President’s Message Daryl Whicheloe, CCE, President We are wrapping up our Convention Season and it was a good one! The four conventions I attended in the last few months were IAFE in San Antonio, TX, Western Fairs Association in Reno, NV, Oregon Fairs Association in Salem, OR, and the NICA Business Expo and Fare Foods Food Show, with the theme “Thriving While Surviving,” in Tampa, FL. All went very well! For many of us, it had been nearly two years without being face-to-face with our Fair Families and associates. The first three conventions’ attendance were all down a little, mostly due to COVID, but I am happy to report that NICA’s Business Expo had a record attendance of over 850! We had some great sessions and roundtable
discussions with many Fair Management and Fair Board Members in attendance, listening and sharing our concerns and issues we are currently dealing with. For those that couldn’t attend I hope to see you next year. For those that did attend I thank you for your continued support to our organization and to this Industry. We have a voice and it is being heard. ►► “Message” continued on page 7
Director’s Voice Stacey Pittroff-Barona, Director
The Power of Networking
After attending NICA’s Business Expo, “Thriving while Surviving,” I experienced the Power of Networking in our world as Concessionaires. According to the Oxford Dictionary, the definition of networking is “the action or process of interacting with others to exchange information and develop professional or social contacts.” Meaning, by putting yourself out there, getting out of your comfort zone, offering mentorship to others, asking important questions, and getting to know someone new are all examples of networking. Networking with others does not mean you have an agenda but rather creating a meaningful connection with someone new because you never know what opportunity might arise from getting to know them.
Each of us Independent Concessionaires work our own routes within the Fair Industry, we offer our own unique products, and we know the ins and outs of each venue through our participation in those events for many years or even decades. With the traveling to each place on our route, even within one’s hometown, comes the connections we form with others all working for a common cause, that is to put on the best event we can for our guests and hopefully make a profit in the meantime. Those people we meet along the way may be other Concessionaires, event staff or management, electricians, carnival operators, sanitation workers, grounds crew, or even our own employees, all of which we form connections with. These people often become our mentors, the people we rely on for help when something goes awry, those we seek advice ►► “Voice” continued on page 7 March 2022 NICA News

“Message” continued from page 5 ►► As we start our 2022 season, and some of you already have, all indicators show it will be another good year for the Fair and Events Industry. People NEED entertainment and we play an important role in entertaining them. A lack of labor and even bigger supply chain issues are going to make our jobs harder this year. We need to think outside the box even more to find the solutions to keeping our businesses open, and as NICA’s theme this year suggests, “Thriving While Surviving!” We are strong and independent, but also loyally committed to helping each other and our Fair partners solve the ever-changing

“Voice” continued from page 5 ►► or guidance from, and some of these people even become our lifelong friends. But it took effort to get to that point. It took human connection. And ultimately it took networking to build those connections. Now, not every person you meet will want to have a meaningful connection with you, but it is still important to get to know them because you never know when your paths might cross again. As the saying goes, “it is not what you know, it is who you know.” At NICA’s Business Expo there are a plethora of opportunities to network. This networking might be different than what we are used to at our Fairs and Festivals but is equally as important to make that effort to connect with others. From listening to the speakers, attending the Dinner and Gala, going to the Food Show, or partaking in the roundtable talks, there is something to be learned and someone new to meet. It is a chance to understand the struggles and issues facing our Industry today but also to learn of the triumphs and successes people have encountered along the way. From my personal experience I learned the most from attending the roundtable talks. As these talks give anyone who attends the chance to speak about their experiences or opinions in a small group setting on several different topics. This is an opportunity to ask important questions of someone who may have experienced a similar struggle to you and how they overcame it, or it could be a time for you to offer advice to someone else on a certain topic. For instance, these are a
Rey O’Day, Executive Director, with Jay Wells, CCE and Stacey Pittroff-Barona during Board Member Orientation
few of the topics touched on in the roundtable talks I attended: finding workers during a pandemic whether it be local or foreign employees, navigating new technology and social media marketing, and learning how to evolve your product to meet the needs and wants of current and future customers. Not only did I have a few takeaways from my conversations, but I built meaningful connections with people I would have otherwise never known. The reality is today we are so much stronger together fighting our battles than we are at fighting them alone, and we can do so through our connections with one another. With the Power of Networking the possibilities are endless, as there is always something new to learn and someone different to meet. Sometimes I know I forget how many others across the country are in our line of work. It can be hard to recognize that my problems are not unique and so many others are experiencing those same issues in a different place. Thus, when you remove yourself from your comfort zone and start to look to connect with those outside of your bubble of Fairs and Events you will find that there are hundreds if not thousands of Concessionaires just like yourself working towards a common cause—that is not just to survive, but to thrive. ▲ March 2022 NICA News

