PRESIDENT’S MESSAGE Vincent Nelson, CCE, President Welcome to Las Vegas for the second annual NICA Marketplace, “Together!” We have some great events, workshops, and speakers scheduled for you to see and do. See Page 20 for more on what we have planned! Let’s talk about what NICA has done for me. Everyone always asks, “What do I get for my NICA Membership?” All I can say is that you get out of it what you put into it. First, let’s address the leadership opportunities. Once you are a member, after a year you can start to serve on a Council, which I did for a few years. It opened up my knowledge on the Northeast. Next I served on the Board, and I have worn many hats so far—some I have enjoyed like being President. I can tell you I did not like being Secretary for a year. I followed Sandy Class, CCE, Past President, and she made it seem so easy. I learned very fast that it was not as easy as it seemed. Next, let’s talk about savings. I have always used the NICA Pepsi discount and I use an average of 60 BIBs a year, saving $18 off of each; that alone has saved me $1080! For the longest time I did not use Sysco, since I mostly sold Pizza. As my family has grown, so has my business. With Meat stands and Fry stands, I have saved at least $2500 between Chicken Tenders, Philly Steak, and Beef for Roast Beef stands among many other items. I have also used AutoZone and saved between 10% and 15%—I did use this benefit a lot and saved a

Season’s Greetings few dollars. Last year I saved 20% with Hertz on my rental car for Tampa (I’ve heard other people have had the same luck). Linda and I painted the living room this spring, and not only did I save with Sherwin Williams, but I feel the quality of paint was better. I also purchased a hot water heater from Arrow Distributors. It was $13 cheaper than anywhere else I could find it, including Amazon. I have tried to use every benefit this year; some you do not save money, but the level of service is unmatched by their competitors. I’m talking about Fare Foods and Hummel Group. I also had a few that did not work for me and I know they work for others, such as CLC Lodging; we need improvement on this benefit in my opinion. Last but not least is Goodyear. It just does not work in my market, but that being said, if you talk to Jay Wells, CCE, Director, the benefit is a home run for him and many other members. A few other mentions include the fact that my Entegra check was more then my NICA dues! I use Fiserv and most of my complaints are caused by me and my thickheadedness. Ford Motor Company has been hard to deal with since COVID, but I can say in 2011 I did save a bit of money on my new truck. Of course, that was a long time ago. NICA is what you put into it, I have made many great friends and I have also gotten much better at public speaking. That was with some pressure from Rey O’Day, Executive Director; she is a member benefit sometimes and other times I just shake my head and move on. December 2023 NICA News 5

The season is over, everything is clean and put away for the season, and now it’s time for family. This time of year I spend as much time as I can doing adventures with the family. One of my goals was to hit all the local fire watch towers—there are 14 in total for my area. It’s nice to get out in the cool air and go for a hike. I’ve already done six! I am not sure if my children will like it, but Linda and I sure do. We live in one of the most beautiful parts of New York, the Hudson Valley, and there is so much to do in the area. It’s also time to give back! We donate to our local community with everything from donations to helping cook dinners for families in our area. The Concession Business gives us lots of opportunities to give back to the community, and we know how to serve a large group in a short amount of time. Family time is only a short period of time and then before you know it, it’s Convention time in 6 December 2023 NICA News

