This March why not embrace your wild side and let open up your garden to all sorts of wildlife.
iving in Devon it is clear that we are blessed with an abundance of wildlife around us. Weather it’s the hedgehogs roaming around in the early hours of the morning or the many sea creatures that roam the waters around us. Plymouth and the surrounding areas are one of the most biodiverse developed environments in the country and that is only possible because of all the effort that local people go to in order to ensure a happy home for our animal friends. As it’s World Wildlife Day this month I’ve complied some little things you can do in your garden to protect the local wildlife.
HAvIng A HeDgeHog House
as winter fades and spring emerges, we are sure to see more colour and spark in our landscape so why not embrace that feeling and invite some new animals into your garden. a hedgehog house can also provide shelter and a place to raise its young so don’t be surprised if you have more than a few visitors. hedgehogs can also help clean up your garden from garden pests such as slugs or snails so if you’re having a problem with some pesky holes in your garden veg then a hedgehog house might just be the perfect solution for you.
you might be asking how the hedgehogs are supposed to find their new little home well that’s where a wildlife corridor come in. this simple hedgehog-highway can be made by simply making holes in your fences maybe to a field or just an open space, if you want to get really into your wildlife conservation your can ask your neighbours to join you and create a hedgehog superhighway by having holes that stretch from one of the of your road to the other. maybe you have already got a hole in your fence that you’ve been meaning to patch up and now all you need to do is leave it or possibly make it the right size for some friendly spiky neighbours to pop their heads through.

if you want to further increase the biodiversity of your little oasis you can buy or build a beautiful birdhouse. Similar to hedgehogs a bird in the garden might not sound like the solution to your garden woes however, they are excellent pest control as well great weed control and soil fertilization. not only is a birdhouse good for your garden but it may also be good for you; listening to birds chirping has been shown to decrease stress levels in people and it’s also a
great way to show children a new perspective of nature and allow them to see up close why even in an urban environment animals such as birds are still so vital to the ecosystem. So whether you’re trying to relax after a tiring week or you’re just trying to have someone else tidy up the garden for free then definitely consider putting up a home made bird box.
There are not many flowers that will be bad for introducing some life into a garden, but some are better than others. one of the most effective are Zinnia flowers, not only do they flower within just a few weeks, but they are also an absolute favourite of all sorts of bee’s and butterflies. You can directly sow these wonderfully colourful flowers at the start of spring as now is the perfect time. additionally, you could go all out and create a minmeadow in a corner of the garden this way you can embrace the spirit of spring even more by just putting a chair down and watching the butterflies go to work in your own little sanctuary.
tHe benAfIts of A WAter feAture
If your find yourself feeling like your garden is still missing something, then one of the best things you can do is add a water feature. this not only looks amazing but in a similar fashion to having a bird in the garden having a water feature can help create a calming environment, this can be perfect when you’ve had a stressful week at work or just in general. if you’re worried about the water going stagnant then the good news is some pond plants you can oxygenate the water so that way you will have a lovely water feature all year round and give the bees and butterflies some extra places to land.
A Simple SwAp
If you already have many of the features discussed, then something you may not have thought have thought of changing the fertilizers you use. This can be as simple to swapping to a seaweed feed or even better your own compost. Something else you can do is regularly mulching the ground; digging over soil in the beds and boarders can destroy vital micro-organisms that help our gardens come to life. Mulching the ground instead can help keep everything in balance and eliminate to add artificial fertilizers. This balance is vital for keeping the local wildlife happy and create a great habitat for the circle of life.
let it Grow!
If you’re not sure about how to go about creating a great garden for some wild companions, then maybe the easiest option is to do nothing. By this I mean that letting a corner of your garden grow wild can be an excellent low-effort way to nurture the perfect environment for many wild animals.
Although it may look a bit mesy at first a wild corner of a garden is something to be proud of. If you have particularly green sleeves it might be hard to resist going some TLC so this area but after a short while you will be able to marvel at your wonderfully wild corner and gaze into its freeing nature.