Our Sincere Condolences to the Friends & Family of Darwin Fuchs It is with a heavy heart we announce the passing of Ernest “Darwin” Fuchs, President Emeritus for the Miami-Dade County Fair and Exposition, on January 23rd at the age of 85 at his home surrounded by family. He will always be remembered as a pioneer and visionary with a passion for the Fair Industry. Darwin built a small County Fair into one of the largest annual nonprofit events in North America, attended by hundreds of thousands. “South Florida lost a wonderful community leader with the passing of Darwin Fuchs,” said Merrett Stierheim, Miami-Dade County Manager from 1976 to 1986 and decades-long friend of Fuchs. “Darwin was a visionary, and he was a
consensus builder. He created The Youth Fair into a center of the community in good times and in times of need,” said current Youth Fair President Eddie Cora. Throughout his career, Fuchs served the Fair Industry in various roles and received numerous awards. He was president of the International Association of Fairs and Expositions, the Florida Federation of Fairs, the Midwest Fair Association, and the Miami-Dade County 4-H Foundation. Fuchs is survived by his wife, Mimi, of 62 years, his two sons Troy and Lance, his grandchildren Victoria, Garrett and Connor, and many nieces and nephews. Donations may be made to the MiamiDade County Fair and Exposition Scholarship Fund, 10901 SW 24th St., Miami, FL 33165, or to the IAFE Education Foundation Scholarship Fund, 3043 E. Thoughts From a This month’s Statement of Communications & Management Philosophy is from Jay Wells, CCE, Wells Concession and NICA Board, who is one of our most recent CCE Designees: Since I travel among many states in a nine month period, it makes more sense for me to contribute to the communities I serve through their Fairs by providing my best effort in product and service. Something I picked up in my earlier years from one of my coaches is “Look Sharp, Be Sharp.” I continue to this day to stress this. What does Looking Sharp and Being Sharp really mean? By conducting one’s self in a manner of respect for themselves, as well as the ones they meet and interact with on an occasional daily, weekly, yearly, or even a one time acquaintance, is “my interpretation.” I have tried to incorporate this motto into my business philosophy as well. Dressed in professional attire and with a helpful demeanor, employees educate others about the current Fair we are participating in by offering good and correct information regarding locations of the first aid stations, bathrooms, office or administration buildings, highway patrol, sheriff and/or police location, and phone numbers. Our customers are always looking for someone to help them with something. The more information we know, the more we will be able to help that
person who comes to the counter asking for this information. Our customers are not comfortable with the answer of “I don’t know,” and even for that occasional question we really don’t know the answer to, try and find someone who does know so that customer will come back and maybe buy something and/or leave with a good impression. Keeping equipment clean, attractive, and safe attracts customers. Keeping the menus clean, concise, and limited keeps the lines moving. Keeping back of house equipment modern and working helps in efficiency, especially on those big days. I expect employees to be ready and willing, groomed and in uniform, and prompt to work. I encourage them to smile and greet each person helping them to feel welcome, whether they become a customer or not. People usually remember a friendly face. Participating in the local Blue Ribbon or Fair Foundations, whether that’s advertising, purchasing their water, or just donations, helps the event earn needed revenues. Hopefully, these revenues keep their grounds modernized and updated to please the customer base. A happy experience helps the customer return to the Fair and our Concessions. ▲

Getting to Know Your Regional Council Members We had the chance to interview the Central East Council’s very own Matt Ribar, based out of Wyoming, MN. His responses are below: What is the name of your business and what products do you sell? Duke’s LLC. My wife and I sell Poutine, which is fresh cut fries, white cheddar cheese curds (fresh, not battered or deep fried) and covered in piping hot gravy. We developed our own gravy recipe and that is what makes Duke’s Poutine so special. Only having one menu item, we put all our effort into making the best product possible. What is your annual route? We pull the trailers out of storage near the end of March or early April. We start locally with a few events at the Minnesota State Fairgrounds. During the summer we reach as far as Milwaukee and Des Moines, but generally stay close to home. How long have you been a Concessionaire and a NICA Member? My wife and I have owned Duke’s since 2010. How and why did you get into the Concession business? My family has a history in this business. I grew up hanging around my Dad’s cheese curd business before working for him as a teenager. A lot of younger kids in this Industry start working for their parents or grandparents at some point. Some move on to other things, some make it a career. I chose to stick around and eventually we’ve branched out on our own, while still working for the family business.

