At Flying W Ranch, we strive to breed cattle that excel on a range environment. Our cows are expected to be fertile, early maturing, and easy fleshing. They must calve unassisted and care for their calves on their own. 99% of our calves are born outside with no assistance and only the trees for protection.

Where Performance and Growth is Bred in, Not Fed On Generations of selection without feeding creep feed has allowed us to identify the superior maternal bloodlines of our herd. The yearlings offered on our sale were raised on only grass and their mother’s milk with NO CREEP FEED. As yearlings, they have been developed in a range environment with a high forage and low concentrate diet. These bulls have been bred and raised to work for you!

"I Love cows for some odd reason... I can't imagine doing anything else"

Derek: Hey Jacob, thanks for taking the time.

Jacob: We're in the middle of calving here at the home farm, but once the calves hit four days old, we haul them over to my place a few miles away. That’s also how we sort for breeding. I’m in charge of the whole process, but luckily, I had some help today. We just finished another load— still plenty more to go!

D: This time of year, I'm always interrupting someone during calving. <laughs> Alright, can you introduce yourself to our readers?

Jacob: I’m Jacob Nolte, I'm 30 and the second oldest of four siblings who farm alongside our parents, Tim and Rita, here at Hidden Angus. After high school, I worked a few jobs off the farm before coming back full-time, and I’ve been here ever since. We started out milking cows, but now it’s all beef. Over the years, we’ve built up a commercial beef herd and purchased a herd of registered black angus cows. We just keep growing—both the cattle and our family!

Jacob: I'm married to my wife Kim, and we have one boy, Drew, who is a year and a half. Then, my sister-in-law Kate and my brother Eric, who have two kids, Elaine is two and Evan is seven months old. My sister has two kids as well, one's four and one's a newborn.

D: How many of you work here on the farm?

Jacob: We all work on the farm and the garbage company side.

D: Now, is anybody working only for the garbage company?

Jacob: Not necessarily—we tend to switch things up. Kate handles the books and splits her time between the garbage company and the farm. My wife, Kimberly, helps deliver cans to customers. Dan, our brother-in-law, is the main mechanic— he’s always working on garbage trucks, tractors, and whatever else needs fixing. Then there’s my brother, Eric, who’s the equipment guy. He helps with the mechanic work, and he will jump in wherever he’s needed and works alongside Dan.

D: Yeah, I can tell with all the kids running behind you!

D: Your family is an impressive group.

Jacob: Thanks! We also built a new shop, and everyone loves it. It’s out behind the farm, part of our expansion. We used to have the feed yard here at the home farm, but we moved it out by the shop. It would be about a half-mile through the woods as the crow flies—it’s a three-quartermile drive from the farm.

D: Does everybody live pretty close to the home farm?

Jacob: We're all within a couple of miles.

D: Like a large wagon train, circling the home farm.

Jacob: Yes! We always rent land when it’s available, and now we have quite a bit, with more and more further away. We winter cows and heifers up to five miles from here, which isn't bad, but we feed plenty off the farm daily with the tractor. We’re pretty spoiled. All the land we rent is within 15 miles of the home farm, except for a few larger pastures.

D: Wow, rotation can be complex I bet.

Jacob: Rotation or just having a small herd and the efficiency of small pastures is not as good as you would think. If you check a pasture, it takes you a while to get into the brush and find 'em; then there’s only six cows in that pasture. You’re not getting a whole lot done, you know?

D: So how many cows are you running around the different pastures?

Jacob: I guess with the commercial cows, calves and the registered cows…and then we also background yearling heifers that we buy in the fall. I don't know the total number here since we're calving, but it'll be just short of 800 head now that we’re calving. Then we have about 70 summer calving cows, too.

D: You have a lot going on.

D: Yeah, that's spoiled. No doubt about it. Good for you. I’ve been to ranches where they rent land hours away, and it’s a regular trip more than a few times a week. That’s just the closest some can get.

Jacob: Yeah, for the most part, the way our land is, it's a lot of small pastures. Some are 40 acres, 80 acres, 15 acres, to 50 acres pastures and fields.

Jacob: It’s a lot more than that, but as far as mama cows, it's over 800. We have about 350 backgrounding right now. thats always off and on, but we do quite a bit of custom feeding for other people, too. Primarily, it was a bigger farm where we had a good working relationship, and that number is constantly changing from 200 to 900 head out there for them too.

D: It’s all Angus, correct?

Jacob: The registered cows are Angus, but our commercial herd is Angus with some cross in

there. We do run some Hereford bulls, and we sell the Baldy heifers. We work a lot with Topp Herefords out of North Dakota, too.

