EEVERY YEAR, A FRIEND OF MY PARENTS SENT A FRUITCAKE FROM ENGLAND that he made for us to enjoy over Christmas. It was a thing of beauty and as a child I loved all that candied fruit, especially the cherries. After an afternoon of tobogganing and building snowmen, my brothers and I were allowed a cup of weak tea with lots of milk and sugar and a slice of the cake, which I enjoyed toasted. It easily weighed in at 10 pounds and the top was covered in whole, blanched almonds arranged in a graduating circle.
The planning that was involved in making, aging and then packing and sending the cake to Canada was a feat unto itself and not once did it arrive squished or damaged in any way. Each year my father would remark on the cost of the postage, until one year the postage was more expensive than buying the ingredients. With that, the cake we all looked forward to stopped arriving.
A few years ago, I asked for the recipe in hope of making this masterpiece. After a very long phone call and pages and pages of instructions, the enormity of his cake production began to sink in. For a few years, our friend was living in a very stylish flat in London, near Covent Garden, with a kitchen the size of a small closet and equally small oven that was just big enough for baking the cake. I did attempt the recipe, but alas, it did not live up to my memory of his creation. Was it that the butter wasn’t quite the same as we have here? The brown sugar wasn’t as dark? Or maybe he left out a special ingredient or spice. I’m not sure, but my attempt was lacking.
I have since moved on to a much easier recipe for a light fruitcake that is a breeze to prepare and just as tasty with tea. It has become a tradition for my children, and they are none the wiser on missing out on the crème de la crème of fruitcakes that I was very lucky to enjoy growing up.
Happy Holidays,

Are current design trends right for you? It’s important to approach trendy design elements critically to evaluate if you like the trend enough to live with it for a while and whether it can be integrated successfully with your existing design, furnishings, architecture and site. For example, curved archways became very popular but were sometimes incorporated into spaces incongruent with the existing architecture, which caused a visual disconnect.
Here are some current themes in the industry – discern for yourself whether you’d like to give them a try.
There are different reasons you might consider a secondary dwelling (if your property allows it). Affordability is a primary motive, as rental income can help pay your mortgage. Another popular arrangement is independent, intergenerational living – whether due to health circumstances or lifestyle choices. There are many creative designs to maximize efficiency in a small footprint.
Possibly in response to environmental issues and sustainability or the cycle of design, shades of brown have seen a resurgence. Varying from camel to deep
chocolate, the rich, earthy hues offer a grounding, comforting and calming effect in a space. You can incorporate the colour through freestanding furniture, upholstery pieces, hardwood flooring, millwork or wall coverings and paint.
We’ve been seeing the return of terracotta tile for a while. Perhaps one could argue that it is best suited to Spanish and Mediterranean architecture. However, the earthy palette is versatile enough to integrate successfully into farmhouse and cottage styles. Terracotta tiles were traditionally handmade and sun-dried, known as “baked earth,” but even contemporary versions add instant old-world charm to a space while imbuing natural character.
Grout lines are often minimized to avoid scrubbing and cleaning. However, some tiles, such as terracotta, should be installed with substantial grout lines to look authentic. Thicker grout lines are also used to create visual interest in custom tile layouts, where a larger band of grout delineates horizontally or vertically. The options for a unique pattern are endless, as long as your installer is on board!
There is a shift from white painted trim and doors. You will see a lot of solid-wood trim and doors stained to match the hardwood flooring. This is a classic and timeless approach and can be achieved successfully in modern and traditional spaces. An alternative is to paint trim and doors in a contrasting colour to the walls. A few years ago, we began to see subtle versions of this where light walls were paired with trim and doors a few shades darker in a greige hue. As more and more interiors are moving away from the all-white palette into more colour, contrasting trim is a way to add personality and impact, and we are seeing full-blown colour on mouldings, trims and doors. Tip: Try it in one room to see if you like it before you commit to a larger open-concept space!
The application/installation of Venetian plaster, lime wash, Roman clay, woven wall coverings and wood cladding adds interest to walls and ceilings instead of plain, painted drywall. It is important to have a professional installer for some of these materials and finishes (or a seasoned DIYer) – for example, hanging wall coverings on the ceiling is no simple task!
A downfall in design over the past couple of decades has been the homogeny of developments, easily replicated viral “of the moment” looks and the availability of mass-produced items. Although there are benefits to the above, the result can be that homes lack differentiation and look the same as the next. However, there is a real focus on personalization in design and this can be achieved by sourcing artisanal goods. Skilled craftspeople use traditional means and methods to create bespoke pieces in small batches or one-offs. This adds character and charm to your space while supporting the good people preserving uniquely human skills. OH

