Nota de la Editora ¡Llegamos a la mitad del año! Quisimos hacer algo especial este mes así que nos dedicamos a presentar todos aquellos lugares en los que puedes – además de satisfacer tu hambre – descubrir platillos únicos.

Toda la revista es una oda a la comida, a los postres y a todo aquello que va a contribuir a que tu resolución de bajar de peso se complique un poco más. Tenemos a los chicos de KIDS Restauran en la página 26 y todo lo que Ricky López y Scott platicaron en su almuerzo en Angeline en la página 22.

So here we are already – halfway through the year! We wanted to do something special this month so we concentrated on showcasing all the places where you can find some really unique dishes (and satisfy your hunger, of course).

This whole edition is a homage to food….to desserts….. basically to everything that’s going to make that resolution of yours to lose weight just that little bit harder to keep! We have the great kids from KIDS restaurant on Page 26 and a glimpse into everything that Scott and Ricky Lopez talked about over lunch at Angeline on Page 22.

We hope you enjoy reading this edition, created by Gladys Claudio (our new Creative Director) and Luisa Grajeda, her assistant.

Un almuerzo con Ricky López Ricky lópez

uando se trata de hablar de la comida, Ricky López es el hombre indicado. Es fotógrafo, cineasta, escritor pero, sobre todo, un amante de la comida. El año pasado publicó su extraordinario libro ‘’Historias Culinarias de La Antigua Guatemala’’. Un libro que todo ‘foodie’ que adore La Antigua debería tener.

De su amor por la comida …

El bromea diciendo que su amor por la comida viene de su miedo al hambre. En 1976 Ricky salió de Guatemala y se trasladó a Fort Lauderdale. El trabajo que le prometieron nunca se hizo realidad y terminó trabajando en un restaurante mexicano propiedad de un italiano. No le menciones nunca los chiles pimientos pues pasó más de 4 meses limpiando y preparando más de 450 de ellos todos los días. Desde aquel entonces, ¡no ha vuelto a comer uno solo! Cuenta que trabajar en TGI Fridays fue un reto bastante complejo porque debes saber de memoria todos los ingredientes que van en cada plato.

Pronto respondió a un anuncio para entrar al Instituto de Arte de Fort Lauderdale. En broma comenta que, como latino, minoridad y trabajador de bajos ingresos le ofrecieron una beca que cubría el 90% de los costos. ¡Finalmente ya no tuvo que tenerle miedo al hambre!

Parta entonces, ya estaba viviendo con dos chefs que no estaban interesados en cocinar después de sus turnos en el trabajo. Ricky cocinó para ellos dos todas las noches, y con los consejos que ellos le dieron, aumentaron sus conocimientos y su amor por la comida. ...

hen it comes to food, Ricky Lopez is your man. He’s a photographer, film maker, writer but most of all foodie. Last year he produced his stunning book entitled “Historias Culinarias de La Antigua Guatemala”. A must have book for any foodie that adores La Antigua!

Of his love of food...

He jokes that his love of food actually comes from a fear of hunger. In 1976, he left Guatemala and moved to Fort Lauderdale. His promised job never materialised and he ended up working in a Mexican restaurant owned by an Italian. Never mention red peppers to him as he spent over four months cleaning and prepping four hundred and fifty a day.

He has never eaten one since!

Working at TJ Fridays – he says – was a complex platform to work at as you need to know every ingredient that goes on the plates by heart.

Soon he answered an ad, at the Art Institute of Fort Lauderdale. He jokes that as a Latino, a minority and as a low income worker he won a 90% scholarship. ...

... De la comida del mercado local …

Cambiamos el tema a la comida del mercado. Para él, esta comida representa el alma de la cocina de cualquier país. Le encanta el mercado de La Antigua: las chicas vendiendo tortillas de maíz negro, los anacates frescos y comer en el Comedor de Las Canches con sus deliciosos almuerzos de caldo de res o pollo, y – por supuesto – el pepián. Para Ricky, estar empapado de ese ambiente lleno de olores y colores es verdaderamente un desborde de sentimientos.

Los nuevos talentos…

Desde la comida del mercado hasta en algunos de los restaurantes de alto nivel en la Ciudad de Guatemala y Antigua, Ricky considera que existe muchísimos nuevos talentos para la gastronomía guatemalteca. Varios chefs jóvenes podrían ganarse una codiciada estrella del Michelin Red Guide si este cubriese Centroamérica – incluyendo Mario Godínez de Bistrot Cinq, Sergio Díaz de Ambia y el servicio de catering de Deborah Fadul.

