a snack called the “Hamburgh sausage,” pairing a meatball with a slice of bread. It eventually evolved to the form we know today with its presence at the 1904 St. Louis World’s Fair. With the addition of extra toppings such as cheese, bacon, lettuce, and even donuts (sweet and savory) over the next century, its never-ending customizability grew its tasty reputation inside and outside of the Fair. NICA is proud to have over 50 members who serve this delicious Fair staple in all its varieties! ▲

I also attended my first tap dance class in a year at which we did not have to wear a mask because we were dancing outside and socially distanced. Priceless!! Opening, while strongly needed, is providing challenges for our Industry that are going to take lots of transparent communicating between all the stake holders. One-stop shopping is tough when supply chain disruption is so elevated. Ordering needs more lead time because our delivery windows have longer runways. It is hard to order in advance when the Fairs we play have not announced when or to what degree they are going to open. Price gouging is happening at every level of commerce at a time when spending must be monitored. This huge and quick rise in prices is happening all around us, so when possible, use your NICA Benefit companies to shield you from even higher pricing. As Fairgoer advocates remember to provide the fairest pricing possible.

Net matters more than Gross. Some of you are cutting back on the number of events or stands, others are moving to new industries, and all are figuring out how to manage with less labor. The elephant in the room is Rents and Deposits. Many Fairs have capacity limitations on their attendance mandated by the Health Departments, yet they want to charge the same rents or more. When capacity is a requirement, rents need to be lowered and so does the number of stands at the event or no one makes enough money. I have been saying for months… Be at the table where those decisions are being made so we can all survive and thrive together. NICA has materials and people who can provide leadership in these conversations. As an organization let’s stay dedicated to effective communication and finding solutions. “Cabin Fever” provided by the Pandemic has made me take longer walks, organize my space, read more books, miss people I could not visit, watch more television, and learn how to use Zoom calls. While grateful for those blessings, I am ready to embrace the flow of “Spring Fever,” keep it moving forward, and be creative and productive in the middle of it. TOGETHER LET’S ENJOY SPRING FEVER! ▲

An open and honest, casual relationship with Fair management is an essential element to the success of Jack’s Corn Dogs and Confections. I believe that I must keep a truly open communication and understanding of the Fair’s needs in order to expect the Fair to understand my needs. It is very important to keep those lines open throughout the Fair, and throughout the rest of the year, between the two entities. Honest communication is vital to work successfully with employees. As an Employer, I must be able to speak freely and honestly with my Employees in order to keep the anxiety levels on an even keel. I encourage my Employees to do the same. My business is successful because of the help I have always had from other Concessionaires. I make every effort to help other Concessionaires to do, and be, the best they can be. I always appreciate positive criticism from my fellow Concessionaires. As manager of my business, I always have considered my key Employees as my “family.” I treat them with respect and expect the same in return. We live in a “community” within the Fair Industry. It is inevitable that I get involved in their personal lives (deaths and illnesses). I am sensitive to their needs, as they are to mine. This sense of “community” makes the Concession Industry unique and special. Open lines of communication with Employees, other Concessionaires, and Fair Management allows us all to learn each others’ weaknesses and strengths. I have had to face my weaknesses, and have learned to rely on my strengths. This “human 10

factor” can manifest itself to the good of me personally, my business, my Employees, and the events which I am honored to work. In my years as a Concessionaire, and meeting many, many diversified people, the diversity has taught me many lessons in life. NICA Policy: All Forms of Payment Should Be Accepted NICA does not endorse any point of sale devices. It is NICA’s policy that Fairs and Vendors should accept all forms of payment from the customer. Fairgoer experiences vary from Fair to Fair as well as from Coast to Coast. Limiting payment options to the Fairgoer will not encourage length-of-stay nor elevate the customer experience. Therefore, NICA is resolved and unwavering in this stance (October 2018).

