Payge Turner Seattle singer , who’s wowed the judges on NBC ‘The Voice’ season 19
A
n incredible talent hit the scene on NBC “The Voice” in season 19. Judges and fans can both agree that the sensational 27 year old singer, Payge Turner aka Payge Roopchan, was definitely one to watch for, although the Seattle indie soul singer was cut during the results show, one step from the final nine on December 1, 2020. She was a force to reckon with. The judges were amazed by her exceptional range and voice control. Payge hails from Seattle, Washington, but was born and raised in Trinidad. Although, Ms. Turner was new to NBC “The Voice”, she is not new to the music world. She has been singing for years and has released multiple singles and a new four song EP just this past June 2020. On it were songs including “Beautifully Flawed” and “Wyld.” Her sisters are also vocalists and her mother is Jacqueline Johnson and sings with the Marionette Chorales. Payge definitely has the family’s music blood in her.

RED INK Magazine had the pleasure of interviewing Payge Turner. This is what she said to us. REDINK: What are some of your goal as a singer-songwriter? PT: My goal is to make music that people can relate to on deep levels; music that really makes you think about how you really feel. REDINK: When and how did it all began for you as a singer-songwriter? PT: It all started officially back when I was 15. I started writing on the piano but then switched to guitar about 5 years later. Piano was a great way to start for me, but I felt like something was messing, so once I picked up guitar better, I started writing more and realised that the guitar was the way to go. REDINK: Tell us how music connects your family. PT: My mum has been singing since she was 16 and the her sisters and mum, as well were musical too. So I guess you can say we were born into the musical journey! We all love it. And learned at a very young age. REDINK: Please share with us about your experience on NBC "The Voice". PT: My experience was blessed. I learned so much about myself personally and stretched myself as a performer. It was crazy how much I grew as a performer. I
did things on that stage I had no idea even existed. REDINK: What was it like to work with Gwen Stefani on "The Voice" and what did you get out of that experience? PT: It was rewarding. She was such a good mentor to look up to, especially because we have a similar sort of vibe with each other. Gwen taught me how to really use every part of myself to perform, as that’s something she’a killer at, herself. REDINK: If you could collaborate with an artist of your choice, who would it be and why? PT: Lianne La Havas and Sadé! They’re both exceptional writers but beautiful women with insane musical talents. To work with either would be a dream. REDINK: What can we expect from you in the near future? PT: A lot of new music! And tons of crazy ideas ;) REDINK: Say something to your fans, a quote perhaps PT: “Always stay true to who you are. No matter what the world says. The Man On A Mission For Success

0 Cent aka Curtis Jackson has lived a life that is truly a rags to riches story. He really moved up from one extreme to another. Early in life he was caught up in a world of real life thugs and gangsters which led to his infamous story of being shot many times. However he turned that life story into a recording success. He took the “Gangsta Rap” scene by storm in 2003 with his debut album “Get Rich or Die Tryin.” From there he grew to become the first rapper to have two albums go Diamond (10 million sold) and he branched out into the world of acting and investing and is a true “Self-made” multi-millionaire. 50 Cent, was born Curtis Jackson in 1975. He was born and raised in Queens, NY. His early life was not an easy one. His mother, a drug dealer, died when he was 8 years old and he went on to start selling drugs at the young age of 12. His bad luck continued at age 19 when he was arrested by an undercover police officer. He was initially given a 3-9 year sentence for his crimes, but instead was able to serve 7 months in a “shock” boot camp. He proceeded to get his GED and make a change in his life. But it was not easy. When 50 Cent first rolled out onto the scene his success was not guaranteed, as a matter of fact, he had two record deals fall through. The first was with Jam Master Jay from Run DMC and the next was with Columbia. Both record deals fell apart post production, with the albums ready to release, but instead were shelved. At the time, his tracks were considered a little too extreme even for the “gangsta rap” scene, one of those tracks “How to Rob” was a detailed plan to steal from P.Diddy, Jay-Z , Mase, and Missy Elliot. His real break was given to him by Eminem and Dr. Dre. They produced his debut album “Get Rich or Die Tryin.” This became his first Diamond album many years later. Even though the music was almost as aggressive as his shelved albums, and it was rife with talk of crime, gangster living and sex, it had some great hooks and chorus lines that allowed the songs to become huge hits with the NYC and later the worldwide night club scene. Even if you are not a fan of hip-hop music, I would gander that there are very few people that would not recognize the tag line chorus from “In Da Club.” Continued...on page 10 8