As the days grow shorter and the temperature drops, there’s nothing quite like transforming your home into a warm, inviting winter haven. Whether you’re settling in by the fire, enjoying a hot cup of cocoa or hosting a gathering, here are some of my favourite ways to create the perfect atmosphere and embrace the beauty of the season.
Set the tone for the rest of your home and greet your guests with warmth from the moment they arrive on your doorstep. Extending the cosiness to the outside with a welcoming wreath or swag, a seasonal doormat and a few decorative touches can make a big impression.
Embrace the beauty of winter by bringing the outdoors in. Pine cones, evergreen branches and berries make for stunning and simple centrepieces and decorative touches. Display these natural elements in vases or as part of a table arrangement to evoke a sense of seasonal charm and warmth.
Create a designated corner in your home that invites relaxation. Choose a comfortable chair, drape a soft throw over it and add a side table with a warm reading lamp. The perfect hideaway for reading, sipping a cocktail or simply unwinding after a long day!
Continued on page 36
Introduce a variety of scents that evoke the winter season like cinnamon, pine and vanilla. Swap out everyday products like hand soaps for those with seasonal scents and for a natural fragrant infusion, simmer a pot of water with cinnamon sticks, cloves and orange peels on the stove.
The holidays are all about creating special moments and memories. Add personalized touches to make your space unique to you, such as family photos and personal ornaments. Switching your artwork for the season can also provide a refreshing change and make your home feel more festive.
Lean into a warmer colour palette for winter. Deep rich tones like oxblood and burgundy feel festive and inviting for the holidays, without feeling overdone. These colours can be incorporated through textiles, décor and even wall art to create a cohesive and cosy look throughout your space.
Think plush throws, soft blankets and extra cushions. Opt for materials like wool, cashmere, velvet and faux fur to enhance the warmth and cosiness of your space. Layered rugs can add texture and warmth to your floors, making every step feel soft and luxurious.
Make the fireplace the focal point of your living area. Arrange seating to face the fireplace and include a basket of logs and kindling for a touch of rustic charm. If you don’t have a working fireplace, you can achieve a similar effect with a cluster of candles or a decorative electric fireplace.
With these simple tips, you can easily transform your home into a winter haven perfect for quiet moments and intimate conversation. Embrace the winter season by making your home a sanctuary of warmth and comfort. Happy hibernating. OH
Not a creature was stirring, not even a mouse! Christmas critters have always had a certain charm. Embrace your whimsical side in an elegant way this season by creating a beautiful woodland table setting that will delight both adults and children at your gathering. From on-trend dinnerware and unforgettable flatware to rustic centrepieces and festive accessories, this tablescape is appropriate for winter dinner parties even after holiday entertaining ends.
The woodland style has a timeless quality because of its connection to nature. When you’re deciding on items to include, opt for an organic feel with textiles like wood and linen in earthy colours like browns, greens and neutrals. Start by laying the foundation with a natural table runner, woven placemats, bark coasters, fresh or faux greenery, pine cones and handmade beeswax candles for a magical, moonlit glow.
Add contemporary details to your woodland table. Choosing black dinner plates with a matte finish will modernize the natural look and provide an unexpected alternative to traditional white dinnerware. Plus, black has proven to be a top-trending colour selection in home décor this year. Pair your plates with a matte-black mug for continuity. Letting some personality shine through with fauna-inspired salad plates that complement the matte-black anchor pieces certainly won’t boar any of your guests! Gold flatware with black handles will complete one thoughtful aesthetic with a hint of gold creating that warm, special feeling you get during the holidays. For glassware, select a smoky, tinted colour that reflects the forest and is reminiscent of antique or vintage glass.
This is your chance to flex your creativity and build a unique centrepiece for your table. You’ll need boards for sharing small bites or charcuterie, chunky wood candle holders, themed tealight holders, winter-inspired metal lanterns, glass trees, fairy lights, fir candle rings, sprays and a vase. Sprawl these accessories down the middle of the table or curate them in a circle if you have a round table. Ensure everyone seated has something interesting to look at, like adorable countryside animals, preferably in little sweaters.
Think of all the animals that roam the forest across Canada and then find those figurines to snuggle into your centrepiece in various ways. Felted mice are as abundant as ever in gift stores, including charming dessert-specific mice that can be quietly added as a surprise during the final course of the evening. Planters that look like hedgehogs, clip-on birds or a moose in a cosy knit hat – the more the merrier! You can also incorporate critters into your paper napkin selection or individual edible table treats in the form of moulded chocolates.
By including these elements, you’ll achieve a cohesive and playful woodland tablescape that brings the beauty of nature indoors. It’s easy to adapt the setting to fit casual or formal occasions while maintaining the underlying charm. Just keep your eye on those critters! OH
Winter can be as long as six months in parts of northern Ontario or four months in southern Ontario. Either way, winter takes up a good portion of our year, so it’s good garden planning to incorporate elements that add winter interest.
Just because our gardens are dormant in colder months doesn’t mean it can’t offer colour, texture and structure even in the heart of winter. A winter garden can transform your landscape into a yearround place of beauty.
Good bones in a garden are important at any time of year, but especially important in the winter when the structural elements of the garden take centre stage. Without the distraction of lush foliage and beautiful flowers, the garden’s design becomes more apparent. This makes it crucial to focus on the layout and form of the garden. Pathways, stone walls and garden ornaments should be strategically placed to guide the eye and provide focal points.
Obelisks, trellises and arbours, even when bare of vines, can create interesting silhouettes against the winter sky or shadows on the snow.
The foundation of any winter garden lies in the careful selection of plants that are either evergreen or have striking winter interest. Evergreens, when grouped or used as hedging, can define spaces, create microclimates and shelter your feathered friends. Height is another important consideration. Incorporating vertical elements, such as tall shrubs or small trees, adds dimension to the garden. Evergreen plants, such as cedar, pine, boxwood and yew retain their foliage throughout the year, providing muchneeded colour and structure. Deciduous trees and shrubs with interesting bark, branching patterns or perennials with interesting seed pods are good candidates for a winter garden. The red or yellow stems of dogwood provide a stark contrast against the winter snow, while the peeling bark of birch or Paperbark Maple adds texture and visual intrigue.
Ornamental grasses can provide great winter interest not only with their form, but they create the element of movement as the wind blows through them. With the shorter days and longer nights of winter, lighting plays a crucial role in the winter garden. Wellplaced twinkle lights can transform the garden, highlighting key features and creating a magical atmosphere. Solar-powered lights are an energy-efficient option, though their effectiveness can be limited in areas with prolonged overcast skies or a lot of snow. LED lights, on the other hand, provide a reliable source of illumination, don’t use a lot of energy and are available in a range of colours to suit different garden styles.
Don’t forget winter containers. With some evergreen branches, colourful twigs, dried seed pods and a set of twinkle lights, you have a miniature winter landscape in a container at the front entrance to provide beauty and light every time you enter your house.
Maintaining a winter garden requires less effort than a summer one, but it is not without its tasks. Regularly clearing pathways of snow and ice is essential for safety and to keep the garden accessible. Pruning should be done judiciously, particularly for evergreens, to maintain their shape and encourage healthy growth. If your area is subject to heavy snow loads, tying up cedars will help prevent them from splaying open. You also might need to shake off the snow from weighted-down branches. Mulching around the base of plants can help protect roots from extreme cold and frost heave.
Winter gardens are also an opportunity to attract wildlife. Bird feeders and water features can provide food and hydration when natural resources are scarce, making your garden a haven for local wildlife. Look for a small water heater in your birding or online store that keeps water in a birdbath from freezing.
A winter garden offers beauty and interest during a season when most gardens are in hibernation. By carefully selecting plants, focusing on structure and form, incorporating thoughtful lighting and maintaining the garden with care, you can create an outdoor space that remains vibrant and inviting year round. Whether blanketed in snow or frosted with ice, a welldesigned winter garden will ensure you have beauty in the face of winter’s chill. OH
CCradled on the shore of Lake Huron, the charming community of Point Clark is renowned for its sandy beaches, unspoiled natural beauty and friendly people. For Chris and Tracy Irwin, this close-knit hamlet has become home. “We love the lake and have made some wonderful friends who have become family. We are very lucky,” says Tracy.
Originally from Lucknow, the Irwins bought a quaint, three-season lakeside cottage in 2016. “We spent holidays and weekends there but it got to the point where we just didn’t want to leave,” Tracy recalls. They decided it was time to make Point Clark their permanent home and bought a lot just around the corner from their cottage. “We still work in Lucknow but are very happy with our decision to relocate,” says Tracy, the owner of Everlastings Flowers & Gifts, a floral and home décor business she established in 1993. “We have the best of both worlds, our new home and the cottage,” she adds. Continued on page 46
Tracy and Chris, a farmer and employee at Bruce Power, quickly took charge of construction that began in April 2023 and was completed in a mere six months. “We were the general contractors for the entire project,” says Tracy. “Everything was organized and on site. All our trades were lined up well in advance.” She designed the house while Chris assisted Stanley Construction with the build. “We wanted to use a local builder and Ken Stanley and his team did a great job,” says Tracy, who spent two years meticulously planning every aspect of their new home. “I knew what every inch would look like,” she says. Blakestyle Design & Drafting Inc. converted Tracy’s sketches into detailed plans while McDonald Home Hardware Building Centre supplied the timbers and building materials.
Tracy’s attention to detail is reflected throughout this unique bungalow. At the front, cedar shake siding highlights peaked gables while a stone sidewalk leads to an innovative breezeway that allows access to the house and backyard. “The sidewalk looks like stone found in Portugal, one of my favourite places,” says Tracy. West Shore Stone & Brick supplied the hardscape material for the landscaping.

