Welcome to the February edition of Gala Life. It’s already staying lighter longer and I’m raring to get outside again. Too much snow!!

For you this month we have walks, trips, theatre shows and Gala Opera are back with Grease. Spring is nearly here, but Willie shares some great ideas on passing a dreary day at home. Our recipe is a favourite treat of mine - Sticky Toffee Pudding.

In our fitness column Alan looks at why chewing counts and Willie in the computer pages gives you some great tips for keyboard shortcuts. In the garden Sheila sees the benefits of pruning now. Gala Rugby share their news, they have a few more games this season but it will soon be the 7s!

The Eildon Singers - We are a mixed voice choir of some 40 members from all over the central Borders. We sing mainly classical works, with some lighter pieces. Dance Class - Circle Dancing is suitable for almost everyone, dancing in simple step patterns to wonderful music from around the world. Red Gauntlet Archers - we have restarted the indoor shooting sessions at at Langlee Community Centre on Thursday nights 7.30 - 9.30 pm. Another beginners course will start in January. Red Gauntlet is one of the oldest field archery clubs in Scotland. We currently shoot outdoors in Elibank forest and indoors at Langlee Community Centre. Willie’s Wonky Computer Factory

There are hundreds, probably hundreds and hundreds of keyboard shortcuts on a computer.

If you are a touch typist you will be well used to many shortcuts, however for us that are not, we abandon the keyboard and use the mouse to select an action from the menu. The problem then is that if we don’t use the shortcuts regularly you forget them and press a couple of keys expecting something to happen, only to find the computer does something completely different - and makes it really difficult to get back to where you started.

Keyboard shortcuts really are what they sayshortcuts, and if you can remember and regularly use just a few, they do make life a little easier. Every program on your computer has a set of dedicated shortcuts, however there are some that are universal in that they will work in most programs, as well as in Windows and on a Mac. The one of most benefit is Undo and it works everywhere - Control + Z. (Like most shortcuts it’s not case sensitive, so Control + z also works). It is Command + Z on a Mac - most basic Mac shortcuts will start with Command, rather than Control.

You may be familiar with it in Word where it will undo whatever you just typed, however it works in nearly all applications and will undo anything you just did, both in Windows and on a Mac. So, for example, if you accidentally moved or deleted a file, hitting CTRL + Z will bring it right back to its original location. Additionally, you can redo anything you undid by pressing CTRL + Y. The clever part is that if you keep hitting CTRL + Z it will take you back as far as you want.

If like me you copy and paste lots of text, regularly, the shortcut for that is CTRL + C (Copy) and CTRL + V (Paste). Just highlight the text or items you want copied by swiping over them on a left clicked mouse and press CTRL + C, then put the mouse cursor where you want to place them and press CTRL + V

If you want to highlight and select all the text or objects, then the shortcut to select all is CTRL + A. If you want part of the text you can swipe with the mouse, or place the cursor at the start of the text you want, press the SHIFT key and then place

the cursor at the end point and that portion will highlight.

If wanting to copy and paste different items like pictures for example, click on the first one, hold down the Control key then click on the others you want and it will only highlight the ones selected. On a Mac that’s Shift + Click.

If you want to rename a file, highlight it and hit the F2 Function Key, this works really well when you want to rename a batch of files, say for example some photos. Highlight the ones you want to rename, hit F2 and type in the new name and it will be applied to them all with a sequential number ie John’s Wedding (1), John’s Wedding (2) and so on.

If working with lots of text, either in a document, or in a web page and you want to find Something CTRL + F will open a search box (known as a Find Field) which allows you to search the text currently displayed in the program you are using. CTRL + S will Save whatever you are working on. CTRL + P will open up the Print dialog box.

Leaving your computer for a minute? Lock the screen with the Windows Logo Key + L, on a Mac that is CTRL + Com +Q. Ok, you’ve learned 11 that will come in very handy. It’s worth researching keyboard shortcuts for whatever program you are using and learning the ones that are most useful, they save time by not having to leave the keyboard and picking up the mouse. If you regularly complete a series of actions and can’t find a keyboard shortcut for it - create your own, just Google ‘create Windows keyboard shortcut’ :o) Willie

There is a sad reality engulfing Scotland’s NHS.

The SNP-run health service is not fit for purpose.

Those are not my words but the words of frontline nurses and doctors.

The deputy chair of BMA Scotland, Dr Lailah Peel, said this week the NHS is “not safe” for patients.

None of us ever want to be unwell. But right now, people in Galashiels and all over the Borders contact me with worries about what would happen if they fall sick. It is an unacceptable situation that demands all of our attention. Nobody is pretending that the struggles facing our NHS are unique. There are difficulties facing

Cutting your Calories

What’s the most popular New Year Resolution?

