Happy Thanksgiving! Fall is a favorite time for me. The colors of the trees, crisp air, oh, and I can’t forget! Our Fair Season has officially come to a close, completing our 38th year in this wonderful Industry. We have our Trailers parked away in the Shop, Trucks put away, and we are making our list of changes for 2025!
As I reflect back on 2024, I am seriously saddened about all the theft happening with Concession Trailers, Utility Trailers, and Trucks. At our Third Annual NICA Marketplace “Together!” this month, November 10-13th, we will have discussions on this topic—what we can do to stop it and what we can do to make it not as easy We have so many exciting Sessions taking place Monday and Tuesday, along with a Roundtable Discussion complete with Box Lunches! Our Trade Show is full to capacity and we are excited for everything to come together! We will be offering a ServSafe Manager Class, Sunday, November 10th from 10 AM-6 PM (The NICA Foundation pays $75 and you pay $70) and our FREE Sysco Tour on Wednesday morning, November 13th! This activity has been such a success since 2022. They feed us and offer demonstrations and a warehouse tour. There is so much fun and networking to be had in three days that I can’t fit it all in here! We truly are an amazing group of people that can set up a booth, sell Food or Commercial items, and then dress up and network together!
Thanksgiving is a time to get together with Family, Friends, and Relatives. Give Thanks for all that we have been blessed with and that we have time together to cook some of our favorite foods. That’s what we do best! We also reflect on what
we truly are Thankful for. For me, I am more than Thankful and Grateful for my Husband, who has blessed me with more than I deserve and has stood by my side this year while I serve as your President! I’ve been Blessed with a Beautiful Family that loves this Industry as we do! Nate, Rebecca, Adan, and Haile work so hard to make what we do a success each year, and for that I am Thankful. This year we plan to deep fry a Turkey and have Ham, along with all the other yummy foods to go with both. Thanksgiving is not complete without Homemade Pumpkin Pie and Pumpkin Cheesecake. This is the time of year we throw out the scales!
Immediately after Thanksgiving, we will all head down to Phoenix, AZ to attend the convention for IAFE, our amazing Sister Organization. It is Marla Calico’s final Convention and we want to thank her for her leadership and support of NICA over the years! While there, NICA will be presenting two sessions on “Strengthening the Touchpoints of Your Fair” and “Understanding the Cost of Doing Business.” NICA will also have our Annual Advisory Committee Meeting and an in-person Board of Directors Meeting while in Phoenix. It’s one of our opportunities to reflect on what NICA has accomplished, as well as what needs to be changed, etc. You’re not an Organization without accomplishments and things that may need attention. It’s what makes us who we are.
I hope and pray you all will be together with someone during Thanksgiving. It’s not always family and I’ve learned that is okay. It’s about being together, spending quality time around people, and enjoying the time eating wonderful food and reflecting on the Holiday. Wherever you are, near or far, travel safely. Most of all, enjoy your time as we endure the upcoming Holiday Season! ▲

The Concessionaires and Carnival Operators of the world are a scrappy bunch of individuals that have learned to not only survive but also thrive by creatively leveraging everyday objects to fit their needs while living life on the road. This is not your usual Survival Guide that includes tidbits like “how to” start a fire or “how to” change a spare tire, but how to survive life living and working as a Concessionaire. In this unique line of work some of us have Uline catalogues instead of a Bible in our bedside nightstands in case we remember that one thing we need to order at 3 AM. We use trash bags for more than just throwing out unnecessary items; we use them for rain jackets in torrential downpours and for storing our valuables inconspicuously. Only in this Industry would you need to make sure you have health insurance in the state you are traveling to in case you get EasyOff in your eye after a long night of cleaning your Concession Stand (I would know from personal experience). Compression Socks, Tums, Zip Ties, and Super Glue are our best friends for making it through a long weekend at a Fair. Our uses for things might sound humorous or ironic but are crucial for long term vitality in this Industry. Working as a Concessionaire is not for the faint of heart; this Survival Guide reflects that mentality. Each item noted on this list I have either personally used in a time of need while traveling, or at one point or another I have been in desperate need of these items.
A Friend’s Address in each state to send Amazon packages to.
Bottle of Tums to settle your stomach after only having time to eat one of your Stand’s many fried food offerings for dinner yet again for the entirety of the Fair.
Compression Socks to keep your ankles from swelling like balloons after standing on them for 15 plus hour days.
Dewormer for pets that you bring on the road with you, especially while living in tight quarters (I don’t want to get too graphic with this one).
Ear Plugs in case your bunk mate snores, as any and all sleep you get on the road is essential. Every minute counts!
Five-Gallon Home Depot Bucket for cleaning your Concession Stand or on the road bathroom emergencies.
Good Friends to carry you through the ups and downs of life on the road.
Health Insurance that is in network to your travel destination in case you get Easy-Off in your eye while cleaning your Concession Stand.
Information Booth Maps to keep in your Stand for any customers that come by asking for directions to every which way of the Fairgrounds.
Jumper Cables to restart your employee’s car that died in the fairgrounds parking lot after midnight and everyone else has gone home.

