THE MAKING OF THIS ISSUE HAS GOT ME FEELING REFLECTIVE
In putting together our awards issue, we look back on the brilliant feats of the last year. And what a twelve months our city has had. With growth, ambition, and innovation at the top of Dubai’s vocabulary during the last year, we’ve welcomed a slew of new restaurants, seen events of epic scale return, and seen the eyes of the world turn to our city for the debut of some huge hotels.
Dubai’s restaurant scene is bigger and better than ever. Much credit can be given to the international brands that continue to bring global flavour to our shores. In the last 12 months, we’ve welcomed names including The Nice Guy, La Mar by Gastón Acurio (reviewed on p40), and most recently the legendary Fouquet’s, our verdict of which you’ll find on p38. But the rapidly developing homegrown restaurant sector cannot be overlooked. Restaurants such as Chic Nonna, Moonrise, Fusion Ceviche and Dibba Bay – all What’s On Dubai Award-winners –are making huge strides towards putting our city’s gastronomy on the global stage. Meet them, and all the other deserving What’s On Dubai Award winners, from p19.
As well as reflection, the month of Ramadan is another perfect opportunity to rest and reset, which is exactly what you’ll find me doing this month. I’ll be switching sharing all the details on what’s on in Dubai for the only thing that brings me more joy: spending time with my three-year-old niece, Poppy. She’s in charge of planning the ultimate itinerary, which most likely means a week of playing hide and seek, hanging out with Peppa Pig, and listening to the Frozen soundtrack on repeat. I’ve never been more excited to hear Let It Go fifty times over.
Enjoy the issue,

Checking out one of DIFC’s chic new spots… Alaya
It’s been a few months since elegant Middle Eastern restaurant Alaya made its debut, but I finally got to check it out. With influences from the Mediterranean and Orient, highlights include the yellowtail crudo, grilled tiger prawns and wagyu tenderloin from the rotisserie.

Making the drive down to… Saadiyat Golf Club
I’m not a big golfer. Sure I’ve dabbled in the past, but I don’t have the patience to make it a frequent habit. Driving range sessions are different though and the nicest place I’ve ever swung a club in is Saadiyat Beach Golf Club. Wild antelope roaming free, turquoise seas on the horizon and a stunning 19th hole offering. It’s paradise, enhanced by a walk.

While strolling around Alserkal Avenue recently I came across a cool leather goods store called Nappa Dori. What I loved about this shop is not only do they have a really unique product selection, from wallets to stationery, knife sets and candles, but they also serve a great selection of coffee.

Discovering new foodie gems at…Lila Taqueria
Here at What’s On, we love supporting homegrown businesses. There’s nothing more inspiring than hearing people’s stories about how they started and how the country helped them fulfill their life-long dreams. Recently I visited new authentic Mexican restaurant in Jumeirah, Lila Taqueria. It’s the region’s first wood-fired taqueria and a must-try.

Making my very own candle with… ARTFem
Over the past weekend, we hosted one of our famous Lock-In events with Vida Dubai Marina and Yacht Club. In the morning of the event, ARTFem hosted a candle-making class. While I don’t consider myself an artist, I had so much fun painting the pot, choosing my scent and waiting for my candle to set.

Learning to make kimchi with…Tabchilli
One of my favourite things in the world is kimchi – its acidic crunches light up a fire inside me, and I always find a way to add it to most of my meals. I had the pleasure of attending a workshop at Tabchilli, run by owner Maher. He walked us through the fermentation process, and then we made our own kimchi and chilli paste to take home.

Through MY EYES
THE UAE ACCORDING TO...
Shef Codes
We ask residents to share a guide to the UAE through their eyes, their favourite places, hidden gems, must-have products and local brands they love. This month, DJ, content creator and self-proclaimed wannabe food critic, Shef Codes (@mrshefcodes) gives us the lowdown on local brands he is loving right now and the favourite spots that his extensive 28 years worth of UAE living has brought him.
As much as I love living in Dubai, sometimes I need to escape the fast-paced life. There are a few hotels that I’ve been blessed to experience, namely Nikki Beach Dubai and Nurai Island but my favourite is The Ritz-Carlton Al Wadi Desert in Ras Al Khaimah – I like to keep an eye out for the wildlife.
I’ve had a lot of family and friends down in Dubai lately. After living here for a while, I think the best place to show them is old Dubai. We take a walk around Al Bastakiya and the Creek, followed by lunch at Ustad Special Kebab and tea from a local café. I also love to head down to Rabbash in Mamza and order the tea.
I’m loving the current food scene in Dubai, but if I had to pick, I’d have to say Honeycomb Hi-Fi. Everything about the space is very well curated from the vinyl and books out in front, to the music and DJs.
My go-to will always be Amongst Few for everyday classics but I’m always on the lookout for interesting streetwear brands, including Dayo Community and Daymares. In the luxury space, Bougessa has done some interesting silhouettes for men that I have saved in my wish list.

