The quintessential drink of summer, sweet tea is tradition around here. Served ice cold when it's hot as Hades, there's nothing like it for cooling things down. Whether you take it sweet enough to melt your teeth or prefer a slightly lower octane formula, the clinking of cubes melting in a glass of that beloved nectar is the perfect backdrop to any good summer afternoon.

SSSIP on SUMMER The bright sunny days of summer have arrived, so it’s time to find yourself a breezy porch and reach for a cool drink. In this issue, we’re raising our glasses to our favorite summer beverages. Thanks to an increasing local appreciation for classic spirits, cocktails, and craft beers, there are more tasty ways than ever to beat the heat this famously hot season. After all, our lovely city is growing and evolving before our very eyes. With new restaurants, eateries, bars, and brew pubs opening all around us, we’re enjoying an embarrassment of riches. No matter where hunger or thirst strikes, you’ll discover local chefs, bartenders, restaurateurs, and food producers making their unique mark on this city. We at Fig are inspired by the thriving collaborative spirit in Columbia. Whether it’s a Farm to Table dinner at City Roots or a Columbia Brew Bus tour of craft breweries and distilleries, local entrepreneurs and visionaries are working together to make our city an ever more vibrant place to live, work, eat, drink, and play. We love showcasing the best that Columbia has to offer, and we’re proud to come alongside and support the people, places, and partnerships that encourage creativity and new ideas. So pour yourself an ice cold glass of sweet tea, thumb through the pages of Fig, and make some plans! Our summer food and drink issue is always the perfect excuse to grab some friends and try that new local hot spot. Cheers!

THE SWEET

Sips of Summer

summer is the perfect season

to lift a nice cold one, and Fig blogger Kaitlin Ohlinger of AdVintage is here to help you find your new favorite craft beer. “After ten years of focusing primarily on wine in my career, delving further into beer has been a breath of fresh air. What I like about beer is that it can be complex in its simplicity. Certainly beer offers a dizzying array of styles, techniques, and backstories, but it’s okay to like a beer simply because it tastes good. For example, the Anderson Valley Briney Melon Gose. Pronounced “Goe-ZUH,”

this traditional German-style beer has recently surged in popularity. Anderson Valley Brewing in California now cites Gose as 60 percent of their total production. The Briney Melon sips like a burst of watermelon and cantaloupe, with a salty-sour finish. Next on the list, Blackberry Farms Classic Saison covers almost every angle of summer beer enjoyment. Relatively low in alcohol at 6% ABV, this Belgian Farmhouse style offers extra carbonation artfully layered with bright notes of lemon, fresh bread dough, and peppery spice. This Saison’s spicy funkiness plays nicely

off something with a high fat content, like your next at-home charcuterie board. Finally, Bell’s Oberon has now almost become synonymous with summer. A light wheat ale with refreshing citrus and light hops, it is a perfect partygoer. Whenever you spot that bright blue label, you know that carefree summer days have arrived.” AdVintage Distributing is a South Carolinabased importer and distributor for a number of Columbia’s great beer and wine shops that can guide and assist you in choosing exactly the right libations this summer.

Chef Alex Suaudom du Monde & Mysterious Barkeep Sam Suaudom

Authentic / since 1999, the Suaudom family has

been basing their Baan Sawan Thai Bistro menu on this simple notion: “Let’s offer what WE would want if we were customers in our own restaurant.” With the goal of creating an experience that matches the best of what they remember from the home cooking of their childhood, brothers Alex and Sam each bring a unique and critical component to the table. Part undercover secret agent, part vino cognoscenti, Sam Suaudom instinctively knows what to pour and when to pour it. For those lucky souls taking their meal

at the bar, Sam is perfectly attentive— disappearing into the woodwork and then reappearing at just the right moment. Whether your glass needs refilling or your conversation needs a touch of quirky intellect and thoughtful humor, Sam is your guy. Meanwhile, at the back of the house, Alex Suaudom du Monde is the chef par excellence. Relying on certain Thai standards, as well as exploring unexpected and inventive specials, Alex is known for his expertise at deconstructing traditional recipes, then executing them with classical and modern techniques.

“Growing up in Columbia, a meat and three or a Lowcountry boil was just as beloved to me as Gaeng Keow Wan,” explains Alex. “My goal is to evoke those Southern comfort food elements within a Thai food perspective.” An authentic Columbia flavor for almost 20 years, the aptly named Baan Sawan (translated from the Thai for “House of Heaven”) is a gustatory adventure that elevates the senses to another realm. Discover the flavors of Baan Sawan for yourself at 2135 Devine Street.

Whiskey Tasting & Book Signing S AT U R D AY, J U N E 1 8 • 4 P M BOURBON 1214 Main Street Join us for a special whiskey tasting event to celebrate the release of Robert F. Moss's new book, Southern Spirits, a narrative history that traces liquor, beer, and wine drinking in the American South, including 40 cocktail recipes.

