Let’s Celebrate!

ONCE AGAIN, THE HOLIDAYS ARE UPON US. It always seems to sneak up, doesn’t it? The shorter days, the festive feel in the air, and of course, the snow. I’ve mentioned it here before—I love snow. But I also love the season: pulling out those boxes of decorations that have been stowed away, sending and receiving party invitations, cooking the meals and baking the treats that only make an appearance during this time of year. This is also a time when I tend to look at my home through guests’ eyes. Should the carpet be replaced? Do chairs need to be reupholstered? Is the guest room ready for long-distance family and friends? I hope that the homes featured in this issue (starting on page 54) will inspire you to do a little sprucing up before the season is in full swing. Rearrange some furniture or paint a room. Change the bedding or splurge on that stunning centerpiece or light fixture you’ve been eyeing. And if you’re planning to throw a few parties, you’ll love our extended “Goods” section (starting on page 19), filled to the brim with beautiful-yet-functional pieces perfect for entertaining in style: “Mad Men”-chic bar carts (which are all the rage, by the way), plates and platters and bowls, and some delightful gifts for hosts and hostesses. As you enjoy all the season has to offer, we hope that you’ll make plans to tour the Governor’s mansion. It’s always decorated to the hilt, but this year, designers from the American Society of Interior Designers (ASID) will show off their talents as they dress up “Colorado’s Home” for the holidays. COLOR Inspired by “mad science,” the folks at Sherwin-Williams have created an exotic new palette for 2014 THINK SCIENCE EXPERIMENTS, copper cauldrons and antique curiosity cabinets, and you’ll understand the thought behind the new “Curiosity” line of paint colors from Sherwin-Williams. “We were inspired by a renewed interest in a darker mood, antique oddities and lab equipment,” says Jackie Jordan, the Director of Color Marketing for the popular paint company. “We wanted to take rich, bold colors and tone them down with gray. They can be used as neutrals and pair well with strong accents.” The result, she says, is a palette reminiscent of smoke and vapor, library pewter, and unusual items the Victorians collected and displayed. “There’s an edgy, sexy feel to these colors,” Jordan adds. She suggests using the colors in dining rooms, dens or bedrooms— spaces that beg for a warm, cocoonlike feel. “And using a flat finish is much more sophisticated.” Jordan explains that textiles with copper or other metallic threads mix well with the soft hues, as do black accents. “These colors are meant to be inspirational. They translate beautifully in fabrics and accessories.”

CH&L: What has surprised you most during these past two years?

Dean Sobel: The [public’s] response. It was a project and an artist shrouded in mystery, and so I think in many respects, there’s been a reawakening of the importance of Clyfford Still. Our goal of having the architecture and the art feel right in balance, feel like two parts of a whole, turned out better than any of us ever expected. You don’t know until you bring the art in how it will all work together. People have been so complimentary, so delighted.

Is this a crazy job—to direct a museum dedicated to this single artist who has been, as you say, rather mysterious for more than a half-century?

It’s a great gig. We’re accessing art works and materials that no one has seen since the artist made them—or if anyone saw them, it was his daughter and wife. We’re in this long period of discovering. In my field, a lot of times everything has already been discovered. I feel very lucky.

Were you unsure about how people would respond?

So are there things you’ve discovered about Clyfford Still since the museum opened?

I believed in the art, and I thought we were making a good building, but it really exceeded my wildest dreams. Of course, I’m a little biased. Every day, people come from far away just to see Clyfford Still’s work. In our first few months, we had people from all 50 states and 24 foreign countries. We are a destination for people who seek out modern art, which is exciting. As for any uncertainty, Still’s work had been seen so infrequently during his lifetime, and then not at all in the 31 years between his death and this museum’s opening. It started to be a real mark on his legacy. He started to be an afterthought in the discussion of modern art and Abstract Expressionism, which was very frustrating. So I’ve been so pleased to see people embrace the museum and Still’s incredible body of work.