D: We love them. They just had another great sale a couple of days ago.

Jacob: They have a great program, and they’re just as great to work with. We run four to five Hereford bulls on our commercial cows and then sell the heifers back to them. We can't afford to keep all those heifers, so we cross with the Herefords and sell them back.

D: That’s great. Speaking of sales, you have a big sale coming up.

Jacob: Yes, March 16th. It’ll be here soon.

D: What will you be offering at your sale?

Jacob: We're gonna offer about 70 registered Angus Bulls. We'll also have 10 registered open heifers. We’ll also provide five commercial open heifers and five commercial cow-calf pairs. We do have 10 Hereford open heifers on the list, too.

D: Nice. Of course, we’re big fans of FFA programs everywhere.

Jacob: Last year, we donated the money from 2 donkeys to the local schools. This year, we're gonna have three donkeys. They’re always a big hit at the sale. Plus, it’s good to promote our garbage company, where we support the local schools.

D: Yes, your dad told me how often you do sponsorships, which keeps that Nolte name out there around the local area. Your utility company is very important, and it’s great the locals see that you support local organizations for kids and such.

Jacob: Yeah. It’s funny that my dad always says he didn't like his FFA advisor. But that FFA advisor kept him in school and sold him his first beef cow, so there’s some history there.

D: So, it’s that guy’s fault you run so many cows?

Jacob: Yeah <laughs>

D: Did everybody grow up on your farm?

Jacob: Yeah. My dad grew up here on the farm where he lives now. This is where he was raised with 40 milk cows and some pigs and sheep. So that's what they had through the nineties. But then they got out of the hogs and the sheep and got into beef cows. We all grew here. As a kid, I got to see the stages of the growing numbers of beef cows growing from 20 to 50 to a hundred and more and more.

D: I bet you witnessed a lot of growing pains.

Jacob: We still milk three milk cows. We call that the hobby side. There are also a couple of bottle lambs and some feeder pigs. Well, I think Dad got 15 of them again now, but more than a few this time. Dad still loves sheep and pigs, so we eat well around here.

D: No kidding.

D: I think I heard something about donkeys?

Jacob: Yes! We can't forget about the donkeys.

D: I love the donkeys. My favorites are guarding the cattle at Rambur Charolais in Montana.

Jacob: Well, our idea is to be a little different than other seed stock guys and get 'em to talk to you. At least, that was the idea initially. Whatever the donkeys bring in, that money gets donated to local FFA programs.

Jacob: It can be a bit hectic with the hobby side, but having fresh milk in the house is lovely. So, if you have twins or need milk during calving, you always have it on hand. I may complain about 'em, but they are nice to have around. Yesterday was one of those moments. I could have sold those milk cows <laughs> We always compare the garbage business to milking cows. You treat it like a chore; get up, do it, and then you can return to playing with the beef cows we all enjoy.

D: Why don't we transition to that quickly since I wanted to talk about your garbage company. It fell into your hands, and though you didn’t like the idea originally, it’s been great for your family.

Jacob: Well, the local garbage company was owned by an older gentleman looking to retire, He approached us about buying it, saying it would pair well with the beef cattle operation, and he was right. Since we took over seven years ago, we’ve tripled the business. At the same time, other garbage companies were shutting down, so we were able to expand. It turned out to be the perfect opportunity. We gained a lot of new customers quickly—even though, at first, we had no idea what we were doing!

We bought the business in January—right in the middle of calving season—so we were juggling a brutal winter, calving, and figuring out how to run a garbage company all at once. There was a lot more to it than we expected.

D: Yes, I’d like to hear about that too. We’ll come back to that one. A couple more questions about the garbage company: Do you have a daily routine for that and the farm?

Jacob: Right now, my mom is the only person from the family who drives a garbage truck. She does a few days in the truck, and my dad does a little occasionally. In the mornings, we have two very good guys that have been laid off from their regular jobs, so they work part-time for us since we are short on drivers. This will get us through the calving season, but once we reach the middle of March, I'll have to return to a few days of garbage work. They're short routes in the morning, but my mom is the one that gets thrown under the bus all the time driving a truck.

D: As the saying goes, Moms are like glue. Even if you can't see them, they always hold the family together.

Jacob: So true. She's got her CDL and gets in a truck a lot more than she should. But she always says that that's work she can do. Throughout the year, besides during calving, we try to work out where I go until 1 am, and then my brother Eric gets up at one to take over. When we’re calving, we try to ensure I don't have to be in the truck if it works out. Last year, I had to suffer through it. <laughs>

D: Do you have any cameras set up for calving?

