We have all been touched by the troubling events taking place this year. Sadly, some of us have been impacted more than others. The resulting disruptions to our Fairs, businesses, and families have created numerous challenges for us to overcome. It may seem counterintuitive now, but out of these difficulties will arise new and innovative opportunities. Many of us had hoped this fall would see an easing of event cancellations. As of this writing, only a handful of Fairs have been held this summer, albeit with costly adjustments to their operations. Therefore, it appears that for most of our Industry, the current trend will continue until the fear of COVID-19 subsides. Even with the timeline of returning to events being largely out of our control, it is important to remember that we are

not powerless to help shape our future. The path out of these difficult times will require innovation, something with which we entrepreneurs are well acquainted. For example, Fair Food Drive-Thrus are appearing on Fairgrounds around the country. These evolved from individual Concessionaires trying to survive the shutdown by setting up their idle equipment in local parking lots. Their experiments have led directly to the development of these Fair Food Drive-Thrus. Often one innovation leads to another. This season’s Drive-Thru events were meant to produce much-needed revenue for Concessionaires and Fairs. They have since evolved to include helping keep the Fair brand alive within these communities. New events on Fairgrounds, like

Please get these to the NICA Office before November 10, so your suggestion can be considered. The NICA Foundation awarded 18 scholarships for a value of $33,500, which was an increase of $3,000 over our 2020 goal. We had over 30 submissions. Fairs across the nation. A call or letter to your Representatives urging them to put their support for this really makes a difference. A comment that was brought to my attention was, “Why is NICA promoting Fair bills?” My answer is that if these Fairs shutter their doors, we will have no place to work, no matter what part of the Industry you represent. This is where the NICA slogan “Together We Can!” truly applies. Stay healthy and safe. ▲

Riffing With Rey

Rey O’Day, Executive Director

In March I wrote about what a joy it was to kick off the year visiting the Florida Strawberry Festival and the Riverside County Fair and Date Festival in California. In my euphoria I waxed poetically about the plans I had to visit 20 more Fairs. Yikes! Little did I know the Fair visiting would end abruptly due to COVID-19 triggering hundreds of 2020 Fair cancellations? After watching Marla Calico, IAFE President and CEO, make her way through the Delaware State Fair, I was inspired to jump on a Southwest flight and visit the Wyoming State Fair. I tip my hat to the State and County Fairs that have forged forward and opened with safety in mind: most of them with empty Exhibit buildings and without concerts; and most with Youth Livestock programs, Food and Beverage, Outdoor One of the many clever Commercial, and Carnival social distancing signs Rides and Games. throughout the Fair For the Fairs that have chosen to cancel, many have produced some variation of a Fair Food Drive-Thru where Fair Fans could purchase some of their Fair Food favorites and gratefully some of our Members have worked. Fairs touch so many aspects of our lives; yet, when they need to connect Fairgoers to their best memories and make some money, it is Animals, Youth, Food, and Rides that tell the story today. We cannot forget the Fairs that did the math to socially distance, figured out capacity, met

with Vendors, stayed in communication with stakeholders, and wrote detailed plans hoping to open only to have Health Departments or politicians or state officials turn down their requests. Heartbreaking for all concerned! I returned from my trip confident and clear that we could open events with a plan; a plan that has to include strong collaborative relationships with 2,800 Health Departments and our Sister Organizations; reactivating dynamic Communication Committees; and bravely stepping out with common sense, safety standards, and shared purpose. Recently, Gary Burnison, Korn Ferry CEO, said, “I was reading an article about the iconic company General Mills, which has been in business since 1866. General Mills Chairman and CEO Jeff Harmening described going into the company’s archives to examine strategies and trends during the 1918 Spanish Flu pandemic—and being surprised to read about making sure employees wore masks, washed their hands, and practiced social distancing. ‘It’s amazing how little has changed over 100 years,’ he stated. ‘Indeed as the saying goes, the more things change the more they stay the same.’” Knowing that we’ve been here before provides both context and comfort. We do know what to do and we have much to learn about what else to do. What we cannot do is get stuck sitting on the