How has the Concession business changed since you first started out? What’s something you wish would change? So much has changed and it continues to change. The biggest change that I’ve noticed is the use and implementation of electronic or card payments. The technology has come a long way and there are some really good benefits to new technology. Like most things, there is a time and a place for cards. However, we are in a very unique industry. Spanning decades, generations have been hard at work fine tuning operations to be well oiled machines. Efficiency is key when your line is down the block. The recent push to require card payments has been a huge hurdle for us. When volume is key, and only selling one item, we have change ready before they even pull money out of the wallet. Cards have absolutely slowed us down during our peak operation times. Like I said, there is a time and a place for card payments, but the technology is not here yet to keep up with volume this Industry can handle during peak times. A change I would like to see, is to have the technology available for those who want it, but not forced on those who don’t. Each business knows it’s operation and how to be most efficient. If that means electronic payment, then that should be the choice of the operator. How long have you been a NICA Member? Who recruited you? Although I started coming to gibtown back in 2010/11 I first became a member in 2018. After following my dad to NICA events, he made sure I finally became a member. What do you hope your Council accomplishes during your tenure recruited you? The Midwest has a lot of similar struggles as the rest of the country, but there are some unique aspects to the region that require a slightly different mindset when it comes to Vendor relationships with Fairs/Festivals. At this stage of the Council’s infancy, I’d like to see the Council focus on Midwest recruitment and becoming an outlet for Vendor concerns. We can either find solutions to the problems or we can’t, but we can’t try if we don’t know about them in the first place.
The Duke’s Poutine stand is a mainstay of the Minnesota and Iowa State Fairs, where the Ribars provide a unique food experience to Fairgoers
amazing how such a large Industry becomes fairly small when you start meeting people from all over the country and bounce ideas off of one another. What’s something you like to do in your free time? Well, since there isn’t much “free” time in this business, I do my best to enjoy the outdoors when I get the chance. It’s usually involving the Northwoods in the fall and frozen lakes in the winter. Hunting and fishing are both passions of mine. Anything else you would like to share with NICA Members? My wife Erin and I just welcomed our fifth child Loretta back in November. Our oldest Kaitlyn is nine, Brad is seven, Benjamin is five, and Maggie is three. Hopefully they too will enjoy working for us in the Summers like I used to do. It’s getting harder and harder to find help these days, so we started making our own crew.
What is your most valuable NICA benefit?
We appreciate your responses. What is the best way for a NICA member to reach you?
It’s not one you’ll find in the benefit guide, but my biggest benefit to NICA is the networking. It’s