Jacob: We repurposed our old dairy barn and attached hay shed, enclosing and insulating it this year to improve heat retention. An exhaust fan was added for better airflow. This space holds about 30 commercial cows, who stay there for 24 hours before moving to other barns. Since we needed to separate the commercial and registered cows, we converted our machine shed into a calving barn for the registered cows. Though it’s not insulated, a radiant heater keeps it warm, running continuously in cold weather to maintain a steady 30-35 degrees, with thermostatic control to shut off when it warms up.

D: It’s a calving spa. <laughs>

Jacob: Yeah, and when it’s super cold, we put snow and hay bales around the barn and any open space to help insulate it. It stays warm in there.

D: Yeah, I remember some dizzying calving moments when I was a kid.

Jacob: But on the registered side of it, we won’t put up with any of that. We don't want that for our customers. We're spoiled with the commercial herd. If there's a registered cow that irritates us or anything, we don't necessarily have to cull her if she's a good cow. Even if they got three good tits one's been swallowed up, yet she still raises a big quality calf, we offer her as a commercial cow. So, we're blessed that way of having a little more forgiveness of not necessarily having to cut your losses on that expensive registered heifer. That way, it improves our registered herd at the same time. But it's been good. Overall, the calves' health has been excellent so far this year, so I can't complain.

D: Any crazy moms or calves pop up?

Jacob: No, it's been pretty good overall. A couple of crazier cows on the commercial side, but they're going to the cull pen this year. The older I get, the less I put up with it.

D: Plus, the weather’s been a little warmer lately. Though a record-breaking cold front is on the way next week.

Jacob: It was a little bit warmer there in January. We had some really cold days here, but February has been lovely. But they're saying the next 10 days are supposed to be record breaking.

We're over half done calving, so we'll have plenty of barn space during the cold spell here.

D: When I was 19, I lived an hour from here for a few months. I’ll never forget the day it was minus 87 degrees (yes, -87). I’ll never forget that cold… and I worked outside that whole week.

Jacob: Yeah, it gets cold around here. I don’t mind the cold so much. It’s the wind that gets ya. During the summer, we build and repair windbreaks so we’re not suffering so bad out here on windy days.

D: Makes sense. How far away is your nearest big town for goods & supplies?

Jacob: Sebeka is a small town about 5 miles away. The next biggest is half an hour away. Brainerd is the next step up in size, and that’s an hour. Then, Fargo is an hour and a half to the west.

ly—$4,000 total—but worth it. We have a lot of bad swamp land where equipment can't reach, and the frost pushes up the railroad ties. With this ready driver, I can drive a four-inch well pipe down by cutting it into 10-foot chunks and pounding it in. It’s perfect for areas where getting stuck is a concern, and since the pipes are hollow, the frost doesn’t push them up. No need for bracing; once it’s in, it stays put.

D: How's the fence maintenance on all this rented land?

Jacob: I bought a ready driver. It's got a Honda gas motor on it. That thing's been amazing. My dad's never spent money on something like that. He says we can pound by hand.

D: <laughs> Pounding by hand in the Minnesota frost isn’t much fun.

Jacob: We fence year-round here. I get sick of pounding posts through thick frost. I hardly use my new pounder during the summertime. It’s loud and annoying, and I'd rather pound them by hand when the ground is good. It was cost-

D: Wow. I'll have to look into that one.

Jacob: Yep, it's paid for itself in less than a year.

D: With the hollow pipe, does it give you any problems running a line around it?

Jacob: No, if you keep her level as you're pounding, so the line doesn't slide up and down. But I haven't had any trouble. The only time I have is if it hits a rock at a bit of an angle. But to fix it, I end up drilling a hole and making a bolt through there so it holds it in place.

D: Love it. Great story. OK, next question. Any thoughts on today’s cattle industry?

Jacob: Yeah, I'm scared who's gonna buy bulls in 10 years. Mainly because the average age of the producer keeps getting older and older.

D: Yeah, that’s a common concern we discuss most days. I think the average age is 62 years old now. No other industry has that problem.

Jacob: People always say the next generation will step up, but when I think about kids my age,

body says ranchers are getting rich now.

D: Misinformed as they are...

none are interested in this. Locally, many from my dad's generation run just 20 to 40 cows. I only have one friend my age who cares about cows, but he just has 10 cows to say he does.

D: Yeah, the romance of this draws him in.

Jacob: I’d tell them that hard work is essential, but sometimes, despite how much effort you put in, things don’t go your way. You can do everything right and still lose calves or struggle to make a payment—it’s just part of farming and ranching. There are easier ways to make a living, no doubt about that. So, if someone starts losing interest when things get tough, you can’t blame them. It’s not for everyone.

