SURROUNDED by the shine of rows of brewing equipment and vats, the atmosphere in the shed at Black Dog Brewery at Taminick Cellars is jovial and chatty. But what is coming together is different to what brewer James Booth produces every day. This particular amber liquid, a Belgian farmhouse style ale known as grisette, is the product of hard work from a group of passionate brewers who call the North East their home. As well as James, gathered at the brewery are Ryan Tyack from Bright Brewery, Pete Hull from Sweetwater Brewing Company, and Stefan Landvogt, hailing from Beechworth’s Bridge Road Brewery. And what this quartet of ale enthusiasts are making together is the latest limited edition beer in a series they have produced for the past few years as a way to showcase, and raise money to market, the North East Brewery Trail. Bright Brewery marketing manager James Davidson said the brewers get together each year to produce the special beer, aimed at showcasing the ingredients available in the North East as well as the skills of the brewers. Pete said after the trail (driven by brewers and facilitated by Tourism North East) was established, the idea for the collaborative brew came, naturally enough, from chatting over a few beers. And Ryan admitted the process “is a great excuse to catch up and check out someone else’s brewery”. “We play around with brewery toys, and we learn from each other,” he said, noting the collaborative beer making process was an ideal way to forge “mateship” between all the brewers. continued page |

Pyrus calleryana ‘Aristocrat’ which is an attractive fast growing, medium sized tree with a broad pyramid to rounded shape and horizontal branching. It grows to around 10m in height with a spread of seven metres. It features abundant white flowers in spring and yellow and red foliage in autumn. The Chanticleer pear - Pyrus calleryana ‘Chanticleer’ also known as ‘Cleveland Select’ and ‘Glens Form’ is an upright medium sized tree growing to 10m high and around 6m wide. SPRING is blossom time when both fruiting and ornamental trees burst into flower. White, pink and yellow blossoms dominate the landscape with their annual displays. One genus of plants known for their beautiful blooms is the Pyrus, commonly referred to as Pear. While fruiting pears are attractive, some of the ornamental ones are outstanding. The Capital Pear, botanically known as Pyrus calleryana, ‘Capital’ is possibly the most spectacular. It is a fast growing, narrow form of ornamental pear, with an upright conical shape. It grows to around nine metres in height with a width of only three metres, making it ideal for suburban blocks or smaller restricted spaces. It is often used in street planting. It can be planted singularly or mass planted to line a driveway creating stunning displays in spring and autumn. The Capital pear features masses of white flowers, along the stems during spring. As the tree ages, the number of flowers increases, making spring blooming all the more spectacular. During autumn, the dark green leaves change to brilliant reds, oranges and purples. Other larger growing ornamental pears include; the Aristocrat pear-

Cushing’s disease HYPERADRENOCORTISM, known commonly as Cushing’s disease, is caused by an excess of cortisol in the body. You may have heard of this condition in humans, but is also affects dogs, cats and horses. The clinical signs of increased thirst, increased hunger and increased urination are all caused by an excess of the naturally occurring hormone cortisol. Other signs that commonly occur include abdominal distention or a ‘pot-bellied’ appearance, hairloss and a thin hair coat, skin infections, weakness and lethargy. Cortisol may be produced at an increased level due to a variety of reasons. Most often it is due to changes in the pituitary gland in the brain, and less commonly due to tumours of the adrenal gland found near the kidney.
It is also possible for the condition to develop subsequent to prolonged therapy with steroids, often used to treat allergic skin conditions. Your vet may suspect Cushing’s disease based on the history and clinical presentation of your pet, however blood tests are necessary to confirm hyperadrenocorticism. The disease occurs most commonly in middle aged to older dogs. Regular blood testing is required after diagnosis to monitor the efficacy of treatment. Once diagnosed the condition can be treated with daily medications such as trilostane. These treatments reduce the amount of cortisol produced by the body and are required for the remainder of the animal’s lifespan. Care must be
taken when treating hyperadrenocorticism, as an overdose of medication can have potentially life threatening consequences. Medical treatment is not able to cure Cushing’s disease, however disease control is possible and can help your pet to live a comfortable and happy life for many years to come. He said local brewers already had an informal and sharing relationship, often visiting each other’s breweries and trying each other’s beers. “Everyone’s out to help each other,” Ryan said. Pete said he enjoyed the collaborative nature of making the brew, and said the profits from its sale goes into a pool that helps all the breweries on the trail market themselves. “It keeps the brand of the High Country Brewery Trail fresh,” he said, adding that the brew has become part of the renewed push towards activity based tourism, including cycling. “There’s a foundation core of strong brewing history here.” Pete said the breweries in the area not only offered tranquil surroundings, but also complemented the areas they were located in. “It’s a fast growing industry,” he said.