“Voice” continued from page 5 ►► drive-in movies, concerts, and food events, are being utilized to keep Fairs in the forefront of people’s minds. These touchstones are even more important during the shutdown since many Fairgoers will have to wait 23 months or more for their local show to come around again! Fairs convey their value-proposition to the public through a variety of messages, of which Fair-based businesses have always been an important part. This year these businesses can play an even bigger role in showing their value to communities. The IAFE recently released the results of a survey that clearly demonstrates companies and brands who support events during the shutdown can realize significant benefits from a grateful public. Here is an excellent opportunity for us to add a new storyline to Fairs’ already compelling messaging—one that will help drive future business to us! The 2020 Return to Live Events Survey, conducted by Enigma Research, reported: “Event-goers highly appreciate brands that support cancelled or postponed events. Typically, 38% of event-goers feel ‘very favorable’ towards sponsors and brands supporting live events. By comparison, 58% feel the same way regarding sponsors that support cancelled or postponed events. 90% were ‘very’ or ’somewhat’ likely to conduct business with brands that continue to support events. Results were consistent across all event types, geographic regions, and age groups” (www.fairsandexpos.com/files/galleries/ ReturnToLiveEventsSurvey.pdf). The survey shows that the Fair-going public will reward businesses who support events during the shutdown. Many of us have or will contribute in some way to a Fair’s survival. Show Management can leverage this support through

positive messaging designed to appeal to the public’s desire to stand by their favorite event. Whether you were one of the few Concessionaires who are blessed enough to participate in a DriveThru event, or a Commercial Exhibitor who left rent money with a show for next year, or one of myriad other businesses who aided events in some way, your story is a valuable asset! Collectively, these efforts contribute to a compelling narrative, one that reaffirms to the public just how critical we are to Fairs and thereby to the communities they serve. If we craft them well, these accounts will give the public yet another reason to go out of their way to do business with us once we reopen. So how will you innovate your path forward? ▲

Thoughts from a This month’s Statement of Communications & Management Philosophy is from Larry McConnell, CCE, McConnell Concessions:

Larry McConnell, CCE CCE Earned in 2000

My Management Philosophy has always been “to treat everyone as I wish to be treated,” and to never ask anyone to do anything that I haven’t already done myself. There was nothing formal about my Management training; it was all learned in the trenches. I grew up in a family business where my Dad was the “front man” and my Mother worked in the kitchen. From this upbringing I developed my Management style. I consider myself a teacher who trains and delegates. One of my strengths is that I am a good

listener and I treat everyone fairly. I give my top Employees responsibilities that include customer service and Employee relations, as well as opening and closing procedures. I want all to feel they are team members who are essential to making the operation run smoothly. I truly value my Employees and they know it. I consider many of them good friends. We rate customer service and food quality as our top priorities. I’ve always believed that if you treat the customers fairly and kindly and serve the best product possible, you will be successful. ▲ Visit the CCE website for more information about how to apply: www.nicainc.org/CCE

“Riffing” continued from page 7 ►► “fence of yesterday” watching and waiting. With a perspective on the past, it’s time to shift our focus forward. I also want to give a huge shout out for our Members who have organized Fair Food DriveThrus in collaboration with other Members or set up Food Courts in parking lots. When I have spoken with those of you who have organized these events, you each mention that it fulfills your desire to provide work where each Vendor has the opportunity to make money and provide Fairgoers the tastes and treats they are missing. I close this month’s Riffing with a paraphrased Stephen Sondheim lyric: Stop worrying where you’re going, Move on. If you can know where you’re going, You’ve gone. Just keep Moving on. I chose, and my world was shaken. So what? The choice may have been mistaken, The choosing was not! 10

September 2020 NICA News

Daryl Whicheloe, CCE writes: “The positive is we did get to open and these two young men were told they were going to the Fair but unfortunately there wouldn’t be any rides—only food. Their Mom said they wanted to write thank you notes to us for being there. This made all of the BS worth it.”

You have to Move on. Look at what you want… Not at where you are… Not at what you’ll be... Look at all the things you may still do. You will Move on. I look forward to safely Moving On Together. ▲