The best time to plant a tree in the garden was probably twenty years ago but the second-best time is now. A tree can foster many different animals from birds to squirrels to the occasional owl. Trees suck up plenty of carbon dioxide over the years and provide some natural hedging across the edges of your garden. There is also nothing quite like sitting under a tree with a nice cold drink marvelling at the garden you have created over the years.

Throughout March it’s National Bed Month – a whole month dedicated to learning about the importance of a good night’s sleep and how to improve your kip with a comfortable, supportive bed.
Who doesn’t love a full, uninterrupted night’s sleep? If you find you’re struggling to get to sleep or you’re waking up at 4 am because the springs in your bed are uncomfortable then fear not as March is National Bed Month and we’re here to tell you how important it is to get a full night’s sleep and what you should be doing to ensure you really do get your beauty sleep.
organised by the Sleep council, the month aims to remind us all of why a sound sleep is good for our health. it’s thought that good sleep has amazing properties that make you healthier and happier, and can even add years to your life!
in 1988, a groundbreaking study found that by switching an uncomfortable old bed to a lovely new one meant an extra 42 minutes of sleep! it might not seem like much, but 42 minutes could be the difference in your mood for the rest of the day.
But why do we sleep?
It may at first seem glaringly obvious, but the question of sleep is actually quite mysterious. in simple terms, it is an
extended bout of rest we experience on a daily basis, where we most often lay down with our eyes closed. But there’s more to sleep than meets the eye.
We tend to think of sleep as a time when the mind and body shut down. But this is not the case; sleep is an active period in which a lot of important processing, restoration, and strengthening occurs.
one of the vital roles of sleep is to help us solidify and consolidate memories. as we go about our day, our brains take in an incredible amount of information. Rather than being directly logged and recorded, however, these facts and experiences first need to be processed and stored; and many of these steps happen while we sleep. overnight, bits and pieces of information are transferred from more tentative, short-term memory to stronger, long-term memory—a process called “consolidation.”
How much sleep do we need?
Sleep is a vital indicator of overall health and well-being. the average person spends around a third of their
life asleep. in this time, our bodies are able to replenish energy stores and make repairs, while our minds organise and store the memories of the day before. the amount of sleep you need depends on your age, sex, health and other elements, and sleep cycles change as we grow older.
most of us know that getting a good night’s sleep is important, but too few of us actually make those eight or so hours between the sheets a priority. For many of us with sleep debt, we’ve forgotten what “being really, truly rested” feels like.
healthy sleep is critical for everyone since we all need to retain information and learn skills to thrive in life. But this is likely part of the reason children - who acquire language, social, and motor skills at a breathtaking pace throughout their development - need more sleep than adults.
While adults need 7-9 hours of sleep per night, one-year-olds need roughly 11 to 14 hours, school-age children between 9 and 11, and teenagers between 8 and 10. During these critical periods of growth and learning, younger people need a heavy dose of slumber for optimal development and alertness.
How can you improve your sleeping habits?
to begin a new path towards healthier sleep and a healthier lifestyle, begin by assessing your own individual needs and habits, you need to test how you respond to different amounts of sleep.
Pay careful attention to your mood, energy and health after a poor night’s sleep versus a good one. Ask yourself, “How often do I get a good night’s sleep?” Like good diet and exercise, sleep is a critical component to overall health.
To pave the way for better sleep, consider these simple, yet effective healthy steps to fulfilling your sleep goals!
Your Bed
The foundation of a great night’s sleep is a comfortable bed. The right mattress can make a huge difference between a restful and restless night, saving you from fatigue and irritability for the rest of the day. An unsupportive mattress will encourage a poor sleeping posture, which prevents you from a good sleep. If you regularly wake up with aches and pains, it’s probably time to change your mattress.
There’s a huge amount of choice on the bed market, which can make selecting the right one difficult. But one thing is for sure, the right support is crucial. If your bed is too hard or soft, it will be uncomfortable and unsupportive. Your mattress should be firm enough to support your spine in the correct alignment while conforming to your body’s contours. Investing in a good mattress isn’t something to take lightly, but quality should always be above price. And remember ALWAYS try before you buy!