Sin duda alguna, un solo almuerzo no nos da suficiente tiempo para escuchar todas las fascinantes historias que Ricky tiene por contar, aunque con tanto hablar de comida ¡pronto se nos hizo agua la boca!

By then he was living with two chefs who were not interested in cooking after their shifts. Ricky cooked for them nightly, and with their tips his knowledge and love of cookery grew.

Market food...

We get onto the subject of market food. To Ricky, it’s the soul of the cuisine of every country. He adores the market in La Antigua; the girls selling their black corn tortillas, the fresh anacates and a lunch at Comedor de las Canches with their delicious caldo de res, pollo, and, of course, pepián.

To Ricky, being in that atmosphere with its smells and colours is just overwhelming!

From the market to some of the high end restaurants of Guatemala City and Antigua, Ricky says that there is loads of talent in the new cuisine of Guatemala. Young chefs such as Mario Godinez of Bistrot Cinq, Sergio Díaz of Ambia and the caterer Deborah Fadul could all earn a coveted star if the Michelin Red Guide included Central America.

Certainly, just one meal is not enough time to hear all the fascinating stories that Ricky has to tell….although all this talk about food could certainly get your mouth watering in no time!

Centro Educativo KIDS Restaurant

IDS Restaurant es un proyecto de la organización Tess Sin Límites – ubicada en San Gaspar Vivar – que empezó hace 6 años. Hay casi 45 niños estudiando en este centro educativo.

Son niños que vienen de pueblos diferentes cercanos al proyecto que asisten a la escuela por las mañanas y por las tardes llegan al centro a estudiar.

Gracias al apoyo de muchas personas, todas las clases que se imparten no tienen costo alguno. A través del tiempo se han ido implementando muchas cosas, ahora también tienen un restaurante donde los niños pueden practicar todo lo que han aprendido en sus clases durante la semana.

El restaurante abre sus puertas dos veces al mes, los días viernes.

Los salones de clases se convierten en un restaurante en el que los niños cocinan, sirven y atienden a los clientes. El costo es de Q100 por persona para obtener una deliciosa cena que incluye una bebida especial, entrada, plato fuerte y postre – aunque también reciben otra bebida como agua pura, gaseosa o café. Para acomodar a los clientes del restaurante, KIDS Restaurant ofrece el servicio de un shuttle para llegar al restaurante desde la Iglesia San Francisco en La Antigua.

Los niños mas pequeños (de edades entre 8 a 10 años) están en el proyecto de panadería y preparan panes, baguettes, pasteles, galletas y más para que –aunque no cocinan como los niños grandes – puedan sentirse parte importante del restaurante.

El proyecto siempre necesita el apoyo de voluntarios. Puedes ayudar de diversas formas, ya se dando clases de inglés a los niños, colaborando en otras materias o dando talleres. También se necesita el apoyo de cocineros, chefs y meseros que quieran compartir el amor y experiencia por la cocina con los niños.

IDS Restaurant is one of the programs provided

by Tess Sin Limites; an organization located in San K Gaspar Vivar and founded 6 years ago. There are

almost 45 kids attending this educational center every day to study. The children come from the different villages surrounding the school and they attend the local public school in the morning and arrive at the center in the afternoon.

Thanks to the help of many supporters, all their classes are free of charge. Over time they have implemented many new aspects of the program now they have an on-site restaurant where the kids can practice everything that they have learnt in their classes during the week.

The restaurant opens its doors twice a month, on Fridays. The classrooms are transformed into a dining area, where the kids cook the food, serve the plates and attend to the customers. For only Q100 per person you can have a delicious dinner that includes a special

drink, starter, main course and dessert – as well as another drink such as water, soda or coffee. To make it even easier for their customers to visit and enjoy the restaurant, KIDS Restaurant offers a shuttle service leaving from the San Francisco church in La Antigua.

The youngest children (between the ages of 8 and 10) participate in the bread-making program and they learn to make bread loaves, baguettes, cakes, biscuits and more and – whilst they don’t cook the same dishes as the older kids – they feel that they are an important part of the restaurant.

The project always needs the support of volunteers.

You can help in a number of ways: whether it be through giving English lessons to the kids, contributing materials or giving workshops. They also need the help of cooks, chefs and waiters who would like to share their love and their cooking experience with the kids.

