at fig, we believe that a great city needs

In this issue, we bring you a taste of the care and passion that goes into each signature dish served in many of the restaurants around our City. We’ve captured the finishing touches that make these dishes full of flavor, visually stunning, and tastefully memorable.

Lancaster's restaurant scene is coming of age, bringing us more cultural cuisine options than ever before. The chefs of our city are pushing boundaries of tradition, while honoring only-inLancaster, fresh-from-the-field collaborations with our local farmers. The abundance of fresh and local at our doorsteps, combined with the artisan chefs of our city, has led to a new food awareness. Menus now feature the name of the farm where the veggies grew, where the cheese was made, and where the beef was raised. The dining experience has become personal, intimate, and enjoyed with purpose.

Dining in tonight? Visit our pages featuring Lemon Street Market for ideas on how to make organic, seasonal choices to create healthy and delicious meals at home. Trish and her team bring the gifts from our local farmers and makers into the heart of Downtown—ready to inspire your culinary imagination.

FRESH FACE | summer 2016 | figlancaster.com now open!

Doug Phillips, AIA, NCARB, NAHB

FRESH FACE :

DOUGLAS CHARLES PHILLIPS ARCHITECT

When you think of an architect, you may be tempted to entertain a certain inaccurate archetype—that he’s arrogant and intransigent, always pushing his own ideas on you. You may think of Howard Roark from the novel The Fountainhead, someone who would rather struggle in obscurity than compromise his personal vision.

Doug’s background is as unique as his professional vision. His first career was in the music industry, his band winning MTV’s coveted “Basement Tapes” competition in the 1980s.

The name “Tono” is short for “autonomy,” which Doug says reflects his belief that “everyone should have the opportunity to make their own individual statement, to realize their own unique vision.”

Fortunately, Doug Phillips dispels that fiction. Born and raised in Lancaster, he is an award-winning architect and designer who recently ventured out on his own with the aim of redefining what an architect can and should be.

“When I first started out,” he says, “I used to do architectural drafting for local builders to supplement my income.”

That philosophy has stuck with Doug throughout his career, and it’s what informs his work on a diverse palette of projects: from office spaces to luxury condos to redesigned restaurants like The Pressroom on West King Street.

After his band called it quits, one of the builders he had been doing drafting for convinced him to go to school to be an “People have good ideas,” he says, “they architect. After graduating from Temple University, Doug worked for a local simply need someone to help organize and focus their thoughts and realize their dream architectural firm for five years before he and a partner created Tono Architects, by asking, 'What if ?' I'd like to think I do which is still thriving in Lancaster today. that well.” While working there, Doug was recruited Learn more at dcparchitect.com. by a large PA builder/developer, and spent the next ten years designing mixed-use communities. 9 128 east grant street 717.808.0332 dcparchitect.com

“I like to sit down and listen to folks,” he says, “about what their dreams are, how they live and work, what they think they can afford—and then look for ways of working within those parameters.”

Meet Trish owner of lemon street market curator of locally made products The bewilderment and sometimes frustration of new customers looking for dietary help is a feeling Trish personally relates to and hopes to ease. Her own wellness journey was accelerated after her daughter was diagnosed with food-related health issues, propelling her into her own pantry cleanse. She began educating herself, became a master of reading labels, became involved in a buying club and another local food store, and now brings over 15 years of knowledge to Lemon Street Market. This awareness has social, health, and community implications.

Her love of local has allowed many brands to blossom into success. Trish works closely with many micro-producers to facilitate the farm-totable experience for the store’s customers.