Welcome to the Third Annual NICA Marketplace
“Together!” in Las Vegas. This is a project the Board has been working on since 2020, and it was the logical extension of our ten years of Strategic Planning that included becoming a Professional Voice in our beloved Industry. We are proud that it is now entering its third year! I’m so excited for this to be happening for our Industry. This event is truly the essence of “Together We Can!”
In our Opening General Session we will hear from our 2024 President Kim Barr, CCE, NICA President, followed by a presentation on CARE/ RIDE Act Legislation by Jacqueline Bradbury, CCE, NICA Director. We also will present a Good Neighbor Award to Marlene Pierson-Jolliffe, CFE and Melody Hill, State Fair of Virginia, before closing with the Keynote Address “Moving Forward Together!” by Jim Teece, Jackson County Fair Board Member and President/CEO of Project A, with an introduction by Fiserv / Clover’s Steven Wrobel. This will lead into our Educational Sessions, where it is NICA’s tradition to give out a Door Prize at every one that we present. We will also be giving out Free Sweepstakes Tickets to all attendees (while they last) so everyone has a chance to win something! Our signature Roundtable Luncheon, sponsored by gocashless, features 22 important topics that are sure to spur important, timely conversations over lunch.

We will also honor our new Certified Concessionaire Executives, award Jennifer Murad, Antelope Valley Fair, as a Good Neighbor, and I will visit with the audience. Next, our President Kim Barr, CCE and Incoming President Jay Wells, CCE will toast us into the Industry Excellence Reception. Please remember that what happens at NICA Marketplace “Together!” does NOT stay in Vegas; it was designed to LEAVE Vegas to permeate your Communities, Fairs, Businesses, Families, and Lives, knowing that “Tomorrow Starts Today!” Once we have had the chance to be “Together!” this month, we will all be “Shining Bright!” at the 2025 NICA Business Expo and Fare Foods Food Show in Tampa, FL, February 10-12, 2025.

NICA Leadership had the opportunity to visit the Oregon Fairs Association Annual Convention in October, whose 2024 theme was “Saddle Up For Success!” At the convention, Rey O’Day, Executive Director, presented sessions on “Blue Ribbon Guest Service Tips,” “Board Governance,” and “Fairs are Fun, Fairs Are Our Business.” This was a great convention and NICA is proud to be making a mark in Oregon! Thank you to Jacqueline Bradbury, CCE, Director, who was busy selling Side-by-Side Tickets and signed up five New Members! Nathan Wells, CCE signed up two New Members as well and we had both Fairs and Members signing up to come to our Third Annual NICA Marketplace! It’s was SUCCESSFUL to say the least! The NICA Hall of Fame award honors distinguished achievements and outstanding contributions by any individual to the health and well-being of NICA. This process is open to all NICA Members in good standing who have identified with NICA and the Fair and Event Industry for a minimum of ten years, and have supported NICA through leadership, education, legislation, technical service, and/or outstanding service to the associated industries and organizations serving the Fair and Event Industry. Dominic Palmieri, CCE, Past President, was the 2023 Hall of Fame Award Recipient (pictured with Rey O’Day, Past Hall of Fame Recipient). During this year’s Fair, The Big E’s Concessionaire Roundtable met twice and openly discussed ways to smooth out attendance from the weekends. They also strategized ways to improve camping, parking, security, and the event’s souvenir cup program. To thank these Vendors, The Big E had a great idea that involved surprising them with a treat. Tim Garstka, The Big E, said, “I love all the members of our Concessionaire Roundtable! It was INCREDIBLE fun to surprise all them with ‘Thank You Cream Puffs’ from our bakery, too! I was reminded how hard our Concessionaires work when almost all of them said ‘I’ve never had the chance to try a Big E Cream Puff!’ These traveling family businesses truly make this Industry great: Poppie’s, Jacks Fries, Amy’s Sweet Treats, Butcher Boys, Eddie Shore Enterprises, Martone Family, Super Dog, and Rudy’s Pizza and Slush.” Thank you to The Big E’s Tim Garstka, Maureen Freniere, and Rob Gottsche, who helped pull this together! Each Fall, West Council and Board Members who play the Arizona State Fair in Phoenix, AZ team up to organize a gathering held at the Arizona State Fair Coliseum Club. Over the years the event has grown and transformed more than once, typically favoring activities such as Poker Tournaments, Bingo, and different kinds of Casino Games. This year, the event focused more on a social atmosphere while featuring the popular mainstays like Poker and Bingo. We are grateful to the Giordanos for continuing to host the event and provide a bar. This year we had 60 in attendance!
The festivities took place on the evening of Sunday, October 20th, right after closing “When the Big Wheel Went Dark.” West Council Coordinators Don Delahoyde, CCE and Julie Dunn organized the event and set up the space, along with Jacqueline Bradbury, CCE, Director, Savannah Bradbury, Concession Solutions, West Council’s Albert Valadez and Rodney Fazackerley, CCE, and Jay Wells, CCE, 1st Vice President. Extra special thanks to Albert, who took on the Bingo Calling duties, and Rodney, who dealt the eight-people game of Poker. Now that we have the games out of the way—let’s talk about food! Some of my most vivid childhood memories come from cramming as many cousins and friends as I could on a Tilt-a-Whirl at the local Exchange Club Fair in Brookhaven, MS. I’ll never forget the year I waited all night to get a funnel cake right before closing, only for Mr. Danny to run out of batter with the customer before me! “Always eat dessert first,” he advised me. Wise words!