Interiors by Sarah Langtry prepared plans for the kitchen design from drawings that Tracy supplied. The open-concept interior seamlessly melds traditional and contemporary elements like vintage furniture and transoms with large, modern windows and substantial mouldings. Tracy’s love of antiques is reflected in carefully-selected pieces that add a conventional flavour to the décor.
“I’m very proud it doesn’t look like every other house,” she says.
“I enjoy collecting so I wanted a traditional but collected look.”
Tracy’s careful planning ensured her antiques flawlessly integrate into the design. “I made sure the space fit the furniture I wanted to display,” she says. All the essentials like laundry, bathrooms and the primary bedroom are conveniently located on one level.
“We want to age in place here so we made sure everything is accessible,” notes Tracy.

She called on designer Sarah Langtry of Interiors by Sarah Langtry to help with the kitchen design. “She prepared my drawings for the cabinet maker (Precision Cabinetry) to ensure everything fit properly,” says Tracy. The cabinet colours are a striking combination of blue and creamy white, beautifully offset by the warm, hardwood flooring by Fuzion.
A fluted-glass display cabinet adds interest while a peninsula defines the kitchen area and provides extra cabinetry and counter space. “I wanted the kitchen to have some separation from the rest of the open concept,” says Tracy. Silestone quartz from Cowie’s Custom Granite Inc. tops the counters while Venetian plaster gives the range hood a textured finish. Open shelving punctuates the charming coffee bar that leads out to a sitting area. “Chris loves hanging out here in the morning,” says Tracy. A sliding barn door encloses a spacious pantry, discreetly storing the microwave, stand-up freezer and a vintage cabinet.

The great room is anchored by a magnificent floor-to-ceiling stone wall, crafted from natural, tumbled limestone (Colonial Brick & Stone Inc.). “It took me a year to find the right stone. It came from a quarry on Manitoulin Island,” says Tracy. Design Stone Custom Masonry finished the wall while Omega Mantels fashioned a limestone mantel and surround for the gas fireplace. The white shiplapped vaulted ceiling reflects plenty of light from dual windows flanking the fireplace supplied by the Heritage Fire Co.
The en suite offers the ultimate in relaxation. “I wanted this room to feel peaceful,” Tracy says. The oversize soaker tub, softly illuminated by a pendant chandelier, overlooks a copse of birch trees. It is the ideal setting for a relaxing soak after a long day. “When I was designing the tub, I made sure the windows were at the right height to see outside,” says Tracy. Heated floors are a welcome feature on winter mornings while dual vanities, skirting a single window, are convenient and roomy. The Piastrella ceramic backsplash in Aqua, supplied by House Rules Design Shop, adds a colourful yet tranquil feel to the room. The glass-enclosed curbless shower affords ease of entry.
An elegant arched doorway leads to the water closet, walk-in closet and primary suite. Three additional bedrooms and a bath are located on the lower level along with a kitchenette, bar and entertainment area.
The Irwins are delighted they were both involved in the planning and construction of their home. “It feels like home and we are very proud that we built and designed it from the ground up,” says Tracy. OH