One thing: it makes sense to me why he sacrificed the things he sacrificed—fame and fortune, namely—by removing himself from the art world. It happened right when he started to get famous. He got close to that flame and he realized that his art would be compromised. He wanted the art to speak for itself. He didn’t want critics and museums and galleries to impose meaning on it. I think he believed that there was an ideal way to see his art and, believe it or not, he would rather it not be seen at all than compromise that experience. The other thing that I’ve discovered is the art itself. I didn’t see that much of it before the museum’s opening. We didn’t own it, so I had to have permission to go see it. Only in the last two years have I discovered the amazing richness and depth—both in the range of media and in the work itself. The collection has

about 3,000 pieces, but it’s not at all 3,000 of the same thing. The richness of the imagery is tremendous: his pieces can be exceptionally austere and reductive, but then at the same time they contain dense, complex imagery whose meaning we’ll never fully understand. Is that what you like best about Still’s work?

Yes, the whole package. His color, the way he applies the paint—the whole experience. By the mid-1940s, he gets incredibly good at it. The first quasiabstractions [before the mid-40s] are fascinating paintings, but they’re not always great paintings. And then his feet leave the ground. This happens with great artists. You could see it at the Van Gogh exhibition [at the Denver Art Museum]. They get into that rare air where there is a complete meeting of all things. They know exactly what they do, and then they have the physical capacity, the technique, to pull it off. Still was a hardscrabble painter, and he achieved this exceptional level from that struggle and his process. You know, we’re still trying to understand this collection. I always say that we’re about five minutes ahead of the audience. It’s true. What do you think people most misunderstand about Still? He has a reputation as being rather cantankerous, maybe even egotistical.

You’ve answered the question. His generation of artists felt so strongly about what they did, and felt it was so important that they wouldn’t sacrifice this vision to anything. Today, we forget that kind of passion in our world of irony and 15 minutes of fame. Clyfford Still rarely spoke about himself. I wish he had said more 38

about his art and his work. But, more often, he was coming to the defense of art. He wrote and talked a lot about the ethics of art. So he would not hesitate to lose his manners with people whom he felt weren’t worth patience. But he was among the last of the great, heroic modernists who had utopian views of what art could be, and why it’s vital to the world. What should people know about the Clyfford Still Museum?

We can only show about five percent of Still’s work at a time. Even if you’ve been here before, chances are [the exhibition] has changed considerably since then. It’s been surprising to me what happens when we shuffle the deck, so to speak—when we move one painting from one space to another. The work is so much in dialogue with itself. Changing the setting changes how you experience the collection. In short, we’re not even to the halfway point [displaying] the paintings. The surprises and revelations will be happening for a long time.

John Tobey The Denver-based event designer can plan anything from an intimate wedding to an over-the-top gala, all with an eye toward philanthropy BY JULIE BIELENBERG

IT SHOULD’VE BEEN OBVIOUS to John Tobey from his youth that the event industry was his destiny. “Let’s have a lovely tuxedo party,” the then-21-year-old Tobey thought one fall evening in the late 1980s at his Creighton University fraternity house. “We had all rented tuxedos for our senior year holiday formal and I thought, why not get two nights out of these rentals and throw a cocktail party with our dates?”

Tobey did exactly that. “I used our ping-pong tables and draped them in cloth, then elevated certain sections to create a 3-D platform for food and drinks. I found random items such as lampshades, water buckets and soccer balls, and adorned them with lights for a festive atmosphere. I hung more lights from the ceiling and used gold lamé that, oddly enough, I just happened to have in my closet,” chuckles Tobey. He was so proud of the

transformation that he invited the president of the university to the party to show off his skills. When Tobey wasn’t impressing college luminaries with his party wizardry, he and his buddies would pile into a car and drive from their Nebraska campus to Kansas City. “We would spend numerous Saturday nights at the Ritz-Carlton an hour from campus and get the weekend rate they would offer. It didn’t cost us much and it really