FRESH FACE | summer 2016 | figlancaster.com opening june 2016

Left to right: Ryan Martin, Betsy Basom, & Ryan Smoker

FRESH FACE : Lancaster loves local. And rightly so, because of its rich history. But after the winds of modernity swept through the area, Lancaster — like many cities around the country — eventually found itself wwith fewer reasons to be proud. Fortunately, there’s been a renewed interest in cultivating all things local. Ryan Martin and Ryan Smoker of The Infantree, a local brand experience studio, have encapsulated everything that is special about Lancaster by launching Ellicott & Co., a men’s retail boutique. “In our travels in Nashville we fell in love with this 1940s gas station,” Ryan Smoker says, within which was a company making jeans, authentically American. “You walk in and the sewing machine is right there. It really captured our imagination.” 22 45 north market street ellicott.co

Martin and Smoker were both born and raised in Lancaster County and met at Kutztown University, where they both majored in Communication Design. They created The Infantree in 2010, and look forward to opening Ellicott & Co. this June. The new venture’s tagline is “curators of uncommon goods,” and it aims to be a true “brand” for Lancaster by collaborating with local makers to create new, handmade goods while also providing a platform for these artisans to expand their own businesses. Until recently, Lancaster’s “brand” had been synonymous with the Amish and the discount clothing outlets. But now people are realizing there’s even more. For example, Lancaster used to be home to the Hamilton Watch Company, which

was the premier provider of pocket watches to the burgeoning railroad industry in the 19th century. When they were bought by a Swiss firm, they left the area, leaving local craftsmen to look for work elsewhere. "We’re buying these old watches and sending them to a local watchmaker for restoration,” Ryan Martin says “He cleans and fixes them, and then we resell a historic Lancaster County product again right here in town.” When you buy from Ellicott & Co., you’re not only buying something American-made that’s built to last, you’re supporting the local economy. You’re supporting Lancaster. You’re supporting your neighbors. Learn more at www.ellicott.co.

Ben Stoltzfoos, in partnership with his brother Gerald, sister-in-law Jill, and friend and local real estate agent Chad Hurst, is bringing Jimmy John’s to 35 North Queen Street, just off of Penn Square. While getting his MBA at Georgetown University, Ben realized that he wanted to take the entrepreneurial, small business route. Jimmy John’s appealed to Ben because of its strong reputation as well as its streamlined approach to quick, affordable, high quality sandwiches.

Jimmy John’s makes each sandwich in 30 seconds or less, and they deliver. “One of our slogans is ‘freaky fast’,” Ben says, “and that applies to our delivery and catering business too.” Ben’s store will deliver (with a one-sandwich minimum) by bike, car, or on foot—whichever is fastest. So if you’re chained to your desk, you don’t have to go hungry or settle for something less. Additionally, they will be open late on weekends to serve the nightlife crowd. Though the Jimmy John’s brand has a strong national footprint, Ben’s team is very Lancaster. For one thing, they’re family —in addition to his sibling partners, his aunt is the general manager of his store on Manheim Pike, and his cousin will be the

general manager of the one on North Queen Street. They’re also local—Ben recently got married in the city and bought a house there. “It really is exciting to be a part of the energy in the city,” Ben says, referencing the tightly knit community where people are increasingly taking pride in what is happening there. “We hope to contribute to that environment. We take a ton of pride in our work.” “One of the things I enjoy is watching kids from all walks of life learn to work together and improve their lives,” Ben says. “I've had employees from drug rehabilitation who have worked hard, turned the corner and are now some of my best employees.”

“Working together, lifelong friends Andrew and Nate have given us melodic indie pop. Check out ‘Coming for You’— which evokes Keane, Peter Bjorn & John, and Coldplay.”

2015 saw Andrew Benner and Nate Longenecker enter Brent Ulrich’s Lancaster, PA recording studio. This was it, the time had come to put years of writing, collaborating, practicing, performing, and desire into what would become their debut release. Five original and uniquely beautiful songs make up the E.P. “You Can’t Have Everything” by Tigers + Thieves. Just over a month ago, on March 18, it became available and is ready for you to soak it all in! Andrew (vocals, piano, and guitar) started writing songs in middle school, a good 10 years ago. Nate (synthesizer) went to the same school and over time they would 70 figlancaster.com

continue to see each other at church. A serious interest in music became a solid bond. Straight out of high school they were playing in a band with former classmates. Although this didn’t pan out, their pilot light continued to burn. The last few years have been all about fine tuning their skills and sound, so that they can deliver their goal of catchy, widelyacceptable and timeless music. Andrew began taking guitar lessons from Don Peris (The Innocence Mission) which led to Don mixing two of the songs on the E.P.. The band has grown to include Dwight (drums), Levi (guitar) + Bobby (bass). They meet three times a week but since