La cafeína es una droga, y esta droga de origen natural se encuentra en cantidades diversas en los granos, las hojas y los frutos de algunas plantas, no solamente en el café – aunque se consume más comúnmente en las infusiones extraídas de la transformación de las drupas del cafeto y de las hojas del arbusto del té.

En estudios recientes, el consumo moderado de la cafeína se ha relacionado con longevidad y con una reducción en el riesgo de desarrollar diabetes tipo 2 o carcinoma de células basales, y probablemente más consecuente, los estudios con animales han determinado que la cafeína ayuda a evitar la demencia.

Antes de tomar medidas drásticas y descafeinadas, hay algunas falacias y realidades sobre el contenido de cafeína que te pueden sorprender y que te permitirán aumentar o disminuir tu consumo sin la necesidad de cambiar a una infusión menos potente.

affeine is a drug and this naturally derived drug is found in varying quantities in the beans, leaves and fruit of certain plants, not only in coffee – even though it is most commonly consumed in infusions extracted from the processing of cherries from the coffee tree and from the leaves of the tea bush.

In recent studies, moderate consumption of caffeine has been linked to longevity and to a reduction in the risk of developing type 2 diabetes or basal cell carcinoma, and probably most consequential, studies with animals have determined that caffeine staves off dementia.

Before taking drastic decaf measures, there are some fallacies and facts about caffeine content that may surprise you and allow you to increase or decrease your consumption without switching to a less vibrant brew.

Some say a darker roasted coffee gives a stronger jolt of caffeine. It’s quite the opposite. Caffeine burns off and the drug becomes damaged during the roasting process, so a darker roast will have less caffeine than a lighter roast. Enjoy that flavorful, dark roasted coffee.

If you ever wondered if that instant coffee you make – with a bit of guilt – doesn’t give the same pick-me-up that regular coffee does, we’ll tell you the truth.

l maíz es una gramínea mesoamericana, que aparece en Guatemala desde el año 3000 a.C. en la región de Petén, donde además se combinaba su cultivo con el ayote, el frijol y el chile. Se conocen en el mundo 25 variedades de maíz, de las cuales Guatemala cultiva 13.

Algunas de las variedades más antiguas y endémicas en el país provienen de Huehuetenango y se les llama “palomero” y “reventón”. Las más consumidas en todo el territorio son el maíz blanco, negro y amarillo.

El maíz fue representado dentro de la cosmovisión Maya como un dios que se representa con el glifo Kan, descubierto por Cyrus Thomas en el año de 1882. Kan es uno de los 20 nombres del calendario Tzolkin y en la numeración se ve representado por el número ocho. Su simbolismo e importancia se vió también en la cultura Olmeca, donde se le representó desde el año 800 a.C., por medio de una pieza de jade en forma de hacha.

En Petén, en el sitio Cival, se descubrió una ofrenda en forma de cruz donde en cada esquina se le había colocado un hacha de jade, simbolizando las plantas de maíz ubicadas en cada uno de los cuatro lados del cosmos, asociando nuevamente a las deidades que le habitan con la cultura Maya.

Varios autores han identificado al dios del maíz, en Hun Hunahpú héroe del Popol Vuh, que retrata el proceso de renacer desde el inframundo. Este proceso fue representado en los dibujos Mayas como una planta emergiendo de la caparazón de una tortuga, culminando su proceso al transformarse en el sol. ...

Worldwide, there are a recognized 25 varieties of corn; and 13 of these are farmed in Guatemala.

Some of the oldest and most endemic varieties of corn farmed in the country come from the Huehuetenango area and are called ‘palomero’ and ‘reventón’.

The most widely-consumed varieties are the white, black and yellow corn.

Corn was represented within the Mayan cosmovision as a sacred deity – depicted by the ‘Kan’ glyph discovered by Cyrus Thomas in 1882. Kan is one of the principal figures featured on the Tzolkin (Mayan) calendar and as a number is represented by the figure 8. The symbolism and importance of corn was also seen during the Olmec culture (from 800BC onwards), where it was represented by a piece of jade formed into the shape of an axe.

In Petén, at the Cival archeological site, an ancient offering plate in the shape of a cross was discovered with spaces at each corner for placing these pieces of jade – symbolizing the 4 heads of corn that inhabit the 4 corners of the cosmos and associating the plant once more with the deities of the Mayan culture. Several authors have given a name to the God of Corn – ‘Hun Hunahpú’– the hero of the Popul Vuh (the ancient story that relates the journey from the underworld to rebirth and new life). This story was depicted in Mayan artworks as a corn plant emerging from a turtle’s shell and transforming ultimately into the sun. ...