exposed me to this level of sophistication I yearned to be a part of later in life.” The Ritz-Carlton in Phoenix happened to provide Tobey’s first job after graduating—he was hired as Head Concierge for the luxe hotel’s Club Level. He eventually returned to his native Denver to take the position of Party Captain at Epicurean Catering, where his knack for creating a masterpiece out of a mess propelled his career. “Everyone in the industry has one of these stories: We were getting ready for an event, and the client changed the entire party in the last hour. A buffet dinner for 300 needed to now be a seated dinner for 300. I literally wanted to cry, but I just went into auto-pilot and the magic tools came out.” Aside from saving the event, and the company, from embarrassment, Tobey’s on-the-fly improvisation landed him the role of Event Designer at Epicurean and then Director of Food and Beverage for Castle Pines County Club, where he met many life-long clients in need of top-notch planning for weddings, showers, reunions and much more. Fast-forward 14 years, and John Tobey Event Design has been staging phenomenal soirees across the state with unique props and a cando attitude. Tobey has literally hung two Mercedes-Benzes so they appeared to be floating above a stage. “I thought, how will I suspend five tons of metal above guests, both logistically and in the five-hour time span the client gave me? I called a team of three companies and the cars were suspended over the stage by the time guests arrived.”

Make it personal. For anything from corporate meetings to weddings, it’s fun to have guests’ names on wine bottles, tableware, glassware, everywhere.

Cover it up. It’s remarkable what a dramatic difference slipcovering the chairs can make. Whether it’s a grand event at The Ritz or a Thanksgiving dinner in your kitchen, change up the look and dynamic with scarves or linens on your chairs.

Worry before the party. If you hire an event planner, go over the details of the events a week before the actual date. On the day of the event walk through the venue exactly as your guests would. This allows you to relax and enjoy the event. Turn simple into spectacular. For last-minute dinner parties, pair a tried-and-true classic with something unexpected. Pick up a pre-made salad and serve it on a fabulous piece of china. Prepare a fancy entrée when you have time and freeze it. Then, when you’re in the mood for guests, present it in a stunning serving piece.

He planned a wedding for 150 in a meadow at Keystone Ranch, only to have a herd of friendly deer end the procession. “It was an early-evening ceremony and it had just rained. The deer were coming down to eat and we had five or six of them nearly walk down the aisle with the bridesmaids,” chuckles Tobey. At 2013’s Wish of a Lifetime “Dare to Dream” Gala, Tobey greeted 500 guests at the Seawell Grand Ballroom with a dreamlike, Cirque du Soleil-esque flair— Tobey hung “clouds” from the ceiling and used a fog machine to create a surreal world of illusion complete with airborne dancers spinning on silk scarves suspended from the ceiling. But for all his accomplishments, Tobey’s commitment to helping the Denver community is at the top of his list of priorities. Over the years, he has gained a reputation as the Robin Hood of event planners. “I like to create all the parties I can for as many clients as I can, no matter the season. It is my ‘superhero’ version of the event business.” And while it might sometimes require superpowers to tackle challenges as diverse as demanding brides, sophisticated corporate luncheons and down-home, farm-to-table dinners for 3,000, Tobey’s greatest power just might be the joy he puts into each gathering. It’s a spirit of philanthropy that illuminates the whole community.

If not at a party in Colorado, where would we find you? Chicago or Los Angeles, two of my favorite cities. I never get to either of them enough. The beach and chic style draw me to the coast and the people and culture of Chicago are always a blast. Both cities are sophisticated and architecturally sexy. What’s something people don’t know about you? My grandfather started the first franchise bank in the nation. It was called First Interstate. Tell us your favorite guilty pleasure. It’s a toss-up between “Chelsea Lately” each night or the occasional stop for Chili’s Boneless Buffalo Wings. What’s the best event you have attended? It’s still to come, next year—I’m getting married in Hawaii and I fear I might be a bit of a groomzilla. I put my friend and colleague David Alexander on retainer to start planning and dealing with me! It will be the most wonderful thing I will have helped plan and, of course, attended. Where do you think you got the vibe to be an event planner, aside from the fraternity house? It has to be the Ritz. From staying there to working there to planning events there, I can never get enough of the brand. Do you have a motto? ‘What can I do to help?’ That’s just who I am, and honestly, I hope it never changes. It’s gotten me this far!

