A GOOD OLD FASHIONED CHRISTMAS PUDDING IS A LABOUR OF LOVE, TAKING ABOUT 1 WEEK TO PREPARE. ALL WILL BE WORTH IT ON CHRISTMAS DAY WHEN IT’S SERVED TO FAMILY AND FRIENDS WITH A GENEROUS SIDE OF CUSTARD, BRANDY SAUCE OR WHIPPED CREAM.
INGREDIENTS
250g suet
125g fresh breadcrumbs
125g White Wings plain flour
125g raisins
125g currants
125g sultanas
60g mixed candied peel
125g stoned prunes, finely chopped
125g peeled grated apple
50g blanched and chopped almonds
125g CSR Brown Sugar
Rind and juice of 1 lemon
Pinch salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
½ cup whisky
½ cup brandy
4 eggs
METHOD
1. Skin and finely chop suet (this may be done easily in a food processor if the suet is very cold). Place the suet and the remaining ingredients, except whisky, brandy and eggs, into a large bowl. Stir together until well mixed.
2. Add half the brandy and whisky. Cover and set aside in a cool place.
3. Stir each day for one week, adding a little more of the whisky and brandy each time. On the last day, whisk the eggs and stir into the mixture. Grease a large pudding basin; fill with the mixture. Cover with a layer of greased baking paper and foil and tie in place securely with kitchen twine.
4. Place on rack in a large pot; pour in boiling water to come two-thirds up the side of basin. Cover and simmer for 4 hours, adding more hot water as necessary.
5. On the day, cook for another 2 hours.

(Non-alcoholic)
INGREDIENTS
700g jar peaches in mango nectar
1 tbs maple syrup
750ml chilled bottle Plus & Minus Prosecco non-alcoholic beverage Mint leaves, to garnish
METHOD
Strain peaches over a bowl. Place all of the nectar, half of the peaches and maple syrup in a blender. Blend until smooth. Reserve remaining peaches for another use.
Fill champagne glasses with puree until glass is quarter full. Top with non-alcoholic Prosecco. Swizzle to combine. Serve garnished with mint.

THESE REINDEER CUPCAKES LOOK SO CUTE AND ARE SUPER EASY TO CREATE. THEY’RE GREAT FOR GETTING THE KIDS IN THE KITCHEN TO HELP WITH DECORATING THE REINDEER ANTLERS AND RED NOSES.

INGREDIENTS
Cupcakes:
125g butter, diced and softened
¾ cup CSR Caster Sugar
2 extra large eggs
½ tsp vanilla extract
1 ¾ cups White Wings Self-Raising Flour
¼ cup baking Cocoa
1 tsp cinnamon
¾ cup milk
⅓ cup currants
Icing:
2 tbs milk
100g milk chocolate melts
½ cup
CSR Soft Icing Mixture, sifted
Decorations:
24 pretzels
24 white chocolate buttons
24 currants
12 red smarties
METHOD
1. Pre-heat oven to 180°C (160°C fan-forced). Line 12, ½ cup capacity muffin pans with paper cases.
2. Place butter and CSR Caster Sugar into the bowl of an electric mixer, beating until pale and creamy. Add eggs one at a time, mixing well between each addition. Mix in vanilla.
3. Fold in combined flour, cocoa and cinnamon, alternately with the milk until all combined and mixture is smooth. Fold in currants. Spoon mixture between patty cases and bake for 20 mins until just cooked and top springs back when pressed. Remove to a cooling rack to cool completely.
4. For the Icing, place milk in a microwave proof jug and microwave on medium heat for 45 secs until hot. Add chocolate melts and stir through until melted and smooth. Whisk in the CSR Soft Icing Mixture. Spread over cooled cakes, leaving a couple of tablespoons of icing for decorating.
5. Arrange the pretzel on each cupcake to create antlers. Place two white buttons on each cupcake to create eyes, use the remaining icing to attach the currants to create pupils. Place a red smartie in the middle of the eyes to create a nose.