Well, up there near the top would be losing weight. Chances are many people will have considered this, though reducing weight safely is a long game, and definitely not something where we should be looking for a quick fix. The most recent Scottish Health Survey (published in September 2021) suggested that levels of adult overweight and obesity are still worryingly high: 28% for obesity and 62% for overweight and obesity together. In the Covid world we now inhabit, 39% of adults reported that their weight had increased since the first lockdown began in March 2020, and research by the World Health Organisation suggests that in the UK the average person eats around 10% more calories than they need every day - over time that is likely to cause significant weight gain. So what can be done to help? A growing body of research suggests that a sound approach might be as simple as eating slower.

A recent study involved a group of individuals with varying weights, put in two main situations - eating a relaxed meal with no pressure, or in a restricted, fast food type environment. The results showed that participants ate less when eating slowly, and felt less hungry. The ‘slow’ meal averaged 22 minutes, involving small bites and deliberate chewing without concern for time: they consumed ~57g of food per minute. The ‘fast’ meal involved large bites and quick chewing - average time was about nine minutes, with fast eaters consuming ~88g per minute. Average water intake increased in both groups, but was greater when eating slowly – a definite advantage (see my previous articles on dehydration).

The research concluded that eating more slowly allowed people to develop a better sense of when they are ‘full’ (It takes about twenty minutes from the start of a meal for the brain to send out ‘full’ signals). Participants also consumed more liquid (water) when eating slowly. All very well, but that isn’t always easy in a pressured situation,

where we might be eating at a desk or whilst moving. Again the problem is exacerbated by the post Covid situation where folk may be working from home and grabbing food when they are not involved in work calls or meetings.

You might have noticed that the comments above expressly mentioned chewing – so, why chew? Chewing is actually the first stage of digestion. Your mouth contains enzymes that start to break down food, just like your stomach. We need to break down foods is so that nutrients can be more easily absorbed into the blood stream rather than passing through unused.

As with any study like this, there many be factors which have influenced the results, but overall the evidence suggests that eating slower is likely to result in both lower calorific intake and increased enjoyment of the meal. Overall this may be a better strategy for avoiding weight gain as opposed to promoting weight loss... but everyone needs to start somewhere. So, the potential benefits of slow eating include better digestion, better hydration, easier weight control, and greater satisfaction with meals. Meanwhile, eating quickly can lead to incomplete digestion, weight gain, and lower meal satisfaction. Here are a few ideas to start with:

• Sit down - don’t eat while watching TV, texting, etc. Pay attention to your food.

• Choose high-fibre foods - they take more time to chew

• Put down knives and forks between bites

• Use smaller plates or different utensils (like chopsticks, or just a fork)

• Set aside time to eat

Ingredients

For the pudding

75g soft butter

75g light soft brown sugar

75g dark muscovado sugar

200g self-raising flour, plus extra for dusting

1 tbsp golden syrup

2 tbsp black treacle 2 eggs

1 tsp vanilla extract

200g pitted dried eating dates

1 tsp bicarbonate of soda

For the toffee sauce

125g butter

75g light soft brown sugar

50g dark muscovado sugar

200ml double cream

sticky toffee pudding

Method

• Pre-heat the oven to 180C. Grease a 20cm (Brownie) tin thoroughly with 25g of the butter, then dust the inside with flour.

• Blend the remaining butter and sugar together with a food mixer. Slowly add the golden syrup, treacle, eggs and vanilla extract to the mixture and continue mixing. Turn the mixer down to a slow speed and add the flour. Once all combined, turn off the mixer.

• Put the dates in a saucepan with 300ml water and bring to the boil. Purée the water and date mixture until not quite smooth and add the bicarbonate of soda and vanilla extract. Quickly add this mixture to the flour and butter mix. Once combined, pour into the prepared tin and bake for 30 - 35 minutes until the top is springy to touch and the pudding is just starting to shrink from the edges of the tin.

• Remove from the oven and allow to cool, then turn out of the tin and cut into squares.

• To make the sauce, melt the butter and sugar together in a small pan, add the cream and bring to the boil. Simmer for a few minutes until the sauce reaches the desired consistency, it should coat the back of a spoon.

• To serve, warm the sauce, then warm the pudding in the oven, or for a few seconds in the microwave and serve with ice-cream.

However, the SNP must accept responsibility. Nicola Sturgeon and the health secretary, Humza Yousaf, cannot pretend this is not their fault.

Despite the unbelievable efforts of NHS staff, SNP failures over their 15 years in power are now damaging the health of people in Gala and across the Borders.

Far too many people are experiencing real difficulty trying to access a GP in person because the SNP refused to listen to concerns about staff recruitment, especially in places like Gala, smaller towns and rural areas.