CHOICE
PENELOPE DIAZ
Founder of Fusion Ceviche
“I feel very blessed and honoured to win Homegrown Restaurant of the Year...”
Do you have a standout moment from the awards?
Being named the winner of the Best Homegrown Restaurant, surrounded by my family, my son Marcell, my team, and my friends, had to be the best moment from the night.
When people visit Fusion Ceviche, what do you hope is their lasting impression?
I always hope they arrive at the restaurant with that emotion of trying Peruvian food but homemade cuisine; I hope that people leave happy and tell me they will return. I hope they feel my restaurant is like home. What one dish should everyone order?
The classic ceviche.
SOLEMANN HADDAD
Founder of Moonrise
“I’m blown away to win Chef of the Year at the What’s On Dubai Awards 2023...”
What are you most looking forward to this year?
We’re really hyped to push harder than ever this year – we’re looking forward to travelling to discover new flavours and ingredients, and working on some very exciting developments for our beverage programme. We will continue pushing the boundaries with what we create at Moonrise and also want to keep shouting to the world about what makes Dubai cuisine so exciting.
What’s your favourite dish on the menu?
‘Trip to Masafi’, which is inspired by my trips to Fujairah. It evokes the memories of the Masafi market where I would snack on grilled corn, and the Khorfakkan fish market where I would stop to purchase grilled fish seasoned.
A WORD WITH OUR WINNERS...
RAMIE MURRAY
Founder of Dibba Bay Oysters
“I’m really proud to win Sustainable Restaurant of the Year at the What’s On Dubai Awards 2023...”
When you began with the oyster farm, were restaurants always part of the plan?
It was important for us to create a space where people can come and have a platter of oysters directly from the people who have grown it for an accessible price. What can we expect to see in the next 12 months from Dibba Bay?
We’re continuing to grow and expand our farm to increase production capacity to 600,000 oysters a month. We will be opening more licensed farm to table concepts in Dubai and other Emirates. We will also be launching a project where we will build wild oyster reefs along the Fujairah coast using empty Dibba Bay Oyster shells.
IDA GARPHAGEN
General Manager of Sushisamba Dubai
“It feels amazing to win Restaurant of the Year...”
When people visit Sushisamba, what do you hope is their lasting impression?
Apart from the food I think the ambience as a whole is just, wow. When you enter Sushisamba you’re instantly transported into a world of vibrant colors, music, interior, beauty. The true essence of Sushisamba is in the walls, the staff, the concept, the full package.
What one dish should everyone order?
Seabass anticucho, goes without saying! Seabream ceviche is one of my favorite dishes, along with our signature Samba Dubai maki roll. Andagi donuts, worth a trip on its own.

BIRDWATCHING IN RAS AL KHOR BIRDWATCHING IN RAS AL KHOR
A means of escape, birding offers a reprieve from heavy thoughts and anxieties, with time spent outdoors simply observing wildlife. BEEKEEPING

When you think of wildlife in Dubai, oryx and falcons probably come to mind – not a thriving colony of bees. Where do they drink nectar and feast on pollen within the confines of a concrete jungle? In Hatta, it turns out. Surrounded by the area’s craggy mountains, and an abundance of native flora and fauna, Hatta Honeybee Garden is a 16,000sqm bee sanctuary. Donning a bee suit and protective gear, visitors are welcome to get close to one of the 300 hives filled with thousands of honey bees, while learning about their importance in nature. You can also purchase some delicious local honey or treat yourself to honey-inspired beauty goods.

For those not totally sure what a clay pigeon is, it isn’t literally a clay pigeon. It’s a kind of pottery discus that is flung by a launcher into the air while you blast away at it with a shotgun. It’s a lot of fun, if you like that kind of thing, and avoids the needless slaughter of real sentient birds. Give it a go at the fortress-like JA Shooting Club. Prices start at Dhs230. There’s nothing more rural than taking your dog for a walk in the countryside, but sourcing green fields in Dubai is a tall order. IFTAR OF THE MONTH:
CARNA BY DARIO CECCHINI
Intimacy and locally sourced ingredients are at the core of this iftar
If you are yet to watch Chef’s Table on Netflix, we highly recommend you start with Dario Cecchini’s episode. The charismatic Tuscan butcher takes viewers through his life, growing up eating every piece of the cow. His main goal? To change how the world thinks about meat. At his Dubai restaurant, Carna, he looks to achieve just this through a nose-to-tail philosophy. Iftar at Carna is no different – the focus is on sustainably and locally sourced ingredients.
We’re seated in the intimate private dining section of the restaurant. The room is beautifully decorated with Persian
carpets, and an oud player sets the tone for what promises to be a peaceful evening. We start with dates and sparkling water as the sun sets behind the Dubai skyline. Waiting for us at the table are a red pepper hummus with lamb meatballs, which we dip focaccia into.
Shakshuka is stewed and served in a small tagine dish, with an aromatic tomato braise that is packed with zucchini and homemade sausage. Our only critic: the egg was slightly underdone for our personal preference. We’re also presented with Carna’s take on grilled focaccia, topped with pulled beef, locally sourced portobello mushroom duxelles and greens.
Our choices for mains are roasted lamb with local vegetables and a locally sourced sea bass paccheri. Opting to taste a bit of both, we start with the sea bass – a dish that could be described as a Middle Eastern twist on the pasta puttanesca, with olives, mint, saffron, and bite-size pieces of fish.
Although lamb can be overpowering when not cooked with acute care, anything less than perfect isn’t an option at Carna. Roasted with aromatic flavours, the meat is crisp and crunchy on the exterior, and although not as pink as we’d like, it was in no way tough.
Dessert is one of the most anticipated dishes for us at Carna down solely to the pastry chef’s remarkable talent. We tuck into a mango chilli kunafa, which has just the right amount of tang from the mango and heat from the chilli to break the richness of the mascarpone cheese.
Carna by Dario Cecchini, SLS Dubai, Business Bay, available throughout Ramadan from sunset to 8pm, Dhs225. Tel: (0)4 607 0737. @carnadubai
WHAT’S ON VERDICT
Carna is an experience that is exemplified by the love that Dario Cecchini has for meat, food and how it brings people together.

