With a rotating menu of cup cake varieties, it’s no wonder The Cupcake Gypsies have amassed a local following with fans who voted the sweet shop as the best bakery as well as the best dessert spot.

Just a Pinch Bakery opened a few years after chef Stanley Martin and his wife relocated to Colorado and couldn’t track down their No. 1 food craving: kolaches, a tradi tional Czech pastry of soft yeast dough cradling fruit, cheese or even meat. Soon the Martins began whipping up their own kolaches, but as they explain, “It would be selfish not to share this delicious treat ” Thus, with little more than a dream and an oven, Just A Pinch Bakery was born. Today the Martins serve kolaches such as mushroom brie, green chili egg and strawberry with or ange cream cheese in addition to plenty of other bakery treats.

But those with a sweet tooth can’t seem to get enough of the shop’s peach creations, and baker owner Andrea Strick is always coming up with new frosting and topping combinations for peachy keen customers. Some of her recent cupcakes have included the Vintage Peach that’s topped with vanilla bean bourbon buttercream and garnished with brown sugar or the West ern Slope, a peach cupcake with cherry buttercream and a dehydrated apple slice garnish.

The Instagram-worthy, family-owned shop is located in downtown Loveland and offers a daily rotating cupcake menu of five to six cupcakes, which always includes a gluten-free and a vegan option. Strick also uses organic and locally sourced ingredients in her baked goods.
