We have been busy gearing up for this season to ensure Oh18 gets the full Chickasha Christmas Experience. This issue is all about the holidays and what Chickasha has to offer to enhance your holiday season. Whether you're needing a location for a Thanksgiving/Christmas party or have a catering need, Oh18 has you covered. We are excited to announce Buy Chickasha is back this year as well as a new attraction, December at the Depot. Of course Chickasha wouldn’t be Chickasha without the Festival of Light. Festival of

Light

A

s of 2021, Chickasha will celebrate 28 years of the Festival of Light. Each year, this volunteer-run, nonprofit organization turns 43 acres of Shannon Springs park into a dazzling display of over 3.5 million lights. From the iconic 172-ft Christmas tree to the beautifully lit bridge, there isn't an inch of the park not covered in Christmas cheer. The Festival of Light started as a small community spark and reminder of who the Light of the World is and now reaches over 250,000 people a year with visitors from across the U.S. and other countries. We cannot wait to celebrate Christmas with the community and all of Chickasha's visitors during this year's Festival of Light!

Shannon Springs Park

hannon Springs park began as a watering hole to roaming buffalo, elk, and many other creatures along with travelers in the late 1800s. It was favored by the Plains Indian tribes. In 1906, the acreage we no know as our beloved park was deeded to Laura Shannon, a Chickasaw Indian thus giving us the name Shannon Springs Park. The Hopkins family leased the land and began building the park and the city's first swimming pool which held 800,000 gallons of water and housed many diving and beauty contests. It could hold nearly

400 people which made it the largest pool in Oklahoma. Also built at this time was the still-standing Spanish Mission style bathhouse. After years of standing vacant, it has been refurbished, painted pink and white and is used as a recreation facility and community building. As of 1921, the City of Chickasha took ownership of the land which is now our 42 acre park and deemed it the perfect place for strolls, play, fishing and outdoor fun.

In the 1930s, a 1,600 seat amphitheater was constructed and used for concerts, dance recitals and city-wide talent shows. The amphitheater is still used today for live music and celebrations.

Stovetop Mac & Cheese with white cheddar

Preparation

Ingredients

Step 1 In a large pot, melt butter over medium heat. Stir in the flour and cook for 1 minute. Pour in water, and whisk until smooth. Pour in milk and whisk to combine.

• 3 tablespoons butter • 3 tablespoons all-purpose flour • 3 cups water • 4 cups milk • 1 lb. uncooked elbow pasta • 1 teaspoon garlic powder • 1 teaspoon ground mustard • 1 teaspoon salt • ¼ teaspoon ground black pepper • 4 cups sharp white cheddar cheese • ½ cup Parmesan cheese • ¼ cup mozzarella cheese

Step 2 Add uncooked pasta, garlic powder, ground mustard, salt and pepper. Bring to a boil over high heat, then reduce heat to medium low heat. Cook for 9-10 minutes until al dente, stirring occasionally to prevent the pasta from sticking to the bottom of the pot. Step 3 Remove from heat and stir in the cheddar, Parmesan and mozzarella. Step 4 Make the panko topping (optional): In small bowl, mix together the panko breadcrumbs, garlic powder, and paprika. Heat olive oil in a skillet over medium heat and add panko mixture. Toast the breadcrumbs until light brown, about 2-3 minutes. Remove from heat. Step 5 Serve mac and cheese warm, with a sprinkle of toasted panko on top.

Panko Topping • ½ cup panko breadcrumbs • 1 teaspoon garlic powder • ¼ teaspoon paprika • ½ tablespoon olive oil


Stuffed Butternut Squash with wild rice

Preparation

Ingredients

Roast the Butternut Squash: • Preheat oven to 350 F. Cut butternut squash in half lengthwise, remove seeds. Place cut side up onto a baking sheet. Brush on some oil and sprinkle chopped thyme on top. • Bake 45 mins, or until soft. If it's fork tender, it's ready.

• 1 medium butternut squash • 1 tsp fresh thyme, chopped • ½ TB olive oil • ½ cup Basmati white rice • ½ cup wild rice • 1 TB vegetable oil • ½ cup onions, chopped

Prepare the Rice: • Rinse rice. Drain well and set aside. Heat oil in a large pot over medium high heat for 2 minutes oil sizzles and shimmers. Add onions and mushrooms, sauté for 2-3 minutes. • Add rice and stir well to combine. Add peas, vegetable stock powder, salt, and pepper. Mix well and cook for 5 minutes. • Add one cup of water (water level should be one inch above the mixture). Bring to a simmer over medium heat. Turn heat down, cover and simmer for 25-30 minutes. Check to see if the liquid is absorbed. • Let cool for 10 to 15 minutes. Gently fluff the rice. Note that this rice mixture is supposed to be a little mushy. Assemble the Stuffed Butternut Squash: • Once the squash is tender, cool to room temperature. Scoop out pulp, leaving the butternut squash shell at ½-inch thick. • Add pulp to the rice, stir well to combine. Transfer the rice mixture evenly amongst the two shells. • Sprinkle cheese on top (optional). Place the stuffed squash back into the oven and broil until the cheese melts and turn golden brown. • Let the stuffed butternut squash cool before serving. Sprinkle fresh parsley on top.

• ½ cup shredded cheddar cheese or mozzarella cheese (optional)

• 1 TB fresh parsley, finely chopped (for garnish)

Altrusa is a nonprofit organization that focuses on literacy and community service. For years Altrusa has donated and served in multiple Grady County schools, Adult Education GED, along with other fundraisers. Their biggest fundraiser is the Hall of Trees Gala. This event begins with a silent auction leading into an elegant dinner. To top the night off a live auction is held with beautifully decorated Christmas trees. All proceeds from this fundraiser are donated to charities in Grady County.