The Point of Sale (POS) is the place where customers execute payment for goods or services. POS is the most dynamic “service touch point” for the stakeholders… Fairs, Vendors, and Customers. Historically the procedures and rules at the POS were pretty simple… not anymore! Today there are a variety of ways to pay for purchases. It is also the place where a thicket of confusing addons has landed… processing fees, application fees, sales taxes, convenience fees, tipping, fees on top of fees, all ways to devalue the customer’s dollar when they need every penny of it. These fees assist in the rising costs at Fairs where some Fairs are asking “are these fees income,” and Vendors are asking “how and should they be passed onto the customer.” Clarity is needed. Let’s find it.

As a part of Monday’s Opening General Session, we will be honoring our newest recipients of the NICA Good Neighbor Award, Marlene Pierson-Joliffe, CFE and Melody Hill of the State Fair of Virginia. The following nomination letter was submitted to NICA by Gentry Miller, Josephine’s Glazed Doughnuts:
The State Fair of Virginia adopted new auditing policies in 2022. After leveling the playing field amongst Concessionaires, they experienced a windfall. As a result, the Fair also experienced less interest from Professional Concessionaires to be a part of their Fair.
In an effort to both reward operators who were practicing good business practices, and to become more competitive with other Fairs in the busy season of late September, the Fair reduced their rent percentage and removed unnecessary fees. This difficult decision was spearheaded by State Fair of Virginia’s Marlene PiersonJoliffe, CFE, Executive Director, and Melody Hill, Manager of Vendor Sales. The following reductions and changes were made:
• Reduced percentage of gross sales from 20% to 17%.
• Eliminated stock truck fee.
• Eliminated golf cart permit fee.
• Went to the county to ask for a better tax rate, and managed to find a loophole removing the county sales tax of 4% from stands selling only drinks.
Marlene and Melody’s goal was to pass on savings to Vendors after food gross increased due to auditing, with the hopes that this would
trickle down to Fair Guests by fewer price increases in the immediate term.
They also hoped to become a more desirable destination overtime for Concessionaires to work, and reinvest money into their own operations. With more reasonable food prices and higher quality Concessionaires the Fair hopes to see increased length of stay and higher attendance.
It is hard to do the right thing, for both Concessionaires and Fairs. Integrity is rare.
Marlene and Melody have shown their integrity, by doing something most Fair Managers are afraid to recommend to their Boards, or do.
More Fairs should join them in making Fairs more profitable for Concessionaires so we can continue to bring high quality operations with a variety of menus to State Fairs for generations to come.
During our Closing Celebration, we will be awarding CCE Designations to Miki Martin, West Council and Funnel Cake Express, Rodney Fazackerley, West Council and Fazackerley’s Fudge & Candy, Rebecca Wells, Pacific Crest Concessions, Kristen Whicheloe, Southern Oregon Food and Beverage, and Ed, Nick, and Persis White, White’s Concessions. They have demonstrated a deep understanding and respect for the Industry and we congratulate them. “Together We Can!”