Florida. That means April is getting close and we need to finish our Winter projects. I have several projects going this Winter; I have two trailers getting work done and I’m hoping to build a new beer stand and re-rack a cargo trailer. Those are just a few Winter projects... Welcome to the second annual NICA Marketplace, “Together!” in Las Vegas. This is a project the Board has been working on since 2020. It was the logical extension of our ten years of Strategic Planning that included becoming a Professional Voice in our beloved Industry, and we are proud that it is now entering its second year! I’m so excited for this to be happening for our Industry; for NICA; for you; and for me. This event is truly the essence of “Together We Can!” We begin our event with our General Session, where we will go “All In!” with the help of our Keynote Speaker Jeremy Parsons, CFE, and learn “What is NICA?” from NICA Leadership, including Jessica Gottsche.This leads into our Educational Workshops, where it is NICA’s tradition to give out a Door Prize at every one that we present. Thank you Carole and Mike Marcus, Vic Marcus Concessions, for their Door Prize Sponsorship. We will also feature a Roundtable Luncheon, sponsored by GoCashless, where many important topics will be discussed over lunch. We will gather back together again in Florentine Ballroom A for the Educational Workshop, “Staying Out of Harm’s Way by Minimizing Risk,” to stress the importance of security for our Members and Fairs. The sold out NICA Marketplace Trade Show features 33 companies that serve our businesses who are eager to meet you, serve you, and strengthen relationships with you. Our Condolences to the Family of Linda Comer We are saddened to report that Linda Comer, former NICA Executive Director, passed away on October 29, 2023. Rey O’Day, Executive Director, and Gayle McGrath, CCE, Past Director, shared the following tribute: 30 years ago, NICA was in its infancy. The Board had just formed and there were a little over a hundred members. NICA needed a record keeper and someone to keep communication going for the Board. In January 1994, Linda Comer left teaching first grade to become NICA’s Office Manager and run the day-to-day business of NICA out of her home. Her job description grew in leaps to match the size of NICA’s growth. She became bookkeeper, secretary, publisher, editor, master communicator, event organizer, promoter, and friend to members throughout the Industry. During Johnny Holmes’s tenure as Executive Director, she was made Assistant Executive Director and moved the NICA Office “off her dining room table” to an office in Cape Coral, FL, and each month, she and the Women in NICA (WIN) produced the NICA News. Because she went to speaker training and began to travel for NICA, she hired one or two people to continue the work in the NICA Office and hired a CPA service. She experienced NICA’s growth from “four cardboard boxes, a computer and $700 in the bank” to a force within the Fair and Festival Industry. She served as NICA’s Executive Director from December 1999 through December 2001, and resigned due to health challenges. She made everlasting friends and a positive impact on NICA’s history. A Celebration of Life was held on Saturday November 11, 2023 in Cape Coral, FL. In lieu of flowers and in remembrance of Linda’s passion for helping others, the family asks that charitable donations be made to the JSC Priority Scholarship or Hope Hospice. ▲

NICA Represented at Rocky Mountain Association of Fairs NICA was thrilled to have attended and actively participated in the Rocky Mountain Association of Fairs (RMAF) Convention in November. At the convention, Jeff Thornberry, CCE, Director, presented “Inspiration of Commercial Exhibits” and Kim Barr, CCE, 1st Vice President, and Lonna Breshears, Western Idaho Fair and incoming RMAF President, discussed “Healthy Relationships Between Fairs and Concessionaires.” Congratulations to Courtny Conkle, CCE, Wyoming State Fair, for winning Fair Manager of the Year! I’m not sure if I have ever had a clearlydefined Management Philosophy. I simply try to communicate openly and honestly with all people, especially those with whom I do business, whether it be Fair Management, wholesalers, business associates or employees. I have said many times, and I still believe, that it is not enough to pay employees well; they must also be treated well. The message should be conveyed to each and every customer that their business is not only welcomed but appreciated. A pat on the back or a “thank you” to a supplier or anyone else who goes out of their way to help you is not necessarily a requirement, but rather a moral obligation. This philosophy could be described in one word: COMMUNICATION. I firmly believe that communication is the key to success and the lack of it is the undeniable reason for failure. There is an old saying: “Be careful what you ask for, you may get it.” But without communication, nothing happens. I believe we should all endeavor to make something happen. ▲

GETTING TO KNOW YOUR Regional Council Members This month, we had the chance to interview West Council Member Michelle Allen, based out of Paradise, CA. Her responses are below: What is the name of your business and what products do you sell? H&M Funnel Cake Express; we sell Funnel Cakes! Our most popular Funnel Cakes are the Fresh Strawberry, Powdered Sugar, and any Funnel Cakes with Ice Cream! What is your annual route? All over California. We do our hometown, Glenn County Fair, all the way to one of our favorites, the San Diego County Fair. We usually start our season in April and continue through mid-October. The whole company combined goes all the way into Oregon and Nevada and also works Sonoma Fairs, as well as the coastal counties. We do shows in the Northern California Mountains, and back down through California’s Central Valley, too. How and why did you become a Concessionaire? It is a family business, and I have been fulltime for 11 years. Funnel Cake Express, Inc. was started by my grandparents, Mike and Barbara Sutton in 1988 and that became Pennsylvania Funnel Cakes. It took a while for it to take off, but eventually it did, and in 2012, they asked if we wanted to join too. My husband and I have three daughters Darrian, McKinzee, and Tatum; a son-inlaw, grandson, and another grandbaby on the way— all who spend time on the road during the season.