When someone calls an ambulance, even in real agony and distress, they can be left waiting for hours before one arrives.

Hospitals across Scotland, including the Borders General, are struggling to take any more patients because they are already at full capacity.

What has Humza Yousaf done about these pressing issues? Far too little is the apparent answer. At A&E departments, waiting times across Scotland are regularly hitting their worst ever levels.

In response to this crisis, what is most disturbing about the SNP's lack of action is they are not even focused on the issue.

The first debate in the Scottish Parliament this year was not on our NHS. It was on the SNP's push for another divisive referendum.

The shameful priorities of the SNP Government have been laid bare again.

If only Nicola Sturgeon and Humza Yousaf had the focus that our brilliant NHS staff show in their jobs every day, our health service would be in a much better place.

The SNP’s reckless obsession with putting a divisive referendum above everything else must end, for the good of the entire country.

By the time you read this, it will be the end of January, and we will already be a month into 2023. Perhaps you are still focussed on your new year's resolution or have let it go. My New Year's resolution is quite simple: I told myself I wouldn't eat a Mcdonald's in 2023. Not as if I always eat at McDonald's but sometimes, after a long day, it is very easy to slip into the drive-thru instead of going home and cooking a meal. Concerning council resolutions, I am keen to continue working with colleagues across the political divide to ensure we can deliver for the Scottish Borders. It is essential not to tie yourself too deeply to political roots when a lot of what we deal with at council is not politically driven but community driven. Politics still has its part to play in all forms of government, but we must work hard to reach a consensus where possible.

We have sourced 85 varieties of seed potato, (still 20p per tuber) mixing popular favourites with new modern varieties like drought-resistant maincrop Alanis and high-yielding, disease resistant Java; plus older ones that haven’t been available for some years including Edzell Blue, bred pre1915 and Dunbar Rover, 1936.

The Green Fair has local food producers, crafters, plants, environmental organisations, children's activities and café. To give advice we have BOG volunteers and the two nationally famous potato experts - Alan Romans and John Marshall. We are regulating entrance for the first hour to reduce overcrowding and risk of virus transmission. A small number of varieties may sell out early, but we have plenty of stock so there’s no chance of not getting seed potatoes.

TIPS: To make your Cash Only payment quicker, please label each paper bag with the tuber variety and keep a total of how many tubers you have.

It looks like we are in for some dark and dreary cold days with sleet and snow. Nothing new at this time of year, but it takes me back to the early days of the pandemic, when we couldn’t get out and were left to amuse ourselves at home.

Tell us a little bit about you:

I've been retired from NHS Finance for 20 years. I'm married to Ena and we have 3 children, 7 grandchildren and 3 great grandchildren all living in Scotland.

Why did you start coming to GBC:

When I moved from the Aberdeen area to take up a new post with the local health board, I tried a few churches in the local area and eventually found that Galashiels Baptist Church was right for us. We have been members here now for 30 years.

What are you involved with at GBC:

I have fulfilled a number of different roles in the church over the years and am currently on the leaders’ group with four others and am also church treasurer. I’ve been involved with leading our prayer group and really feel I have experienced God's guidance in these roles in His service.

How did the prayer group start:

Different small prayer groups operate within the church, sometimes alongside bible study. The church's main prayer meeting has operated for many years and we come together once a week for an hour.

What are the benefits of this group:

My church strongly emphasises the importance of prayer as the way God has given us to communicate with Him. The weekly prayer meeting offers the regular opportunity to meet the needs of the church through varied prayer topics. In the group we have come to know each other better over time and we can share and pray about some difficult issues in complete confidence.

When does it take place and how can people attend?

At the moment we meet on Zoom every Tuesday evening from 7 to 8 and usually start with someone sharing some thoughts on some bible verses. If anyone is interested in finding out more about our prayer meeting please e-mail the church at admin@galashielsbaptistchurch.org.uk and someone will get back to you.

Caddonfoot Parish Church

It is the start of a New Year in Caddonfoot Parish Church where 2023 was brought in with the Nine Lessons and Carols service led by Session Clerk Mrs Anne Grieve.

The Lessons were read by Mrs Fay Brydon, Mrs Myra Ballantyne, Mrs Catriona Bird, Miss Frances Pringle, Mrs Clare Macfarlane, Miss Georgie Bird, Mrs Jo Lawson, Bill Birch and Atholl Innes.

It followed the end-of-year service on Watchnight, also led by Mrs Grieve. The bell was rung by Mr Innes to bring in Christmas Day and the church was beautifully decorated with the tree and holly while the Advent candles were also lit. Services are led by the minister, the Rev Victoria Linford, and members of the congregation, who also take turns at reading the Bible.

Once again, music is regularly provided by Andy Bird (keyboard and piano) and Mrs Grieve and Mrs Bird (both flute).