Past Perfect New homeowners embrace and preserve a Denver mid-century modern home, proving that timeless style never dies—it just gets better

Cocktails and food are passed. An indoor fountain bubbles and aluminum Christmas trees sparkle. A scene from a party on Mad Men? No, it’s actually a scene from the annual “Holiday SingAlong in the Aluminum Christmas Tree Forest” party in the brilliantly-restored, mid-century modern Denver home of John Huggins and Monica Martinez. The fanciful vintage trees, which Huggins has collected for years, are in keeping with the clean lines of the architecture and furnishings. The 1965 Hilltop home had only two previous owners and came with the original architectural drawings and contractor notes when the couple purchased it six years ago. “I think the sellers thought we would tear the house down,” reflects Martinez, “but this is a house you really want to respect.” The home was relatively well preserved, if a little worn, and hadn’t been seriously altered over the years. “What is appealing about houses of this vintage is that they are built to last, and this one was very advanced for the time,” Huggins says. “It had all the bells and whistles of the era.” The interior architecture is organized into a series of bays, with a light-filled atrium in the center that separates public spaces from private ones. “Big columns and wood beams run throughout the house, revealing how the house is put together,” explains Huggins. “It is very simple, with clean lines and no extra ornamentation.” Sliding glass doors, large windows and skylights bring in abundant natural light and link the indoors to the outdoors.

The couple kept the footprint mostly intact, with the exception of enclosing an outdoor walkway to become an entry hall/art gallery. They refreshed a number of original features such as the terrazzo-look tile floors that shine like new after a thorough scrubbing by John’s teenage sons. Metal kitchen cabinets were treated to a new coat of turquoise paint, built-in wood furniture was oiled and restored, and the atrium fountain is once again in working order, thanks to Huggins’ tinkering. “We restored the house to its mid-century Brady-Bunch glory, trying to use authentic colors, fabrics and features as much as possible,” he says. Huggins and Martinez unearthed vintage ‘60s colors while engaging in some “architectural archaeology,” painting the staircases and interior shutters a shade of lime green found in some of the original wallpaper and paint. They replaced painted-over grasscloth wallpaper on the atrium walls with a new version, inspired by the blue tile of the nearby fountain. Purple and orange accent walls add some ‘60s punch. “I love the bright, happy colors—orange, turquoise, purple, lime green,” says Martinez. “These colors are not common in houses today, but once you’ve lived with them, there is no going back.” Adds Huggins, “We got right up to the edge of overdone, but white walls and floors give you a lot of canvas to work with.” 58

“There’s something really cool about going whole hog and embracing an era. It makes a statement. You may have to do it a little at a time, but that just helps create the spirit, the feeling, the magic.”

He says

:

“Look for unexpected treasures, things that really work but that you won’t see in every shop or magazine. It doesn’t all have to be a perfect fit, especially with color. You can have contrast and different looks in a way that would be harder with a more traditional decorating approach.”

Furnishing the house took on the aspects of a treasure hunt. A trip to the Los Angeles Modernism Show yielded a pair of vintage Florence Knoll parallel chairs. Huggins’ sharp eyes spied a 1960s-era coffee table high up on a shelf in an antiques shop, its Pucci fabriccovered base as bright and colorful as it was when it was new. But the real scores came with the house, which featured sleek built-ins: buffets, a bar, and even sofa bases. Additional negotiations with the late homeowner’s children led to the acquisition of a distinctive set of dining tables and chairs as well. A collection of mid-century artwork from Colorado and New Mexico completes the look. “John has lived in a lot of iconic houses in Denver, and sometimes we look around just for fun,” Martinez says. “But it would take something very special to get us to move. We’ve really made this home our castle.” The dining room furniture, purchased with the house, was brought back to life with a geometric retro print fabric in two colorways. A large painting above a built-in buffet by Taos artist Frank Vavra highlights the modernist art collection.