Otro de los ejemplos en los cuales podemos observar el ciclo de renacer y su asociación con el maíz, está en los huesos del gobernante Hasaw Chan K´awiil de Tikal (quien erigió el templo Gran Jaguar), quien conceptualizó la renovación del maíz en cada cosecha como metáfora de la perpetuidad de su dinastía. De esta forma, se da la idea de retratar a los reyes ancianos y difuntos como plantas de maíz, simbolizando así el árbol de la vida que daba sustento al mundo terrenal.

Las cuatro maneras de encontrar el consumo del maíz en el universo Maya son: la tortilla, el tamal, el atole y el pozole. Hay evidencia arqueológica que sustenta la elaboración de estas comidas, tal es el caso de artefactos como la piedra y su mano de moler, así como de comales que existieron desde hace 2000 años a.C. El maíz sigue siendo el centro de la vida (para los Mayas y por ende los guatemaltecos) incluso hoy en día.

... It is believed that part of the Mayan kings’ regal dress was a jade effigy worn on the forehead – known as a sak hunal – that represented the God of Corn. We can see another example of the depiction of the cycle of rebirth and its association with corn on the carved bones buried alongside the great Hasaw Chan K’awiil, Governer of Tikal (who erected the Great Jaguar Temple), and who introduced the concept of the renewal of the corn upon each harvest as a metaphor for the continuance of his dynasty. In the same way, many ancient, deceased kings were represented as great corn plants to symbolize the mythological tree of life that provided sustenance to the earthly world.

In the Mayan universe you will find that the four main ways of consuming corn are the tortilla, the tamal (stuffed corn dough), atole (ground corn drink) and pozole (traditional corn soup). There is archeological evidence to suggest that these same dishes were prepared in ancient times, due to the recovery of tools such as grinding stones and slabs along with ancient ‘comales’ (flat skillets for cooking tortillas) that existed around 2000BC. Nowadays, corn continues to play an important role in the life of the Mayan culture and the Guatemalan people.

l cacao (theobroma cacao) es un vocablo Maya con el que se nombra al que se considera el segundo alimento más importante para los mayas – después del maíz.

El mismo vocablo científico hace alarde de la importancia del cacao pues lo caracteriza como comida de dioses: theobroma.

Hay dos clases de cacao: la primera, conocida como “cacao forastero” y la segunda, llamada “cacao criollo” – cada una con distintas variedades.

A diferencia del maíz, este fruto debe crecer con sombra. Los árboles de cacao miden entre 5 y 8 metros de alto, comparándose en altura al árbol de pito, el de paterna y el de madrecacao, que proporcionan el nitrógeno necesario para su desarrollo.

Sus coloridos frutos son conocidos como pochas o mazorcas y en su interior tienen semillas recubiertas por una pulpa dulce.

acao (scientific name ‘theobroma cacao’) is a common word in the Mayan vocabulary, used to refer to what is considered their most important sacred food – second only to corn.

The scientific term itself reflects the importance of cacao – literally characterizing it as a food of the Gods (‘theobroma’).

There are two types of cacao: the first, known as cacao forastero (foreign cacao), and the second, known as cacao criollo (creole cacao). Each has a number of different varieties. Unlike corn, this is a plant that must grow in the shade. Cacao bushes can grow as tall as 5-8 meters in height – comparative to the coral bean tree (árbol de pito), the guaba tree (árbol de paterna) or

the gliricidia (madrecacao); all of which produce enough nitrogen for their own growth. The colorful fruits that grow on the cacao plant are known as ‘pods’ or ‘ears’ and inside contain beans surrounded by a sweet fleshy substance.

Although it is generally known that cacao originated in South America, the development of the most commonly-known cacao derivative (chocolate) was a widely-used process across Mesoamerica, including – of course – in Guatemala.

Existen muchas representaciones del cacao en el mundo maya. En el monumento 4 de El Baúl, en Escuintla, aparece un jaguar sacrificado, que lleva mazorcas de cacao en su cuerpo. Algunos autores proponen que existe una intrínseca relación entre el cacao, el jaguar, la noche, las cuevas y el inframundo.