Mind Your Mindfulness Jessica Gottsche, Social Media Coordinator

As we’re heading to the holidays, many of our members are home now for some well deserved rest and relaxation, time with family and friends, maybe some leisure travel, and to prepare for next season. It is time to take care of ourselves, and focus on ourselves first. Maybe we’ll catch up on bills, spend a little extra time in the gym, enjoy some retail therapy, but please remember your mental health, too. Consider introducing yourself to a little thing called “Mindfulness,” or deliberately paying attention to what is happening around you and within you. Mindfulness is a common buzzword today, defined as “the quality or state of being conscious or aware of something or self; or a mental state achieved by focusing one’s awareness on the present moment, while calmly acknowledging and accepting one’s feelings, thoughts, and bodily sensations, used as a therapeutic technique.” Many therapists today begin sessions by teaching their clients or patients mindfulness techniques, to help them calm, focus and decompress. Some of these techniques are easily practiced at home, on your own. An article featured in Entrepreneur stated, “Mindfulness can improve focus by helping identify and let go of distracting thoughts and emotions. When we are mindful, we are better able to listen actively and fully engage with others, which can foster better understanding and collaboration.” While taking some time this Holiday Season, try learning these techniques and mastering them to carry with you when life gets hectic again. 16 December 2023 NICA News

Mindfulness Tip #1:

Take time each day to… Any time you find yourself waiting—when you’re in line at the store, waiting for someone who’s late, or waiting for the “please wait” icon on your computer screen to go away—take this as an opportunity to practice mindfulness, meditation, or prayer.

Mindfulness Tip #2: Take time each day to… Remind yourself to smile. Notice the expression on your face. Notice it from the inside: lips up or down? Teeth clenched? Tension and frown lines between the eyebrows? When you pass a mirror or reflective window, sneak a look at your expression. When you notice a neutral or negative expression, smile. This does not have to be a wide smile; it can be a small smile, like the smile of Mona Lisa.

Mindfulness Tip #3: Take time each day this month to… Once a day think of someone close to you—a family member, friend, or a colleague—and give them a genuine compliment. The closer the person is to you the better, such as a child or a parent. The more specific the compliment the better. Mindfulness can train and strengthen the mind. It can help calm a storm inside and can help you find balance in the chaos. Find some time to make practicing mindfulness a priority. ▲