REVIEW: JOSETTE
Is this the city’s best new restaurant?
W“elcome to 1920s Paris,” we’re warmly greeted as the grand green velvet drapes of the reception area lift to reveal Josette, DIFC’s newest restaurant. It is a dramatic reveal of one of the prettiest restaurants we’ve ever seen. We marvel at the sparkling super-sized chandeliers that twinkle above the bar and restaurant; at the grand stage that evokes an elegant Parisian cabaret; and admire the culinary brigade at work from the glass-walled pass. It’s eccentric, over-the-top and we love it.
We take our seat, a plush teal upholstered chair surrounding a crisp white table clothed table, right infront of the stage. Here, an ornate mustard yellow curtain conceals the creative mastery of a show, which begins from 9.30pm. Inspired
by the extravagant surroundings, we start with a tiered tower of seafood. The Plateau de Josette (Dhs950) might be a little on the pricy side, but this decadent dish is a stellar showcase of Josette’s menu, with poached lobster, razor clams, fresh crab, plump Gillardeau oysters, mussels and prawns all neatly arranged on a bed of crushed ice. The tartare de thon (Dhs110), is another prettily presented dish that might not be classically French, but with a sweet blood orange dressing and caviar topping, it’s a suitably elegant and flavourful addition to the menu. Another must-try is the escargot de Josette (Dhs105), plump snails are stuffed with a rich garlic and almond butter, which we mop up with crispy toasted brioche.
Before we move to mains, we treat ourselves to an intermediate course of
lobster pasta (Dhs345), which is a suitable size to share. We twirl neat ribbons of al dente trenette around chunks of fresh lobster, which is served in just the right amount of a simple – but impressive –tomato sauce. For mains, we pick one option from the land and another from the sea in a bid to put Josette’s full menu to the test. The entrecôte CDP (Dhs245) is deliciously tender, slathered with rich Café de Paris sauce and presented alongside a bowl of crisp matchstick fries. The Josette iteration of a salt crust sea bass is in fact a pastry crust sea bass (Dhs495), served tableside with a side of theatrics that peels away the crust to reveal fresh flakes of fish in a fruity yuzu beurre blanc. Every mouthful is a taste sensation.
If there’s one dessert you order, make it the crepes Josette, another dish that wins brownie points for Instagram-factor. This French icon gets a suitably glamourous Josette upgrade when it’s flambéed tableside.
As the lights go down the sound goes up, and a regular rotation of singers and dancers twirl, tap and serenade guests around the dining room. The cleverly choreographed shows are as much about the costume as the performance, both adding the perfect amount of Moulin Rouge sizzle to proceedings.
It’s nearing midnight as we depart, and as we do, the curtains are closing on the restaurant and the music is pumping in the bar, where Club Josette becomes one of the hottest late night tickets in DIFC.

FOUQUET’S DUBAI
Chic gourmet dining in the heart of Dubai
No longer will you have to make a trip to the capital to treat yourself to Fouquet’s fine French cuisine. The famed What’s On Abu Dhabi Awardwinning has officially opened its doors in Dubai. In the capital, it boasts standout white interiors, red chairs and gorgeous chandeliers, but here in Dubai, the Parisian restaurant spans four floors, each unique in their own way. There’s a patisserie, an brasserie, a private lounge, and a rooftop bar, which boasts views of the Burj Khalifa.
On this occasion, we’re dining in the chic brasserie, eager to tuck into French fare by acclaimed chef Pierre Gagnaire. The interiors reflect those of the original
restaurant in Paris, with wooden panels, black and white portraits of movie stars hanging on the wall, and red chairs contrasting against white-clothed tables.
We start with a classic French onion soup (Dhs75). Each spoonful is warm, hearty and comforting, topped with gooey Comte cheese bites. To truly get into the Parisian mood, we order a classic French delicacy, escargot (Dhs95 for six). The classic snails are fresh and buttery, however lacked a little in garlic.
For mains, we opt for a roasted corn-fed chicken (Dhs140). Our knife slices through the chicken like butter and the meat pairs beautifully with the seasoned creamy sauce and morale mushroom. For meat fans, the traditional veal blanquette (Dhs165) has tender juicy pieces of veal but, if you prefer your
meat packed with flavour and spice, this isn’t the dish for you. We also shared a traditional ratatouille (Dhs110) which is plated tableside. It too has a mild, earthy flavour, which is elevated with the creamy basil quenelle.
For dessert, we order profiteroles (Dhs70), but are surprised that these aren’t served as a traditional cream puff. Instead, the choux pastry comes in a bowl with vanilla ice cream and whipped cream, doused with hot chocolate sauce and almond flakes at the table. Each bite is a hearty dose of creamy and chocolate goodness, engaging our palate with different textures. For fruit fans, the pineapple carpaccio with basil (Dhs55) is a burst of freshness and a great palette cleanser to end your dining experience.
Fans of live music should make a booking on the other end of the foyer, where the dining space is just as intimate.