MURCHISON’S MAGICAL SANTA SESSIONS ARE BACK FOR THEIR FIFTH YEAR OF FAMILY AND CHILDREN’S PORTRAITURE IN THE GOULBURN VALLEY.
Set among the beautiful bushland in Murchison, these outdoor Santa sessions offer a truly unique experience.
Each session runs for 10 minutes, costs $50, and includes all the edited images taken during your session — delivered via downloadable link the following week.
No single-image limits — you get them all.
Photographer Kelly Lucas-Carmody begins each session with a few family photos, followed by shots of the kids together, and then individual portraits of each child.
Magical props help set the enchanting scene and mood, ensuring a collection of beautiful images to treasure.
If parents prefer not to be in the photos, Kelly and Santa are flexible and happy to tailor the session to each family’s needs.
Please note: sessions are priced per family and cannot be shared between multiple families.
If you have more than four children, it’s recommended to book a double session to allow extra time.
If you’d like to come along with friends or organise a large extended family shoot, back-to-back sessions can be arranged, so everyone gets the special shots they want — and Santa all to themselves for a little longer.
Pets are welcome, but must remain on a lead at all times.

INGREDIENTS
1kg butterflied leg of lamb, boneless 2 tbsp olive oil
1 tbsp fresh rosemary chopped 4 cloves garlic grated sea salt
4 cups rocket leaves
500g baby cucumbers
1 x 400g tin chickpeas, drained ½ red onion thinly, sliced
½ cup roasted red peppers, sliced 2 tbsp olive oil
1 tbsp red wine vinegar
1 tsp dried oregano leaves tzatziki, to serve

METHOD
Place olive oil, rosemary and garlic in a large zip-top bag or non-reactive dish. Add lamb, turn to coat, and leave 30 mins to marinate and come to room temperature. When ready to cook, drain excess marinade and season both sides with a good pinch of salt.
Preheat a barbecue to high. Cook lamb for 15 mins, then flip and cook a further 10 mins, or until cooked to your liking. Transfer lamb to a serving platter, cover with foil and rest 10 mins.
While the lamb is cooking, prepare the salad. Gently smash cucumbers with the back of a knife, then roughly chop and transfer to a bowl with the chickpeas, red onion and roasted red capsicum. Add oil, vinegar and oregano and stir well. Spoon cucumber salad over rocket leaves. Serve sliced lamb with salad and tzatziki.

THIS GINGERBREAD LAYER CAKE IS A CHRISTMAS SHOWSTOPPER.
The spongey gingerbread cake layers are filled with creamy buttercream icing and we’ve topped with gingerbread stars for a festive finish. You can add your own festive flare to the Gingerbread Layer Cake with holly, gold cachous or Christmas decorations.







INGREDIENTS
Gingerbread Cake
185g butter, diced
1 cup CSR Caster Sugar
½ cup CSR Golden Syrup
2 extra large eggs
2 cups White Wings plain flour
1 tsp ground ginger
1 tsp ground cinnamon
¼ tsp ground allspice
250ml warm milk
1 tsp bi-carbonate of soda
Buttercream Icing
300g butter, diced and softened
2 x 250g packet Vanilla CSR Vanilla Buttercream Icing mixture
1½ tbsp water
METHOD
1. Pre-heat oven to 160°C fan-forced. Line and lightly grease 3 x 20cm round cake tins.
2. For the cake, combine butter, CSR Caster Sugar and CSR Golden Syrup in a saucepan and heat gently until butter has melted. Allow to cool slightly.
3. Whisk eggs into butter mixture one at a time until well incorporated. Add flour and spices, mixing well.



4. Combine warm milk and bi-carb in a small bowl. Add to batter and mix until smooth
5. Pour mixture evenly between cake pans and bake for 18 mins. Allow to cool, then remove to a rack to cool completely.
6. For the icing, beat butter in a large mixing bowl until soft and creamy. Gradually add icing mix and water until smooth. Transfer half to a piping bag with a round nozzle.
7. To assemble, place one cake onto a serving plate and pipe a layer of buttercream icing on top extending to the edge of the cake. Place the second cake on top and press down slightly. Repeat icing layer and then top with remaining cake. Using a spatula, smooth the icing around the outside for a “naked cake” look. Finish with dollops of extra buttercream icing on top and Christmas decorations.