His recording career took off like a space shuttle and he has never looked back. One of the things that made his style so popular was the truth in it. Unlike so many fakers out in the hip hop world that pretend to be “hard, tough and raw” singing about living a gangster life and run ins with law, and “poppin caps or being shot,” even though they never even had a parking ticket; Curtis Jackson really did live that life. He was really did have run ins with cops, he really was shot, and shot others, he did live in the streets, and do things to survive, he really was a boxer, and his real life story is apparent. He has a boxer’s physique, he has bullet wound scars and a criminal history in the public record. He was truly one of the few “gangsta rappers” alive that was really a gangster. This made his music relatable to youth and adults in similar situations, but his beats and taglines made his songs huge hits with everyone else, every club goer in the world to be more precise. You would not know it by looking at him, but he is truly a lyrical and musical genius. The rags to riches story would end right here for most people, going from the streets to a multi diamond recording artist, but it did not for Curtis. Instead of taking the millions he made from his recording career and falling back on old habits, he took that money and branded himself into a multi-million dollar empire. He got into acting, and even producing and directing movies. He invested in the things he saw as popular in the world like video games, liquor and vitamin water. He was a heavy early investor into the vitamin water franchise and multiple video games, some featuring him 10
self. Those were nothing short of genius investments, and the simple way of looking at them, in the sense that they were popular aspects of society, paid off in spades. Vitamin infused drinks and video games are too incredibly rapid growing industries with no signs of slowing down. And on the liquor side of things he was part of three successful liquor brands; Branson VSOP Cognac, a $1,000 a bottle champagne Le Chemin du Roi and his Effen vodka brand; all three have been hits with connoisseurs everywhere. More recently he has proven to the music world that he has still got the touch, when earlier this month he release a new single “Part of the Game” which became the number one song on urban radio. 50 Cent also handled Pop Smoke’s No. 1 album Shoot for the Stars, Aim for the Moon. And he also wrote one of the catchiest TV theme songs for the show Big Rich Town. Curtis Jackson aka 50 Cent may have got his start in a dark place, but he is truly an inspiration to anyone that takes the time to learn his story. He proved that anyone, from any walk of life can achieve incredible success in life, if they are just willing to change their habits and focus on their strengths. In April of last year, 50 cent released his autobiography, Hustle Harder, Hustle Smarter, giving readers everywhere a chance to learn about his amazing story of redemption, growth and success. LARRY KING Iconic Television & Radio Interviewer for half-century, dies at 87
arry King is a name that people all over the world recognize. He was an interviewer whose career started in radio, but blossomed on television with his syndicated show on CNN. He has interviewed every single United States President from Gerald Ford to Barrack Obama. He interviewed royalty, athletes, celebrities and people of power and influence from all edges of the Earth. He was known for his raw and sometimes sarcastic way of speaking, but also for his endurance and fearlessness when it came to asking the hard, influential questions to some of the most powerful people on the planet. Larry King was born Lawrence Harvey Zeiger, on November 19th, 1933. He was raised by his mother after his father died when he was 10. He focused on his talent of communicating and did everything he could to make his mother and the memory of his father proud of him. Larry grew up being a huge sports fan, so big that it is Larry Zeiger got his start in media in 1957 when he took a job as a DJ for WAHR-AM in Miami. It was here that he got his new moniker. His boss told him with 5 minutes to air time, that he did not think Zeiger was going to work out and that it

was too ethnic and too difficult for listeners to spell and they needed to come up with a new name. On the table in front of them was a copy of the Miami Herald and on it was a full page advertisement for King’s Wholesale Liquors. So king was chosen and two years later, Lawrence made it official and legally changed his name. And that is where the name King came from, as described by Larry King in his Autobiography. After spending some time in Miami, he was offered a second job as a columnist in the Miami Herald. Unfortunately,in 1971, a criminal charge caused both the radio station and the newspaper to fire King, and even after being exonerated they would not take him back. So, he moved and became a freelance journalist. In, 1978 however, the radio station offer him a new position and he came back to Miami and he launched his syndicated late night radio show called The Larry King Show under the radio stations new id WIOD. This show was the start of Larry King’s legendary recognition. It aired in 28 cities, but over the course of 5 years was picked up by over 118 cities across America. The show won a Peabody Award in 1982, and was his true launch to success.

