Since our last release, with your help we were able to raise over $2,000 for the Pullman Regional Hospital’s Covid19 Fund through our Pullman Local Charity Baskets. This was only possible because of the amazing donations f rom local makers and the generosity of those in our community.

D

uring most of my adult life I cannot remember a time where I wasn’t obsessed with party planning. If there is a celebration to be had among my friends and family… let’s just say they know who to call. When I say I go “full out” for a gathering, party or get together, I mean I don’t cut corners or skimp. I imagine myself in Better Homes and Garden Magazine or co-hosting an Easter dinner with Martha Stewart. This was my entire inspiration for creating spreads. I love to entertain and was already making fancy cheese and charcuterie boards for friends when they came over to visit.

I

had various friends tell me I should sell my cheese trays, and so in December 2019, I decided to make my passion a reality. Providing high-end, custom boards and platters to the community on the Palouse. To me, this passion is just that… a passion. I didn’t start spreads to be the biggest cheeseboard business in America, I did it to bring love and good cheese into the homes of others without them having to worry about the extra hassle. My boards give customers the opportunity to have get togethers and not worry about the extra step of providing snacks (just bring the wine and I will do the rest!)

I am very much a planner and have already given thought to the future progression of Spreads from how to deliver my trays “to-go” style, social media giveaways, and partner with other small businesses in Pullman.

Failures or Successes: Did you ever consider giving up along the way?

Since I have only released this to the public in December, I haven’t had a chance to consider giving up. But I will say even over the few short months, I have been pushed outside of my comfort zone.

At first, I only owned one board, so I figured I needed to diversify how I was presenting my product. Next, I did a lot of research on how to place cheese, meats, fruits, honey aesthetically and then how-to photograph it. Anyone can take a picture of their food, but it takes a lot of practice to make it look mouth-watering to someone else. I am still learning every day, and I can definitely say the cheese trays I make now look much prettier than when I first started.

Is there anything you know now that you wish you had known when you started?

Looking back, I would say I wish I would have dropped some samples and business cards off to local businesses and partnered with other entrepreneurs in the Pullman area. I thought creating a website first was more important, and realistically I should have just gotten my name out there.

Is there anything that you think people would be surprised to know about you or how you run your business etc.?

I think people would be surprised to know I have no culinary background, although I do have an MBA. I learned everything I know about cheese from the internet. I can say, however, that I do a pretty good job keeping up with social trends to know what’s “hot” right now and then incorporating that into my business. You have to stay up to date with the times.

Message to customers & other startups: Is there anything people should know about why your products are special or your connection to Pullman?

Do you use any unusual materials? Any words of encouragement or advice to someone who is on the fence about pursuing a creative endeavor? Any potential pitfall warnings, etc.?

I have only been a “Pullman Local” for a little over two years but the connection with this town and the people make it feel like it’s been a part of me for much longer. I try to use local foods found on the Palouse because this area is robust with agriculture and what better way to give back to our gracious community.

My advice to someone trying to grow their business would be to do it for YOU and no one else. If it’s something that makes you happy, don’t worry about the naysayers and the negative feedback.

You will get a sense of fulfillment from knowing that your heart is in it and it makes you happy. That’s what grows a successful business. And if you’re worried about starting a business from scratch, just begin by making it your side hustle. You won’t feel as much pressure if it’s just something on the side you enjoy doing. Most famous companies were started in people’s garages just doing what they love and making it happen!

About Domenica: My name, Domenica, means Sunday in Italian.

I am an only child.

When I was little, my parents loved to take me on family vacations that involved roadside attractions – so my parents would drag me around the country seeing the largest ball of twine and whatnot. I’ve lost count of how many underground caverns I have been to.

Lifting weights is hard. It’s time consuming, takes effort and can be expensive. So why even consider it? Research shows that the health benefits far outweigh the time commitment of signing up for a gym membership or hiring your own personal trainer. This does not necessarily mean that you need to go to the gym and try to become the next Arnold Schwarzenegger, but you should be participating in weight-bearing activities that can make your life easier and keep you in tip-top shape.