The holidays are a busy time. Hosting a party or dinner can exacerbate an already stressful season. Whether you’re new to hosting or a seasoned pro, everyone can benefit from helpful tips to make the whole thing less exhausting and more enjoyable.
Do as much advanced prep as possible. A few days before the event, make a to-do list. Start by finalizing your menu, then create a prep list based on the components and what needs to be done. The day before the event, you can wash and cut produce, marinate meats, make salad dressing/ sauces/soups/dips and dessert (depending on what it is). If you have the time and don’t need the space, you can also set the table.
PRO TIP: Make sure the dishwasher is empty before your guests arrive. This will make cleaning up quick and easy.
Not everything on the menu has to be made from scratch. If buying something pre-made makes your life easier, this is a judgment-free zone and your guests probably won’t even notice. Breads, dips, soups, sauces and desserts are all things you could easily purchase pre-made without compromising your personal touch to the menu.
If you’re new to hosting, there is no reason to over complicate things. Keep the drinks, appetizers, menu – everything – simple. It’s better to do a few things really well rather than many things poorly.
When your guests inevitably ask what they can bring, you might be tempted to say “oh, nothing.” But if you truly want to reduce your workload, take them up on the offer. Delegating appetizers, salads or dessert still allows you to tackle the main course and frees up some time to focus on smaller tasks that might otherwise get overlooked.
If you’re hosting a dinner, serving food in large platters or dishes rather than plating each person’s meal individually, can help reduce your stress twofold. Firstly, guests will serve themselves and take as much or as little of something as they like. Secondly, it’s easier to get everything to the table and served at the correct temperature.
If there is one tip to take away from this list, this is it! When you’re hosting people for dinner or a party, do not try a new recipe for the first time especially if it’s the star of the show. Navigating a new recipe is stressful enough and you don’t need the added pressure of cooking for an audience. Choose recipes that you’ve made before and feel very comfortable creating. Even if you’ve made it for this group of people before, a successful recipe repeat is better than a recipe failure. OH
The dining area is somewhat of a conundrum. In many newer homes, it has been swallowed up by the open-concept main floor, with cooking, dining and living combined. Meanwhile, in older homes, the formal dining room often goes unused except for the occasional birthday, anniversary or holiday, when it gets dusted off and dressed to impress. I love the indulgence of a dedicated, stylish dining area, both in terms of the space itself and all that it brings. Whether yours is a dedicated room or a designated nook, here are some tips to ensure it’s ready for company, both during the holidays and every other day of the year!
A great dining area starts with the layout, to ensure the room can handle the hustle and bustle while still providing a comfortable and inviting atmosphere. If yours is an open-plan home, position your dining table in a way that naturally flows from the kitchen or living area. This setup allows for easy movement between cooking and socializing, ensuring you can stay engaged with guests while preparing meals.
In homes with separate dining rooms, focus on creating a balanced space. Place the dining table centrally, allowing enough room around it for chairs to be pulled out comfortably. Ensure there is ample space to accommodate traffic, especially if the space will include a buffet or serving area.
A rectangular or oval table can accommodate more guests, while a round table can create a more intimate setting. If you frequently host large gatherings, consider an extendable table or add a second smaller table to accommodate extra guests.
A sideboard or buffet table along one wall can serve as a dedicated area for food and drinks. This keeps the main dining table clutter-free and allows guests to help themselves without disrupting the flow of conversation. And when you’re not hosting, it serves as storage space.
Place chairs or benches around the table with a mix of seating options to cater to different preferences and to create a more dynamic and inviting arrangement. If space allows, create a separate seating area with comfortable chairs or a small sofa for guests to relax before or after the meal.
A well-chosen focal point not only draws the eye but also sets the tone and mood, making it a more enjoyable place for meals and gatherings. It can help define the style and personality of the space, whether it’s modern, traditional or eclectic. To create an effective focal point, start by identifying the most prominent area in the room, such as the wall facing the entrance or the ceiling above the dining table. Consider adding a bold piece of art, which is a wonderful way to add non-committal colour and a dramatic effect. Simply swapping out the artwork can transform the entire room’s ambience when you’re ready for a change.
I love the element of surprise in a room, so think beyond the usual, like a bold ceiling. Draw the eye upward with an eye-catching colour or a graphic paper to add texture and dimension. Incorporating architectural elements such as coffered ceilings, exposed beams or tray ceilings can also add a sense of grandeur and elegance.
Balance is key, so ensure that the focal point complements the overall décor without overwhelming it.
Lighting has a three-fold purpose in the dining area: to illuminate for function, to act as a focal point and to set the mood. In this space, it can be bright and joyful, warm and romantic, dark and dramatic, or it can alternate between all three, depending on the function. For this reason, dimmers and layers of lighting are a must.
A statement chandelier or pendant light above the dining table serves as a focal point, adding a touch of elegance and festivity. Wall sconces or floor and table lamps can provide additional illumination, highlighting different areas of the room and adding depth. Candles or string lights added to the tabletop or buffet create a cosy, enchanting atmosphere.
Whether hosting large gatherings on festive occasions or casual everyday dinners, having a dedicated dining area also helps to carve out a time and a place to indulge in good food and great company, without any distractions. OH
It’s no secret that Ontario is in the midst of a serious and extended housing crisis, especially in its largest cities. Premier Doug Ford has adopted a target of building 1.5 million homes in a 10-year span, a goal recommended by the governmentcommissioned Housing Affordability Task Force.
To realize that ambition, the Ontario government’s 2024 Provincial Planning Statement (PPS 2024) is designed to simplify and unify previous land-use planning policies into a single, housing-focused framework to accelerate the development of much-needed homes in Ontario.
LOW-FLOW
We’re also experiencing climate change. With home construction and operation resulting in a heavy carbon footprint, the question is whether environmentally sustainable, net-zero homes will figure prominently in the residential properties constructed in the coming years.
Let’s begin with what defines net-zero homes. The name says it all. Net-zero homes consume as much energy as they produce. To achieve net zero, these homes must meet three main requirements:
They are energy efficient to operate, reaching a perfect equation of energy usage and generation.
They include renewable energy systems, such as solar panels or geothermal.
They lower energy requirements using special insulation, windows and so forth.
The goal is to minimize the carbon footprint of home ownership and promote sustainability. But it’s not just about the environmental benefits. There are immediate benefits for occupants, including better indoor air quality, a less drafty environment and more even temperatures throughout the home. Overall, net-zero homes provide greater comfort and healthier living than a conventional house.
“Net-zero homes are good for your cost of living, the environment, your standard of living and provide good value for your asset,” explains Kevin Rankin, general manager of Watercolour Westport by Land Ark Homes, a net-zero development in eastern Ontario. “People think you must give something up to have a net-zero home, but you don’t. You really can have your cake and eat it too.”
HIGH-PERFORMANCE
But, let’s get real – for homeowners it all comes down to cost, right?
Affordability is an undeniable problem in the real estate market. This is a reality everywhere in Ontario but particularly in the Greater Toronto Area. For this reason, some home buyers might balk at the higher price of a net-zero home.
“Net-zero homes are more expensive, but the additional cost is incremental, usually about five per cent,” explains Rankin. “What people fail to consider is the savings in the operating costs of owning a net-zero home versus a conventional one.”
Energy costs are a huge component of monthly home expenses. With a net-zero home, these expenses are dramatically decreased. The return on investment is immediate and considering the five per cent increase in the purchase price is spread out over decades, it’s easy to see the financial appeal of net-zero homes.
“The reality is it’s a significant mindset shift to ask to spend five per cent more for a better-quality home,” Rankin says. “While builders are slowly moving in the direction of net zero, as an industry we’re a long way away from it.”
Of the thousands of homes being built in Ontario to meet demand, only a relative handful will be net zero. The focus is on cooling red-hot housing markets across the country, which have seen price increases fuelled by low inventory and high competition. Environmental concerns, except when mandated by government regulations, are simply not a priority for many homebuilders.
But Rankin doesn’t believe it’s fair to blame developers. After all, builders
aren’t making boatloads of money – studies have shown the average net profit margin is around 10 per cent and shrinking as various levels of government add red tape and increase fees.
Instead, he maintains it’s simply about demand.
“Net zero is a niche of the market. Only one in 10 people who come into our showrooms do so because of the net-zero concept. Most come for the location or lifestyle,” he says. “Most people are simply blissfully unaware that net-zero homes are an option. Until consumers know it’s possible, they won’t ask. And until the demand increases, developers won’t build them.”
The housing industry, however, has not been standing still. The building code has already mandated sustainability in an industry slow to change.
A further layer of complexity comes from the fact that Canada is facing a shortage of skilled workers in the construction industry (there were 82,000 unfilled positions across the country in June, according to Statistics Canada). Deviating from standard construction practices – and net-zero homes certainly incorporate techniques and systems that deviate from the norm – makes it even more challenging to find skilled tradespeople.
Of the 1.5 million homes to be built by the end of the decade, the number of net-zero homes will be in the thousands.
“The net-zero home concept is basically where EV cars were 10 years ago,” Rankin says. “The technology is there, it’s the future, but the bottom-up demand needs to grow before builders will embrace it.” OH
More than 35 years ago, Dave and Sue Nichols started a small manufacturing business producing solid-wood bedroom furniture. They were dedicated to producing a superior product, made in Canada, that would last for generations. Today, their children help oversee and operate DJ’s Handcrafted Solid Wood Furniture, which includes three retail locations plus the manufacturing base where every piece is made. Their daughter Rebecca Evangelho manages the 8,000 sq. ft. Wroxeter showroom. Husband Chris Evangelho oversees the manufacturing facility next to the showroom and assists clients with custom orders.
DJ’s produces everything from custom kitchen cabinets, bathroom vanities and built-ins to bedroom, dining and living room furniture, plus entertainment units. Every item is crafted with pride and produced from start to finish in their manufacturing facility. Every home has its own style that reflects the people who live there so every piece of furniture can be modified to make it a perfect fit. With an eye to current design trends, new styles are always being added, but don’t worry, if you bought a piece 10 years ago, you can still order additional matching pieces.
“We use all-natural water-based stains and lacquer finishes and our soft-close dovetail drawers always open and close perfectly due to a tested and uniquely designed system,” says Chris.
“These features are built to stand the test of time.” Drawer bottoms are threequarter-inch thick and exceed the industry standard, which translates into drawers that will never sag.
DJ’s Furniture stands behind every item manufactured, and customer satisfaction is paramount.
DJ’s is working to reduce its carbon footprint. It produces paperless 3D custom image models and uses motion sensor lights for the showroom. Wood cutoffs produced in the manufacturing process are ground, formed into wood pucks and used to fuel the boiler that heats the building. DJ’s Furniture is moving with the times while making beautiful furniture that stands the test of time. OH
THIS YEARLY LOCAL EVENT ORGANIZED BY THE CHANTRY ISLAND CHAM-BETTES ATTRACTS MORE THAN 900 PEOPLE WHO TOUR DECORATED HOMES IN SOUTHAMPTON AND PORT ELGIN OVER TWO DAYS. LAST YEAR, THE CHAM-BETTES RAISED $25,000 FOR THE SAUGEEN MEMORIAL HOSPITAL FOUNDATION.
Monica Frauts worked with BLR Drafting & Design and project manager Kevin Meng to build a home that gives her time to enjoy walks to Fairy Lake or to the shops and restaurants on Southampton’s main street.