El valor socioeconómico del cacao fue utilizado para determinar la riqueza y el prestigio en Mesoamérica, pudiéndose determinar que desde el período preclásico medio (800 a.C.), el control de las plantaciones, su comercio y producción fueron pilares importantes en ciudades que crecieran y permanecieran en un estatus privilegiado gracias al comercio (y se conservaran así por varios siglos), tal es el caso de Tak´alik Ab´aj y Chocolá – ambas ubicadas en la bocacosta guatemalteca.

Además, el cacao fue utilizado en rituales de matrimonio, esto se ejemplifica en el códice de Madrid donde el dios Chaak (dios de la lluvia) y la diosa Ixik Kaab´ (diosa de la tierra) están sosteniendo un vaso que contiene cacao. El cacao fue importante también como ofrenda funeraria, constatándose con el hallazgo de éste en varias vasijas en Río Azul en Guatemala y en Honduras, Copán.

Una de las características más importantes del cacao es que sus dos sustancias químicas – la teobromina y la cafeína – hicieron la única fuente de consumo de la cafeína antes de la venida de los españoles. En la época de la conquista, cuando el chocolate es llevado a Europa, es una bebida que es tomada por la corte real en exclusiva, y no llega fácilmente al pueblo.

The potential of cacao as a valuable socioeconomic commodity was first seen when it started to bring wealth and prestige to Mesoamerica. From the Middle Preclassic Period (800AD) the management of plantations, their commercialization and their production became important pillars of cities that flourished and acquired a privileged status due to the cacao trade (and continued to do so for several centuries) – such as the Tak’alik Ab’aj and Chocolá plantations on the coast of Guatemala. During the pre-Hispanic period the best cacao originated in Suchitepéquez and Soconusco.

Cacao was also used as an important offering during funeral rites – proved by the discovery of remnants of cacao in various pots found in Río Azul in Guatemala and Copán in Honduras.

One of the most notable characteristics of cacao is that its 2 chemical components – theobromine and caffeine – provided the only source of caffeine before the arrival of the Spanish. In the time of the Conquest, when chocolate was exported to Europe, it became a drink consumed exclusively by the royal court and was not readily available to the general population.

a moringa es un árbol fantástico con propiedades inigualables en sus hojas, flores y raíces. En la medicina India se indicaba que la moringa se utilizaba como remedio para más de 300 enfermedades.

Las hojas del árbol de moringa poseen una gran cantidad de propiedades, además de proteínas, minerales (como hierro, fósforo, potasio, calcio y ácidos grasos esenciales), vitaminas A, C y parte del complejo B. De hecho, las hojas contienen una mayor proporción de vitamina C que la naranja y más vitamina A que las zanahorias. Curiosamente, también aporta más calcio que la leche de vaca y tanto potasio como los plátanos.

Con base en estudios realizados, una pequeña cantidad de las hojas del árbol de moringa, específicamente las puntas, son capaces de aportar hasta el 23 por ciento del valor diario recomendado de ingesta de vitamina A y hasta el 18 por ciento de vitamina C. Las hojas pueden ingerirse

crudas al tratarse como vegetales y así convertirse en un ingrediente muy nutritivo para sazonar y llenar de nutrición las ensaladas y las sopas.

Las semillas se pueden sacar de la vaina y se pueden consumir (aún tostadas) y las hojas se pueden añadir a ensaladas o a cualquier plato al final de su preparación.

Las raíces se pueden moler y hacer infusiones y las flores también se pueden aprovechar para ser añadidas a ensaladas o platos templados o fríos.

El título del árbol de la eterna juventud no es exagerado a que la moringa tiene muchísimas propiedades benéficas para el organismo.

oringa is a fantastic plant that boasts unparalleled medicinal qualities in its leaves, flowers and roots. In ancient Indian medicine it was said that Moringa was used to cure more than 300 types of illnesses.

The moringa leaves have several medicinal properties, as well as containing proteins, minerals (such as iron, phosphorous, potassium, calcium and essential fatty acids), and vitamins A, C and B. In fact, moringa leaves contain an even higher concentration of Vitamin C than oranges, and even more vitamin A than carrots. Strangely enough, moringa also boasts more calcium than cows’ milk and as much potassium as bananas.

According to some studies, just a small amount of moringa leaves (specifically, the tips of the leaves) can contribute as much as 23% of the recommended daily allowance (RDA) of vitamin A and as much as 18% of the RDA of vitamin C. The leaves can be eaten raw in the same way as a vegetable, and can be used as a healthy ingredient to season and add nutritional value to salads and soups.