Contactless Vs. Cashless Payments During this time of COVID-19, there is much being written about “Contactless Payment” for goods and services. Sometimes the word Cashless is exchanged as an equivalent for Contactless. They are not the same concepts. Cashless is about power—who receives the first count. Cashless systems are designed so that the event organizer makes the Guest buy a method of payment that is the only method of payment accepted so that the money comes directly to them rather than to the Vendor with whom they are doing business. It takes the choice of payment out of the hands of the Guest. NICA policy is that all points of sale should accept all forms of payment from the customer; therefore, NICA does not endorse exclusive Cashless systems. On the other hand, Contactless is about the relationship between the buyer and seller only. It is about accepting payment in the form the buyer wishes to purchase it, not in the manner that the event organizer requires that it be collected. Cashless is only one of many forms of Contactless forms of payment, which includes but are not limited to debit cards, credit cards, PayPal, and/or on-counter swipe machines to name a few. ▲

NICA Together Marketplace Will Move to 2022 Thank you to all who supported and pre-registered for our upcoming NICA Together event, from our first announcements until now. When NICA decided to produce NICA Together: A Marketplace of Ideas, Networking, Products, and Services in Las Vegas, May was looking pretty quiet. However, to our delight and surprise, with the rolling out of a largescale vaccination program and the unexpected announcements of state reopenings, events are emerging faster than we anticipated. We cannot ask you, our members, to give up the opportunity to work, and we will not. The blessing is our NICA Membership is slowly but surely rebuilding routes and going back to work. Therefore, out of respect for all of our Industry stakeholders’ needs to reopen and/or return to work, we have decided to postpone NICA Together to a week in 2022 when we can celebrate our survival and successful return to a Post-Pandemic world. Together We are a Community! Dan Lusenhop, Past President Most of us are trying to figure out which of our events are going to open up and if or when they don’t postpone their dates on top of each other. A lot of us have had to think outside the box to bring income to survive until our next gig confirms; most Fairs financial reserves are depleted as well. Some have gone to Drive-Thru Fair Food events, drive-up concerts and movies, and many COVID testing and vaccination sites. Others have chosen good old fashioned fundraising; this story is where a group of Concessionaires have donated their equipment, time and volume cooking skills in support of the 4H and FFA programs. The Sacramento County Ag Foundation put the call out to have it’s first annual Rollin’ Smoke Rib Cookout Family Meal Pack! After weeks of planning with coordinating volunteers and ordering food supplies, equipment needs to pull off the goal of 500 Family Four Packs which included 5lb. Rack of smoked pork spareribs, side of BBQ sauce, ranch-style beans, homestyle mac and cheese, garden salad, dinner rolls and chocolate chunk cookies to finish it off. So the day before the cookout our food delivery arrived from Sysco Foodservice of Sacramento, and many thanks to Rob Webb who was able to pull some strings to get us a refer trailer for the weekend. It was a real lifesaver!

Pit Master Darin Lusenhop, Jeanne’s Artichokes, getting the fire started early in the morning

So by the dawn’s early light, my brother Darin (aka: Pit Master) and I started our day at 4:30 AM to get the home fires burning; most of the other crew came in about 7 AM and we where off to the races. We set up an assembly line to portion, wrap and package all the food items and boxed up each dinner pack. Pam Fyock of Sacramento County Fair gave the marching orders and promoted the process of meal preparations and delivery schedules by the FFA and 4H leaders through Facebook. These leaders transported to each end of the county for local pickup by mid-afternoon and many families enjoyed a meal together that night. What a lot of work to pull off a successful fundraiser, but it was very rewarding to mentor the upcoming youth in agricultural education and all show our support to the regions that we serve! Grateful thanks to my friends Milo and George, Travis and Selina of Milo’s Corn Dogs, Darin Lusenhop of Jeanne’s Artichokes, Eddie Barrera of Hot Doggin and the kids and leaders of all the 4H and FFA clubs. I hope this inspires all of us in continued support of Fairs that provide us a place to be productive, and the foundations that invest in the future of our Industry! “Together We Can Make it Happen!” ▲

Food Trends & Thoughts

What could be the next corn dog, funnel cake, mini donut or nachos for our industry? I’ve put together a brief glossary of new foods trending and some thoughts regarding their emerging new markets. Every season, as we are all aware, the media race begins and we hope to capture the ear, eyes and pallets of the Fair going public. This typically is a flurry of food items skewered then dipped, coated or rolled in a substance of some sort and tossed into a fryer; some may have never been introduced into a fryer before. Often these novelty items become a flash in the fryer (pardon the pun). Our challenge is to realize that annual fads are passing fancies, to recognize and build on strong trends, and to get ahead of where the market is moving for a new generation of Fair Foodies.