The deep porch was an intentional design feature with a gas fireplace and stone chimney at one end surrounded by comfortable seating with throws for extra warmth. Flanking each side of the front door are trough urns filled with greenery and red accents. Another urn by the fireplace is layered with birch branches and pine boughs. Upon entering the home, the open-concept plan has 19-foot ceilings in the great room and eight-foot interior doors that add a sense of space to this bungaloft. Monica has chosen traditional holiday décor, which includes an impressive 10-foot tree that dazzles with lights and ornaments. Accent pillows and throws add a level of comfort and familiarity on beds and sofas that had every ticket holder dreaming of curling up inside on a snowy Christmas eve. Continued on page 72

Making the decision to retire to Southampton was easy for Jo-Anne and Dann Kupiec, who love the endless sandy white beaches, the bustling downtown core and the quaint residential streets.

Jo-Anne and Dann vacationed in the area when they were children, but rediscovered the town when visiting friends. They decided to build a home using Dennison Homes and utilizing Jo-Anne’s 20 years as a designer with her own design firm, Design Excellence. The result is perfect. This welcoming home with an open-concept, coastal feel has a large front porch and comfortable swing for coffee in the morning and a glass of wine in the evening. With thoughtfully-placed greenery, treats and décor, Jo-Anne used her designer eye to add festive charm without taking away from the sophisticated interior of the home. Every element invited visitors to come and relax, put their feet up and celebrate the holidays over a meal or a glass of eggnog. Continued on page 76

With time on their hands during the pandemic, they decided to complete exterior and interior projects, taking on much of the work themselves. One of the largest transformations is in the living room where a traditional fireplace wood surround was replaced with floor-to-ceiling stonework completed by Jason Robinson Masonry. This show-stopping feature is the warming heart of the home and one that has become the centre of holiday gatherings. Taking a cue from a recently added paint colour, they used rich blue accents to unite the holiday décor throughout their home. Odette and Andrew have created a stunning destination for the enjoyment of their family and friends who are lucky to celebrate the holidays at their home. Continued on page 80

When Steve and Anne decided to be the next generation to live here, they called Beldman Construction to renovate the main floor, which included a new kitchen with cabinetry by Lavern Custom Wood Products. Anne enjoyed choosing paint colours, finishes and the design that honoured the essence and charm while adding modern elements. With 5,300 square feet of decorating opportunities, Anne dressed every room in the home, with help from Kerri McLean of Interior Motives & Co. and Port’s Emporium, bringing delight to the ticket holders. With five trees placed throughout the home, lights, décor and the joy of the season blossomed in this residence full of character. Continued on page 84
Kim Rice and Rich Grubb stayed at and enjoyed many Bed & Breakfasts during their travels. Those experiences became the deciding factor in opening their own B&B.

They searched for two years with a wish list that included large grounds, being close to the lake and a Victorian home with original details intact. Built by Samuel and Catherine Bricker in 1871, this impressive home fit and they began a six-year renovation that Kim and Rich refer to as their labour of love. 521 Bricker B&B is now their home and a place for guests looking for a peaceful retreat in the heart of Port Elgin. The home dazzled in its holiday finery and with help from the Cham-bettes decorating team, every room was a festive delight that complemented and highlighted the period details. OH