D: So many families are losing their kids to the big cities. Lots of ranchers were counting on the kids to take over their operations. One in five ranching/farming families has lost a child to the big city or a spouse in the city.

Jacob: Some people don’t get it. Cattle prices may be high, but so are our expenses. It’s frustrating when people think we’re making a lot of money. While prices are up, so are costs, so profits aren’t as high as they seem. Prices aren’t where they should be yet, but at least some farmers can cover their bills now. I don’t watch the markets closely all year—just in the fall, and less so once calving starts.

D: I hear ya. OK, next one, do you have any local organizations you can count on?

Jacob: My dad was always involved with local Cattlemen's. Then he got involved with the State Cattlemen's board and so on. My parents have been on many boards, from the township to the 4H boards. So, growing up as a kid, we were constantly dragged to these meetings or worked the cows while they were there. So yes, many of these exist, and we will still try to attend some. My brother Eric is on the local Cattleman's board now and is the regional director for our area.

D: What about the local law enforcement?

Jacob: We have a great relationship with the local sheriff’s department. We don’t always see eye to eye, but when it comes to our cattle, they’ve been good about reaching out if there’s an issue. That said, we tend to get thrown under the bus a lot because we’re considered one of the more prominent ranchers in the area. We’re not that big compared to others in the industry, but to the locals, we are—which means if cattle get out and someone’s too lazy to fix their fence, they blame the Noltes. Then the sheriff calls us.

Jacob: I like cows for some odd reason. I can’t imagine doing anything else. <laughs> I mean, yeah, there's some nights where, especially during calving here, I'd rather just go home. But we got cows, so…you can’t.

D: How about prices these days?

Jacob: Well, of course, it’s good to see the cattle prices where they are. Another side of that is when you go up to the local liquor store, every-

The sheriff’s department has been great to work with. But I always tell them—especially since I’m in charge of all the fences—if I get a call in the middle of the night, I want them to stay on site until I get there, so I don't have to go on a wild goose hunt. If they’re mine, I’ll put them back in and take responsibility. But a good portion of the time, they turn out to be someone else’s cattle.

I take great pride in my fencing and ensuring everything is secure. I hate getting those latenight calls, but with as many small pastures as

we run, there’s always a chance. Let it be said that at the end of the day, I don’t care who you are—if you run cattle, you’ll have some get out eventually. That’s just how it goes.

D: My grandpa would say, “The cattle are out, or they will be soon!” <laughs>

Jacob: Yeah, and every time the family gets dressed up to go somewhere like a wedding or something, they’ll always call about the cattle.

D: Murphy's law? Bovine’s law? One of those ought to apply…

Jacob: Here’s a funny one. During the first bad drought, many local farms sold off their cows, often after 50-60 years of ownership. It was easier for them to lease land to us than keep cattle. One property had a drainage ditch, and the owner swore it would keep cattle in. I told him, "If my cows cross it in a week, you buy the materials, and I’ll build the fence. If they stay, I’ll cover it."

Well, two nights in, the whole herd crossed. Right across the ditch was his sister’s yard—she hates cows, and they haven’t gotten along for years. He got an earful, but he bought the materials the next day, and it only took a couple of hours to build the fence. That drought led to us renting a lot more ground, and now, many folks find it easier to lease to us than get back into cattle.

D: Love how that works. Are you riding horses or 4-wheelers?

Jacob: Horses and four-wheelers. I ride a lot, but I’m not necessarily a horseman.

D: I hear giggling over in the corner behind you.

Jacob: Yeah. The girls, my wife and sister in law Kate, they both like horses, and they make fun of me since I don’t. I often ride horses, but if the horse is saddled and ready to go, then great. But if I can do the job with the four-wheeler, I'm taking the four-wheeler.

D: <laughs>

Jacob: Sometimes, it really frustrates me when I try to move cows with the four-wheeler and they won’t cooperate, but when I get on a horse, they settle right down. It just annoys me that I have to ride the horse! <laughs>

D: I understand entirely.

Jacob: The cows respect the horses. We work in rugged country where the horses can navigate the rocks and swamp. Cows may not be the brightest, but they’re not totally clueless. My lead horse is big, sturdy, and easy to get along with. The other one is a jerk. He was free, but he kicks at people— and me, too. He’s a pain, but he’s great in tough situations when cattle get away. The kids call him Uncle Jacob's naughty dragon to keep them away so they don’t get hurt. My wife likes horses, too. We used to have a few geldings, but now we have mares and a stud. She’s interested in breeding and selling a couple of registered quarter horses a year. That’s fine, as long as she’s the one doing it. <laughs>

D: Love it. Okay, let's switch it up. What's your favorite cut of beef, and how do you like it cooked?