The biggest and best benefit of strength training, in my opinion, is the ability that it gives you to stay in shape and burn fat fast.

It’s even more efficient than cardio. When you build muscle, your body needs to continually feed that tissue. This means that even sitting around watching TV, your body is burning more calories than it normally would by feeding those extra muscle cells. The body needs to continually push and pull nutrients from that extra muscle. This takes calories. After all, the calorie is just a way of measuring energy transfer in the body. This means that a stronger body burns more calories than a weak body.

Next time you feel like exercising make the choice to lift some weights. Strength training also slows and can even reverse many factors that contribute to aging and age-related disease. As humans age, we lose mass in our muscles and density in our bones.

These losses contribute to many diseases including osteoporosis, sarcopenia, and osteoarthritis. This could happen because of hormone changes, lack of movement or use, and a variety of other reasons.

However, by putting the muscles under some tension, this strengthens the bones and can prevent or reverse the effects of these age-related diseases.

Finally, strength training makes life easier. Carrying groceries, doing yard work, even getting up and down out of chairs or off the floor gets easier. A little bit of strength goes a long way in assisting with daily activities. May I repeat, nobody said go out and be the next Arnold, but take a page out of his book and do a little self-care to make your body feel and work better. One of my professors at university always said, “Motion is lotion.”

Another common expression is “If you don’t use it you lose it.” People say this phrase a lot and it applies to many things, but it directly applies to the topics of movement, our bodies, and muscle mass. Do your body a favor and hit the weights to make life that much easier.

There are so many things that I could say about strength training that would help any individual with overall health and wellness, but you can’t just take my word for it. Start easy —do some push-ups, some bodyweight squats, crunches and work up from there. There isn’t a need to be in the gym for hours on end. Strength training can be done at home or anywhere you want to do it. Time is of the Essence!

This is a very common term in the real estate industry and it applies to every single part of the transaction whether buying or selling a home. So let’s focus a few ways to set yourself up for success when looking to buy!

Getting Pre-Approved Before walking into a home, talk to a lender (or ask your RE/MAX Home and Land agent to refer a couple local lenders if you do not have one) to understand your price range. This takes only a couple of days to get processed and then start viewing homes within that range. So when you see the home you have been waiting for, you are ready to offer!

This small task will also give you a competitive advantage when you do place an offer on your dream home. For example, if two offers were made, Offer 1 was pre-approved by a lender and Offer 2 was not, Offer 1 has proof they can get a loan to purchase the home.

Offer 1 has an advantage when the sellers review both offers to make their decision. Now, onto the next steps of the home purchase transaction after an agreement between the buyers and sellers has been accepted!

Deadlines In the offer, there are many deadlines both the buyer and seller need to meet in order for the home transaction to close successfully, but let’s just cover the top three initial deadlines for the buyer. This may sound overwhelming, but your RE/MAX Home and Land agent will walk you through every step of the way and will work with you to keep everything on track.

Get all of the loan documents to your lender to place the official mortgage loan application. Yes, you may have already been preapproved and that expedites the loan application process. But they will still need to get items such as taxes over the last few years, proof of employment, etc.

2. —

Schedule an inspection for the home you placed an offer on.

Typically, this needs to be within 10 days of the accepted offer. When the market is ‘hot’ many inspectors have longer lead times, so calling your inspector as soon as possible to get on the calendar is crucial.

3. —

Get the earnest money to your RE/MAX Home and Land agent as soon as possible so they can deliver it to the title company within three days after the accepted offer. Earnest money is an agreed upon amount of money between the buyer and the seller as a show of good faith that the buyer will proceed with the transaction. This money then goes towards the closing costs of the sale once the transaction is complete.

Your agent will keep track of these important deadlines and ensure that you are informed and do not let any pass!