For a change of pace, NICA’s Generation Forward Council, led by Nathan and Rebecca Wells, Pacific Crest Concessions, are taking a trip to the High Roller Observation Wheel. If you are in the age range of 21-40 and looking for a unique and spectacular view of the Las Vegas Strip and surrounding area, look no further! Towering at 550 feet, it is the largest observation wheel in the world and provides a one-of-a-kind experience in Las Vegas. At one foot per second, it will take you approximately 30 minutes to soar high above Vegas! Afterwards, the group is encouraged to network and explore the nightlife on The Strip. “Together We Can!”

His presentation, themed “Moving Forward Together!” will address both today’s and tomorrow’s challenges with connectivity, infrastructure, technology, and what that means
for the Fair Industry as a whole.
A “parallel entrepreneur” with a decade on the Jackson County Fair Board, Jim has helped make the Fair one of the “Best in the West” by focusing on experiences for the Next Generation. Together with his wife Dena, he owns multiple businesses, including Southern Oregon’s largest independent ISP. They also run a foundation supporting the arts, education, environment, and health. Known for speaking at Industry Events, Jim is dedicated to helping Fairs adapt to a rapidly-evolving digital landscape with the help of “future proofing.”

Dan Dooling brings over 20 years of expertise in restaurant, retail, and entertainment operations, with a track record in leadership roles at well-known companies. As Director of Operations and Entertainment at Griswold’s, a District Manager and Market Developer at Boston Market, and District Manager at Stuart Anderson’s Black Angus, Dan has honed his skills in managing and developing successful teams and businesses. Passionate about enhancing the experience for both customers and team members, Dan values continuous improvement.
Our last Panel Discussion before our Closing Session is entitled Using Interactive Technology and Marketing to Drive Customers to Your Location and will feature a presentation by Borjan Jaksic, Boki Food Service, exploring how Artificial Intelligence, Geo-Marketing, and Relationship Management can be used to drive sales and build long-term relationships with patrons.
Borjan earned his MBA at the University of South Dakota before building several businesses over the last 10 years, including the technology-focused marketing company Mobile Food Experts where his team prides themselves in helping Food Concession Operators to grow their businesses and realize their dreams with the latest innovations in data tracking, advertising, and brand engagement. Borjan is an active Concessionaire himself, traveling an annual route to six State Fairs and 20 Festivals as Boki Gelato.
Our Closing Session and Celebration will feature “Reaffirming Our Relevance,” an analysis of the IAFE Ag on a Grand Scale Survey by Michael Bradley, MHB Productions. It will be the second time we’ve had the privilege of hearing from him at NICA Marketplace. He previously delivered our first Keynote Address, “Think Like Walt!” and we are glad he has returned this year!
Michael started his career in 1978 and is
now a seasoned Fair Professional, building a reputation for creativity, adaptability, and deep insight into the Agricultural Industry. His success is rooted in dedication, persistence, and a passion for connecting with people. A fourth-generation Californian and a graduate of Cal Poly State University, Michael has been a Director in Cal Poly’s Fairs and Exposition Management Program, the Executive Director of the Arizona National Livestock Show, and the CEO of California Mid State Fair. His recent work spans entertainment production and strategic planning with MHB Productions
Gene Cassidy, CFE, The Big E President and CEO and Past IAFE Chair, will present “Seizing Opportunity!” during the Closing General Session He will pinpoint areas which enable your business to “Seize Opportunity” wherever it is during your Fair Season.
Gene was born and raised within walking distance of the Eastern States Exposition, fondly known as The Big E. Today it is the largest Fair in New England and is often high on the list of Top
50 Fairs in the United States. Starting his career as a public accountant, Gene became the CFO of the The Big E in 1992, eventually becoming the President and CEO in 2012. Gene not only represents the Food and Fun of a Top 50 Fair, but he also ensures the agricultural roots that the Fair was built on are kept alive. He has a generous heart and he truly embraces the excitement of going to a Fair and supporting the Industry. A favorite at both NICA and other Industry Gatherings, he is best known for emphasizing the phrase “What We Do Matters” when he is speaking to a group.