In 1985 he was given the show Larry King Live on Television with CNN. He hosted in that seat, for 25 years, and some of the most memorable interviews in U.S. history were done at his table. He interviewed celebrities like Yoko Ono and Paul McCartney, Jerry Seinfeld, Marlon Brando, Snoop Dogg. He interviewed all of the Presidents from Ford to Obama, and Princess Diana and Meghan Markle. He hosted interviews with OJ Simpson, Paris Hilton, Frank Sinatra, and a political debate between Ross Perot and Al Gore and an ethical discussion between Michael Moore and Dr. Sanjay Gupta. And these were just a handful of the tens of thousands of interviews that Larry King hosted on his syndicated radio and television shows. Larry King will forever be known as a bulldog interviewer who was able to get to the point with the most famous and notable people in the world. He will also be remembered as a fighter in the arena of his own health. He overcame having a quintuple bypass after a major heart attack in 1987; he later survived while dealing with Heart Disease, Diabetes, Lung Cancer, Prostate Cancer, a Stroke and most recently Covid. However in his weakened state after beating Covid, his body fell victim to an infection leading to Sepsis, which ultimately took his 14
life. But, Larry King’s strength has been apparent for the last few decades, as he remained at CNN until 2011, and even after retiring from syndicated television, he continued to carry on his interviewing prowess on the Ora and Hulu show “Larry King Now.” He continued this most recent show up until his hospitalization for Covid in 2020. Throughout his career Larry King was named the Greatest Television Talk Show Host of all time and Fourth Greatest Radio Talk Show Host of all time, by Talkers Magazine, he earned a star on the Hollywood Walk of Fame, He was given the Golden Mike Award for Lifetime Achievement, and was inducted into the National Radio Hall of Fame and the Broadcaster’s Hall of Fame. He is definitely one of the most famous talk show personalities in history and quite possibly the best interviewer that ever lived. Larry King, you were an incredible person, with a legendary career. You will be missed by your fans and the people you touched through your interviews forever and equally so, you will be remembered. The only solace that comes from this is that your battle with illness is over and you may finally rest in peace. By Michael Devine u

Cicely Tyson Pioneering Hollywood Icon who shattered stereotypes, died at 96
C
icely Tyson was born in East Harlem, NY on December 19th, 1924. She was raised in a strict Christian household that forbade the watching of movies or going out on dates. However, as soon as she graduated from high school, and attained her own personal freedom, she began modelling for Vogue and Harper’s Bazaar. And later in 1951 she landed her first role on television on the show “Frontiers of Faith” At this point her mother kicked her out of the house for disobedience and the rest is history. Ms. Tyson, went on to become one of the most notable Black actresses to grace the silver screens, televisions and stages. She had over a hundred roles in movies, TV shows and theatrical performances. But the one thing she
took from her upbringing was a sense of decency, honor, and pride in her culture and skin color. She became known for being an actress that was in it for the passion and not the money. Any role, even if it was a starring role, which depicted blacks or women in a demeaning manner, she would turn down. She was truly a class act. One of her most notable film roles was that of the sharecropper’s wife in Sounder in 1972, which earned her an Oscar nomination. She won an Emmy for Best lead Actress in a Drama and Best Actress in a Special for her performance in “The Autobiography of Miss Jane

