Chef’s Dinner Series

 During the summer there should also be a daily F&B experience by the pool. This might include guacamole carts, a Poke Bar or a Build-Your-Own Margarita Bar.  It is recommended that property offer as many food and beverage experience programming activities as they can for guests staying at the property.  Daily programming requirement options must be approved by the Property Marketing

Lead and Food and Beverage Director at each property prior to program implementation.

Wine Experiences with Trinitas Cellars

Category: Recommended

Brand Standard:

All Meritage Collection properties must have a minimum of one or more guest programming activations that are in partnership with Trinitas Cellars.

Benefit:

The ability to leverage our partnership with Trinitas Cellars to elevate the guest programming experience. Trinitas Cellars is a part of our company and this incorporates the brand into our guest experience.

Brand Standard Requirements:  Each property will be required to have one or more programming experiences each week that are in partnership with Trinitas Cellars. These partnership activations must be included on the weekly programming calendar.  Some examples of this programming requirement might include wine blending for guests, flights at five, wine by the vines, sommelier 101 class with the sommelier at each property, pinot & pilates or any other activations that the properties feel would be a great fit.  Each property should have two ‘Trinitas Champions’ that are appointed by the Food and Beverage Director. These ‘Trinitas Champions’ will go through a Trinitas brand training workshop with the Trinitas Tasting Room Team in Napa.  Weekly Trinitas programming requirement options must be approved by the Property Marketing Lead and Food and Beverage Director at each property prior to program implementation.

Chef’s Dinner Series

Brand Standard:

Each property will be required to have a quarterly Chef’s Dinner Series that highlights the talents of our culinary staff.

Benefit:

Implementing this weekly requirement will create a positive customer experience for all guests that are staying at our hotels. Chef’s Dinner Series will also include upsell opportunities for our guests in food and beverage outlets.

Brand Standard Requirements:  Each property will be required to implement a quarterly Chef’s Dinner Series where they highlight the talents of their culinary staff.  Chef’s Table Dinner Series should begin with a cocktail and hors d’oeuvres reception, followed by a themed, three-course dinner paired with a selection of wines selected by each event’s featured vintner.  Tickets to this event may be sold to guests staying at the property and also posted as a ticket sales opportunity on the hotel website.

Hydration Stations Throughout Property

Category: Recommended

Brand Standard:

Properties must have hydration stations available to guests throughout the property.

Benefit:

Hydration stations provided for guests with easy accessibility will enhance guest experience.

Brand Standard Requirements:  Appropriate hotel staff will make sure hydration stations are always filled up.  Appropriate hotel staff will make sure the cups are consistently re stocked.  Suggestion: hydration station to be infused with local fruit.

Wellness Beverage Options in Blend

Category: Recommended

Brand Standard:

All Blends will be required to have an offering of juices, smoothies and matcha lattes as an available option for guests.

Benefit:

Creating healthy dining options for our guests creates a positive guest experience for our customers that are traveling for wellness or business.

Brand Standard Requirements:  Blends must provide at minimum, one fresh squeeze juice offering.  Blends must provide at minimum, one healthy smoothie offering.  All Resort Blends must have a Matcha Latte offering. All Resort Blends must have a nondairy alternative to the Matcha Latte.

Healthy In-Room Dining Options

Category: Recommended

Brand Standard:

All Meritage Collection properties will be required to have a healthy in-room dining menu that will be available at all operating hours for Business Travel Guests.

Benefit:

Creating healthy dining options for our Business Travel guests creates a positive guest experience and makes us competitive versus our comp sets.

Brand Standard Requirements:  All Meritage collection properties will be required to have a wellness menu for guests staying at the property that is offered during all hours of operation for in-room dining.

 All in-room dining menus should include juices, moon milk, wellness shots and healthy culinary options.  All healthy dining options should include a description of the item with a health benefit of the menu option.  It is suggested that all properties partner with Vital Proteins for the moon milk and promote that helps create restful nights sleep. Moon milk must also be offered with a dairy alternative. Appropriate staff member must make moon milk in a tea pot to keep warm for guest during delivery. Appropriate staff member must then add a teacup and lavender sprig onto a tray to make it presentable.

Culinary Escape Group Offerings

Brand Standard:

All Meritage Collection properties must have a minimum of two or more group packages and team building experiences that are inspired by the local culinary scene.

Benefit:

A current trend in group business is offering group packages and team building activities that are inspired by the local culinary scene. Including packages with inspiration from the local culinary scene will not only increase our group business but will drive a more diverse business model that is true to the destination.

Brand Standard Requirements:  All culinary escape group offerings must be included in the digital group packages and team building offerings brochure.  Digital brochure must include activity name, price point per person, gratuity added, brief summary of activity, a picture and designated number per activity item.  Private group culinary focused classes must be included in the offering. For example, a locally inspired cooking class, a meet and greet dinner with the Executive Chef at the property or a lesson in local olive oils.  Properties will have the option to partner with Mint Studios to create this group offerings requirement but will need to sell this as an add on to the package due to our partnership agreement.  Presentation of Group Package Offerings must be approved by the Property Marketing Lead at each property.

Trinitas Cellars Group Offerings

For example, a wine blending class, a Trinitas Wine Weekend, wine tastings or a wood burned cheeseboards and wine workshop.  All offerings must be approved and coordinated with the regional Trinitas representative for each property prior to being added to the team building offerings brochure.  Properties will have the option to partner with Mint Studios to create this group offerings requirement but will need to sell this as an add on to the package due to our partnership agreement.  Presentation of Group Package Offerings must be approved by the Property Marketing Lead at each property.