1 x 400g can chickpeas drained, washed and outer skins removed
2 tbsp tahini
½ clove garlic
Juice ½ lemon and extra tsp 80ml extra virgin olive oil plus an extra tablespoon
1 x 400g can Ardmona Diced Tomatoes, juices drained and reserved
2 pieces of jarred roasted capsicum, diced
1 tsp balsamic vinegar
½ tsp harissa
1 tsp sumac
2 tbsp whole almonds, toasted and chopped Parsley sprigs, to serve Artisan crackers, to serve Salt & pepper
METHOD
1. Crush three cubes of ice in the food processor, then add the chickpeas, tahini, garlic, lemon and add 3 tablespoons of the reserved tomato juice, and blend to form a crumb. With the motor still going drizzle in 80ml of extra virgin olive oil. Season and keep blending until smooth.
2. Mix the drained diced tomatoes and capsicum together in a bowl. Add balsamic, harissa, a squeeze of lemon juice and remaining tablespoon of olive oil. Season with salt and pepper.
3. Spread hummus into a shallow bowl and top with the tomato salsa. Sprinkle over almonds, sumac, parsley to garnish and serve with Artisan crackers.

Pork chipolatas in streaky Aussie bacon
16 pork chipolatas
8 slices streaky Aussie bacon, halved lengthways
olive oil spray
tomato sauce or chutney, to serve
Pan-fried Aussie chorizo, tomato & bocconcini bites
2 (200g) Aussie pork chorizo sausages
8 grape tomatoes, halved lengthways
16 bambini bocconcini, drained
16 small basil leaves
Aussie salami roses
10-12 slices (about 120g-150g per rose) Aussie salami like Hungarian mild (note, we have 3 roses on our platter)
Additional items for the platter
200g mixed sliced Aussie salami like Fennel Sopresa, Picante and Cacciatore.
250g tub mixed olives
200g tub sun-dried tomato & feta mix
Cracker selection and breadsticks of your choice
Small bunch seedless green grapes, washed
METHOD
1. To make the pork chipolatas in streaky Aussie bacon, preheat oven to 200°C fan-forced. Wrap a strip of bacon around each chipolata and secure with a toothpick. Place on a baking tray lined with baking paper. Spray with oil. Bake for 20-25 minutes, turning occasionally, until golden brown. Remove toothpicks. Transfer to a heatproof serving pan. Serve hot with tomato sauce or chutney.
2. Meanwhile, to make the pan-fried, tomato and bocconcini bites, slice each chorizo diagonally to make 16 slices. Heat a greased non-stick frying pan over medium-high heat. Pan-fry chorizo on both sides until golden. Transfer to a plate lined with paper towel and set aside to cool. Thread a chorizo slice onto a toothpick, top with a halved tomato, a bocconcini and a basil leaf. Repeat using remaining ingredients. Season with pepper.
3. To make one salami rose, fold a slice of salami over the rim of a stemless wine glass, pushing two-thirds of the salami inside the glass. Press salami onto the glass rim. Lay another slice of salami over the glass, overlapping the slice before it by about two-thirds. Press slice onto the glass rim. Repeat, gently pressing slices down into the glass and using the remaining salami until the hole in the centre fills. Flip the glass over onto your serving board and gently pull the glass away to create the rose.
4. 4. Place chipolata pan onto a very large serving board. Arrange chorizo bites, salami roses, sliced mixed salami, olives, sun-dried tomato and feta mix, crackers, breadsticks and grapes onto the serving board.

370g jar sweet orange marmalade
⅓ cup brown sugar
¼ cup freshly squeezed orange juice
¼ cup maple syrup
2 tbsp Dijon mustard + extra to serve
½ tsp All Spice (optional)


METHOD
1. Make the glaze a few hours before glazing the ham (see tips). Place all glaze ingredients into a medium saucepan. Stir to combine. Bring to the boil, stirring often, over medium-high heat. Reduce heat and simmer for 8-10 minutes or until reduced by one-third. Transfer to a heatproof bowl. Set aside to cool to room temperature.
2. Preheat oven to 180°C/160°C fan-forced.
3. Score the ham fat crossways using a small, sharp knife at 1cm intervals. Wrap the ham hock in foil (this prevents it from burning).
4. Place ham on a greased wire rack in a large baking pan lined with foil (see tips).
5. Brush the ham fat with the glaze. Bake, brushing with the remaining glaze every 20 minutes, for 1 hour or until evenly caramelised. Remove from the oven. Allow the ham to rest for at least 30 minutes before carving.
6. Slice and serve ham, warm or cold, with mustard. See tips for a festive serving suggestion.