James said collaboration brews are “a great way to further each other’s knowledge of brewing”, stressing that the local brewing industry is undergoing massive expansions of planting and production. “It’s such a diverse region with so much on offer, which I think is the key to our strength,” he said. Stefan, while relatively new to the area, said it’s an exciting time to be a brewer. The collaborative beer, known as High Country Brewers Collaboration Rule 48, is expected to be released to each brewery on the trail, as well as being available for restaurant wholesale across Australia, sometime in October. YELLA FEVER: Yellowbelly will happily hit a small soft plastic or bladed spinner, making them a pleasant by-catch to anglers targeting redfin in local waterways such as Allan’s Flat, Lake Sambell or Lake Hume.
Right time for yellowbelly OCTOBER is usually the month that see’s the yellowbelly begin to bite the best. This year however, they have started quite early with some great catches already recorded from several lakes around the region. Once the water temperature hits a certain temperature, usually around that 14-15 degree mark, the yellowbelly start to become very active and can get quite aggressive as many of the mature fish pair up or look for a mate. Sadly, in most of the waterways around this area, they may pair up and think that they’re spawning, but they don’t really follow through with the act due to the conditions being far from favourable. So they don’t actually spawn, but the aggressive spawning behavioural instinct remains.

Heading into October, try fishing around rocky outcrops in lakes such as Hume and Eildon. These rocks radiate a lot of heat, kickstarting the eco system on a small scale. The warmth brings the insects, which brings the birds, lizards, frogs and minnows, which bring the yellowbelly. Trolling medium sized lures is probably the most popular and successful technique used to catch yellowbelly, followed closely by casting lipless crank baits such as Jackall’s, or medium sized spinnerbaits. I have a personal preference when I

Bait fisherman should try small yabbies, worms or freshwater shrimp if you can get hold of some. As mentioned, lakes Hume and Eildon are spots to try, but there are others. One of my favourites is Lake Nillahcootie, particularly when I take the kids bait fishing off the bank. The Broken River is stocked with yellowbelly each year, so too is Lake King in Rutherglen, Lake Anderson in Chiltern, Lake Sambell in Beechworth, and Allan’s Flat waterhole near Yackandandah. Lakes Hume and Eildon are the spots to head if you’re after a large trophy yellowbelly, and Lake Nillahcootie is the best place to go to catch a feed of good table sized yellowbelly.

Capture of Billy the Puntman, 1856 HIGHWAY robber, Billy the Puntman, was captured in Albury. Billy had held up the Melbourne mail coach a few months earlier, after losing his job ferrying the punt across the Ovens River when the new bridge had put the punt out of business. He was subsequently tried in Beechworth, and sentenced to a hefty term in prison.
I REMEMBER this being our Thursday night dinner on the farm, mum would have a roast lamb one night a week, she would then get three meals out of that same roast lamb, we all can do this! Tuesday would be roast lamb, Thursday would be shepherd’s pie and Sunday would be lamb fritters. I carried this philosophy with me when I had a family, and money was tight, I would make a dinner list for the week using this idea, changing the cuts of meat to chicken and beef. I love the way farmers have a very money conscious approach where nothing is wasted. Method Place raw mince in pan, cook over high heat, stirring until meat is well browned. Drain off excess fat. Cook onion until transparent, stir and add carrot, and cook for another minute. Add thyme, tomato paste, Worcestershire sauce, soy sauce, peas, stock, salt and pepper, to minced, cooked left over roast lamb, or the cooked mince. Mix well. Stir in blended flour and water until mixture boils and thickens. Reduce heat and simmer gently for five minutes.