When it comes to hosting overnight visitors, a guest bedroom should be more than just a place to sleep. It should be a haven of comfort and warmth that makes your guests feel pampered and welcome. Here’s how you can create a guest bedroom so cosy and inviting your guests will find it hard to leave.
The bed is the focal point of any bedroom, especially in a guest room where comfort is paramount. Start by investing in a quality mattress that provides the perfect balance of support and softness. Even if your mattress is on the firmer side, a plush mattress topper can add a layer of comfort that feels like sleeping on a cloud. When it comes to bedding, think layers. Start with high-thread-count cotton sheets, as they are breathable and soft against the skin. Add a lightweight blanket or quilt, and top it off with a cosy duvet or comforter. Be sure to offer a variety of pillows – some firmer, some softer – so your guests can choose what works best for them.
A few decorative pillows and a throw blanket at the foot of the bed add a touch of style while offering extra warmth on chilly nights.
TIP: As much as we designers love pillows, don’t put too many on the guest bed, as most guests can get overwhelmed when trying to put them all back in your preferred position! We love a lumbar pillow or two or three accent pillows in a guest suite.
The secret to making anyone feel at home is to make everyone feel at home. Neutral colours and finishes go a long way in creating serenity for many.
Lighting also plays a crucial role in setting the right mood. I start with a soft, warm overhead light for general illumination. Supplement this ambient lighting with table lamps on the nightstands or install wall-mounted sconces on either side of the bed. These provide focused light for reading without being too harsh. Choose lamps with dimmers, which allow your guests to adjust the light to their liking. A small nightlight can also be a thoughtful addition, helping your guests navigate the room in the dark.
Take a cue from a memorable hotel stay, and strive to pamper your guests. Outfit the room with some basics: fresh towels and washcloths, placed either in the room or in the adjacent bathroom. Extra pillows and blankets should be easily accessible, perhaps stored in a decorative basket or ottoman. Consider adding a pair of cosy slippers or a plush robe for your guests to use during their stay. These small touches can make a big difference, especially on cold mornings. A water carafe and glasses on the nightstand, along with a few snacks can make visitors feel at home when they’re staying at yours.
Scents play a significant role in creating a welcoming atmosphere. A lightly scented candle or an essential oil diffuser can fill the room with calming aromas like lavender, vanilla or sandalwood, which are known to promote relaxation and sleep. Be sure to choose scents that are subtle and not overwhelming.
Seasonal fresh flowers always elevate the room, adding both a visual and olfactory appeal. A small bouquet on the nightstand or dresser brightens the space. If fresh flowers aren’t practical, consider a small potted plant.
Finally, consider some “extras” that will make your guest bedroom truly special. A selection of books or magazines on the nightstand offers guests something to read as they wind down for the night. A charging station for phones and other devices is a modern convenience that will be appreciated. Personal touches like a framed photo or a small piece of artwork can make the room feel more like home. If space allows, a comfortable chair or bench adds a place to sit and relax, further enhancing the room’s cosy vibe.
Creating a cosy guest bedroom is all about attention to detail. If done right, your visitors may never want to leave. But when they do, you’ll have a stunning space to indulge in, without ever leaving the comfort of home. OH

The new year always feels like a good time to reflect on your health and decide what’s working, and what’s not. If you’re looking to make small changes that can have a big impact on your physical and mental health, consider some of these daily habits.
You might already be doing some, or most of these, which is great! If you’re starting from scratch, pick one or two habits to focus on at first and build from there.
Staring at a screen for prolonged periods has no positive effect. Try to find time in your day to step away from the screen and replace it with another activity.
Yes, even in the dead of winter, get outside at least once a day. Sunlight and fresh air benefit your mental and physical health.
Hobbies are a great way to get out of your comfort zone, flex your creative muscles and have fun! Plus, depending on the hobby, you might naturally embrace some of the above habits.
Find an activity you enjoy and do it daily. Walking, running, yoga, skiing, pickleball – it doesn’t matter what it is, as long as you find something that prevents you from having a completely sedentary day.
Your body is 50 to 60 per cent water, making it the fluid of choice when you’re thirsty. If you find water boring, try adding a sugar-free flavouring or infuse it with fruit. If you forget to drink during the day, try setting reminders. And invest in a water bottle to carry with you when you’re at work or on the go.
If there is one nutrient to focus on in 2025, it’s fibre. Most people don’t get enough in their diet, and fibre does much more than keep us regular. It keeps us feeling full and supports blood sugar and cholesterol levels. Try to add a fibre-rich food at every meal and snack.
Planning meals doesn’t have to take hours, but it can save you hours during the week. Plus, meal planning and prepping can help you make healthier food choices.
We’ve all heard the saying that breakfast is the most important meal of the day, but honestly, there is some truth to it. Breakfast, especially one that’s protein-rich can keep you feeling full longer, help control your appetite during the day and reduce cravings. Breakfast is important, but don’t forget about other meals and snacks. Try not to go longer than four to six hours without eating.
Getting enough quality sleep is highly underrated. Poor sleep, even if it’s short-term, can impact our immune system, food choices and overall health. For adults, 7-9 hours is suggested. Try to create an evening routine and sleeping environment that will promote good sleep.
Set some time aside for yourself each morning to mentally prepare for the day. It might be journaling, stretching, reading or simply sitting in silence drinking your coffee. OH

She had purchased a lot in Port Elgin back in 2009, but it wasn’t until 2022 that she decided to explore the idea of building her dream home on the land. With careful planning, personal touches and the help of a skilled team, Ann moved into her new home in the spring of 2023, marking the start of an exciting new chapter.
It all started when Ann decided it was time to leave her home in Caledon.
Born and raised on a dairy farm, she had always lived in the country, so Port Elgin, with its natural beauty and small-town feel, quickly appealed to her.
“My brother lives in this area, and when this lot became available, I jumped on it,” she says. Still, it wasn’t until years later, when she sold her home of nearly four decades, that she began planning her new build.
One of the important design considerations in the home was having a space in the open-plan living area for Ann’s Samick piano, where its beauty and sound can be enjoyed by friends and family who visit. The dining table was purchased at Chatterson’s Furniture & Appliances and matched with upholstered chairs from Smitty’s Furniture.
OPPOSITE, TOP RIGHT: The front porch area was designed and installed by Harvey Design & Build. The Brandford Blue stone feature wall and skirting that surrounds the home was sourced through Shouldice Stone and installed by Royal Homes. BOTTOM

The quartz island counter was sourced and installed by Cambria. KitchenAid appliances were purchased and installed by Square Deal Neil’s TV & Appliances. The portrait of the