BREAKFAST OF THE MONTH:
SAN BEACH
Since its opening last April, SAN Beach has been a firm favourite on Palm Jumeirah’s beach club scene. It was the first of a string of openings at Nakheel’s The Club, and has managed to stay popular despite the ever increasing competition. The venue is split between a luxurious beach club and pretty indoor restaurant. We chose to start our day inside, finding a cosy booth that overlooks the entire space. The room is quiet when we arrive but quickly fills up as lunchtime approaches. But we’re here for the
most important meal of the day –breakfast.
SAN’s breakfast menu is surprisingly extensive, with a healthy section plus a page-and-a-half dedicated to eggs. We start with a fresh juice called The Red Planet – Mars (Dhs49). It’s a beautifully refreshing beverage made with raspberries, blackberries, blueberries, cranberries, and goji berries. We slurp it down in record time, feeling all the better for it. Cappuccinos (Dhs26) are served in a wonderfully unique clay cup and tray. Strong and served at the perfect temperature, we gleefully sip on the creamy goodness.
Our pick from the healthy section is a honey roasted granola (Dhs58), a crunchy and flavourful combination of oats, rye and wheat bran with seeds, nuts and dried fruit. The crumbly granola sits on a bed of
fresh Greek yoghurt, for a balanced texture. A side of honeycomb would elevate the dish even further.
From the hot dishes, Royal Feast (Dhs120) stood out to us. It’s not as oversized as the name might suggest, consisting of two fried eggs, baked tomato, sautéed mushrooms and a 100gram mustard-crusted beef fillet. Unfortunately, our request for the steak to be served medium rare didn’t transpire, but the dish was enjoyable regardless.
After breakfast, we couldn’t resist moving out to a sun lounger to soak up the sun. The chic surroundings further cement SAN as one of our favourite beach clubs, as the aesthetic details take our breath away. From the marble bar on the beach, to the solid wood sun loungers topped with a metre-deep cushion, this is barefoot luxury at its best.

REVIEW: LA MAR
A chic Peruvian restaurant
by top chef Gastón Acurio
Since Atlantis The Royal extravagantly opened its doors on the shores of The Palm’s East Crescent, there have been a handful of trendy fine dining restaurants that have caught our eye, with La Mar particularly fascinating us. Just around the corner from the grand foyer of the hotel, La Mar’s floating wooden staircase will transport you to this chic venue, adorned with dark stone and wooden features. Its sultry interior is complemented by dangling glass light fixtures, a seafood bar layered with ice, and an illuminated bar that lies along the back of the restaurant. Guided to our table on the terrace, a panoramic view of the grounds and the Arabian Gulf greet us, with palm trees dancing in the wind.
Whilst perusing the menu, our waitress illustrates the vast history of Peruvian gastronomy and the ingredients that are their pride and joy, such as Peruvian corn, which exceeds over 55 variations. La Mar’s menu consists of dishes that honour Peru’s rich cuisine, with fresh seafood that boasts bold citrussy and smoky flavours. To start, we opt for the nigiri criollo, (Dhs55), a
torched strip of delicate wagyu beef MB7 perched on rice, topped with a gooey quail egg, a sprinkling of green crispy garnish and a smoky lemon sauce. Making for a hefty mouthful, this unusual nigiri ticks all the boxes thanks to its rich umami flavours. Next up is the brasa ceviche, (Dhs150), consisting of raw bluefin tuna with a smoked aji amarillo leche de tigre. Presented in a dramatic bowl, our waitress proceeds to trickle a blanket of golden sauce onto the tuna. The delicate tuna is perfectly coated with the citrusy sauce, which had warming smoky essences, perfectly complementing the freshness of the fish.
As we lick the remaining liquid gold from our plates, the flor de papa (Dhs250) arrives. This exquisite work of art has intricately woven layers of Peruvian yellow potato mouse with king crab, avocado and cebichera sauce, and is topped with luscious cress and edible flowers. Despite its softer texture, this dish lives up to its masterpiece exterior, with

all the layers gracefully fusing together creating a symphony of soft flavours with a burst of tangy lime. We take a welcome intermission as we gaze over the hotel’s own dancing fountain show, basking at the streams of water ebbing, flowing, and twirling around each other to the beats of an Arabian melody. To follow, we dive into esparragos anticuchueros (Dhs85), that layered charred asparagus on a bed of almond sauce and spiced oil. The nutty yet refreshing sauce was eagerly mopped up onto each asparagus. This is accompanied by arroz con mariscos (Dhs360), a Peruvian rice dish prepared in a wok with Hokkaido scallops, squid, octopus, obsie blue shrimp and sprinkled with avocado. Surprised by the depth of flavour, this aromantic dish exceeds all our expectations, blending charred and citrusy nodes with fresh avocado, and tender seafood. ARTIST SPOTLIGHT: 44 APRIL 2023 | WHATSON.AE
The photos seen on this page could very well be images conjured up from your dreams – where architectural design meets creative playful art touches. The creators behind these works are Victor Nouman and Eugenio Fernandez, the owners and digital artists of Dunes Studio. Besides doing professional projects for clients and brands, they are also architects, working on projects in Dubai and Spain. Their passion is vividly clear in the fun creations they share on their Instagram account, Utopic Arabia – a name that represents the borderline between the real and the imagination. “We are creating a utopia world inspired by Arabia.” Nouman tells What’s On
Sharing the moment they conceived the concept, Fernandez tells us, “We started one day in a café in Jumeirah, just for fun, but we realised the potential of the concept and started exploring it more and more”. The artists are largely inspired by Middle Eastern culture, traditions, and architecture. “As architects, we get inspiration from the places we visit and we use our art to create new stories about these places,” he continued.
In their creations, there is always a desert landscape and rural villages mixed with futuristic elements like inflatable architecture. “This is when the magic happens,” we’re told. The images are created using a mixture of techniques. The duo uses photographs they’ve captured around the Middle East and create a unique 3D effect after preliminary sketches.
While Dubai is packed with plenty of popular architectural wonders, from the Burj Khalifa, Museum of the Future, and Burj Al Arab, Nouman and Fernandez are more inclined to the somewhat unknown. “We are attracted to lost villages in the middle of the desert or small traditional markets or tea houses.” The artists prefer remote destinations, thanks to the potential for them to be reimagined, which creates a brand new identity.
“We came to the UAE for a project six years ago, but then we decided to stay here. There are a lot of opportunities, and we really like the vibes of the city and the mix of cultures,” we’re told. Though the UAE is a central focus, it’s not the only country that attracts the attention of the two architects. They’ve also been known to inject their fun colourful touches to Oman, Saudi Arabia, and Bahrain.
Their favourite artwork series is the collection of small pavilions in deserted villages. “It has a lot of reference to traditional architecture but is also related to the passage of time and memories.” The ‘camel ATM’ is another favourite, loved for its funny nature.
Outside of work, the duo love going for short trips to soak in nature in Al Ain, Hatta and sometimes even Oman, but they also love Dubai for its growing cultural programme specifically art and music. If you love Utopic Arabia’s work, keep your eyes peeled as you will soon be able to purchase prints and NFTs and see their work in a local art gallery. The duo shared that as architects they want to explore the idea of creating larger physical installations where people can interact with the artworks in different ways. It’s a project we are sure will go viral in no time. You can keep up with the duo and their fun creations on Instagram via @utopicarabia