Jacob: Well, people will be mad at me, but I like a steak, but I want it done.

D: We hear that more often than you would think.

Jacob: Yeah, my father-in-law used to be a chef. He made a steak when we were visiting him once, and it was always so rare. I told him I want it cooked. It doesn't have to be crispy, but I like it cooked. It can be a little bit of pink if they insist, but I don't want blood.

D: My Dad did, too. He caught a lot of crap for it. OK, another simple question: Ford, Chevy or Dodge?

D: Well said. How about your bucket list? Anything you would like to do that you just haven’t gotten around to yet? A big adventure or trip or quest of any sort?

Jacob: I don't care as long as it runs. But, if you talk to my brother-in-law, Chevys are easier to work on.

D: Great answer. What are your thoughts on global warming?

Jacob: It’s going to be minus 30 next week. That’s my answer <laughs>

Jacob: I love hunting, though I don’t always have the time. Lately, I’ve been trying to get out more, especially for coon hunting with my hound. I enjoy it—hunting raccoons and having a whiskey with friends. Nothing too wild. And if you’re drinking, no guns allowed. I’m lucky to have a friend in Montana who works on a farm, and my buddy Josh has been out there mule deer hunting a few times. We applied last year, and I finally got to go this fall. I shot a nice one in open country with huge ravines. In most places, you could get a four-wheeler in, but where we ended up, it was on a mountainside. So, we had to hike, quarter him, and pack him out—it made for an unforgettable experience.

D: Wow, no kidding.

Jacob: As I get older, I’d like to keep going on hunting trips with my friends. I’d just be happy with that. Even if we hunt here at home, that would be fine. We have plenty of wildlife here.

D: Didn’t you tell me you wanted to attend more bull sales too?

Jacob: Yeah, I really want to go to more bull sales. There’s a lot of them that I want to go to that are happening while we're calving right now.

D: This is the busiest time for most of ‘em out there. Jacob: Hopefully, our cows keep calving heavily for the next few days. If all goes well, it’ll slow down next week. My parents are heading to the Topp Herefords sale and stopping by a few oth ers. A lot of people want to attend the big bull sales, but I prefer the smaller ones, even if they’re only selling 30 bulls. You’ll find more hidden gems at those, and I think there’s more oppor tunity. The next big name in genetics might be waiting to be discovered there. So, to answer your question, it’s on my bucket list to make time for one or two new sales each year. The only problem is, I don’t like driving <laughs>. I can handle a couple of hours, but anything more than that is tough. My wife’s family is south of Rochester, so I have to make the five-and-a-half-hour drive to visit them occasionally.

your bulls after the sale?

Jacob: So last year, my dad and I split it up, taking turns at delivering. We were very surprised at how many bulls stayed right here locally.

D: Alright, we’re near the end here. Anything you’d like to share that you are surprised by or a fun story that you regularly tell people?

Well, I never thought we would be seed stock guys. I never thought I'd be a garbage truck driver. I never thought I’d be interviewed for such a prestigious cattle magazine.

Yep, that’s a good one. Tell me more! Haha. And then I never thought I'd marry a red-

Jacob: So, when people ask me that, I guess, I don't know, one day at a time.

D: What an adventure we’re all on.

D: I drive all over the country and I love it. I don’t mind flying, but I’ll get behind the wheel in a heartbeat. What about when you’re delivering

Jacob: Times change, and they’ll continue to change, so we must adapt.

D: Yep, circle of life. Alright, finally. Any advice for people just getting started in this business?

Jacob: Everyone in the cattle business has their preferences—some like their cattle more moderate and thick, while others prefer a little more frame. My advice? Raise what you like, and don’t let anyone nitpick your program. Stick to what works for you, and don’t let others sway you. I’ve seen young guys start small herds—maybe 20 cows—and get discouraged because a neighbor makes fun of their choices. One guy I know likes his cows short, thick, and squatty, and his neighbor gives him a hard time. I just told him, “If that’s what you like, there’s nothing wrong with that.” Honestly, if I ever quit ranching, got a job in town, and just ran 10 cows as a hobby, you better believe I’d have the biggest, fattest Charolais cows around—and I’d throw a big Hereford bull on them. No joke!

D: How fun. Now tell us where you’re coming from with that.

Jacob: Because nobody likes Charolais around here <laughs>. Another thing is that I've always had a thing for Charolais since I was a kid. Let's have a big Charla cow, you know?

D: You’ve always got something fun to say, Jacob; it’s been great talking to ya! I’ll be by for more laughs when I’m in the area again.