Her first encounter with Royal Homes came through a family connection. A realtor by trade, Ann had helped her niece purchase a piece of land in Mulmur, and her niece’s decision to build with Royal Homes left a lasting impression.
“My niece was super happy with them,” Ann says.
Partnering with Liz Thompson from the Wingham office, Ann envisioned a simple, comfortable home with a deep connection to the outdoors.
One of the key elements Ann was after in her new home was downsizing from her previous two-storey house to a single-floor bungalow.
“I wanted the ease of everything being on the same floor,” she says.
With its open-concept design and large windows that flood the space with natural light, the house feels spacious and connected to the outdoors. “The windows are so big, and it’s this fullness, this openness. I love it.”
Though Royal Homes is known for prefabricated designs, Ann quickly learned how customizable the process could be.
“People think prefab homes are cookie-cutter, but Royal Homes showed me how much they could personalize,” she says.
She was deeply involved in the process, often visiting the site daily. Her project manager, Andrew Proctor, and the rest of the Royal Homes team made the experience collaborative and smooth. Continued on page 116
“No matter what I came to them with, they were happy to make it happen,” she says.
One major customization was in the garage, where Ann had in-floor heating, a drainage system, and EV ports installed. “Royal did all of this for me,” she says, pleased with the team’s flexibility.
During the construction process, Ann appreciated the attention to detail and communication from Royal Homes. As someone who liked to be hands-on, she valued being kept in the loop on every decision. The ability to tweak plans along the way was especially important to her. “The whole process felt like a true collaboration,” she says, reflecting on her experience.
By April 2023, Ann had moved into her new home, and it immediately felt like the perfect fit.
“Living here, it’s peaceful. I don’t even need curtains. I look out my window, and it’s like art,” she says.
Her connection to nature, always present in her life, now feels even more pronounced. “I was always in the country, but I feel more immersed in it now. It’s lovely.” Continued on page 118
“I LOOK OUT MY WINDOW, AND IT’S LIKE ART.” –ANN CATION

Windows, all supplied by Royal Homes, capture the view of the deciduous and coniferous forest that surrounds the home. ABOVE: The art over the soft grey leather sofa from Smitty’s Furniture was sourced through The Light House Photo Gallery in Southampton.
Ann’s new home wasn’t just about comfort; it was also about convenience. The downsizing made life simpler, and thoughtful customizations – like in-floor heating and energy-efficient features – ensured the home would suit her lifestyle for years to come.
Beyond Royal Homes, several local trades contributed to bringing Ann’s dream home to life. Steve Snyder of Keith Snyder Construction Ltd. managed the excavation, grading and septic system installation, while Harvey Design & Build crafted the front patio that Ann enjoys daily. Wilson Solutions provided built-ins and all window coverings. Her furniture came from Smitty’s Furniture, and Square Deal Neil’s TV & Appliances provided the appliances.
“Everyone I worked with was fantastic,” Ann says.

