Nutrition Nuggets by Lindsay McClure Sweet Potato Casserole

Makes 10 servings (about a ½ cup each) • Active time: 30 minutes • Total time: 1¼ hours The holidays are a time of tradition, but have you ever considered a healthier twist on some of those classic holiday dishes? Trade in your traditional sweet potato casserole for this slimmed-down version. This recipe gets its flavor from freshly grated orange zest and honey rather than a stick of butter. This new version is lower in fat and calories.

Ingredients:

1 tablespoon honey

2½ pounds sweet potatoes, (3 medium), peeled and cut into 2-inch chunks

1/2 cup low-fat milk 2 teaspoons freshly grated orange zest

2 large eggs

1 teaspoon vanilla extract

1 tablespoon canola oil

1/2 teaspoon salt

Try these other tips to make your thanksgiving dishes lower in fat, calories, and sugar. No one will notice the difference! • Use fat-free chicken broth to baste the turkey • Use applesauce in place of oil in baked goods • Try plain yogurt in place of sour cream in dips, mashed potatoes, and casseroles (continued from pg1...) The more we sell, the more beds we can provide! Perhaps you’re not ready to invest in a new bed, but you’d still like to help out. Stop by Gardner’s between now and December 8th and purchase a set of sheets, pillows, or mattress protector for a child and we’ll wrap and give them to the children as a gift from you to them! Maybe you’d just like to make a donation to Holiday Hope to be used towards the purchase of beds. Well, you can stop by Gardner’s and do that too. Pam Zablocki was in the brokerage business for 11 years before she decided to settle down (you know how those insurance brokers are). She was a stay-at-home mom for the length of two babies and one husband before she eventually went back to work.