West Side Story stands unchallenged as one of the best American musicals
46 APRIL 2023 | WHATSON.AE

Dubai Opera has brought us musical classics such as Mamma Mia!, Chicago The Musical, and Phantom of the Opera. Now, the performing arts theatre is adding a dash of mid-1950s street drama to the mix by bringing West Side Story to the Dubai stage from April 25 to 30.
What’s it all about?
Two New York gangs rival each other for dominance of the streets. When The Sharks, immigrants from Puerto Rico, intrude on American-born The Jets’ turf, the gangs end up in a fight to the finish to take control of the area. However, in the midst of all this drama, there is a great (yet tragic) love story. Two characters from opposing sides find love and fight to be together, all while attempting to overcome obstacles and prejudices.
Sound familiar? This musical was written by American playwright, Arthur Laurents, who based it on William Shakespeare’s tragic love story, Romeo and Juliet
West Side Story premiered way back in 1957 on Broadway with Jerome Robbins, Arthur Laurents, conductor Leonard Bernstein, and composer Stephen Sondheim, redefining an entire genre, both musically and in terms of
dance. Fast forward more than 60 years, the play is still regarded as one of the best American musicals. It has thrilled over three million people and been performed in 28 countries since 2003.
The musical is packed with a rich soundtrack, including popular toetapping numbers such as Maria, Tonight, Somewhere and America. Performing the world-famous tunes will be a 20-strong orchestra belting out the beats, from hard and rhythmic rumblings to the sweet melodies.
What’s different about this rendition?
The production that will be showcased on the Dubai Opera stage this month is an all-new chapter for West Side Story. It has been put together by renowned Broadway director and actor, Lonny Price, and features the original choreography by Robbins. Price has been on the New York arts scene for over 40 years and directed

According to Price, this fresh production will transport the audience to 1950s New York without straying too far from the original storyline. He commented, “West Side Story is a timeless masterpiece, perfect in every way. All of our effort was to portray the story as truthfully and as authentically as possible.”

WHAT’S ON: IN CONVERSATION WITH, FAST X DIRECTOR LOUIS LETERRIER
In the build up to the release of the tenth and final instalment in the Fast and Furious saga, we sit down with the film’s director
It’s one of the longest running, most dearlycherished franchises in cinema history, but the Fast and Furious saga will be screeching to a halt very soon. After dumping a gallon of celluloidal nos into the tank, we’ve somehow torn through nine movies of the main storyline, and for this next installment – Fast X (due to hit cinemas in May), what will almost certainly be the penultimate film in the series – legendary action director Louis Leterrier sits in the driver’s seat for the first time. Leterrier is the director behind the first two Transporter movies, Clash of the Titan, Now You See Me and Unleashed – a CV so explosively fisticuffs and cheeky humourladen that it almost makes him overqualified for joining the F&F family.
So sit down, buckle up, and prepare to live one quarter mile at a time...
What’s On: Hello, Louis. This movie is intended to be the beginning of the end for the Fast and Furious saga, how does it feel to be in control of the concluding act to one of the most beloved dynasties in contemporary cinema.
Louis Leterrier: It’s daunting. It’s even more daunting because I’m the biggest fan of the franchise. My first movie, with my main actor, we went to see a film at the end of a day’s shooting, and that movie was Fast and Furious, we loved it so much. And I remember saying ‘this is amazing, we have to do something like this, we need to make our movie that fun, and humorous’. So my movie was The Transporter, and the guy sitting next to me was Jason Statham.