MIDDLE & RIGHT: The family bathroom can be accessed through the door to the hallway, or it can become the en suite to a guest bedroom through a pocket door. Plumbing was installed by Lang’s Home Energy. A soft muted colour palette in the guest bedroom is conducive to a long winter’s nap. BELOW LEFT, MIDDLE & RIGHT: In the primary bedroom area, a walk-through closet leads to the en suite, which has a vanity that includes a niche for a stool and a large shower. Cabinetry was supplied by Royal Homes. The primary bedroom has custom, wall-mounted nightstands. Window coverings and closet built-ins for the home were supplied and installed by Wilson Solutions.
ABOVE: The expansive rear deck has a dining and seating area and benefits from an elevated position that overlooks the land around the property. RIGHT: Hardscaping and landscaping were designed and completed by Harvey Design & Build. FAR RIGHT
TOP & BOTTOM: The 900 sq. ft. garage has in-floor heating, a drainage system, EV ports and access to the unfinished lower level of the home.
Gentek vinyl siding in Storm is matched with aluminum fascia and soffit, also in Storm, keeping maintenance of the exterior of the home to a minimum for Ann.
The move from Caledon to Port Elgin marked a significant change, but it was one Ann wholeheartedly embraced. “It reminds me of being a kid growing up in Caledon. The population is smaller, and I hesitated because of the snow, but I love it here,” she says.
With a peaceful home just minutes from the lake and surrounded by friendly neighbours, Ann has found the tranquillity she was seeking.
Looking back on the process, Ann is thrilled with her decision to work with Royal Homes.
“I would work with them again for sure,” she says. “They were very professional, had great customer service, and even followed up after the build was complete. They don’t leave you high and dry.”
Now, with her new home complete, Ann enjoys the peace, beauty, and simplicity she always dreamed of.
“Living here, it’s awesome. It’s peaceful. I am so happy,” she says, content with the home that has brought her closer to nature and given her a fresh start in Port Elgin. OH
PROJECT AND PHOTOGRAPHY TARA CHATTELL
Add some colour and whimsy to your holiday accoutrements with these easy-to-make felt trees.
Felt sheets in colour of choice
Paper cones in sizes of your choosing*
Card stock for leaf template
Fabric pen or pencil
Fabric scissors
Hot glue gun
Hot glue sticks
*You can purchase premade papier mâché cones or make your own with poster board.
On a piece of card stock, draw a leaf in any shape you’d like; we’ve done a teardroplike shape. Cut leaf out with scissors. This will be your template.
Place your leaf template on a piece of felt and trace around it with a fabric pen. Repeat this as many times as needed to fill the felt sheet. Cut out the leaf shapes from the felt using scissors. Repeat this step with multiple sheets of felt in different colours until you think you have enough to cover your paper cones. You can always cut more if needed.
Using a hot glue gun, begin gluing your felt leaves around the base of a paper cone. Position the first row of leaves so they hang over the base of the cone by ¼ inch or so. This will ensure the cone is fully covered and allow the bottom leaves to flare out around the base of the tree when it’s standing.
Begin gluing the second row of leaves, being sure to overlap and offset the leaves in the first row. Continue gluing rows of leaves until the entire cone is covered.
To cover the tip of the cone, cut a few leaves in the same shape as the others at about half the size. Glue the smaller leaves at the tip of the cone, similar to the other rows.
Repeat the above process until all of your paper cones are covered with felt leaves.
Now, find a place in your home to display your colourful trees for the holidays and enjoy! OH
So, little snowbird, take me with you when you go…
Spread your tiny wings and fly away. And take the snow back with you where it came from on that day.
–ANNE MURRAY
As we bird through the fall and into winter, we have diminishing returns for our efforts. Summer’s bounty of birds has migrated to many points south – to the southern U.S., across the warm Caribbean isles, to the neotropics of Central America or even further as the ambitious, long-distance migrants head for South America.
Coincidentally, many humans take this as a cue to do the same. We’re known as snowbirds – Canadians who travel south to warmer climes in the winter. Whether you’re a snowbird or a real bird, the aim is the same – fly away south to escape the rigours of our winters.
But where to? Well, if you’re a travelling birder, there are endless options. So, let’s wing our way out of winter’s cold grip, meet up with some of our familiar summer birds in their winter vacation spots and get acquainted with an ever-increasing number of species that choose to permanently reside in the warm, southern environs.
You don’t have to travel far to find our summer songbirds – robins, red-wings, swallows and other familiar species. The Sunshine State is perhaps the most popular destination for Canadian snowbirds, but the birders’ bonus is you’ll also encounter birds that don’t occur in Ontario. Florida is where we get our first taste of subtropical birding.
Florida is home to over 350 commonly occurring, native bird species, bolstered by an additional 200 or so strays and accidentals. Plus, due to the inviting subtropical climate, a range of exotic birds – often escaped or released colourful caged birds such as the Monk, Nanday and Roseringed Parakeet, and several others – give Florida an even more tropical vibe. All this, combined with excellent parks, birding trails and the surrounding seas, makes Florida a terrific birding destination.
Just off the Florida Keys, there’s a place called… Let’s put on some tunes to get in the mood for some tropical birding. From Florida, we’ll take a quick trip to the islands of the Caribbean archipelago. These tropical oases abound with birds and many have their own special, one-of-a-kind endemics. Endemics are prized among birders, especially the listers, as they are species that exist in only one place and nowhere else in the world. Virtually each island, with its geographical isolation from others in the Caribbean, has their own endemics. Cuba has the Cuban Tody, the Bee Hummingbird and 23 more! Jamaica has the Red-billed Streamertail and 26 additional endemics. The Bahamas have the Bahama Woodstar… and on it goes. These rarities, along with the many other birds of the islands, make for a birder’s paradise wherever you might land.
We’ll make a quick stopover in Texas before heading further south. Texas is a top destination for birders working on their North American life list, as more species of birds are found there than in any other U.S. state (California and Alaska are close seconds, but we’re staying our course south, not west or north). Texas is home to just over 600 species. There are three reasons why Texas has so many birds – location, location, location. Texas is home to eastern Atlantic coastal species, but due to its central location in the U.S., it also attracts a mix of species from north-central and western states, as well as birds from Mexico. Mexican species pay no heed to the
border crossing restrictions and regularly fly into Texas. Southern Texas, or the “Texas Tropics,” is a hotspot of subtropical rarities such as Green Jays and Chachalacas. Famous birding destinations in Texas are numerous – High Island, Bolivar Flats, Santa Ana, Laguna Atascosa, Big Bend and Aransas, among other places. For birders, Texas holds many highly sought-after avian specialities, with perhaps the best-known being the Whooping Crane. Once critically endangered and down to only 15 birds, conservation and protection has helped the species replenish to a few hundred. This remains, however, an incredibly low number in population stability terms, and one good hurricane could wipe them out again. So, why wait to see this iconic symbol of endangered species? Go birding in Texas!
Although Mexico is a little off course with its westerly orientation, its Yucatan Peninsula juts significantly into the Caribbean Sea and is worth a quick stop. The Yucatan is the most bird-rich part of Mexico so this is a fitting place to touch down as we continue our flight south. Mexico is among the top 10 most biodiverse countries in the world, and the birdlife is part of the reason. Here, from your oceanfront eco-tourist lodging, you’ll find flocks of Flamingos in the shallows, Pelicans skimming the waves and magnificent Frigatebirds soaring high overhead. There’s so much more to discover in Mexico, but we are heading for the big bonanza of birding destinations and must get going.
We’ll get there fast and then we’ll take it slow… Now we’re making our way through the string of small countries that connect North and South America. We’re deep in the tropics now, complete with its jungles, rainforests, cloud forests and birds –beautiful, colourful, amazing birds. Each country more than makes up for its size with an abundance of birds, ever-increasing
in numbers. Belize features around 600 species, Guatemala 700, Honduras and Nicaragua almost 800, Costa Rica about 900, and Panama, the last link to South America, an amazing 1,000 species. Wow!
And such birds! They come in a kaleidoscope of colours – golds, greens and emeralds, crimsons, scarlets and saffrons, azures and violets, olivaceous and ochraceous and more. These are the Euphonias, the Parrots, Manakins, Toucans and Trogons – whole new families of birds unlike anything you’ve seen before. Their colours correlate to latitude – the further south we go, the more colour is infused in the birds’ plumages, attributed partially to the need to be seen in the deep, dark jungles. Their names equally captivate and intrigue – Resplendent Quetzal (perhaps the most beautiful bird in the world), Lovely Cotinga, Shining Honeycreeper. The list goes on.
Take your pick of birding in any of these bird-rich countries, you can’t go wrong.
Give me a tropical (bird) contact high… For the last leg of our journey, we’ll take a transcontinental flight to discover a sampling of South American birds, or, as it’s famously known amongst birders, “the bird continent.” South America hosts more species of birds than any other continent in the world.
Take, for example, Colombia, a country roughly the same size as Ontario. Colombia is considered the birdiest country in South America, and arguably, the world! It is home to more than 2,000 species. By comparison, Ontario’s official bird list, according to the Ontario Field Ornithologists, stands at about 300 regularly occurring species. To be fair, there are an additional 200 or so accidentals, strays and vagrants, but these species are only seen once, or less than 10 times over 10 years.
And what about the dizzying diversity of species. The birdiest country in the world has a dazzling 150-plus different
species of hummingbirds alone! Ontario has one member of these iridescent, wee birds – the Ruby-throated Hummingbird. And Tanagers – Ontario has basically one of these beautiful species, the Scarlet Tanager. Colombia has more than 80!
Now that’s where you wanna go… Birding takes you to places you would never think of visiting otherwise – from coastal wetlands to towering, tropical cloud forests, through jungle trails and up to mountainside ecolodges. It’s mind-boggling, mind-blowing birding far away from the snow. And you really should go!
But for now, we’ve reached the end of our virtual winter birding vacation. Spring is coming, and the lengthening daylight hours are triggering the migration instinct in our overwintering birds. Soon, they will head north again on another incredible journey. We should get back home to greet them. OH

1 Tbsp all-purpose flour
Pinch of salt
1 cup whole milk
¼ cup cream
2 egg yolks
2 Tbsp butter in several pieces
1 Tbsp vanilla extract
2-3 Tbsp rum or bourbon
In a saucepan, whisk together milk, butter and sugar. Heat over medium heat until melted. Once cooled, whisk in eggs, cinnamon, vanilla and pinch of salt.
Spread the cubed bread in the greased baking dish or in ramekins. If using, mix raisins into the bread. Pour the custard mixture over the bread, pressing the bread down gently to ensure it’s fully soaked. Let it sit for 10-15 minutes. Bake for 25-30 minutes, or until the top is golden brown and the centre is set.
In a saucepan, whisk together the sugar, flour and pinch of salt. While whisking, add milk, cream and then the egg yolks. Bring to a simmer over medium-low heat, whisking almost constantly, paying attention that no buildup happens along the bottom edges of the pan. Continue to simmer gently for several minutes until sauce is thickened and coats the back of a spoon. Remove from heat, and while continuing to whisk, add butter, vanilla and rum or bourbon (if using). Push sauce through a strainer. Pour sauce over bread pudding to serve. OH