“This is a fascinating read that deserves a prominent place on the bookshelves of anyone with an interest in our drinking culture, so much of which was born in the South.” – Gary Regan, author of The Negroni and The Joy of Mixology 26 figcolumbia.com

FC Summer 2016.indd 26

Ask almost anyone to name a uniquely Southern drink, and bourbon, mint juleps, and possibly moonshine are usually the only beverages that come up. But what about rye whiskey, Madeira wine, and fine imported Cognac? Or peach brandy, applejack, and lager beer? At various times in the past, these drinks were as likely to be found at the Southern bar as barrel-aged bourbon and raw corn likker. The image of genteel planters in white suits sipping mint juleps on the veranda is a myth that never was—the true picture is far more complex and fascinating. Southern Spirits is the first book to tell the full story of liquor, beer, and wine in the American South. Robert F. Moss is a food and drinks writer and culinary historian living in Charleston, South Carolina. He is the Contributing Barbecue Editor for Southern Living and the Southern Food Correspondent for Serious Eats. 01 NOT SINCE pre-Prohibition have we had such a dizzying array of cocktail options at our fingertips. Thanks to Columbia’s growing appreciation for the craft cocktail, local establishments have stepped up their game considerably, creating the kinds of drinks we dream about when the mercury threatens to burst the thermometer. So find a shady spot or an icy blast of A/C and check out some of our favorite summer libations.

“Slim Pickens is a swampy, wellseasoned, Southernstyle porch jam with the right amount of bounce and swagger.” Greg Slattery, The Jam Room

Voices / the quirky southern twang of Slim Pickens will have

you do-si-do-ing in your cowboy boots, no matter the occasion. Idiosyncratic yet funky, this local duo is comprised of guitar maestro Branhan Lowther travis-picking away at his acoustic guitar, while Alex Corboy pumps out the uptempo, in-sync grooves of his bass, solidifying their beautifully orchestrated medley of melodies. Slim Pickens epitomizes the oldfashioned Southern life, and is more motivated by sharing in people’s good times than by rocking out the next packed arena. Their musical influences stretch across diverse genres including the “virtuoso picking of Tommy Emmanuel”

to death metal band Artificial Brain. Though unorthodox in their influences, their sound is more on cue with your favorite summertime blend of folk-grass and country funk in tracks like “Miss You Baby” and “Cannonball Rag.” Mutually piqued by philosophy, the souls of Branhan and Alex collide on stage as they pluck away at the crowd’s resistance to do a jig. Whether it’s a cool summer night or a sunny daytime party, Slim Pickens has what it takes to transport you back to a time when life was just a little bit simpler. SARAH SIMMONS

Fig is thrilled to share one of Sarah's favorite seasonal recipes that you can make at home:

recognized by Food & Wine magazine as

one of the 50 best chefs in New York City, Columbia native Sarah Simmons recently opened Rise Gourmet Goods & Bakeshop on Harden Street in Five Points.

THAI STEAK SALAD 0 1 C O M B I N E water and sugar in a small

saucepan and heat over medium heat until completely dissolved. Transfer to a small bowl, add fish sauce, lime juice, garlic, and chili powder and stir to combine.

0 2 T R A N S F E R half to a small container and

reserve. Add oil to remaining half and whisk to combine. Place flank steak inside a gallon-sized zipper-lock bag with marinade. Press out air, seal bag, and allow meat to marinate, turning occasionally, for at least 1 hour and up to eight.

With her lifelong love of South Carolina summertime eating (and cooking!), Sarah knows that nothing beats locally grown food: “I wait all year for the bounty of produce available in the summer months. Sweet corn, peaches, tomatoes, blueberries, field peas, okra, and watermelon are just a few of my favorite things. Whether I’m entertaining at home or ordering dinner at one of my favorite local spots, I always make sure SC produce is the star of the plate.”

03

R E M O V E steak from marinade and pat dry with paper towels. Place flank steak over hot side of grill. Cook until well charred, about 3 minutes. Flip steak and continue to cook until second side is well charred, about 3 minutes longer. Transfer steak to cooler side of grill, cover, and cook until the center of the steak registers 125°F on an instant-read thermometer for medium-rare, or 135° for medium, about 5 minutes longer. Transfer to a cutting board, tent with foil, and allow steak to rest for at least 5 minutes.

0 4 S L I C E beef thinly against the grain and

transfer to a large bowl. Add herbs, shallots, bean sprouts, and reserved marinade, and toss to combine. Serve immediately.