Rustic

A Mountain Village home stakes its claim on timeless design that echoes Telluride’s past

TUCKED IN AMONG THE TREES, with walls of locally-quarried stone and a silo clad in rusted metal, this Mountain Village home resembles a relic of the area’s gold-mining past. But once you step inside, you’d be hard-pressed to think of anything but the modern day. Wrapped inside the home’s silo and paneled in white oak, the staircase serves as the home’s entryway. The homeowner hung the swirling metal sculpture by Houston-based artist Edward Lee Hendricks.

It’s a look that could best be described as “future rustic,” the homeowner says, and she and her husband achieved it with the help of Bruce Wright and Jodie Shike Wright of One Architects in Telluride. “We had the lot for almost 10 years and I’d started working with another architect on a much more modern design, but every time we drove by one of Bruce’s and Jodie’s homes, we wanted to go inside,” the homeowner says. “When we finally did, everything from the materials to the details, the finishes, the quality of the work and the lighting really resonated with us.” The One Architects team presented the homeowners with architectural concepts that spanned design styles, from traditional to transitional to contemporary, and the homeowners settled on a design that sits somewhere in the middle. The 7,550-square-foot home features wood, metal, stone and glass, both inside and out. The façade’s stained cedar and rusted metal ground the home in its rustic surroundings, while the interior features white oak and raw steel applied in a streamlined, high-contrast, contemporary manner. In the main living space, which contains the living room, dining room and open-concept kitchen, the architects left the nuts and bolts of the structure exposed to lend the home an industrial feel. They sandwiched steel I-beams with white oak, and in the kitchen they wrapped the island and hood with raw steel to create continuity throughout the space. “There’s beauty in the engineering in addition to the architecture, and we wanted to celebrate that,” Shike Wright says.

Throughout the home, the architects cleverly turned budgetminded work-arounds into central architectural features. “Part of this home’s engineering and artistry is what we call the ‘fire wall,’” Wright says. “In oldschool hotels, there would be a ‘wet wall’ with all of the bathrooms stacked from floor to floor in the building for efficiency. We did the same thing with the fireplaces. This one wall contains the fireplace in the living room, the one in the outdoor living area that backs up to it, and then the fireplace upstairs in the master suite.” The design of those fireplaces also marries aesthetics with costeffective planning. “We used shorter chunks of wood that were more affordable. Then we

The architects decided to forego upper cabinets in the kitchen in favor of more windows, which are set above counter height to allow for concealed storage under the deep windowsill. The hood and island are clad in raw steel to integrate the open-concept kitchen with the rest of the room.

incorporated the horizontal metal strapping so that we could detail that wood and hide the seams between the pieces,” Wright says, resulting in both a creative solution and a contemporary embellishment. The home’s focal point is the cylindrical staircase uncoiling inside the rusted metal silo that serves as the home’s entryway and introduces visitors to the “future rustic” design. Paneled in white oak, the staircase is flooded with natural light and crowned with a contemporary hanging sculpture that reflects the silo’s curves. “That staircase is what this house is all about,” the homeowner says. “It’s history and it’s modernity and it’s art. The house might be just a few years old, but it feels timeless. SOARING 27 STORIES ABOVE DENVER, this top-floor loft offers an unparalleled perspective on the Front Range and the city. The sweeping, contemporary space flows cohesively without hinting at the fact that it was once two separate residences—which is exactly the way architect Martin Goldstein designed it. “The loft was truly a collaborative effort between our firm, the homeowner and the builder,” says Goldstein, founding partner, along with his wife Melissa, of Denver’s Venture Architecture. “When we met with [then-homeowner] Ronna Phelps, she had a strong vision for the space: She wanted an open floor plan with clean, modern lines that would highlight the views. She also requested a modern kitchen and dining area that would foster easy entertaining, a central fireplace and a separate sitting area.” Goldstein knew that the successful melding of the spaces would present some technical challenges. “The suite was originally a pair of adjacent units that had never been developed, and the construction was post-tensioned slab—a building technique used in high-rise structures to increase the strength of the concrete while reducing thickness and weight,” he says. “The trade-off is that some components like plumbing are fixed and can’t easily be moved. Fortunately, we have extensive experience with this type of slab, so we were able to create a design that embraced the existing footprint.” 73