Member’s Voice The greatest part of NICA is the Membership! The Member’s Voice influences where the Organization is headed and what it can improve. The NICA Office has been continuing their survey of responses from Renewing Members. Phil and Chris Mostaccio established Completely Nuts, Inc. in 1991 as a Mobile Gourmet Nut Concession business specializing in cinnamon roasted almonds, pecans, cashews, and peanuts. Their company specializes in Arts and Crafts Shows in the Chicago area and throughout the Midwest. They mostly work indoor locations at Fairs and Convention Center events, and their favorite event by far is the Iowa State Fair, where they have been a Vendor since 1992. According to Phil, “It is a very well run event and customers always enjoy seeing us year after year.” They opened a year round location at Chicago’s largest tourist attraction, Navy Pier, in 1995. Having this location allows them to be off the road, and in their home town, for much of the year. Phil states, “Our Employees are one of the keys to our success. It gives us great pride to watch our young Employees grow into their own careers. Currently we have several second generation Employees, which lets us know we made such a positive impact on former Employees that they want their children to work with us.” Although their business is not a typical Fair Food Concession, he states “being a Member of NICA is a great asset to us. It is valuable to get the wealth of information available and to see how other Concessions solve the problems we all

have.” He adds that it is also comforting to know that there is an Organization helping to “represent our concerns with the Fair Industry.” Phil reads the NICA News in print form and always comes out with some new helpful information. “It is easy to think of yourself as an island, alone in the situation we are all in, but with the NICA Organization we are only a phone call or email away from people who can provide support and ideas to help you push through.” Since Chris retired from her job in the corporate world, the Mostaccios are always looking for other events to be a part of. In these trying times, they are still getting in a little work. “Our Navy Pier locations are open under restrictions and we have concentrated on pushing our mail order business, but there is nothing like working with the public on large events. Our nuts are all roasted fresh onsite and the aroma draws attention wherever we go.” They state that they both enjoy hanging around the neighborhood with friends and family and traveling to Arizona for a couple months in the winter “does not hurt either.” Phil ends the interview with a final thought: “We are open for any suggestions for events that would benefit from our small but mighty company, or if you ever need a hand in the Chicago area please reach out. We are always ready to help.” The NICA Office plans to continue these surveys throughout the new year and beyond regarding your Membership, use of benefits, experience in the Industry, and more. If you hear from us, let us know what’s on your mind! ▲ September September 2020 2020 NICA NICA News

Are You OPEN for Business? During this challenging time, we can count on the entrepreneurial spirit of Concessionaires to inspire others. We have heard stories of how successfully some of our Members are doing during this time, and we want to know if there’s anything you’d like to share regarding your experiences. In this edition, we take a look at one NICA Member who found some inspiration during this time from a traveling family.

I Love the Outdoor Amusement Industry! Kathy Ross, CCE, Ross Concessions One night in July, as Jeff and I were closing the trailer for the night, a car pulled in and the Wagoners, a family of five, comes to the trailer. I joked with the Dad that it was like seeing a clown car: “They just kept coming out!” He laughed and said, “You have no idea!” As their order was cooking, which included funnel cakes and fried dough, I asked if they were from the Albion area and they said no. They were from Illinois on vacation, taking back roads with no real plans but to go to Niagara Falls that weekend and eventually visit West Virginia. They saw our trailer on the way and just had to stop. All of the Fairs had been canceled in Illinois near them and they were so excited to get Fair Food! The next morning, I got a message from the Mom with pictures they had taken while at our trailer.* With so many Fairs canceling, families are missing out on opportunities to make memories at their local Fairs. I am so proud that we can offer this opportunity here at our property this summer. “Together We Can!” ▲

This Year’s Scho Investing in Our Future The NICA Foundation is pleased to announce the selection of the 2020 NICA Scholarship recipients. This is an exciting time of year for the NICA Foundation. With the financial challenges that many of our students and their families are facing right now, we are honored to award lifechanging funds to so many deserving students. Because of the overwhelming support from our donors in 2020, we were able to not only meet our goal of awarding $30,500, but exceed our goal and award $33,500 to our commendable recipients. Three anonymous members of the Fair Industry were selected to be the Scholarship Readers. The copies that they received were redacted so there is no evidence of who the Applicant might be. The Readers work individually with each entry, allotting

points for nine varied categories. Afterwards, they submit their results to the NICA Office. After a confidential and anonymous review of the over 30 applications received, the NICA Foundation is proud to award 18 scholarships. “We are confident that our scholarship recipients and applicants will do great things with their education in our Industry and/or on their own individual path,” NICA Foundation President Audrey Poole said. “We are so honored to award $33,500 to such deserving students. To fulfill our commitment during this time of COVID will help these students achieve their dreams.” NICA wants to thank all involved in this process: the Applicants, the Office Staff, Sponsors, and especially the Readers. Congratulations to all!
