Citadelle Original has 19 botanicals infused progressively at the ideal proof and time to extract the right amount of flavour used for distillation. A tedious step but rewarding step.

Citadelle is a distilled gin the botanicals are not distilled, they are infused. Alexandre Gabriel has learned to distill in the most authentic pot still, the alembic “Charentais”. An ancient style of distillation that is about slow and gentle concentration of flavours.

Inspired by a French garden cultivated by Debbie Gabriel, wife of Citadelle Founder Alexandre Gabriel, Jardin d’été is made with the addition of melon flesh, whole lemon, yuzu zest and orange peel on top of the 19 botanicals used to make Citadelle Original.

Citadelle Réserve spends between 5 6 months in each barrel and is then blended in a Patented Wood Egg Vat, to ensure a constant movement with the help of natural convection. This slow mixing is key for perfect integration: the fondu!

A tribute to the character created by Charles Dickens in The Pickwick Papers, Reverend Stiggins, whose favourite drink was pineapple rum. The barks of Victoria pineapples are infused in Plantation 3 Stars rum, which is then further distilled. Separately, the pineapple fruit is infused in Plantation Original Dark Rum. Both distillate and fruit infusion are finally blended, creating a rich and delicious pineapple bouquet, accented by smoky and clove notes.

Palate: Bursts with caramel, chocolate, vanilla. Then cinnamon, oak, molasses, raisins, nutmeg and smoky accents. Long lingering with dark chocolate and clove.

WHISKY (TASMANIAN SINGLE MALT)

Sullivans Cove Old & Rare bottlings are reserved for the very few casks allowed to age for at least 16 years. With the philosophy to bottle whiskies at their peak of flavour and character, regardless of age, and the vast majority of their whiskies hitting their peak at around 10 12 years, it is only once in a while that their skilled distillers identify a cask with the specific characteristics that allow for extended maturation. The result is the oldest and rarest of Australian whiskies something only possible at Sullivans Cove as the only distillery in Australia that has been using full sized casks since the mid 1990s.

Each bottle is presented in a unique, hand made, solid wood presentation box and includes a letter of authenticity hand signed by Head Distiller, Patrick Maguire and Production Manager, Heather Tillott.

An infusion of Roman Absinth (Wormwood) is added at the end to enhance the bitter taste, giving the ivory color to the product.