Food Bank donations of unperishable items can be left in the vestry where they will be collected and distributed for collection

The Melrose and Peebles Presbytery was formed in 1976 and is now linked up with the new Lothians and Borders Presbytery. Members can reflect on the past with a commemorative booklet, costing £5, prepared by Fraser Simm, of Stow and Heriot. Visitors should exercise care when walking through the Memorial Garden area, which has re-opened. The next Kirk Session meeting will be held on Thursday, February 23, at 7 p.m. by Zoom and will continue that way until the end of March to avoid members coming out on the dark and cold evenings.

The retiring offering for the Watchnight Appeal Fund raised £200 including Gift Aid and will benefit Lavender Touch.

Atholl Innes continues to collect disused stamps for the Eden Valley Hospice in Brampton and thanks to all who have donated.

Gala Rugby Club

Back on Form

Following a run of very poor results in November and early December we were able to pack our pre Christmas blues away with great wins over Melrose in the annual Waverley Cup Boxing Day fixture, followed by a similarly effective win in our first National league 1 game against Dundee Rugby on 7th January 2023. Winning the Waverley Cup after a three year gap due to Covid was especially welcome and put to bed the big loss we had experienced four weeks previously at the Greenyards in the league fixture. Although the game was played in wintry conditions of driving sleet there was a great crowd to witness and support the 43 -15 win by the Maroons. It was obvious from the kick off that Gala were up for it and finished the first half winning 17-3 with tries by Scott Peffers (2) and Angus Dun. This was followed in the second half by tries from Fergus Johnston, Jack Easson, James Glendinning and Liam Scott. We look to welcoming Melrose back on March 11th 2023 for our return match in National League 1.

The Waverley Cup game was followed by a visit from Dundee Rugby on 7th January 2023 in the first National Legue 1 game of 2023. The outcome was very similar to the Melrose match with Gala beating a stuffy Dundee team by 40 points to 15 with tries by Ben Gill, Liam Scott, Harris Rutherford, Scott Peffers, Glenn McCrum and a last minute full length of the pitch interception try by Ben Gill. Although there has been little or no junior rugby during December and January our U17’s and U18’s have been well represented in recent Fosroc Academy games having been picked for the Borders and East Lothian sides. At U17 we were represented by Jamie Bell and Luke Scott whilst at U18 level we were represented by James Glendinning, Russell Kerr, Ritchie Mitchell, Nairn Moncrieff, Mac Rutherford, Ethan Wilson and Fraser Wilson. Well done to all the players!

The Gala Garden February

In spite of all the rain in January, and probably another helping of winter this month, there is still the strong possibility of a prolonged period of drought again this summer.

Fresh water is a precious commodity. Don’t let it run away without thinking of the flip side of climate change; take the hint we got last summer. That is the problem for gardeners now: prepare for sodden ground, or even flooding, but also think about storing some water for precious crops this summer. A water butt will help and it can be installed under the drain from the greenhouse. There will be good days and bad this month so here are a few things to be getting on with if you are keen to get outside. If the weather prevents you from working, don’t worry, most of this can still be done in the early part of next month. The first job is all the pruning not done in the early part of the winter. Restorative pruning of mature deciduous shrubs is one example: select one-third of the oldest and thickest stems and cut them right down to the ground. Do this every winter and in three years all the growth will be on new wood. If you chip around the outside of the shrub old wood just accumulates in the centre until the plant dies off.

Next, do any formative pruning of apples and pears between now and bud break. Leave cherries and plums until mid-summer to avoid fungal disease getting in.

Look at the structure of the whole tree and make the fewest cuts possible, always going right back

to the main stem. Remove the dead and diseased wood to begin with and then take out anything that is crossing or crowded, especially in the centre of the tree. Then stop.

You can prune back any late-flowering clematis, like C jackmanii or durandii, to about two feet above ground or at least two pairs of buds.

Now finish pruning the roses: reduce hybrid teas to an outward facing bud; remove dead wood from floribundas and shorten stems by a third to an outward facing bud. Cut back ramblers to the ground and remove old, flowered wood from climbers as well as any dead wood.

On bad days there are still things you can do: clean up the shed, tunnel or greenhouse, removing any over-wintering insects.

Wash up the small pots and trays that you will need soon enough for sowing new flowers and crops. Seed catalogues will be full of new, inspiring choices; look for varieties that are diseaseresistant, bolt-hardy or quick-maturing. Make your orders early to have your pick.

Now is a good time to clean and sharpen your tools: a blade without an edge cannot make a clean cut. That goes for the mower too; get it serviced now and avoid the rush.

That’s quite a list but, if the ragged clouds part, and the sun shines, stop work and go for a snowdrop walk – spring is coming.