1924 - 2021 Pittman.” Cicely also played an important role in Roots. She had an incredible career winning another Emmy in 1994 and a Tony in 2013 for her performance in “The Trip to Bountiful.” All in all she appeared in over 29 films, 68 Television series, and 15 theatrical productions on and off Broadway, winning Emmy’s, a Tony, and some Oscar nominations. She was later given an Honorary Academy Award at the Governors Awards in 2018 making her the first woman of color to ever receive that award. It was not the awards, or the roles that made Cicely Tyson so renowned. It was her place in the era that she lived. In the 1950’s and 1960’s when she began her acting career it was hard for a black woman to get any acting roles, much less supporting and starring roles. There was just so much prejudice then, this was a time before the Million Man March and equal rights. So the fact, that in the face of this prejudice she still had the fortitude to turn down roles that did not mesh with her standards and cultural pride, made her an amazing actress and a trailblazer in the industry, leading the way for women of color to get the respect that they deserved in the acting world. This is why former President Barack Obama gave her the Medal of Freedom in 2016. Ms. Cicely Tyson, you were a gorgeous model, an incredible actress and a brilliant stage performer. GEECHIE DAN Preserving the “HIP HOP” Cultures
G
eechie Dan, the creator and host of The Geechie Dan Hip Hop Tape Show. This is the first and only radio show in the world that plays the audio tape recordings of performances of our Hip Hop ICONS. Growing up in Hollis, Queens in the early 80s around Hip Hop Icons Run DMC and LL Cool J motivated him to begin collecting audio recordings of Hip Hop parties and park jams that took place throughout the NYC Tri-State area. In 1983 he started emceeing. He also joined (and currently remain a member of ) New York based Hip Hop Organization ZULUNATION. In 1984, a rap confrontation with Hip Hop Legend LL Cool J led him to a hip hop battle with LL Cool J. Days later Geechie took his first lost in an MC battle. He joined Long Island based Hip Hop Radio Crew Spectrum City WBAU college radio at Adelphia University in 1984...consisting of Bomb Squad Producers...Hank and Keith Shocklee...Chucky D ...who is now known as Chuck D from Hip Hop group Public Enemy....and MC DJ Flavor ...AKA today as Flavor Flav. Bill Stephany...AKA Mr Bill....DOCTOR DRE from YO MTV RAPS. ..Son of Berserk. ..Dj Johnnie Juice, JVC Force, Townhouse 3, Nasty 4, Deadly 3, Mighty Choice 5 MCs, Original Concept. Dymanic Brothers from Freeport. Geechie received a record deal contract from Independent record label Public Records in 1986 for the song..."Let’s Dance" after being referred to the label by Hip Hop Queens Park Jam legend ..MC Mikey D, however, he had to decline the opportunity to doing Hip Hop and rap music due to the involvement in the Jehovah Witnesses in which his mother and the organization were adamant that he doesn’t pursue his dream in doing rap music. He won a rap contest in 1990 that was put together by New Orleans based Black Cat Productions which resulted to winning a trophy and $500.00 and an opportunity to record a rap for a New Orleans R&B singing group and record at Paisley Park Studios...the recording home for Pop Superstar ...PRINCE in Minnesota. In 2008 Geechi went wrote and published the book..."The Kingdom Hall No More" with Author House Publishing in which he discussed his 16 years involvement in the Kingdom Hall and Jehovah Witnesses. His 1st season of The Geechie Dan Hip Hop Tape show in 2015 on the Hilltop Radio format on blog talk radio with DJ Shawn, he started his 2nd season of The Geechie Dan Hip Hop Tape show in 2016 on the FLOempire Radio in NYC in 20
April 2016 with DJ... DJ Kool K Gee. He started his 3rd season of The Geechie Dan Hip Hop Tape Show in 2017 on DSN Network in the Bronx with my DJ....DJ Kid Flash and his 4th season of the Geechie Dan Hip Hop Tape Show began in 2018 on DSN Network in the Bronx and Linkage Radio 101.7 FM in NYC with my DJ....DJ Scratch Masta Jazzy G. In 2019 they launched HIP HOP ICON Music channel.
RED INK Magazine had the pleasure of interviewing Geechie Dan. This is what he had to say to us. REDINK: Growing up in Hollis and as A jehovah witness you started Mc'ing at a young age what happen and why didn't you keep pursuing your artistry? GD: I started rhyming in the neighborhood park .. O'CONNELL Park and on Farmers Blvd around 1984. I got involved with WBAU 90.3 FM RADIO @ Aldephi University in Garden City Long island NY. I joined Zulunation organization in 1983, 1984 and used to attend some of the meetings they had in the Community Center in Bronx River Projects on Tuesday evenings at 7:30 pm.

