Scope Observing SCAD student eating habits at the Savannah, GA campus

Purpose To understand the eating habits of SCAD students and find opportunities for the college and the city to enable students to make healthy food choices.

Target SCAD undergrad and grad students attending the Savannah campus

Problem Statement College students are infamous for their poor eating habits. With a demanding workload, empty pockets, and the freedom to eat whatever they want, healthy food choices are not always at the forefront of decision making. In a study involving focus groups, students admitted to skipping meals, prioritizing convenience over health, and binge eating due to stress (Sogari et. al, 2018).

According to Centers for Disease Control and Prevention(CDC), both physical and mental factors in the college settings could affect student’s eating habits and their health. For example, all-you-can-eat dining facilities and vending machines can lead to overeating or choosing foods loaded with calories, saturated fat, sugar, and salt.

Stress from heavy workloads can also cause students to not eat or skip meals. (Centers for Disease Control and Prevention, 2016). In fact, 95.2 percent of college students fail to eat the recommended amount of fruit and vegetables of five or more servings a day (American College Health Association, 2018), and during the first 3 – 4 months of college, students gain an average of 1.5–6.8 lb., with the proportion of overweight or obese students as much as doubling by the end of the first semester. (Popkin & Neilsen, 2004).

Poor nutrition can impair our daily health and wellbeing, reducing our ability to lead an enjoyable and active life. In the short term, poor nutrition can contribute to stress, tiredness, and our capacity to work. Over time, it can contribute to the risk of developing certain illnesses and other health problems such as: · being overweight or obese · tooth decay · high blood pressure · high cholesterol · heart disease and stroke

Opportunity Statement

Given the many potential health concerns of poor dieting related to unhealthy food choices, there is an opportunity to develop a greater understanding of how these eating habits surface in SCAD students so we can identify ways of improving health.

Eating Habits of SCAD Students in Savannah

Informed Consent Form You are being asked to take part in a research study conducted by SCAD graduate students Zoe Roane-Hopkins, Moran Zhu, and Michelle Estrella that is looking at the eating habits of SCAD Students in Savannah, GA. The purpose of this study is to understand the different healthy and unhealthy eating habits that students develop to find opportunities to improve student health.

Study Procedure and Research method If you agree to take part in this research study, you will be asked to participate in an in-person interview.

The data will be recorded via voice recording and in writing. You will be asked to share your thoughts and experiences regarding your eating habits as a college student. In the case of an interview, the session will last no more than 15 minutes.

Confidentiality All information will be kept either confidential or anonymous and confidential in the case where the data is sensitive. We will not be sharing information about you to anybody outside of the research team. The information that we collect from this research will be kept private.

Voluntary participation Your participation in this research study is voluntary. You may choose not to participate, and you may withdraw your consent to participate at any time. You will not be penalized in any way should you decide not to participate or to withdraw from this study.

Consent I have read the above description of this research study. I have been informed of the risks and benefits involved, and all my questions have been answered to my satisfaction. Furthermore, I have been assured that any future questions I may have will also be answered by a member of the research team. I voluntarily agree to take part in this study.

THE SHED & MONTGOMERY There are 3 convenience/grocery stores and 2 restaurants near the Shed / Montgomery Hall.

However, due to safety concerns, students usually would not go to theses places. Thus, the Carnival, Byte Cafe and vending machines are the only food sources for the students.

My friend has 11am and 2pm classes every Monday and Wednesday. Lunch was replaced by snacks.

Narrative It’s Henry’s first quarter here at SCAD and he’s had to get used to his class schedule in addition to cross-country times. He was used to eating at noon every day in grade school but now has to eat lunch either very early or just skips it entirely and eats a late dinner after practice. Lunch is usually a burrito or tacos from Amigos by Turner House. Breakfast and dinner are eaten at the Hive. The dining hall food doesn’t taste great but it’s really close the dorm and is the most convenient. Being an athlete, he tries to eat healthy but it’s not very easy to do at the dining hall. Snacks are usually high in sugar and carbs. Henry doesn’t eat too many snacks in between meals but when there’s a deadline and he’s up working late, he ends up eating a lot without paying attention. His favorite foods are pasta and breakfast tacos.

Narrative Diya moved to Savannah few months ago to start her graduate study at SCAD. She tries to keep her diet as healthy as possible while adjusting to the new environment and schedule.

She does not eat any meat, fish or poultry but consumes eggs and diary products due to her religious beliefs. So she would take supplements to avoid potential nutritional deficiencies.

Her stomach is weak, feeling bad whenever she eats irregularly or skips a meal.

She enjoys spending time on cooking delicious foods at home, as well as studying in coffee shops with her friends. Eating well makes her energetic for her study and workout. However, she finds it hard sometimes to have what she wants when studying on campus.

Narrative James is a graduate student. He moves to Savannah a year ago to start his MFA at SCAD. James tries to keep a healthy life, especially with his training. He doesn’t feel comfortable with going out to dinner because he believes food in Savannah downtown is too expensive, and it doesn’t taste good, especially in dining halls. He tries not to spend too much time cooking and is used to prepare food for the whole week. Most of the time, he feels a little bit frustrated eating the same food during the week. However, he tries to combine his meals with different options of carbohydrates or salads.