Place mixture into an ovenproof dish. Topping: Boil potatoes until tender. Drain and mash potato. Add butter and beat until smooth and creamy. Season with salt and pepper. Spread potato evenly over meat and bake at 180C for 45 minutes or until golden brown. Serve with a salad or green beans.

IT is wonderful to see that as a community we are gradually taking more responsibility for what we throw away. We are finally learning that rubbish doesn’t magically disappear into the atmosphere, and instead of finding bigger holes to fill, we’re better off producing less of it to start with. There is so much now that can be recycled or repurposed, and if you have a few chooks and a garden, every scrap from the kitchen is pure gold. So it makes no sense to me at all why supermarkets insist on selling fruit and vegetables packaged in plastic. It’s enough to drive you drink, so it’s good King Valley’s Red Feet Wines is just up the road. Their Sangiovese is a delicious example of the variety, jam-packed with aromas of cherry and blueberry fruit. The wine has a deep and dark, crimson colour and a luscious, juicy texture in mouth.

he Fair Work Ombudsman now has a mobile-friendly pay tool to give employers and employees access to reliable advice on wages and entitlements on-the-go. The Pay and Conditions Tool (PACT) combines pay, shift and leave calculators with an intuitive interface for mobile devices. It can locate the correct Modern Award for an employee’s position and quickly determine what wages apply, including any overtime, penalty rates or allowances payable. Users who go to www.calculate.fairwork.gov.au can work out wages per hour, per shift or for an entire pay period. PACT can also determine the entitlements payable when employees resign or are terminated, including wages in lieu of notice, leave and redundancy pay. It is linked to another online tool, My Account, which enables employers and employees to save the advice they receive and review it at any time. Information and advice can

Most lenders will provide you with a “conditional” approval in writing and which are usually valid for three or four months. But they may be more “conditional” than they seem, as the lender can apply new lending criteria at any time within the time frame that they have given approval for. Reassessment could mean the buyer is not permitted to borrow as much as was first indicated. A much higher level of comfort

will be provided for a buyer who has an “approval in principle”. The names that lenders use for this stage of the application process may vary, but it is the stage where the lender has verified the information provided by the applicant such as income and credit checks. These will usually be good for up to three or four months and gives the buyer some certainty to purchase a property up to an agreed limit, providing their financial circumstances have not changed. Most lenders have tightened their lending criteria recently, making it even more important than usual to have your finance locked in before going property hunting. Investment loan interest rates have increased in recent times and some lenders have widened the net to include existing investors who
have variable rate mortgages. The higher mortgage interest rates are part of their response to the Australian Prudential Regulation Authority’s request to increase the capital adequacy of the portfolio. Lenders have also been tightening their lending criteria across their mortgage products as APRA has a belief that lending standards have become too lax in the last few years. It is normal for lenders to know that household finances can withstand an increase in their mortgage rate of about 1.5 to two percentage points above the mortgage interest rate they will pay. But this buffer is now likely to increase to 2.25 to 2.5 percentage points. Interesting to note that rental income for investment properties is being discounted by about 20

IN my reading this week I was a bit disturbed to see that even though a broker had advised prospective buyers it was okay to bid, when it came to the crunch the couple didn’t have enough income for the loan. With mortgage lenders now tightening their belts, it is more important than ever for buyers to ensure they have the finance, before putting down a deposit on a property. Purchasers who fail to come up with the money by the settlement date will risk losing their deposit. Don’t rely on verbal advice from a mortgage broker that you can purchase a home up to the value of X - ensure the broker has made a formal assessment with the proposed lender that when you (the borrower) make the application it will be approved. It is fine for the broker to indicate the level of borrowing, but

A word of warning to those who have previously bought property - you should not assume that the loan assessment criteria and processes will be as they were previously. Mortgage brokers say consumers need to be careful as lenders started increasing their mortgage rates for investors a month or so ago. Kevin Lee, the principal of Smart Property Advisor and a Smartline broker, says those who obtained an approval recently should check with the lender that their borrowing capacity has remained unchanged. As I said at the start, have your finance organised before looking for that investment you think will put money in your bank account and be aware interest rates will rise.