Andrew is constantly coming up with new hooks and ideas, he collaborates with Nate on an almost daily basis through the convenience of modern technology. Tigers + Thieves are in the midst of performing in their first series of live concerts. During our interview we asked them if they were willing to pack up and hit the road if their music took off. Andrew and Nate answered in a resounding “Yes!”. It’s simple math really, positive music + honest lyrics will reach your heart + soul. See Tigers + Thieves in action at Tellus360 July 6 at 7 pm as part of the Fig Voices concert series.

Made to Move

not all physical

theraphy is the same. Medication is rarely the right answer to eliminate pain—pain killers typically mask symptoms and interrupt the body's natural healing process. The best prescription a doctor can give is movement. (Quality) movement is medicine! But what does that mean? How should one move and how much? If these questions are not answered, and individuals are not instructed in movement that is therapeutic and helpful, more problems can arise. Prana is Lancaster's expert physical therapy team—ready to help resolve your pain in the best and most natural way for your body...through QUALITY movement!

Meet our new physical therapist, Charlie O'Malley PT, DPT. Charlie's experience with neurological conditions (or issues) and orthopedic injuries helps him assess the whole person, treat the root of the problem, and eliminate pain for every "body".

M EET YOU R FOODIES ann fulton

The voice of @Lnc_eats, facebook.com/lnceats

Why do you write about food? I enjoy the creative process of developing recipes and passing my favorites along, and I also love how food brings everyone together on some level.

Why do you write about food? I have an appreciation for good quality food and the utmost respect for the chefs behind it. When I have a good experience, I feel their story needs be told. This is my platform to help share the positives of small businesses.

What’s your most popular post? It’s a three-way tie among broccoli cheddar rice cups, baked meatballs, and orange vinegar (which is a homemade “green” cleaner). What’s the best thing you’ve ever eaten? I couldn’t even narrow the list down to 10. There are too many mouth-watering choices. Your guilty food pleasure? Ice cream, preferably served in a cone. Most liked Instagram picture? Healthy-ish peanut butter chocolate chunk brownies.

My blog is perfect for... Food reference and getting to know the story behind your food. What’s your most popular post? That would be my first blog post! It was a feature on Rice & Noodle's Banh Mi Paté Thit. What’s the best thing you’ve ever eaten? Herbed Stuffed Chicken Roulade with Local Grits Aligot from The Greenfield Restaurant. Your guilty food pleasure? A Philly Cheesesteak, Whiz Wit. Most liked Instagram picture? Tiramisu macarons from Rice and Noodles.

ANN, KIM & PHOEBE

phoebe canakis

The voice of Phoebe Savors Lancaster Central Market, Fig Style, and phoebespurefood.com. Why do you write about food? It's all we can talk about when we celebrate, laugh or cry, spill out into the back yard after the winter thaw, and because I enjoy inspiring wholesome eating from local producers. My blog is perfect for... Folks who are curious about the stories behind Lancaster Central Market vendors, visitors who want to know where to start at market, and those who just may need a bit of recipe inspiration. What’s your most popular post? One of my favorite posts is the late winter garden tour with Earl Groff. We talked about spring, the weeds with purpose growing in the cracks of the hoop house, mushrooms, and rescued flowers. What’s the best thing you’ve ever eaten? I'll only admit this once... Mr. Sticky's sticky buns with walnuts. While they are still warm. Your guilty food pleasure? Mac and cheese. Period. Most liked Instagram picture? Green Machine Salad with apples from Weaver’s Orchard.

