Usingonlynaturalyeasts,fermentationsstartnaturally, withminimalremontage(pumpingover),andverylittle punch downs. The fermentation occurs in steel tanks, andwinesarematuredinoakfromtheJupillesforestin the Loire, renowned for its tightly-grained barrels that do not impart too much of the wood that can mar delicate flavour profiles. The wines then spend 17-18 months in oak, of which 15-30% is new for Bourgogne Blanc, and 15- 20% for Bourgogne Rouge. All wines are bottledwithoutfiltration.
