From humble beginnings as one of Singapore's earliest markets to being the foodie paradise it is today, Lau Pa Sat has come a long way.

Formerly known as Telok Ayer Market, the building is one of the oldest and dates back to the nineteenth century.

Trivia: Lau Pa Sat actually translates to "Old Market" in Hokkien and was listed as a National Monument in 1973.

Despite constant improvements, such as better seating for lunch crowds, more ceiling fans to keep the place well ventilated, and new stalls, some things remained the same. Spanish-born Alain Devahive – whose CV includes a decade at legendary Spanish restaurant El Bulli – offers diners a deeper understanding of Catalonia’s proud food culture through a concise menu that combines traditional flavours with creative flare. Although the emphasis is on sharing and there are familiar bites to start, such as padron peppers and croquettes, larger plater plates featuring foams and plenty of truffle indicate that this is a far more ambitious version of Catalonian food than straight-up tapas.