Your Lifestyle
The 21st-century lifestyle is typically fast-paced, chaotic and jam-packed with technology. From the moment we wake up we switch on our brains with smartphones, and as our day progresses, we’re presented with even more triggers.
The continuous content that’s fed from TV and radio, real-time social feeds and our constant checking of emails all make for a non-stop stimulation… It’s no wonder that many of us can’t switch off or fall asleep, then struggle to wake up in the morning and spend a lot of time complaining “I can’t sleep!” or “I had the worst night’s sleep!”.
There are simple ways to adjust your lifestyle to promote a better night’s sleep. These minor changes will help you to wind down and relax, removing you from the hectic, technologycrammed world that we live in.
For starters, switch off your tech a couple of hours before bedtime – that includes your phone! Pick up a good book and get stuck into it rather than checking how many likes your latest post on Instagram got! Another thing that’ll be sure to help you sleep better is avoiding drinking alcohol or caffeine before bed, opt for water as a healthier option to quench your thirst. One way to ensure you sleep well at night is to stop napping during the day, if you got a good night’s sleep then you wouldn’t need to nap!
Stress and Worry
Scientists have found a direct correlation between anxiety and the rhythm of sleep. When a person is anxious, their heart rate increases, which causes the brain to ‘race’. An alert mind produces beta waves, making you far too stimulated to sleep. To make matters worse, an active brain triggers other worries, so it’s even harder to achieve sleep.
Once this pattern sets in, bedtime can become a thing of anxiety. To help with anxiety and stress, consider visiting your local GP to find ways to help combat your stress.
Excercise
Sports and exercise can help you to enjoy a better quality of sleep. Working out effectively can tire your
body out gently, promoting a better night’s sleep. Releasing pent up tension through exercise is also highly beneficial, helping to banish stress before bedtime. Exercising also lowers your body’s temperature, which induces better sleep.
When it comes to exercise, the most important thing is to feel fitter and healthier. If you are experiencing sleeping problems, try to exercise a little more or change the type of activities you do. Yoga is renowned for its relaxation and sleep benefits, while moderate-aerobic exercise like walking has been found to help people fall asleep more quickly.
But remember, don’t overdo it! Contrary to popular belief, wearing yourself out physically is not likely to induce sleepiness. In fact, it can often be counter-productive, leading to additional alertness when trying to sleep.
For some people getting a good night’s sleep is easy and normal, for other’s it requires changes in both lifestyle and environment.
Remember, it’s all about being aware of your surroundings and your lifestyle, small changes will make a huge difference in how you sleep. Start with sticking to a sleep schedule every day of the week (that’s right - weekends too) and then eliminate anything else that may be causing you problems sleeping to reach your ultimate goal... a full, uninterrupted night of beauty sleep.

Mother’s Day is on Sunday 30th of March and it’s time to show your mum that you really do care about her. Go and pick up a fresh bunch of flowers and tell her how much you love her!
Mothers and mother-figures are incomparable. They may be the first people we ever know when we enter the world, and they love and care for us as we grow up and beyond. Once a year, countries around the world celebrate Mother’s Day; a day dedicated to all mothers or mother figures so that we can show our appreciation.
The fourth Sunday of Lent, otherwise known as Mother’s Day or Mothering Sunday, is a time for celebrating all that our Mums have done for us over the years.
Mother’s Day is a tradition that dates back centuries, the day was originally marked by the reunion of mothers with their children who would otherwise be working as apprentices or domestic servants, with this day being a special holiday for children to take time off and visit their families.
With more of us living further away from home and loved ones than ever before, the time we spend with our family on Mother’s Day is all the more special, with many people spending more on Mother’s Day gifts and experiences than any other festivity besides Christmas.
Today, we know Mother’s Day as a day where we acknowledge the incredible things the women in our lives do for us.
Mother’s Day isn’t always about our own mothers, it’s about all mums, stepmums, mothers-in-law, mums to be, nans, grans, sisters, aunties, carers and the list goes on!
Mother’s Day is a chance to make them all feel special for all of the great things they do for us. It’s a day to show love, gratitude and appreciation to all wonderful mums everywhere, through acts of kindness and the giving of Mothers Day gifts and flowers.
