the traditional izakaya style of eating and drinking zuma is a modern Japanese restaurant that takes its inspiration from the Japanese “Izakaya”, an informal restaurant and bar. In recent years, Izakaya has evolved to a more sophisticated level and the atmosphere is stylish and vibrant. However the essential difference between the Izakaya style and a formal restaurant is that there is no prescribed etiquette for ordering from the menu, with no differentiation between “starters” and “main courses”.’The venue comprises 7,500 square feet including an outdoor terrace, located at the newly opened The St. Regis Hotel and Residences, situated in Bangkok’s most coveted address along Rajdamri Road, the city’s key commercial corridor where major corporations and elite financial institutions make their home.zuma is a contemporary Japanese Restaurant and is known for its high quality food and individuality. The style is “authentic but not traditional”. The emphasis will be on ingredients and flavour. Presentation is simple, natural and appealing to the eye.

Ethnic Japanese crockery specifically created for zuma is used. The Robata Grill offers the finest selection of seasonal vegetable, poultry, meats and seafood prepared over charcoal and served with signature sauces and marinades. Northern Japanese fishermen created the tradition of “robata” cooking and evenings in coastal villages found them cooking their catch over an open fire, sharing amongst each other from boat to boat. The custom was then carried into the Japanese home, with a special room set aside for the “ro” or brazier made from iron and set into the floor.The Sushi Bar offers a wide selection of fresh fish for innovative sushi rolls, sashimi and nigiri sushi. At both the sushi and robata grill, customers can sit opposite the specialized chefs and watch their dishes being prepared. Our signature dishes include saikyo miso marinated black cod wrapped in hoba leaf, barley miso marinated baby chicken, oven roasted on cedar wood and zuma dragon maki.