Plant Based Proteins A quick internet search will show on the top of most every food site listing the future is that plant-based protein is the single hottest trend in foods for 2021 and beyond. Although still in its infancy, with only modest market share, it has no place to go but up. Currently dominated by ground beef and sold as hamburgers, there is way more in the pipeline including poultry, fish and seafood products. Along with those, two recent startup companies are working on non-ground slab meat

bacon made from mycelium (basically a fancy mushroom) so stay tuned as new creative plant based proteins are forthcoming. One reason, of the many, for the growth of non-meat protein is that it is currently reported that there was a 600% growth, just over the last three years, of people declaring themselves as vegan or vegetarian. This is besides those choosing plantbased because of environmental, philosophical and other personal beliefs; the growth potential for this segment is in its infancy. Is there a market for this fledgling genre of new food products in the Fair, Festival and Carnival Food Industry? I think there is, perhaps a small market share initially, but believe the growth potential is there especially with the creativity and marketing appeal of our Industry. I’m sure we are up for the challenge with what these new proteins will bring to the table for the appetites of the Fair going public.

International Spices & Flavors Ever heard of Mexican Power Herbs, Japanese Scichimi, North African Mediterranean Marjoram or Southwest Chinese Star Anise? Here is a sampling of just a few of what are claimed to be the hottest trends in international spices and flavors: The Mexican Power Herb Pipicha is emerging as a herbaceous flavoring for savory and sweet dishes its flavor is a cross between cilantro, mint,

“Food Trends” continued from page 23 ►► with a touch of lemon and anise. Another Mexican Herb is Hoja Santa (O-hah SAN-tah). It is a leafy herb, often Hoja Santa paired with pepper, anise, eucalyptus and nutmeg, that is used in savory dishes and some drinks. Japanese Scichimi (schee-CHEE-mee) is a more mainstream Japanese Herb and creamy compliment of chili pepper, roasted orange peel, sesame seed, hemp seed and ginger that offers a zesty fruit flavor with a bit of heat. North African Mediterranean Marjoram adds a slightly sharp and a little bitter North African woodsy, citrusy, and floral flavoring to dishes. Chinese Star Anise, named for its star-shaped florets, is an up-and-coming spice indigenous to Southwest China offering a hint of clove and cinnamon with a hint of Star Anise licorice.

Unique Textures are Another Rage Whipped, fluffy and foamy may sound more like a trio of Circus clowns than a food style but are now trending towards customer choices atypical of such textures are showing up in entrees, sandwiches, desserts and high end alternative beverages. How about a slice of whipped coffee pie? A whipped mixture of cocoa cookie crust, milk, custard and coffee ganache into a moose style pie filling served in your favorite graham style crust. One example of a fluffy texture is a Japanese Fruit Sando, a fresh fruit, whipped cream cheese filled, cloud bread wrap style sandwich. Fruit Sando Ever enjoyed a foamy sweet potato? Beverages & All Liquid Refreshments Variety is the spice of life and even more so as the seemingly insurmountable challenge for those in the beverage business and its fickle consumers. It doesn’t seem that long ago that if your beverage inventory included a carbonated brown pop (soda), a diet, a clear lemon lime and a fruity option or root beer you were set. Now with offerings of everything liquid from kombucha, energy drinks, power drinks, vitamin waters, flavored waters, classic and retro sodas, not to mention, according to current Kombucha counts, literally 20,000 varieties of tea—how do we get ahead of what the desires are of the new markets? Who’s driving this train and where should we be focusing our attention for the beverages of the future?

Food for Thought Below are two clips from an article titled “Gen Z and Millennials: Thirsty for More” by S&D Coffee & Tea: “With Gen Z (ages 18-23) and Millennials (ages 23-38) now the top consumers of specialty Food and Beverage, it pays to focus on the trends attracting these demographics.” “When it comes to Food and Beverages, Gen Z and Millennials are more health-focused than their parents and grandparents, abandoning artificial products for more quality crafted options that offer function along with great flavor. From fresh botanicals and alternative milks to natural sugar substitutes, there are plenty of ways to cater to today’s customers who are looking for a healthy beverage with benefits.” So in conclusion, well I’m not sure there are many conclusions, perhaps more like a series of starting points. Hopefully these new trending foods, food ingredient concepts and philosophies will give us some “Food for Thought” talking and discussion points for up and coming options in our corner of the food world. ▲

Travel Safety Tips Federal Motor Carrier Safety Administration

Even the most well-trained, safety-conscious commercial motor vehicle (CMV) driver is at risk of engaging in driving behaviors that could lead to a crash on today’s crowded highways. Weather conditions or road conditions change and suddenly “driving too fast for conditions” becomes a risk factor. Failing to look or looking and not seeing, impaired performance because of fatigue, inattention or daydreaming or an unexpected external distraction can all lead to a truck crash. These preventive measures can prepare not only CMV drivers, but all drivers, to help avoid crashes.