Everybody celebrates Mother’s Day in their own way, most commonly it’s a day for family reunions where we wait on hand and foot for our mother’s, whatever they want, we sort it!
But are lavish gifts such as jewellery, gift vouchers or spa days really what mums want for Mother’s day?
As nice as it is receiving gifts, it’s not always necessary. With Mother’s Day becoming as commercial as Valentine’s Day, it’s become less about acknowledging and giving back to your mum and more about spending your money.
There are many things you can do for your mum on Mother’s Day to show her you care without splashing the cash, and she’ll probably appreciate it more anyway!
What more could you want on a day that’s all about you than a nice long, uninterrupted lie in?!
With Mother’s Day occurring on a Sunday, it’s the perfect day to allow mum to enjoy a few more hours in bed than normal without being interrupted by screaming, questions and nagging! You could even treat her to a delicious breakfast in bed after her well earned 12 hours of sleep.
Wouldn’t a nice, hot bubble bath be the perfect mother’s day treat?
Stock up on salts and lotions this Mother’s Day to allow your mum to sit back, relax and unwind for a long soak with a glass of her favourite wine, a new book or a soothing playlist of her best-loved songs blissfully playing in the background.
Let’s face it, most mums despise having a messy home with toys flung across the living room and mountains of washing piles scattered around the house.
So team up, grab some rubber gloves, sponges and the feather duster for a day of scrubbing and polishing. Mum can put her feet up with a cup of tea whilst you do the hard work hoovering and cleaningdon’t forget the washing, ironing and dishes too!
A day of relaxation and peace doesn’t have to be expensive and involve a fancy spa.
Why not take the kids out for the day to give mum a day of rest and pampering. And if you’ve got toddlers then she may even be able to go to the toilet without a 3-year-old hanging from her leg begging for food for the 10th time of the day...the littlest things really do make a difference!
To finish off the day with family time, cook up a feast of mums favourite meal for all to enjoy.
Mother’s Day doesn’t have to be all about spending money, it’s about spending time together and showing mum that you really do care and you’re grateful for all of the wonderful things she has done for you.
INTERNATIONAL WOMEN’S DAY
March 8th is a day that belongs to all women, everywhere. International Women’s Day highlights how women all over the world have fought, and still fight, for gender equality.
As International Women’s Day (IWD) 2025 approaches, the global theme, “Accelerate Action,” compels us to reflect on the progress made toward gender equality and the work that remains ahead. This year’s theme is a rallying cry to quicken the pace of change and tackle the systemic challenges women continue to face. However, here in Plymouth, this important day is also tinged with sorrow as we mourn the tragic loss of one of our own, Claire Chick.
claire chick was more than a name in the headlines—she was a deeply cherished member of our community. a dedicated nurse, an esteemed lecturer at the university of plymouth, and a mentor to many, claire made a lasting impact in her field and beyond. Her commitment to education extended across borders, having helped develop healthcare programs in europe, africa, and asia. her sudden and senseless passing is a harsh reminder that despite progress, violence against women remains a pressing issue in our society.

claire’s family described her as “the most beautiful lively soul” who “was there for everyone.” those who knew her speak of her kindness, her passion for teaching, and her unwavering dedication to her students. She was not just shaping future healthcare professionals—she was inspiring them
to lead with empathy and excellence. her work lives on through the countless students she mentored, the colleagues she supported, and the friends she uplifted.
her murder has sent shockwaves through our community, and we owe it to claire—and to all women—to turn this grief into action. We must work together to create a world where women are safe, valued, and empowered.

Violence against women is not just a private tragedy—it is a societal crisis. the statistics are sobering: according to the Office for National Statistics, nearly 1 in 3 women in the uk will experience domestic abuse in their lifetime, and two women are killed every week by a current or former partner. These figures are more than just numbers; they represent real lives lost, futures stolen, and families torn apart.
claire’s story is heartbreakingly familiar to too many women. We must take this moment to demand better protections, stronger laws, and more effective support systems for survivors. in plymouth, local organizations such as trevi Women’s centre and plymouth Domestic abuse Services are working tirelessly to provide resources for women in need, but they cannot do it alone. community support, government action, and cultural change are all necessary to make a real difference.