You can make the glaze up to 3 days ahead. Cool, cover and store in the fridge. Bring to room temperature before using.

INGREDIENTS
1 tsp instant coffee granules
2 tsp boiling water
250g butter, softened, chopped
2 eggs
1½ cups (330g) firmly packed CSR Dark Brown Sugar
¼ cup (25g) dutch cocoa powder, plus extra to serve
3½ cups (525g) White Wings Plain Flour (measure flour in two equal amounts)
Chocolate Sauce
¼ cup (60ml) pouring cream
100g dark (semi-sweet) chocolate, chopped coarsely
1½ tbsp hazelnut-flavoured liqueur
METHOD
1. Combine coffee with the water in a small bowl; stir until coffee dissolves.
2. Beat butter, eggs and sugar in a small bowl with an electric mixer until combined. Divide mixture into two medium bowls. Stir coffee mixture and cocoa into one bowl; keep the other bowl plain. Stir one amount of the sifted flour into the coffee mixture. Stir the remaining flour into the plain mixture.
3. Turn coffee dough onto a lightly floured surface; knead until smooth, wrap in plastic wrap. Knead plain dough until smooth, wrap in plastic wrap. Refrigerate doughs for 30 minutes.
4. Roll each dough half between sheets of baking paper until
5mm thick; place on oven trays, refrigerate for 15 minutes.
5. Preheat oven to 180°C. Line two oven trays with baking paper. Draw a 25cm circle on each piece of baking paper; turn paper, marked-side down, on trays. (Use circles as a guide to position stars for wreath.)
6. Using the largest star cutter, cut out 40 stars. Use remaining cutters to cut out different-sized stars, re-rolling scraps as necessary. (Refrigerate dough for 10 minutes to firm if it becomes too soft.) Following the shape of the circle, place stars on trays, slightly overlapping to make two wreaths.
7. Bake wreaths for 15 minutes. Cool wreaths on trays for at least 1 hour before carefully transferring to the storage container.
8. Before serving, make chocolate sauce.
9. Dust wreaths with extra cocoa, serve with sauce.

11. Bring cream almost to the boil in a small saucepan; remove from heat. Add chocolate then liqueur to pan; stir until smooth.
12. Stand for 30 minutes or until thick.
13. The wreaths are extremely fragile; slide the wreaths, on the baking paper, onto the upside-down lid of an airtight container, and secure the container, upside down, to the lid. The wreaths will keep in an airtight container for up to two weeks.
14. You need three or four different sized star cutters to make these wreaths. We used 8cm, 6cm, 5cm and 3cm.

This showstopping Strawberry Limoncello Christmas Trifle is the beautiful creation of the Sydney Food Sisters.
With layers of strawberry jelly, Limoncello custard, panettone and freshly whipped cream, it tastes just as amazing as it looks.
The best part is, it’s not difficult to make.
Limoncello is an Italian lemon liquor available at all liquor outlets.

INGREDIENTS
Jelly:
2x 85g packets strawberry flavoured jelly crystals
250g strawberries, halved
Custard:
3 cups milk
½ cup Limoncello
½ cup double cream
10 egg yolks, beaten
½ tsp vanilla paste
1 cup CSR Caster Sugar
50g White Wings Cornflour
1 lemon peel, cut into large strips
To Decorate:
1 Panettone Classico (with raisins & candied orange)
Extra Limoncello, for drizzling
900ml thickened cream
2 tbsp CSR Pure Icing Sugar
150g strawberries
1. Start preparing the trifle at least one day before serving. To prepare the jelly, follow the packet instructions. Pour jelly into a trifle bowl or dish. Refrigerate for 1 hour. Arrange strawberries over the jelly. Place back in the refrigerator until completely set.
2. To make the custard, in a large bowl mix together the milk, limoncello, double cream, egg yolks and vanilla paste.
3. Place the caster sugar and cornflour in a saucepan and mix well. Place the saucepan on medium heat and gradually add the milk mixture while stirring.
4. Add the lemon peel and continue to stir, with a whisk continuously. After approximately 8 minutes, the mixture will begin to thicken and form a cream texture.
5. Once it reaches the desired thickness remove the saucepan from the heat. Remove lemon peel and continue to stir while the custard is cooling off.
6. Once the custard reaches room temperature, pour over the jelly. Refrigerate until set.
7. Once the custard has set, cut the Panettone into large squares. Arrange neatly over the custard. Lightly drizzle with extra Limoncello (optional).
8. Beat the cream and icing sugar together until whipped to a thick consistency. Add the cream mixture over the Panettone pieces and decorate with extra strawberries.