Vin Diesel and Louis Leterrier
That experience defined my life and his, and for both of us to now be in the franchise, and that I get to direct it. It just feels surreal. You have to understand, the concept of family in the franchise – is real, and powerful – on screen and off. The crew welcomed me into this family, I’m not the distant French cousin, I’m the brother. We’re so lucky to have Vin [Diesel] as the producer on this because he knows the franchise so well. It’s very comforting to be part of it, I’ve never been part of something like this, usually, I’m building things from scratch, but this family has lived together for a quarter of a century.
WO: Your filmography includes some genuinely incredible fight scenes, car chases and well-measured humour, it just fits in so well with the F&F saga, it almost feels like manifest destiny that you’re now apart of it right?
LL: It’s gravitational pull, we attracted each other – they borrowed from my movies, and I was inspired by some of theirs. I’ve flirted with directing films in the franchise before, and then with this one, just to be trusted in finishing this, one of the most loved series in the world, it’s a true honour and I take it with all the weight and responsibility that was given to me.
WO: And so, you’re working with Jason Statham again, so he’s a known entity, but in this movie we’ve also got new faces, Jason Momoa and Brie Larson, what do they as actors bring to the series?
LL: What’s beautiful about the franchise, is that it’s always been so diverse and the parity between men and women has been respected from the beginning. There’s always been as many female leads as male leads, and never forced. Brie brings another very strong female character, she’s a little bit more mysterious, she’s the secret family member of somebody we know well. The women in the franchise have traditionally grounded Dom, Brie’s more like a guardian angel.
Jason [Momoa] is the opposite, he brings chaos, on and off screen – the man is like a three-ring circus, he’s loud, he laughs, he’s brash, he’s fun – there’s always music when he acts and I’m like “can you turn it off”. He’s like my twin, my giant jolly twin, and he brings that and it’s needed to bring a different, chaotic energy to the series – and it’s quite the opposite to Dom’s. And it’s nice that you noticed about the humour in my filmography, I love mixing tones and genres, Jason Momoa helped with this – Chaos, darkness and levity. And importantly, he’s a racer, I wanted cars to be the centrepiece of the movie, practical effects, humans, family characters, these were my goals for this film, but also the end of the franchise.
Fast X is set to arrive in UAE cinemas this May.

Off to a roaring start
Celebrity-loved gym Roar lands in Dubai
PAGE 54 BIOLITE p55
GET READY TO ROA R
Sarah Lindsay’s roster of UK clients reads like a who’s who of some of the biggest names in British TV and radio. Nicholas Grimshaw, Piers Morgan, Millie Mackintosh and Pixie Lott are just a handful of names that have embarked on transformational fitness journeys at the three-time Olympian’s fitness studio, Roar. And now the specialist private gym, known for its bespoke personal training and body transformations, has landed in Dubai.
Lindsay’s vision to bring her hyperbespoke training to Dubai has resulted in a futuristic, 7,000-square-foot boutique training facility in Downtown Dubai’s Burj Vista. Here, members can embark on eightor twelve-week programmes that include personal workouts with Lindsay’s team of handpicked trainers (or the founder herself), guided nutritional plans, and around-the-clock support.
Lining the walls of the corridors that separate the gym from the entrance area and collection of meeting rooms,
which somehow feels more like a plush wellness centre than a fitness studio, are inspirational images of some of the most jaw-dropping transformations Roar has seen since its inception in London in 2016. “I envisioned operating a Roar facility in Dubai to give people here the opportunity to transform their bodies and lives with our specialist packages,” Lindsay explains. Those packages begin with setting an achievable goal for two or three months of dedicated work with Lindsay and her team, many of whom have relocated from London to ensure the same level of hyper-personal service is provided to Roar’s roster of Dubai clients. Then to achieve that goal, Roar clients are provided with one-to-one personal training at the Roar studio. Filled with custom-built Watson Gym Equipment, known as a top choice for athletes,
the gym floor is designed for multifunctional training, with a free weights area, 30 pieces of training equipment, and a 25-metre track. Through each session, personal trainers will guide clients through gruelling weight and strength workouts which are challenging, engaging, but most importantly work around their lifestyle. This is complemented by a meal plan that aims to rip up the diet culture rule book, instead putting clients on the path of creating a healthy and manageable nutrition plan that can continue long after the transformation plan ends.

we immediately feel energised and calm (and not like we’ve completed a form of exercise).
Next up is the Triple Detox iDome. The treatment uses three therapies, combining far infrared with plasma and light. This detox improves sleep, boosts mental clarity, lymphatic drainage, repairs skin, reduces chronic pain, and detoxes the full body from head to toe. As we lay under the sauna-like machine, we feel physically and emotionally restored.
For over 15 years, Biolite has established itself in the community as a leading aesthetic clinic. While there has always been a roster of cosmetic and anti-ageing treatments available, this represents its first ‘healthness’ centre dedicated to personalised and preventative therapies for beauty from within.
After years of research, the new concept supports longevity, nutrition, and sleep.
Founder and CEO, Mona Mirza, reflected: “We have seen our clients achieve the best results when they use aesthetic treatments in alignment with a healthy lifestyle, which inspired us to take a deeper look and create a 360-approach to healthy longevity.”
But what Biolite has done to elevate things one step further is understand that there isn’t a one-size-fits-all approach to
wellness. To bring its offering to an entirely different level, Biolite’s holistic approach has a team of experts on hand to help you find the best combination of biohacking therapies and advanced technologies to help you look as good as you feel (and feel as good as you look).
Upon arrival at the city retreat in Umm Sequiem, we find ourselves in a welcoming and homely space that is immediately calming and relaxing. Surrounded by beautiful and affluent people, we can’t help but feel a little inadequate as we take a sip from our golden cappuccino cup. It’s clear that this place means business.
We start panicking about our nonexistent wellness routine which consists of the occasional smoothie, a morning walk, and a one-off reformer Pilates class when time permits.
After a detailed consultation and medical check-up with the doctor, we begin with the Cell Gym. Using a specialised breathing mask, the Cell Gym exposes you to intermittent hypoxic training (IHT) and is recommended for athletes, sports enthusiasts, and those with low energy. We’re told it has similar health benefits to an ice-bath. After 30-minutes,
Once the session is over, we rehydrate with cold towels and an electrolyte drink before heading to try the Soma Sleep Therapy. In a city that never sleeps, it can be hard to ensure were getting a full eight hours. Yet sleep is one of the most important steps of our wellness routine. Soma Sleep Therapy uses the power of acoustic and vibrational therapy to train your brain and help it relax. As we enter the dimmed room, under a ceiling-full of stars, we lay on the warmed waterbed and put on our headphones. The treatment lasts for 22 minutes but you can request to be left for longer, should you fall asleep. We were sure we would not be falling asleep under these circumstances but lo and behold, after 22-minutes, we were woken up from our power nap by the therapist.
There are facials, and then there are facials. For the final treatment, we head upstairs for Biolite’s diamond glow facial. This facial uses steaming, LED light, and a diamond-extractor to draw the impurities to the surface of the skin. The therapist then extracts every possible spot and blackhead on the face, one by one – which can be lengthy depending on your skin type but is also the most effective step. This is followed by a soothing and hydrating face mask and massage. The results were visible: lifted, hydrated, glowing skin to-go. The only downside? Having to leave and go back into the real world.
Biolite, Villa 57, Al Thanya Road, Umm Suquiem 2, Dubai. Saturday to Thursday 9.30am to 9pm. Fridays closed. Tel: (0)4 346 6641. biolitedubai.com