Collective Experiences First Timer Convention Experiences Chris Conkle, CCE, Conkle’s Concessions Greetings! I have had a Concession business on the West Coast for the past 36 years. I was the lucky recipient of the 2022 NICA Foundation First Timer’s Convention Scholarship, and I couldn’t have been more pleased and excited. It was just the push I needed to get me across the country and attend. Thanks so much to Audrey Poole, Foundation President, for finding me a room after I missed the deadline, and all the rooms were full! From the first night at the Super Bowl Party put on by Fare Foods, my friends from the West Coast introduced me to so many wonderful people including the NICA Board of Directors, Councils, NICA Members, and suppliers. One of my favorite things was meeting new people and families with an interesting history in the Industry; people that I had read about in the NICA News or even Amusement Business way back when. I felt like I already knew them! Some of my good friends took me to the Gibtown Extravaganza and the TopGolf Fundraiser put on by OABA. We had a blast! All of the sessions and roundtables applied to the Food Concession sector of the Industry. Some of my favorite sessions were “Expectations of Vendors and Fair Management,” “Where Will the Next Generation of Concessionaires Come From,” and “Pandemic Trends that are Here to Stay.” The roundtables were amazing! I found that I had more knowledge and experience with the issues at hand than I ever realized. I attended part or all of the time blocks for the Fare Foods Food Show, and gained some new ideas and some great connections. The Gala Dinner was simply “out of this world” with great food, super fun company, and a really exceptional time. I really enjoyed the awards ceremony, all the speeches, and of course, the NICA Hall of Fame. I was extremely impressed by the way the OABA, IAFE, and NICA worked together, and all participated throughout the conference. It really felt like one big happy family! This event made such an incredible impression on me that I will be attending from now on. I also
came to the conclusion that NICA is the one organization that I am going to support and give back to. Thank you to the NICA Foundation, Staff, Board, Councils, Fare Foods, and Rey O’Day for making this experience possible!
Five Days in Tampa Dennis Larson, CFE, Council Coordinator I’ve been saying for the past two years that the last time my life was normal was when I was in Tampa two years ago enjoying the festivities of what we all know as Florida week. It was fantastic to be back in person for the flavor of “normal” along with meeting, greeting, eating, drinking, working and playing with the people I enjoy being with so very much. The tone, the topics the discussions were oh so different than just two years ago when there was just a whisper of some people getting off a plane in New York from Wuhan, China with a virus named after a Mexican beer, “Corona.” Nobody understood it, but little did we have the slightest hint of how it would turn our world inside out and upside down. Fast forward two years I stood up, brushed the dust off, caught my breath (through my mask) went to an airport, got back on an airplane and flew to the foreign state of Florida. The conference attendance was good, the workshops, roundtable topics and panel discussions were enthusiastically well attended. Most of the topics were dominated by subjects unheard of just two years ago: supply line issues, no 32 ounce cups, no custom graphics, chronic staffing shortages, advanced sanitizing, to wear a mask or not. All challenges unknown of just two years ago. I wouldn’t say we came up with all the answers but it was assuring just to know there were others in the same boat. The support and camaraderie was oh so consoling and helpful. We’re not through this thing yet, but we’ve made a lot of progress. My observations during the “five days in Tampa” are that the slowly rising tide will raise all boats, and the friendly competitive nature of all of us in this crazy Industry. We will survive while thriving, just as we’ve been saying. “Together We Can!” ▲ March 2022 NICA News

Highlights from the Annual Gala’s Spotlight on Scholarships February 16, 2022 was a milestone for the NICA Scholarship Foundation. It was the first time that a face-to-face meeting with the Board of Trustees took place. Fundraising for 2022 was discussed as well as our generous donors who have committed to supporting the Foundation through Scholarships. Over $30,000 was awarded this past year, and the Foundation agreed to increase the Scholarships awarded in 2022 to $33,000. We would also like to welcome new Board Trustees: Kim Barr, CCE, NICA 1st Vice President, Larry Sivori, NICA Past President, and Carmel Dyer-Pitroff, CCE, NICA Past Director. They are committed to growing our Scholarship Applicant Pool including Vocational Applicants. We are excited about the coming year and how the Foundation can continue to assist those to further their education. During the program for NICA’s Annual Gala, the NICA Foundation was featured in a special spotlight presentation given by Audrey Poole, Foundation President, and Rey O’Day, Foundation Secretary. After introducing the Trustees of the Board, both in attendance and remotely. They then congratulated all of 2021’s 17 very deserving Scholarship Recipients, and showcased a variety

Our largest donations of $5,000 each were made by both Laura, Ron, and Trampas Porter, Fare Foods, and Larry McConnell, CCE, McConnell Concessions, who joined Audrey and Rey onstage to present their checks to the Foundation. The NICA Foundation Spotlight also served as an opportunity for Past Recipients to thank the NICA Foundation and let the attendees know how it has benefited them. Olivia Owens, who received the NICA Past Presidents and Directors Scholarship in 2021, joined the event via video. She shared, “NICA has helped me in so many ways by awarding me this scholarship. I have been able to use the money to offset a number of the expenses Larry McConnell, CCE, with his check for $5,000 to the NICA I have had in college as well as future expenses I Foundation with Trustees Rey O’Day and Audrey Poole may have. We can all relate how Scholarship Recipient stressful a Fair can be at times, but being able to work effectively under that pressure is what is most important. Thank you again to the NICA Foundation for awarding me this scholarship. I honestly couldn’t be more honored and grateful!” Audrey and Rey then introduced Olivia’s mother, Beth Owens, Blue Moon Tavern at the Park, who took the stage to voice her sincere appreciation for the NICA Foundation Scholarship Program.