The Goldsteins worked closely with builder Mike Spencer of CBM Contractors to create the 3,300square-foot penthouse with an open living, dining and kitchen area as well as a spacious master suite and two guest rooms. “The kitchen is quite unique, and it was one of the drivers of the overall design,” Goldstein says. Professional appliances and gleaming red Italian Pedini cabinets line one wall, and a curved Pedini island visually separates the open kitchen from the dining area. A wraparound hearth grounds the living space. The seating area features custom wall panels inspired by the Art-Deco aesthetic of the famed Cruise Room bar in Denver’s landmark Oxford Hotel. A curved wall beginning at the entry delineates private and public spaces, with hidden strip lighting illuminating the upper edge and casting a subtle glow. Floor-to-ceiling windows showcase the views, and an expanse of engineered hardwood flooring in warm gray-brown unifies the space. Deciding on a mostly-neutral color palette for the furnishings, Phelps, Spencer and the Goldsteins went shopping as a team for pieces that were sophisticated but comfortable—including an all-white sectional sofa from Roche Bobois for the living room and white Crate & Barrel chairs for the sitting area. When they collectively fell in love with the work of artist Tyler Aiello at Space Gallery, they commissioned him to create a pair of custom pendant lights for the dining table. Artist Martin Pierce fashioned custom metal handles for the standard entry doors, which were backed with brushed stainless steel. Another benefit of combining two units was the resulting 1,500 square feet of balconied patio space that extends the living area outdoors. With the patio’s 270-degree view, it’s the perfect place to watch the sun setting over the Rocky Mountains or the nightlife revving up in the city—far, far below.

We took our inspiration from Robert Frost’s poem, Stopping by Woods on a Snowy Evening. Imagine walking down a treelined lane during one of those magical snowstorms where the flakes are big and fluffy and make everything quiet and clean. Then, imagine that the Grand Hallway is that “walk in the woods.” The effect is created using materials such as fabric, trim, ribbons, tile and re-purposed blueprint paper, combined with lattice, holiday greenery and twigs. We propose to take those materials and fill the Grand Hallway with ‘snowfall’ and trees both large and small. In the East Vestibule and Stairway, lighted tree branches will line the balusters, extending the illusion to the upper floor.

My design concept is based on the riches of Colorado’s land: gold, silver and lead, vital elements to the state’s colorful past and prosperity, and of course, the columbine, the state flower that colors the hillsides with its gorgeous blooms every spring. The color palette is gold, silver and columbine blue. We will mix these colors into the lights, fabric and embellishments that will go on all the greenery. 79

Nature will be represented in the leaves, branches, feathers and bark that will blend harmoniously with the sparkle.

WHEN AUTHOR RUTH TOBIAS ARRIVED IN COLORADO from Boston a few years ago equipped with a certificate from The Cambridge School of Culinary Arts, she didn’t have great expectations for the local food scene. But she was in for a big, tasty surprise—a fact she admits and joyfully celebrates in her new book of temptations, Denver & Boulder Chef ’s Table: Extraordinary Recipes from the Colorado Front Range. Published by Lyons Press, the volume features a delightful menu of behind-the-scenes vignettes and recipes courtesy of some of Colorado’s finest chefs and restaurants, from Fruition to Frasca to Flagstaff House to Phat Thai and beyond. Tobias explains that she intentionally chose a diverse mix of cuisines requiring varying levels of cooking expertise: “I was going for a representation of what I think this community is right now, which is very young, very vibrant and pretty darn edgy.” Compared to many larger cities, Tobias notes, “Denver and Boulder have a fairly young population, and that means that we’ve got people who are willing to experiment.” She sees parallels between the region’s entrepreneurial, start-up culture and its trailblazing approach to food. “There’s a certain pioneer aspect that is very Western, so in that sense it’s part of our heritage,” Tobias observes. “Landscape has everything to do with who Coloradans are and thus how they cook, eat and drink,” Tobias says. “Ruggedness is a given: The cowboys and outlaws of the old Wild West have their modern-day equivalents in extreme athletes and back-to-the-land enthusiasts who forage for forest mushrooms when they’re not tending to beehives and chicken coops.”