A Twist on a morning classic

FRENCH TOAST CASSEROLE Raspberry French Toast Casserole

Ingredients 1 (1 lb.) loaf of brioche, challah or French bread, cut into 1 inch cubes 8 eggs 2 cups whole milk 1 tablespoon vanilla extract 1 teaspoon cinnamon 1/2 teaspoon salt 8 oz. cold cream cheese, cut into 1/2 inch cubes 1/2 cup raspberry preserves Streusel Topping 1/3 cup brown sugar 1/3 cup all-purpose flour 1/2 teaspoon cinnamon 4 tablespoons salted butter, cubed

Instructions Butter a 9Ă—13 casserole dish, and set aside.

In a large mixing bowl, whisk together the custard ingredients, eggs through salt. Add the bread cubes, tossing with the custard to coat. Spread about half the bread cubes into the bottom of the prepared casserole dish. Evenly top the bread with cream cheese cubes and raspberry preserves. Cover with the remaining bread cubes, and pour any leftover custard over top.

Cover with foil, and allow to soak for at least 3 hours to overnight.

When ready to bake, preheat the oven to 350 degrees F. Stir together the brown sugar, flour, and cinnamon. Rub the butter into the brown sugar mixture with your fingers until it resembles bread crumbs.

Sprinkle the streusel evenly over the casserole.

Bake uncovered for 40-45 minutes, or until bread is lightly golden and custard is set.

Allow to cool for 5 minutes, and then serve with maple syrup, fresh raspberries, whipped cream or extra raspberry preserves!

Incorporating fresh herbs into your kitchen can open up your home cooking to abundantly simple, yet delicious flavors. Not only are they full of flavor, herbs are packed with health-promoting vitamins, antioxidants, and compounds that can ease digestive issues, improve blood pressure, and beef up the immune system. Health benefits aside, creating flavorful food makes eating a more pleasurable experience and can bring your nutritional goals within reach. Not sure where to start? We’ve teamed up to bring you five tips to get you started.

Spice up your salads We all know dressings add flavor and healthy fats to salads, but have you tried adding fresh herbs straight into your greens? It’s a great way to add a burst of flavor in every bite. Try tossing in whole or thinly sliced leaves of mint, basil or chives to your green salad and dress it like you normally would.

Know when to add them Herbs can be classified as either tender or woody, a distinction that will help you know when to add them in cooking. Tender herbs have soft stems and delicate leaves, whereas woody herbs have stiff stems and tougher leaves. The delicate flavors of tender herbs are easily lost in cooking and are best added as a garnish or at the very end of cooking (during the last five minutes or less).

The more pungent flavors of woody herbs are often too intense to serve raw and can endure longer cooking times at higher temperatures.

Pro Tip: The soft stems of tender herbs are full of flavor too and all parts can be used. If you’re using woody herbs, you’ll need to de-stem the leaves first. Simply pinch the tip of the sprig and run your fingers down the stem, top to bottom, and discard the stem.

Make an herbal sauce One of our favorite herbal recipes is a Green Goddess Dressing. It’s a quick and easy blended sauce that can be paired with just about anything (more vegetables, anyone?). Blend 2 cups of stemmed herbs (try chives, tarragon and parsley), 2 cloves garlic, 2 anchovy fillets (packed in oil works best), the juice of 1 lemon, and 1 Tbsp sherry vinegar until smooth.

Add ½ cup each of plain Greek yogurt and canola oil, blend until smooth; season with salt and pepper to taste.

Learn how to chiffonade (“shif-oh-nod”) Chiffonade is a slicing technique to create thin strips of herbs for an elegant garnish. You can fancify even the simplest of foods, like pizza, with this simple technique. Mint, basil and flat-leaved herbs can all be cut chiffonade style and the preparation will release even more flavor.

So how do you chiffonade? De-stem your herbs and make a stack of 4-5 leaves. Gently roll the leaves lengthwise. Using a sharp knife, gently slice the roll of herbs into thin strips.

Find the right pairings (with chart) There are dozens of culinary herbs to choose from, but don’t let the options overwhelm you. Use this chart to help you pair the right herbs with the right ingredients.