The Central Carolina Community Foundation, the Midlands expert on philanthropy, is a nonprofit organization that links charitable people and businesses with areas of need in our community. Since their inception, they have awarded more than $100 million in grants through their stewardship of over 400 funds. Early Childhood at Heathwood Hall. Columbia’s Premier Age 2 – Age 4 Program. young children love to tinker — and at

Heathwood Hall, we see tinkering as an opportunity to introduce our youngest students to subjects like physics, math, and engineering in the most tangible and engaging way possible. That’s why we’ve created a dedicated tinker lab, where our students’ innate curiosity drives a learning process that’s creative, engaged, and inspired. Because inspired learners are confident learners, and confident learners are successful learners—and at Heathwood Hall, inspiration is central to every child’s education from day one.

B L OGGE R CORNER columbia is bursting at the seams with fun & interesting local experts who are more than happy to share what they love about living in this great city. Meet Fig foodie blogger Holly Heaton, aka The Girl with the Messy Kitchen, and follow her at figcolumbia.com.

what's the first thing that comes to mind when thinking about what makes a great city? The grub, of course! In the last

few years, there has been a nationwide explosion of people talking, writing, blogging, and vlogging about the vast and varied world of food. With this sparked interest comes a growing number of foodies eating their way through cities— on a quest to find the most delicious and memorable fare out there. Columbia has followed suit and transformed into quite the melting pot of cuisine; and, as a new-to-the-game food blogger for Fig, I've had the honor of getting to know the chow choices in Columbia on an intimate level. What's so interesting about the Columbia food scene is the incredibly diverse variety of options available to locals and out-oftowners alike. Got a hankering for a unique and delicious taco? White Duck Taco and Publico are calling your name. Looking for that

From white tablecloths and vintage hole-in-the-wall, everyone’s-a-local type wine to picnic tables and plastic forks, place? Watch the game at the 30-year-old Columbia is becoming more than just a Columbia favorite Yesterday’s Tavern, or city with lots of trains and a St. Patrick’s grab a home-cooked brunch at the quaint and adorable Compton’s Kitchen. Teleport Day Festival you’ll never forget—it’s blossoming into a foodie-culture hub back to the '50s with the diner-vibes of right before our eyes. Rosewood Dairy Bar and Sandy’s Famous Hot Dogs. And, oh lord, don’t even get me started on the BBQ! Order one of the matchless Yellow Dog an avid mess maker, wine drinker, Barbecue menu and people lover, Holly Heaton finds beauty items at Jake's in the small things: the buzzing chaos of a in Five Points, colorful market, the craft and detail in a plate or put on pants of homemade pasta, or the affection you can with an elastic just taste in a meal a loved one has made waistband and for you. Deeply intrigued by all things culinary, head over to Holly is attempting to transform into a self-taught Palmetto Pig’s chef while simultaneously balancing life as a drool-worthy college student. buffet. Giving Back / while for many, summer is the season of relaxing and recharging after a busy school year, for some families in our state, it’s the season when their children are at the highest risk for hunger. End Child Hunger SC, a project of the University of South Carolina’s Center for Research in Nutrition and Health Disparities, works to both build awareness and create a coordinated effort to address child hunger in South Carolina. Comprised of several partners in the Midlands including school districts, churches, state agencies, civic organizations, and local non-profits, End Child Hunger SC understands that it takes

USC CENTER FOR RESEARCH IN N U T R I T I O N & H E A LT H D I S PA R I T I E S

a comprehensive approach to ensure that fewer children go to bed hungry. According to the US Department of Agriculture, only one in five low income South Carolina children received summer meals during Summer 2014. Thanks to the efforts of End Child Hunger, more children were reached through the recruitment of 14 additional summer meal sites in Richland County. In addition to their work in addressing child hunger, the team at the Center for Research in Nutrition and Health Disparities partners on a project called FoodShare Columbia. Designed to help alleviate the stress that families face

when they live in “food deserts,” this program assembles produce food boxes to distribute to low-income individuals. The fresh fruits and vegetables in these boxes come from a family-owned produce distribution company that is striving to increase their purchasing from South Carolina farmers. Begun in April 2015, FoodShare Columbia has already distributed more than 4,000 food boxes, and is revolutionizing the way our community addresses food insecurity. To learn more about these programs and how to become involved in addressing hunger, contact Carrie Draper at draper@mailbox.sc.edu. figcolumbia.com

Kitty & Debbie McDaniel

there are seasons to our life cycle and one that adult

children never really plan for is the relocation of parent(s) and/ or other dependable family members closer to your home. This process is physical, emotional, and difficult to handle all on your own. Your parent(s) or loved ones are moving away from what they have always known as home, so it is up to you, the child or family member, to make the transition work. A certified case manager can assist you through the process. We will guide you and allow you to grieve and celebrate the life change, while directing you through the move by identifying housing, medical support, social activities, and adjustments by both parent and child(ren). Senior Matters has been assisting families with this process for 19 years and it continues to be an honor to assist families with any transition. Please call for a consult when considering a change or move with one of our case managers. You do not have to walk through this process alone.