THe role oF eDuCATIon In genDer equAlITy
claire chick’s life’s work centred around education, and it is through education that we can hope to break cycles of violence and inequality. teaching young people about respect, consent, and healthy relationships is critical in creating a
society where women feel safe. Schools and universities must incorporate gender equality into their curriculums, ensuring that future generations grow up understanding the importance of mutual respect.

The importance of forests cannot be underestimated, and they are a part of our lives more than we realise. The 21st March brings us International Day of Forests and by understanding their importance to life and learning how we can protect them is the first step to forest sustainability!
In the South West, we are blessed to be surrounded by beautiful coastlines and greenspace but unfortuantely we are all guilty of taking it for granted and causing environmental damage by not understanding how the way we live impacts this system that provides us with life. With the evergrowing pressure to help preserve and protect the environment, understanding the importance of forests to us is a crucial step to making a difference.
We depend on forests for our survival, from the air we breathe to the wood we use. Besides providing habitats for animals and livelihoods for humans, forests also offer watershed protection, prevent soil erosion and mitigate climate change. yet, despite our dependence on forests, we are still allowing them to disappear.
International Day of Forests aims to help raise awareness of how much forests mean to us and educate us on how we can help preserve the beauty that mother nature gifted us with.
global warming is no myth and it’s certainly not slowing down, meaning we’ve got to be proactive and do our bit even if it’s a small change to our habits.
Forests cover nearly a third of all land on earth, providing the vital organic infrastructure for life to thrive on our planet, supporting countless species -
including our own. But we are all guilty of taking our green spaces and forests for granted by not considering how we live affects them negatively.
every year millions of acres of forest are cleared by humans for housing, farming and industrial purposes so we can create ‘vital’ products such as paper, medicine and timber. We are quick to destroy forest areas such as tropical regions like the amazon rainforest where deforestation threatens some of the most valuable ecosystems on earth. unfortunately, the rate at which forests are replaced is too slow, having a detrimental effect on humans as well as the ecosystems that once existed in the forests.
human impacts have already led to the loss of around 40% of the world’s forests. and today, an area the size of a football pitch is still being destroyed every second. protecting and restoring forests has never been more urgent.
It’s time to stop and think about what forests mean to us and how we can help preserve them.
Forests pump out the oxygen we need to live and absorb the carbon dioxide we exhale. a single mature, leafy tree is estimated to produce a day’s supply of oxygen for anywhere from two to 10 people. We underestimate how indispensable forests are to everyone on the planet and as humans we rely on forests to help us survive, without these vital spaces our existence may cease.
Forests are more than just a bunch of trees. When we take away the forest, it is not just the trees that go. The entire ecosystem begins to fall apart,
with dire consequences for all of us.
nearly half of earth’s known species live in forests, including 80% of biodiversity on land. that variety is especially rich in tropical rainforests, but forests teem with life around the planet: insects and worms work nutrients into the soil, bees and birds spread pollen and seeds, and keystone species like wolves and big cats keep hungry herbivores in check. Biodiversity is a big deal, both for ecosystems and human economies, yet it’s increasingly threatened around the world by deforestation.
it’s not just other living creatures that use forests as their natural habit. it’s estimated that nearly 300 million people across the globe live in forests, including an estimated 60 million indigenous people whose survival depends almost entirely on native woodlands.
If we continue to destroy forests at a rapid rate, we will face horrible consequences.
Forests affect our lives every day, if you’ve had your breakfast, sat on a chair, made a shopping list, read a book, used a tissue to catch a sneeze or travelled by bus or car - forests had a vital part to play in each of those things
whether directly or indirectly.
With better protection, forests can continue to provide a welcome home for wildlife and resources for indigenous people and local communities. And, globally, they can keep providing us all with essentials such as fresh air and clean water. With better management, we can boost timber production without damaging the local environment. And with better planning, we can produce enough food for growing populations without having to convert forests to farmland.
We can even go further, by replanting and restoring forests that have been destroyed or degraded. This can help combat the climate, extend and reconnect wildlife habitats, and reduce problems like flooding and erosion.
