FORT EUSTIS, Va. — The United Service Organizations (USO) Mid-Atlantic and Food Lion Feeds, Food Lion’s hunger-relief platform, are teaming up to serve up a flavorful fusion of food, fellowship, and fun with their next “Let’s Cook” event, a culinary celebration designed to feed more than just appetites.

On Friday, Aug. 8, service members at Fort Eustis traded their uniforms for aprons as they stepped into the USO Teaching Kitchen to whip up a bold and delicious Southwest Baked Salmon, guided by the creative flair of local favorite Chef Joe Perkins.

“This event is all about connection, connecting through food, friendship, and the incredible support of partners like Food Lion Feeds,” said Nikki Jones, USO Center Operations Specialist at Fort Eustis. “We’re thrilled to celebrate our service members with an experience that’s not just nourishing, but also unforgettable.”

The Let’s Cook Kitchen Series, supported by Food Lion Feeds’ $50,000 commitment, provides monthly cooking classes to help service members and military families develop practical kitchen skills, foster community engagement, and promote healthier eating habits. The classes began

in January and will continue through December.

“Food Lion Feeds is committed to empowering families in the towns and cities we serve by providing nourishment and supporting vital programs such as the Let’s Cook Kitchen series,” said Kevin Durkee, Manager, Food Lion Feeds, Food Lion. “We are proud to partner with USO Mid-Atlantic to offer an opportunity for military families to strengthen

connection by preparing healthy meals.”

Finally, Francis retired from the Navy and we bought a house where I’ve been planting gardens ever since Problem is I’m still not much of a gardener Or cook, or cross-stitcher for that matter It’s okay, I never really planted gardens to grow vegetables No matter where the military

Hamburger Baked Beans

Prep time: 10 minutes

Cook time: 5 minutes

Servings: 4

„ 1/2-1 pound ground beef

„ 1/2 small onion, diced

„ 2 tablespoons ketchup

„ 1 teaspoon spicy mustard

„ 28 ounces Bush’s Original Baked Beans

In skillet over medium heat, cook ground beef with onion.

Drain fat. Add ketchup, mustard and baked beans. Stir together until heated through.

Grilled Chile Rellenos

Prep time: 20 minutes

Cook time: 40 minutes

Servings: 6

„ 6 large poblano chiles

„ 2 tablespoons extra-virgin olive oil

„ 1 medium onion, finely chopped

„ 2 cloves garlic, finely chopped

„ 2 jalapenos, seeded and chopped

„ 1/2 red bell pepper, finely chopped

„ 1/2 cup chopped fresh cilantro

„ 1 teaspoon cumin

„ 1 can (28 ounces) Bush’s Vegetarian Baked Beans, drained

„ 1 1/2 teaspoons hot sauce

„ 12 ounces pepper jack or Monterey Jack cheese, coarsely grated, divided

„ salt, to taste

„ freshly ground black pepper, to taste

Cut poblano chiles in half lengthwise to create boats for filling; scrape out seeds.

In nonstick skillet, heat olive oil.

Add onion, garlic, jalapenos, red bell pepper, cilantro and cumin; cook over medium heat until golden brown, about 4 minutes.

Remove pan from heat and stir in vegetarian baked beans, hot sauce and 8 ounces cheese. Add salt and pepper, to taste. Spoon mixture into hollowed chiles and sprinkle with remaining cheese.

Preheat grill to medium heat.

Arrange chiles on grill away from heat. Cook until chiles are tender and cheese is browned and bubbling, 30-40 minutes. Remove from grill and serve.

Lasagna Rollups

Recipe courtesy of “Cookin’ Savvy” Servings: 4-6 (1 rollup per serving)

„ 8 lasagna noodles

„ 1 pound hamburger meat

„ 1 tablespoon garlic powder

„ 1 tablespoon onion powder

„ 15 ounces ricotta cheese

„ 1 teaspoon rosemary (optional)

„ 1 jar marinara sauce

„ 2 cups mozzarella cheese, divided

In pot, boil noodles according to package instructions. Drain under cold water and set aside.

In same pot, brown hamburger meat then add garlic powder and onion powder. Mix in ricotta cheese; rosemary, if desired; marinara sauce; and 1 cup mozzarella cheese. Heat oven to 350 F.

Line baking dish with layer of hamburger sauce. Line cooled noodles on cutting board or parchment paper. Add hamburger sauce to each noodle and roll. Place lasagna rollups, seam sides down, in dish. Cover with remaining hamburger sauce and sprinkle with remaining mozzarella cheese. Bake 20 minutes.