The moringa seeds can be taken out of the pod and can be eaten whole (toasted), and the leaves can be added to salads or other dishes before serving. Moringa root can be ground and made into infusions and the flowers can also be added to salads or warm or cold dishes.

The name given to the plant (‘the tree of eternal youth’) is certainly not an exaggeration, as it has many different properties that are beneficial to the human body.

l pan es una parte importante de las tradiciones de los guatemaltecos. Es con pan, sentados a la mesa, que se reúnen las familias – en las buenas y en las malas – y meditan, oran, deciden y celebran. Cada receta es distinta, cada pan tiene su mérito.

Los ingredientes para su preparación son usualmente los mismos (harina, polvo de hornear, huevos, leche en polvo, levadura, azúcar, sal y manteca vegetal). La masa se prepara poniendo sobre la artesa los ingredientes y mezclándolos. La levadura – que hará crecer el pan – debe estar bien preparada, siempre con 2 vasos de agua fría y uno de agua caliente.

Al buen ojo, se va agregando agua hasta que la mezcla de ingredientes de como resultado una masa en su punto. Los antiguos panaderos esperaban hasta ocho horas para que la levadura fermentara y la masa “creciera”. Aún cuando hoy en día hay levaduras que fermentan más rápido, encontrar el punto de la masa es cuestión de paciencia.

Hacer los panes toma tiempo; la experiencia aligera la mano. Se hacen los panes, con la masa cruda, dándoles formas caprichosas que con el calor se convertirán en alimento. Para uno, dos y muchos.

Una vez que los panes están formados, se colocan sobre tablas para que la masa crezca y, una vez que haya crecido, se trasladan a las bandejas que estarán en el horno por, al menos, 20 minutos. El tiempo suficiente para seguir cocinando, para seguir creando.

Si la rutina es la misma todos los días, y aparentemente en todos los lugares: ¿Qué cambia entonces de un pan al otro? Algunos poetas dirán que el amor con el que éstos se preparen, otros, los más realistas tal vez, asegurarán que el secreto es un buen horno.

El horno se prepara poniendo leña de roble, que se quemará hasta convertirse en brazas luego de unos 20 minutos ardiendo y justo después que el aroma de la madera en agonía sea más pronunciado.

Dentro de la leña deberá abrirse un espacio en el que se colocan tejas – para evitar que el contacto directo con las brazas queme el pan – y, sobre ellas, las bandejas que tendrán el pan crudo. Una y otra vez, las bandejas se irán llenando y vaciando hasta que se cumpla con la producción del día.

to celebrate – in good times and in bad – there is always some bread on the table. Each bread recipe is different; each loaf boasts its own unique virtues.

The ingredients used in its preparation are usually the same (flour, baking powder, eggs, powdered milk, yeast, sugar, salt and margarine). The dough is prepared by combining all the ingredients together in a mixing bowl. The yeast – that will make the bread rise – should be prepared properly: always mixing it with 2 cups of cold water and 1 of hot water.

You add water to the mix of ingredients, little by little, until the dough has exactly the right consistency. Bakers in times gone by used to wait up to 8 hours for the yeast to ferment and for the dough to rise. Although nowadays there are yeasts that rise much quicker, getting the dough to exactly the right point is a question of patience.

Making bread takes time, but experience makes the hand quicker. The bread loaves are formed whilst the dough is still uncooked and can be formed into whimsical shapes that – with the oven’s heat – will be turned into tasty treats.

Once the bread rolls have been formed they are placed on boards to wait for the dough to rise and – once this has happened – they are transferred to baking sheets to be placed in the oven for at least 20 minutes.

This gives you enough time to keep cooking, to keep creating…

If the process is always the same, every day and – apparently – all over the world: what makes one bread loaf different from another?

Some poetic people would say that it’s all about the love that goes into the preparation – more realistic types might say it’s about having a good oven.

The oven is prepared by stocking it with oak wood, which will burn hot for around 20 minutes before turning to embers, emitting a pungent aroma. Amongst the firewood there should be a space left in which to place a few ceramic tiles – to prevent the bread burning upon direct contact with the firewood – and, on top of these, you should place the baking sheets containing the raw dough. Over and over again this space will be filled with batches of bread until the day’s production has finished.

The waiting is sweet…and so is the bread.