As I was getting more popular...my mother who was a Jehovah Witness ..she started hearing more of what I was doing in the park and on college radio and didn't like it. My mother didn't want nothing or nobody to distract me from going to the Kingdom Hall. She was very adamant about having control of what she wanted my life to be and that was to become a full fledge Jehovah Witness. At that time ..she had alot of control on me ..if anything or anyone posed a threat or intervered in her controlling me ...she would apply so much peer pressure on me that I either stop pursuing whatever it was that I was pursuing or fall back. That was case with certain girls I dated and unfortunately Hip Hop. My mother saw how much Influence Hip Hop had on me and she didn't like that at all. My mother ruined any chance of me being successful in Hip Hop at that time. REDINK: What did your book that you wrote do for you and how did it help you overcome a strict household? GD: Writing my book .."The Kingdom Hall No More" was self published in 2008 with Authorhouse Publishing..writing was my therapy...getting all that bitterness, rejection, enslavement, hate out of my system. I felt free ..after years of spiritual mind games with my mother and the organization of Jehovah Witnesses.nent location when doing the show. Once I had a permanent location ...I had knee surgery and then COVID came.
REDINK: You came back to NY a few yrs back pushing the Tape Show, what challenges have you had not being able to keep the show on reoccurring and has lead you to jump around? GD: When I came back to NY in 2006, I started doing a live streaming show called, "The Geechie Dan Hip Hop Tape Show" where I would play tapes that were converted and digitalized of all our Hip Hop Pioneers & ICONS... As the show and myself started getting popular..I started losing focus of show and focusing with my 9 to 5 job and other ventures. I also didn't have a permanent location when doing the show. Once I had a permanent location ...I had knee surgery and then COVID came. REDINK: You haven't been around Hip Hop for many of years What do you bring and mean to this Hip Hop Culture? GD: I want Hip Hop to win...I want our Legends, Pioneers, ICONS to receive their flowers while they still here. I want them to get acknowledged and appreciated...I want the tapes I have of them to be heard all over the world...I want the world to see and hear the best of our culture. I have taken upon myself to be global Ambassador of Hip Hop. REDINK: Where do you see yourself in the hip hop Culture years from now? GD: I see myself running a Hip Hop Museum!! est known as a fashion designer, entrepreneur in the biotech field and philanthropist, SkyeDrynan’s designs have been featured in magazines ranging from Harper’s Bazaar to Elle, Cosmopolitan, Bello Mag, New York Style Guide, LA Times, Taste TV, Fashion TV and more. Some of Skye’s photographs have been shot by industry veterans including worldrenowned photographer Tony Duran. Skye’s recently shot images will join Tony’s collection of celebrities photographed including Jennifer Lopez, Natalie Portman, Charlize Theron, Penelope Cruz, Sandra bullock and Alicia Keys to name a few. As season 19 of NBC “The Voice” returned, Skye Drynan, C.E.O. and creative director of the Fashion Powerhouse “House of Skye” is celebrating seeing her designs being worn by Gwen Stefani and shown to 7.96 million viewers. Gwen Stefani proudly displayed her ensamble that was custom made by Skye and her team on social media, praising the team for getting her desired look right of sparkles right. “The Voice” was provided a custom wardrobe designed by Dulce Bestia. The sparking ensemble, which is sure to catch the attention of audiences worldwide will be featured in a number of episodes set to appear in the upcoming season to be later housed and displayed at Blake Shelton’s Ole Red Nashville. In addition, Skye’s fashion lines have been worn by several celebrities including Paris Hilton recording artist Poppy, Tyler Posey, Maejor, actor Gavin Leatherwood, Brenda Song, Cameron Reid Hamilton, Danna Paola, Laura Marano and featured in music videos and on album covers for artists including Avril Lavigne, Carrie Underwood, Lexy Panterra and Ally Brooke to name a few.

RED INK Magazine had the pleasure of interviewing Skye Drynan. This is what she had to say. REDINK: What was the inspiration for creating your Brand Dulce Bestia? SD: Well, I can tell you how I got into fashion itself. “Dulce Bestia” is a brand under my Fashion House, “House of Skye”. You can say I officially began in 2015 when I started developing the concept of a strapless, backless bra that could be worn by many women and actually offers support. I’m used to bigger companies trying to knock off the technologies of their smaller counterparts because those smaller ones don’t have patents in place so of course, I took actions. In creating my strapless, backless bra, I created multiple patents globally in 88 countries for my bra technology that has high-tech and high function, but also provides great high-fashion. The creation of this advanced bra is what sparked by launch into fashion. REDINK: Tell us about your clientele. SD: With “Dulce Bestia”, I dress both female and male in original designs and that clientele really is the sexy James Bond 007 type meets Rock n’ Roll with a whimsical twist. I always put an emphasis on craftsmanship, 24
and a lot of the materials we’re using are custom pieces I designed to provide that high-tech, high-function, and high-fashion aspect of “Dulce Bestia”. REDINK: What is it like to design Gwen Stefani's outfits for "THE VOICE"? SD: Dressing Gwen Stefani was like living your childhood dream because she is just an iconic artist and very fashion-forward. She just naturally carries the aesthetic of “House of Skye” and “Dulce Bestia”. The dress, which was shown in a lot of promotional imagery and episodes of “The Voice” was like a walking chandelier. If you know me, you know that I find anything that sparkles amazing! It was so challenging to construct that it very felt very rewarding. To provide some specifics, the rhinestone fringe, includes a custom 26" metal backed rhinestone fringe that was trimmed to size based on where on the body they were going to be placed. All of the Swarovski crystals were placed on the garment by hand, and every beaded and crystal applique was designed placed, and sewn by Dulce Bestia’s team collectively in Montana, Los Angeles, and Europe. The shorts and the bodysuit weighed about