Seared Rockfish with Warm Crab-Kale Salad & Vanilla Consommé

2 quarts chicken stock Sheet gelatin (amount determined as directed)

For the crab-kale salad: Approximately 2 tablespoons ricebran or other cooking oil 4 large king crab legs, split and shelled, meat cut into 3-inch pieces 1 bunch Tuscan kale, cleaned and chopped 4 cloves garlic, sliced paper-thin with sharp knife 4 (4-5 ounce) rockfish fillets

Though he favors rockfish (better known as striped bass) for the sweetness its flesh derives from its diet of crustaceans, Peterson suggests tilapia as a substitute. He also notes that while clarifying consommé with gelatin takes longer than the raft method—you will need about two days to do it—“it’s more foolproof” (especially if you use a digital scale, as is highly recommended). There may be some consommé left over; if so, it will keep about five days. Since it “isn’t unlike the broth in a Thai hot pot,” you could heat up the remainder with noodles and Asian vegetables. (Serves 4) For the vanilla consommé: 1-2 teaspoons cooking oil (Peterson likes rice-bran oil) Seeds of 4 vanilla beans 2 shallots, finely chopped 1 clove garlic, chopped 1 tablespoon crushed red pepper

Special equipment: two large, heat-safe plastic containers digital scale coffee filter To make the consommé, heat oil (as little as possible) in a good-size saucepan over a medium-high burner and sauté the vanilla, shallots, garlic and crushed red pepper. Add stock and bring to a boil. Place a plastic container large enough to contain the infused stock on your digital scale and set it to zero, then pour the stock into the container to determine its weight in grams. Multiply the number by 0.05;

And, as in frontier days, Coloradans find it important to band together. Tobias points to the strong local sense of community as a key ingredient in today’s vibrant mix of Front Range restaurants. “There’s a lot of support and desire to see everybody succeed,” Tobias, now a proud Coloradan herself, remarks. “It’s not just the chefs who are supportive of each other. The diners are a part of it, too.”

the sum will equal the amount of gelatin you need in grams. Measure the gelatin accordingly, then bloom it by soaking it in a bowl filled with ice-cold water for 3-5 minutes. Add the bloomed gelatin to the stock, place the mixture back into the pot, and return to a boil; transfer it to the container and freeze overnight. Place a sieve lined with a coffee filter over another, larger plastic container; uncover the container of frozen stock and place it upside down atop the filter so that, as it melts, it drips through. This process will take about 24 hours in the refrigerator. To complete the recipe, place about 8 ounces consommé in a small pot and warm through over gentle heat. Meanwhile, divide the 2 tablespoons oil between two saucepans over medium-high heat. In one, sauté the crab, kale, and garlic until warm; in the other, sear the rockfish fillets until cooked through, about 5 minutes on one side and 3 on the other. Distribute even amounts of the crab-kale mixture in a mound at the center of each of four large, shallow serving bowls; top with fish. Ladle a small amount of consommé around the warm salad and serve immediately.

Apricot Deviled Eggs Chef Rachel Best Leaf Vegetarian Restaurant, Boulder (Serves 4-6) 12 eggs 1 tablespoon plus 1 1/2 teaspoons salt, plus extra to taste 1 /4 cup nondairy mayonnaise 1 /4 cup apricot preserves 1 /2 teaspoon pepper, plus extra to taste 1 /4 teaspoon paprika 8 ounces arugula, washed, dried and trimmed Olive oil as directed 1 fresh apricot, slivered (optional) Special equipment: pastry bag (optional) Place eggs with 1 tablespoon salt in a good-size pot and cover with cold water. Bring to a boil and cook for 8 minutes; immediately remove from the heat and put ice in the pot; as soon as eggs have cooled, peel them. Slice eggs in half lengthwise, carefully removing the yolks. Place yolks, 1 1/2 teaspoons salt, mayonnaise, preserves, 1/2 teaspoon pepper and paprika in a food processor and

blend until smooth. Put the filling in a pastry bag (or you can use a Ziploc bag with a small hole cut from one bottom corner) and pipe the yolk mixture into the hollows of the egg whites. In a bowl, toss arugula in a small amount of olive oil and season with salt and pepper to taste. Transfer to a serving platter and place eggs on top of greens. Garnish each with a sliver of apricot.

