
Method
To Pressure Cook the Beef Brisket:
1. In a pressure cooker, combine all ingredients for the brisket curry except the fresh coriander leaves and slit green chillies.
2. Mix everything thoroughly to ensure the brisket is well coated.

4. Once cooked, carefully release the pressure. Open the cooker and add the fresh chopped coriander leaves and slit green chillies. Stir them through the tender brisket and rich sauce.
To Layer & Finish the Biriyani (Dum Cooking):
1. In a thick-bottomed pot or large pan, pour two tablespoons of oil.
2. Spoon four ladles of the rich beef brisket sauce, ensuring some tender meat
3. Carefully spread a thin, even layer of cooked basmati rice over the sauce.
4. For the second layer, arrange the large brisket chunks and some more of the smaller meat pieces and sauce over the rice.
5. Cover this with another layer of basmati rice.
6. Finally, pour any remaining sauce and meat over the top layer of rice.
7. Drizzle the remaining two tablespoons of oil over the top of the rice.
8. Cover the pot tightly with aluminium foil to trap all the steam, then place the lid

For Plating:
1. Gently scoop the biriyani into a serving bowl, ensuring you get a good mix of rice, sauce, and tender brisket pieces.
2. For a showstopping presentation, place the largest, most impressive brisket chunks on top of the biriyani.

Six by Nico introduces Mad Hatters Tea Party Menu for summer. By Richard Abbey.
t’s not every day you get invited ‘down the rabbit hole’ but that’s where we found ourselves on an unusually rainy night in Leeds.
Six By Nico, located on East Parade, is not just any rabbit hole but a one-ofa-kind dining concept built around an ever-evolving six-course tasting menu inspired by stories, memories, places and imagination. With locations across the UK, they have become known for accessible
Every six weeks, a brand-new menu is revealed which coincided nicely with our visit as the latest had just been launched and was themed ‘Mad Hatters Tea Party’. The new menu, priced at just £45 per person, fuses childhood nostalgia with innovative gastronomy, designed to dazzle both the palate and the imagination. There are also optional drink pairings available from £30 per person.
Chef Nico Simeone said: “The Mad Hatters menu is one of our most creative journeys yet. We wanted to bring a sense of summer magic to the table, reimagining classic British tea party elements through theatrical touches, and a whole lot of fun on the plate”.
We didn’t see a white rabbit but headed inside and were seated in the bar area while we waited for our table to be ready.

It set the tone for the evening nicely.
Once seated in the restaurant our culinary journey began but not before we’d made our drinks choices – we both opted for the wine pairing, which would begin with course two.
First up was ‘We’re All Mad Here’, a chicken fat doughnut drenched in roast chicken juices, which were poured over the dish from a teapot. My dining companion had opted for the vegetarian menu and saw his chicken doughnut substituted for a caramelised onion one with a complementary onion broth.

It consisted of barbecue hispi cabbage, smoked potato terrine, taramasalata and garden herbs. Crème fraiche replaced the version.
One of my favourite dishes of the evening was ‘Paint The Roses Red’, which goats’ cheese parfait beetroot and a grilled red pepper gel. Mustard and celeriac added a further dimension. This was paired with a Romanian muscat that allowed the dish’s boldness to shine.
Course 4 – ‘Breakfast In DisguiseSunny Side Upside Down’ – was exactly that: black pudding, hash brown, egg yolk of black pollock (the vegetarian switched all presented under a rice paper ‘menu’.

Blanc cut through any richness.
The meat course, if you will, ‘Off With Crisp pig’s head, apple and a mustard mousseline was warming and welcome and given some extra freshness by the addition of fennel and lovage. Across the table, crisp celeriac replaced the pork and both dishes came with a very good glass of Rioja Crianza 2020 from Marques de Varea, Spain.
The last course - Jam First - Logic Later – provided the last piece of theatre as the accompanying ‘Jammie Dodgers’ arrived at the table on a bed of pebbles and covered in scented dry ice. The main part of the dish was an inverted tea and toast, consisting of burnt toast delice, summer strawberries and breakfast tea ganache. It was paired with a sparkling Italian red wine - Dolce Essenza Frizzante, La Sera – which has plenty of sweetness to complement the dessert.