20 pounds when it was all completed and stoned and beaded. Gwen was very thoughtful sent them flowers, team and said thank you which is very considerate! REDINK: Is there someone that you would like to design for that you haven't yet? SD: Oh gosh! You always want to dress someone like Kylie Jenner. I love curves on a strong woman like her so also Kim Kardashian. Another person would be Jennifer Lopez. All three of these women are complete badasses in terms of business. They are proof that they are more than what people perceive them to be. I like the idea of girl power! Another person would be Ariana Grande because she’s so fashion-forward, a fun musician, a great writer and a very talented artist with a different body than Kylie, Kim and Jennifer. Two totally different body types that would be great in Dulce Bestia! I really like the strong female that all come in shapes and sizes. All those ladies are iconic and hardworking, successful total boss babes, multi-talented and I love them! REDINK: Tell us how travels around the world inspire your collections. SD: Well lately because of Covid-19, we only have pictures of travels. I definitely do think inspiration comes from nature and if you follow my Instagram account, you can tell I love nature and scenery. Inspiration definitely comes to me from nature and when you travel, you see different vistas and sunset and sunrises. I also love furniture and interior design and take in inspiration from different cultures. REDINK: What can we expect next? SD: So happy to say that the world will get to see the Bareback Sexyback Bra. There will be pieces for both men and women, but Bareback is my intimates’ line that includes the backless bra that can be worn in many unique and multiple styles. Healthy Eating AT THE HEART OF THE MATTER by Fazia Khan Parmar

i again my favorite RED INK foodies! This issue is dedicated to all my sweet tooth fans out there for Valentine’s Day. Whether you are married, single, dating, or it’s complicated, this lava cake for two is a quick and easy way to show anyone you love them. I have to admit that lava cake with a dollop of vanilla ice cream is my favorite dessert on any menu. I always thought it was some kind of complicated method of making this cake come out just perfect but it turns out to be quite the opposite. I’ve tried this recipe a few times with great results. However, there was this one time where I over baked it by about 2-3 minutes and while the taste was still good, it didn’t have that gooey center that one would expect. So be very careful with the time and set a timer to be safe. I hope you all have a wonderful Valentine’s day full of love, laughter, and good memories of this delicious cake. Enjoy!
Instructions: 1. Heat oven to 425 degrees and butter a 10-ounce ramekin. Dust the buttered ramekin with granulated sugar. 2. Combine the chocolate and 3 tablespoons butter in a heat-safe bowl set over a pan of simmering water. Cook, stirring occasionally, until melted and smooth. (Alternatively, combine in a bowl and microwave in 30second blasts, stirring in between, until melted and smooth, about 1 minute.) Remove from the heat and set aside. 3. In a medium bowl, combine the 3 tablespoons sugar, egg, egg yolk, vanilla and salt. Whisk vigorously until the mixture is thick, foamy and pale, about 2 minutes. Whisk in the flour until smooth. 4. Using a spatula, add the chocolate to the egg mixture and stir gently until combined. 5. Pour the mixture into the ramekin. Bake for 12 to 14 minutes or until the edges are set and puffed, but the center is still soft when lightly pressed. (You can also cover and refrigerate the batter up to a day in advance. Add an additional minute or 2 to baking time if you are baking the cake directly from the refrigerator.) 6. Use an offset spatula or small knife to loosen the edges of the cake from the ramekin. Place a plate over the ramekin and carefully invert the warm cake. Use an oven mitt or clean kitchen towel to remove the ramekin, dust the cake with confectioners’ sugar and serve with ice cream or whipped cream.

RECIPE: LAVA CAKE FOR TWO Ingredients: •3 ounces/85 grams bittersweet chocolate, 70 to 74 percent cacao (not chips), chopped (about 1/2 cup) •3 tablespoons unsalted butter, cut into cubes, plus more for the ramekin •3 tablespoons granulated sugar, plus more for the ramekin •1 large egg •1 large egg yolk •½ teaspoon vanilla extract •⅛ teaspoon kosher salt •2 tablespoons all-purpose flour • Confectioners’ sugar, to serve (optional)