The preservation of forests isn’t only important for places such as South America, Africa or Asia where forests take up a large proportion of the land right, forestry conservation in the UK is just as important.
The UK is estimated to have 3.19 million hectares of woodland, equating to 13% of the total land area in the UK. (Forest Research13th June 2019).
Conservation of wildlife in the UK is often overlooked due to the media focusing on larger and more pressing global issues than what’s happening here in the UK. Protecting our forests in the UK has never been as important as it is now with climate change having a huge impact on our own forests and wildlife.
It’s only right that we try to protect as many plants and animals as possible. British staples like badgers, goldfinches, otters and weasels don’t have many
places left for suitable habitation. Every living creature is important, and well-maintained woodland is key to fostering the survival of wildlife for years to come. Education sits at the forefront of international forest day, if we become educated we can be more proactive in helping preserve the natural habit surrounding us. On average, a UK citizen is responsible for three tonnes of carbon emissions a year. The Forestry Commission estimates that a hectare of woodland can void the effects of two cars’ worth of fuel output over four to six decades. Since there are over two million hectares in this country, that’s a significant, pro-green difference. So, aside from renewing us with their visual beauty, trees and plants also help to balance the atmosphere and reduce CO2.
Not only do forests provide us with the means to survive, but the beautiful scenery and green space also allow us the opportunity to get out and about to enjoy nature at its finest.
In Plymouth, we are situated on the doorstep of Dartmoor National Park where 368 miles of land sits.
On the east side of Plymouth lies Cann Woods, also known locally as Plym Forest, in the valley of the stunning River Plym. Covering an area of some 230 hectares, Cann Wood is an excellent example of mixed forest with areas of newly planted coniferous and broadleaved woodland.
Walk, cycle or picnic whilst taking in the beautiful views and wildlife captured in the valley. Cann Woods is host to two walking trails, various mountain biking tracks, segway, horse riding and a large picnic area to enjoy a delightful afternoon out with your family. Get in touch with mother nature as you explore Cann Woods for a dog walk or maybe even a morning run.
The UK is host to a huge range of Go Ape adventures, designed to inspire you to get out and enjoy the beauty of our forests from the treetops. Nestled in 3500 acres of woodland with the stunning backdrop of the Dartmoor, lies Go Ape Haldon where you can appreciate our forests and all their beauty whilst you climb through the trees. Or you could enjoy a leisurely walk or bike ride, taking your pick from four walking trails and five highadrenaline cycling trails.
Along with sensory activities, forests also provide us with a sense of community.
New home developments that are building over green spaces are pledging to put the sustainability of our forests and land as one of their top priorities. Sherford is the most notable development focusing on sustainability. Having spent over two decades in the planning and located in one of Devon’s most picturesque areas, Sherford is set to support a community of over 12000 people in 5500 homes.
Creating a sustainable, high-quality, inclusive and diverse community has been a key driver of the entire Sherford project, not only to support the economic growth of the local area but also to ensure that it will be one of the most environmentally friendly areas in the South West.
The objective has been to create a community which not only respects and enhances the surrounding environment and its diverse wildlife but also enables and supports sustainable methods of construction. The first residents are already benefiting from sustainable ways of living, including significantly reduced energy supply requirements and energyefficient homes.
During the construction of Sherford, materials such as rocks, timber, metal and plasterboard are being recycled. 85% of waste materials are being recycled, while others are being reused to construct the town’s roads and home foundations. And a massive 255,000 plants, trees and shrubs have been planted, along with more than 3000m2 of wildflower seeds sown.
The Sherford Consortium is making a difference to the local area and community by ensuring sustainability is at the top of its priorities.
We can all do our bit to help combat climate change to protect our forests, there are endless ways to make a difference from changing your diet by cutting down on meat and dairy, choosing more sustainable options when it comes to materials by opting for bamboo or recycled paper or by using alternative methods of transport by taking the bus, walking or lift sharing to work, all will help reduce your impact on the environment.

We have gathered together some delicious recipe ideas that are simple to re-create at home this Spring.