WHERE SUCCESSFUL

Students Shine I’ve been taking voice lessons at PPAS for five years and dance for two-and-ahalf years. I feel very at home here. The staff is friendly and I feel very close to them. Michael is professional and has so much knowledge and advice to give. I’ve performed at the Ephrata Performing Arts Center, Mount Gretna Theatre, and PRiMA Theatre. I was just offered a talent scholarship to New York University. I love performing. I really believe that art reflects life and life reflects art. I’ve learned so much at PPAS. It’s a wonderful way to make friends, develop a hobby, and learn. One day I hope to be on Broadway—and a Tony award would be the best thing ever!”

In partnership with Thaddeus Stevens College of Technology, YWCA’s TechGYRLS summer camp is inspiring a new generation of women who are empowered, educated, and capable. Corporate donations through the Educational Improvement Tax Credit program open up scholarships for deserving girls.

SHREK THE MUSICAL june 18 – july 16 “Once upon a time, there was a little ogre named Shrek…” And thus begins the tale of an unlikely hero who finds himself on a lifechanging journey alongside a wisecracking Donkey and a feisty princess who resists her rescue. Throw in a short tempered bad guy, a cookie with an attitude, and over a dozen other fairy tale misfits, and you’ve got the kind of mess that calls for a real hero.

FOOT LOO S E june 7 – july 17 When Ren and his mother move from Chicago to a small farming town, Ren is prepared for the inevitable adjustment period at his new high school. What he isn’t prepared for are the rigorous local edicts, including a ban on dancing instituted by the local preacher, who is determined to exercise control over the town’s youth that he cannot command in his own home. When the reverend’s rebellious daughter sets her sights on Ren, many of the locals eagerly believe the worst about the new kid, overlooking the personal aching in both the youth and adults that fuels the need to “cut loose.” The rockin’ rhythm of its Oscar and Tony® nominated top 40 score (the soundtrack album reached number one on the Billboard charts and has sold over 15 million copies!) and augmented with dynamic new songs for the stage musical, Footloose celebrates the wisdom of listening to young people, and guiding them with a warm heart and open mind.

She is so honored to work in this creative city where people believe in collaboration and where good ideas can come to life. “The Lancaster City of ten years ago is nothing like the Lancaster City of today, and Deb Brandt and the Fig Magazine team have played a significant role in that positive transformation. When Lancaster didn’t believe in itself, Deb saw the potential, aimed a spotlight at it, and “sold” it to all of Lancaster County. "life is short, but the art is long." This phrase by the Ancient Greek physician Hippocrates is a reminder to the healthcare provider that perfecting one’s craft requires patience, humility, and above all, good judgment. Dr. Pawel Ochalski and his fellow neurosurgeons at The NeuroSpine Center have made this maxim their guiding philosophy. Located at 730 Eden Road in Lancaster, The NeuroSpine Center is owned by Lancaster NeuroScience & Spine Associates in partnership with Lancaster General Hospital, which was named in Becker’s Hospital Reviews “Top 100 Hospitals and Health Systems with Great Neurosurgery Programs” for 2015. “It is a very unique place in central PA for delivering high quality, outpatient surgical spine care,” Dr. Ochalski says.

He notes that the NeuroSpine Center merges three key elements: a certain neurosurgical skillset of the doctors delivering the care; the advancement of high quality imaging, allowing them to localize disease to discreet areas of the spine; and, most importantly, the “culture of care” that exists among the staff. “If you don’t have those three elements, you’re not going to be successful,” Dr. Ochalski says, “because then you’re relying on just being lucky that the patient is going to do well and be autonomous.” Normally, when you go into a hospital setting, you pass through a number of handoffs among different staff. At The NeuroSpine Center, however, the same people are involved in all phases of care, allowing patients to feel more confident and comfortable.

“I’ve always been a big proponent of physician-led, patient-centered initiatives,” Dr. Ochalski says, “and the NeuroSpine Center is an excellent example of this.” Many surgical specialties are recognizing the benefits of outpatient surgery. The NeuroSpine Center is leading the way in spine surgery in Central PA. “Value-based neurosurgery and medicine is where we’re headed,” Dr. Ochalski says, “we are consistently providing excellent care and returning patients back to their home the same day, at a lower cost, and with a better outcome. This represents a significant advancement in value in spine care for patients in our community.”