What could you do in four days? Learn to juggle. Renovate your bathroom. Binge watch the entire compilation of FRIENDS. What if you could change your life? It started as a simple postfestive pick-me-up trip to SHA Wellness Clinic in Spain. You know the ones: a few days off sugar, fried food and caffeine, and replacing them with restrictive food and drink, massages, rest and new-fangled therapies served up within a famous medical clinic that combines eastern and western philosophies. As it turns out, in four days I got all of this… and a lot more.
I found myself on the Rebalance programme – an amusebouche of what SHA has to offer. In addition to the medical benefits of each stay, guests also enjoy hospitality equivalent to a five-star luxury resort. Set into Alicante’s Sierra Helada mountains, SHA’s architectural curves, and clean white interior aesthetic give it the elusive cool of a billionaire’s mansion… or an infirmary onboard the Death Star. Most of the clinic’s exclusive guests are here for a week or more, and although weight loss is the number-one reason people come to SHA, there are other programmes here, including healthy ageing, optimal weight and detox.
All programmes begin with a medical check-up and nutritionist appointment. You’ll discuss physical changes, family history, current ailments and agree on a correction course for your stay. New to the clinic is a pioneering advanced preventive diagnosis circuit. Operated within a super advanced Health Screening Lab, the circuit consists of different stations where the team carry out a battery of non-invasive medical tests aimed at obtaining as much information as possible about the current state of health of each person. Simply put, it involves dressing down to your undies, then standing and spinning around on machines for a highly detailed body composition. It also provides data on certain parameters, such as stress resistance, balance between the sympathetic and parasympathetic systems and body position, which do not appear in standard analyses. Results appear on your individual profile on the SHA Wellness app, along with your highly curated schedule organised through your personal agenda manager.

followed by small pots featuring healthy bites such as porridge, aduki beans hummus and a pear compote all in borrower-sized portions. Detox teas also make up a huge part of the nutrition here, with a spectacular apple tea thickened with kuzu – a natural anti-inflammatory root starch – served every night.
After four days, my skin is shining, my brain feels abuzz with creativity, and I’ve just bought my first-ever tubs of kuzu and collagen powder. With one last appointment with the GP, we put a plan in place to continue my detox journey over the next few months at home. When I arrived at SHA, I walked past the fully stocked ‘pharmacy’ selling its natural remedies to better health. “Slim chance I’m going in there”, I scoffed inwardly. But how wrong I was. In four days, my mindset completely changed. I headed home with a positive outlook on my weight loss journey and supplements duly stuffed in my suitcase. And my jeans fit better, too.
Thus ensues four full days of appointments and therapies. SHA’s approach to wellbeing is famously thorough and I sampled almost 20 different treatments, from yoga and meditation to acupuncture and cupping, and deep tissue to Indiba (noninvasive radio-frequency therapy). The best of these was a mix of water therapy and shiatsu – affectionately termed ‘watsu’, which involved being swayed around a dimly-lit body-temperature-controlled pool, while gently held by an otherworldly practitioner, for 50 minutes of ego-evaporating bliss. With your free time, you can hit the gym or relax beside the stunning infinity pool, which gives off swanky Dubai beach club vibes (minus the electro dance beats and roving saxophonist).
Rebalance four-day programmes start at Dhs7,850. For more info, visit shawellnessclinic.com
Days go by in a flash as you live and die by the schedule on your app, floating along the shiny white corridors in your activewear or bathrobe. It’s like being away on an adult summer camp, but instead of mingling with hormonal teenagers, you’re rubbing shoulders with the world’s wealthiest, and instead of scavenger hunts and raft building, you’re re-building a better you.
But all of this would be futile if the food was bad, or worse, bland. Thankfully, the dietary concept is surprisingly delicious: chef Andres Moran runs a macrobiotic regime rich in grains, legumes and vegetables (no sugar, eggs, meat or dairy). Breakfasts begin with miso soup (excellent for detoxing), swiftly