Hi, I am Clay Steadham, Vice President of National Accounts at Sysco, and I have served Sysco’s customers for nine years at various levels, curating robust knowledge and skills in the Food and Beverage Supply Chain. I started my Sysco career as an Account Executive at Sysco Houston and soon transitioned to a role within the National Sales organization as a National Account Manager. I continued servicing Sysco’s customers in that role until 2020, at which time I was asked to lead change for the Sysco organization by piloting Sysco’s novel Customer Success program, what is known today as the HQ Center of Excellence. Once this new “Way of Working Together” was up and in a steady state, I was then asked to rejoin the National Sales team as Senior Manager of National Accounts in 2021. In 2022, I joined the Entertainment segment of National Sales as Vice President, and one of my first assignments was to attend NICA Marketplace, “Together!” in 2022. I look forward to my one-year anniversary of both this position and being a NICA Marketplace Trade Show Exhibitor. A Message From the Keynote Speaker: “All In!” Jeremy Parsons, CFE, CEO, Iowa State Fair I am often quick to point out that Fairs are one of the few places left in our world where entire families can gather together in a safe atmosphere and create life-long memories. Yet, as I think deeper, many of those life-long memories are actually created by our partners. Think about it. Those families sitting together at a picnic table grazing Fair Food? That memory is created by a Food Concessionaire. For many of us, when our Fairs were canceled in 2020, we turned to two things—youth livestock shows to maintain our core mission as agricultural Fairs and Food. We knew the power of Fair Food, so we created all sorts of things like drive-in events, food parades, carryout events, etc. Through these innovative events, we were able to engage with our Fairgoers and provide much needed income for both our concessionaire partners and ourselves. In fact, I believe it must be said and noted—if it weren’t for our NICA partners, many Fairs would not have survived financially. When the history of COVID-19 is written, it will show that NICA played a key role in the survival of the Fair Industry. Our partners stood by us during our darkest times, and we must never forget their willingness to help. At the same time, we must also use this as an opportunity to strengthen that relationship for the future. We will strengthen that relationship at the industry level through continued collaboration between the IAFE, NICA, and OABA. But, at the local level, we need your help! I challenge each Fair to improve their communication with their Concessionaires and Carnival in the year ahead. Create a Communication Committee with your Concessionaires to hear their concerns. It can be as simple as a breakfast during your Fair where you invite your Concessionaires to a meal and listen. Ask your Carnival Owner to attend a Board meeting to discuss his or her challenges with labor and hours of operation. A few simple changes to your Fair schedule can make a tremendous difference. At the same time, educate your Concessionaires and Carnivals about your Fair. They are often informal information booths (Fairgoers will ask anyone questions when they attend your Fair) and need accurate information. They are part of your Fair’s Guest Service experience. Inform them of your expectations so everyone can be on the same page. Our goal is the same. Fairs, Concessionaires, and Carnivals want to provide top-notch experiences to our Guests, and with a united front, we can become “All In!” and achieve that goal. “Two are better than one, because they have good return for their labor: If either of them falls down, one can help the other up. But pity anyone who falls and has no one to help them up.”— Ecclesiastes 4:9-10

In conclusion, everyone is responsible to assure they are in tune with their environments and always aware of their surroundings. Everyone must be able to adapt to any given condition by immediately responding to any emergency. Response is putting your preparedness plans into action. We must train to use our sensory systems to scan the environment with the purpose of identifying threats in the present or projecting those threats into the future. I like to refer to this as forecasting hostile encounters for survival. ▲

Casino Night in Arizona Don Delahoyde, CCE & Julie Dunn, West Council Coordinators

Each Fall, West Council and Board Members who play the Arizona State Fair in Phoenix, AZ team up to organize the muchanticipated Casino Night, held at the Arizona State Fair Coliseum Club. This event offers NICA Members an opportunity to unwind and try their luck in a night filled with exciting games, with the hope of hitting the jackpot! Following the tremendous success of last year’s Casino Night, the decision was made to host the event again with a few tweaks to enhance the experience. The festivities took place on the evening of Sunday, October 22nd, right after closing. Attendees were treated to a variety of Casino Games, including Blackjack, Craps, and Poker. A notable addition this year was the introduction of a high-stakes Texas Hold’em Tournament, adding an extra layer of excitement. The Tournament saw eight skilled players, with Blake Bishop, Bishop Concessions, in 3rd place, Clayton West, Ray Cammack Shows, in 2nd place, and Rodney Fazackerly, Fazackerley’s Fudge and Candy, in 1st place at the end of the game. West Council’s Albert Valadez and Steve Vartanian added to the entertainment by running Bingo Games for those who wanted something a little different. Don Delahoyde, CCE and Julie Dunn, the newly appointed West Coast Coordinators, were also present to lend their support and connect with Adam Dasuqi, Casino Partners Arizona, was a huge help in setting up the event

the NICA Membership. They shared, “A good time was had by all at this year’s event!” Jacqueline Bradbury, CCE, Savannah Bradbury, and Jay Wells, CCE contributed a great selection of prizes, and Jennifer and Ken Giordano, C&C Concessions, provided a case of fine wine and the facility for the event. The Fair donated a 2024 RV Space for the Opportunity Drawing, with all fundraising dedicated to the OABA’s H-2B legal fund. Congratulations to Nathan Marcus, West Coast Weenies, who emerged as the RV Space winner, and Clayton West, who walked away with a complimentary NICA Membership.