Churros Serves - 8-10
IngredIents
• 140g plain flour
• 100g golden caster sugar, plus 2 tbsp
• zest 1 lemon
• 120g unsalted butter, diced
• ½ tsp vanilla extract
• 3 large eggs, beaten
• sunflower oil, for frying
• ¼ tsp ground cinnamon
• melted dark chocolate or salted caramel sauce

Boil the kettle. Sift the flour into a big mixing bowl with a big pinch of salt, then stir in the 2 tbsp sugar and lemon zest. Put 350ml boiling water, the butter and vanilla extract in a saucepan. heat gently to melt, then bring to a simmer and, as soon as it is boiling, turn off the heat. Tip in the flour mixture and very quickly beat with a wooden spoon until lump-free. cool for 5 mins, then beat in the eggs one at a time, with the spoon or an electric whisk. Rest for 1015 mins, or cover and chill for up to 24 hrs.
Fill a large, deep saucepan one-third full of oil. heat until it reaches 180°c on a cooking thermometer. cover a tray with kitchen paper, and mix the caster sugar and cinnamon together in a bowl.
Fit a star nozzle to a piping bag – 1-2cm wide is a good size. Fill with the rested dough, then pipe 2-3 strips directly into the pan, snipping off each dough strip with a pair of scissors. Fry until golden brown and crisp, then remove with a slotted spoon and drain on the kitchen paper-lined tray. carry on cooking the rest of the dough in batches, sprinkling the cooked churros with some cinnamon sugar as you go. Dip the warm churros into the melted chocolate or salted caramel sauce and enjoy.
Beef & Broccoli Noodles
Serves - 4
IngredIents
• 3 blocks egg noodles
• 1 head broccoli, cut into small florets
• 1 tbsp sesame oil
• 400g pack beef stir-fry strips
• sliced spring onion
• 3 tbsp low-salt soy sauce
• 2 tbsp oyster sauce (not oyster stir-fry sauce)
• 1 tbsp tomato ketchup
• 2 garlic cloves, crushed
• 1 thumb-sized knob ginger, peeled and finely grated
• 1 tbsp white wine vinegar
1Start by making up the sauce. mix the ingredients together in a small bowl. Boil the noodles according to pack instructions. a minute before they are ready, tip in broccoli. meanwhile, heat the oil in a wok until very hot, then stir-fry the beef for 2-3 mins until well browned. tip in the sauce, give it a stir, let it simmer for a moment, then turn off the heat. Drain the noodles, stir into the beef and serve straight away, scattered with spring onions.

• 300g sushi rice
• 2 tbsp rice or white wine vinegar
• 1 tsp caster sugar
• 1 large avocado
• juice ½ lemon
• 4 sheets nori seaweed
• 4 large slices smoked salmon
• 1 bunch chives
• sweet soy sauce (kecap manis), to serve

Put the rice in a small pan with 600ml water. Bring to the boil and cook for 10 mins until the water is absorbed and the rice is tender. Stir through the vinegar and sugar, cover and cool.
Skin, stone and slice the avocado. Put in a bowl and squeeze over the lemon juice, turning the avocado to ensure the pieces are covered.
Divide the rice between the nori sheets and spread it out evenly, leaving a 1cm border at the top and bottom. Lay the salmon over the rice, followed by the chives and finally position the avocado across the centre.

Fold the bottom edge of the seaweed over the filling, then roll it up firmly. Dampen the top border with a little water to help it seal the roll. Repeat to make 4 rolls. At this stage, the rolls can be wrapped individually in cling film and chilled until ready to serve.
Using a serrated knife, cut each roll into 8 rounds. Serve with sweet soy sauce for dipping.
Overnight Oats Serves - 1
IngredIents
• ¼ tsp ground cinnamon
• 50g rolled porridge oats
• 2 tbsp natural yogurt
• 50g mixed berries
• drizzle of honey
• ½ tbsp nut butter (we used almond)
• 1/2 scoop of protein powder if you’d like
The night before serving, stir the cinnamon and 100ml water (or milk) into your oats with a pinch of salt.
The next day, loosen with a little more water (or milk) if needed. Top with the yogurt, berries, a drizzle of honey and the nut butter.