Bab Al Shams Desert Resort
Bab Al Shams is one of the longest-standing hotels in the region, but does it still deliver?
Nineteen years ago, legendary five-star resort Bab Al Shams opened its doors. Now, after closing for nine months for renovation, under the new Rare Finds group of Kerzner International, how does the transformed hotel compare with the beloved old Bab Al Shams? We checked in to find out...
LOCATION
Less than an hour’s drive away from Dubai, this desert oasis is surprisingly close to the city. The dreamy resort is located just off Al Qudra Road and is surrounded by endless dunes, nature reserves, wildlife such as oryx and gazelles, and man-made lakes. Arriving through the big wooden gates, we’re immediately calm, feeling far removed from the hustle and bustle of Dubai life.
LOOK AND FEEL
Those who have stayed at the resort previously will instantly recognise the exteriors and iconic architecture. We’re pleased to see the authentic Bedouin aesthetic remains, with earthy tones, water features, swaying palm trees, courtyards, and even the infinity pool. It was only upon entering the hotel that we noticed the difference. The reception area was bright, welcoming, and modern. The lobby feels intimate and homely with dim
lighting, comfortable couches, coffee table books, and colourful flower arrangements.
ROOMS
The rooms and suites have also received a serious upgrade and extensive refurbishment into an Arabian palace. We’re staying in a deluxe desert-view room, which has endless views of the Dubai desert and plenty of natural light flooding in. Sitting on the window seat listening to the birds, looking out at the endless dunes, and sipping a cup of tea from the generous refreshments’ cabinet is a blissful experience. The ensuite bathroom is modern and newly tiled, cream with gleaming gold touches, and the bathtubs have been replaced by huge showers. The sunrise view out of the window is beautiful enough to frame. Other room options include the terrace room with a mini garden, a deluxe suite with a lounge area and terrace, and a junior suite with a private balcony.
FACILITIES
Just like before, there are a host of amazing experiences on offer including fat biking,
desert safari, archery, horse riding, and more. It’s a shame that not all of the activities are included in the stay packages but the desert safari with a knowledgeable guide is well-worth the extra dirhams. Next to the infinity pool, there are games on the lawn to keep the little ones entertained, including table tennis and an outdoor park with a zipline.
FOOD AND DRINK
The all-day dining restaurant has a brandnew look and name: Zala. The layout is completely open plan with theatrical kitchens offering contemporary Ottoman and Mediterranean cuisines and an impressive breakfast buffet. For dinner, the restaurant was quiet, empty almost, but the alfresco entertainment restaurant, Al Hadheerah is the go-to spot for a wow-worthy dinner experience although we wouldn’t say it’s very family-friendly. We were disappointed to hear the Indian restaurant is not reopening but are excited about the the upcoming pan-Asian rooftop lounge, Anwa.
ROOM RATES
Room rates start from Dhs1,500 per night for a twin room inclusive of breakfast, a short camel ride, and a falconry display. Or you can upgrade around Dhs400 per room for dinner for two at Al Hadheerah.
Bab Al Shams, Al Qudra Road, Dubai, rates from Dhs1,500. Tel: (0)4 809 6100. babalshams.com.

RAMADAN KAREEM
KNOW YOUR STUFF
About Ramadan
Ramadan began on March 23, with Eid alFitr celebrations expected to commence on April 21. But what does it all mean?
Here’s all you need to know
What is Ramadan?
The ninth month of the Islamic calendar, Ramadan is a time when Muslims around the world abstain from eating, drinking or smoking between sunrise and sunset.
Lasting about a month, it marks the time when the Qur’an was first revealed to the Prophet Mohammed (PBUH). Extra tarawih prayers are performed at the mosque throughout Ramadan and each evening 1/30th of the holy book is recited. By the end of Ramadan, observers will have read the entire Qur’an.
Why is Ramadan so important to Muslims?
Fasting is one of the five pillars of Islam, considered mandatory by believers. The pillars are the framework by which Muslims everywhere live, and Ramadan is considered the holiest time in the Islamic calendar. It is a time for prayer, reflection and
religious devotion, to cleanse past sins and to focus on Allah through good deeds.
Why do Muslims fast?
Fasting, or sawn, loosely translates as ‘to refrain’. So during Ramadan Muslims commit to not eating, drinking or smoking during daylight hours. But sawn isn’t just about physical restraint, it also refers to bad thoughts, actions and words.
Ramadan is often a time to spend with family, breaking fast at sunset. The fast itself is intended to help Muslims learn about selfdiscipline and enable them to empathise with those who have less.

YOUR GUIDE TO IFTARS IN THE UAE
KNOW YOUR STUFF
Must everyone fast?
For Muslims, everyone is required to fast, but there are exceptions. Young children, pregnant women and the elderly and infirm are not required to fast due to possible health complications. Women on their monthly cycle do not fast, nor do people who are ill. If there is a temporary break in the fast, Muslims are required to make up the missed days after Ramadan. Non-Muslims are not required to fast. However, they should behave sensitively throughout Ramadan, which means no eating, drinking or smoking in public during daylight hours.
Does everything close during the day?
Most restaurants remain open
during Ramadan, but may have shorter opening times so it’s best to call ahead at the venue. Some places that are open during the daytime may have curtains or panels in place to conceal people eating and drinking from those fasting.
Everything tends to happen much later in the day during Ramadan. Malls stay open later than usual.
Do I need to do anything differently during the day? It’s important for everyone to dress and behave appropriately during the Holy Month. Even those who aren’t fasting should make sure that their clothes are modest, covering shoulders, chest and knees. Keep music levels down to a minimum and, of course, no public displays of affection.