In a small bowl, whisk together the oils and vinegar to emulsify; add the oregano, salt, and pepper, whisk to combine; adjust seasonings to taste. Set aside. Cut romaine and radicchio into bite-size pieces and place in a large bowl. Thinly slice the cabbage and onion and add to the bowl along with the salame, provolone, and chickpeas. Toss to combine. Add dressing to taste (there may be some left over), toss to lightly coat, and serve.

Crispy Beef with Spicy Sauce

Special equipment: frying thermometer wok To make the sauce: In a nonreactive sauce pot over low heat, bring all sauce ingredients except cornstarch and water to a simmer. Combine cornstarch and water in a mixing bowl to make a slurry. Once the pot is simmering, add the slurry; return the mixture to a simmer, whisking continuously until it thickens, then lower heat to keep warm. To make the beef: In a large pot over medium heat, bring peanut oil to 350°F. Meanwhile, combine the cornstarch, salt, and pepper in a bowl and dredge the steak slices in the mixture, shaking off any excess. Fry the meat in batches (so as not to overcrowd the pot) until crispy, about 2 minutes per batch. Add sesame oil to a wok or sauté pan over high heat; when hot, add remaining ingredients and sauté until fragrant. Measure in 1–1 1/2 cups of the reserved sauce, bring to a boil, and reduce until slightly thickened, about 1 minute. Again working in batches as necessary, add fried steak slices and toss quickly to coat. Serve immediately.

Chef Biederman recommends serving this dish over steamed rice or Asian-style noodles, such as chow fun. (Serves 4) For the sauce: 3 /4 cup light soy sauce 4 tablespoons honey 3 tablespoons rice wine vinegar 2 tablespoons cooking rice wine 4 tablespoons turbinado sugar 1 1/2 tablespoons sambal oelek 2 ounces ginger, peeled and julienned 3 tablespoons cornstarch 1 /2 cup water

Spire Sparkle This sky-high Denver residence is a perfect perch for elegant entertaining BY LAURA BEAUSIRE

CREATING A SPACE FOR LIVING AND ENTERTAINING on the 23rd floor of Denver’s glamorous Spire tower is a designer’s dream assignment, especially when the home’s giant southwestern-facing windows frame panoramic mountain vistas. “The owner loves to entertain and the space was designed to allow each guest to enjoy the view no matter where they are sitting,” explains Jennifer DesJardin, of Denver-based MOTIF Design Solutions. “Many of the chairs are on swivels for this reason.” Even the design of the kitchen backsplash was influenced by the spectacular outlook. DesJardin installed a mirrored mosaic “to reflect the beautiful view of the Colorado mountains and to add sparkle and elegance.” The open flow of space between kitchen, dining and living areas—so essential in encouraging guests to mix and mingle—is especially free and easy here. “The style is very understated and elegant, yet very comfortable and inviting,” DesJardin says. She characterizes the home’s sophisticated mix of modern and classic elements as “Barbary Barry meets Mies van der Rohe.” The dining area features a Nuevo table surrounded by settee chairs from Bernhardt. Custom white cabinet built-ins act as a bar and serving place, with an integrated wine refrigerator and floating shelves for glassware and cocktail accessories. The champagnecolored rug from Foreign Accents acts as a pop of fizzy color. DesJardin loves the ethereal feel of the finished space: “With the views, and being so high up, along with the light, airy feel of the finished rooms, it is like experiencing a little slice of heaven.” 152