THESE FUDGY CHOC CHUNK BROWNIES WITH RASPBERRY AND WHITE CHOCOLATE IS GOING TO BE YOUR NEXT CHRISTMAS DESSERT GO-TO.
INGREDIENTS
200g 70% dark chocolate, coarsely chopped
400g milk chocolate, coarsely chopped
160g unsalted butter, chopped
330g (1½ cups) CSR Brown Sugar
4 eggs
100g (⅔ cup) White Wings Plain Flour, sifted
40g Dutch-process cocoa, sifted
250g (2 punnets) raspberries
100g white chocolate, melted Sprinkles, sugar stars, chocolate stars to decorate
METHOD
1. Preheat oven to 180°C fan forced. Grease and line a 22cm round cake pan and a 20cm square cake pan with baking paper.
2. Combine 200g dark chocolate, 200g milk chocolate and butter in a heatproof bowl over a saucepan of simmering water, stir until smooth. Set aside for 10 mins.
3. Whisk sugar, eggs and a large pinch of salt in an electric mixer on high for 5 mins until fluffy. Add cooled chocolate mixture and stir until combined. Fold in flour and cocoa.
4. Divide mixture evenly among prepared tins. Scatter raspberries and rest of milk chocolate chunks. Bake for 25-30 mins, cool completely in tins.
5. Place brownies on a clean work surface. Cut round brownie into 8 wedges and square brownie into 16 portions, place on a lined baking tray.

DESERVE A LITTLE FESTIVE PAMPERING TOO.
Here are five ways to make this holiday season extra special for your pets:
TREAT TIME
Whip up some homemade pet-friendly biscuits or grab some festive flavoured treats. A chewy toy that doubles as a treat dispenser will keep them busy and happy.
NEW TOYS & COMFORT
Surprise your pet with a plush bed, cosy blanket, or interactive puzzle toy. Holiday-themed toys like squeaky Christmas trees or plush reindeer add a touch of festive fun.
ADVENTURE & FUN
Take your pet on a new walking trail, to the river, or even arrange a playdate with furry friends. A little extra exercise and exploration is a gift they’ll love.
PERSONAL TOUCHES

I can hear you asking, “What is it?”
So, let me fill you in before the suspense gets the better of you: Christmas Star Jars.
Oh my goodness, it’s such a magical and beautiful idea, and the uniqueness of each jar is entirely up to the creator.
I’ve made a list of what you’ll need below, and how it all works, but be as creative as you like — after all, it’s your homemade light for Santa to see your home. Have fun creating.
MATERIALS NEEDED:
• A small jar with a lid
• Battery-operated tea light or small LED lights
• Gold or silver glitter (optional)
• Small star-shaped confetti or stickers (optional)
• Ribbon or string
• Paper and pen (for a little note to Santa)
INSTRUCTIONS:
Clean the jar
Make sure your jar is clean and dry before decorating.
Decorate the jar


Sprinkle some glitter inside the jar or stick on star-shaped stickers.
You can also tie a ribbon or string around the lid for a festive touch.
ADD THE LIGHT
Place a battery-operated tea light or small LED lights inside the jar.
WRITE A NOTE TO SANTA
On a small piece of paper, write a festive message like “Merry Christmas, Santa!” and place it in the jar or tie it to the ribbon.
PLACE THE JAR OUTSIDE
Set your jar on the doorstep, windowsill, or in the garden for Santa to see.
OPTIONAL: ADD EXTRA SPARKLE
Scatter a few extra star confetti around the jar or on the doorstep for a magical effect.
ENJOY THE GLOW
When night falls, turn on the light and watch your Christmas Star Jar twinkle, lighting the way for Santa.




FROZEN COSMOPOLITAN COCKTAILS WITH SUGAR RIM GLASS. SERVE THESE FRUITY, FROSTY, FROZEN COSMOPOLITAN COCKTAILS WITH DECORATIVE CITRUS SUGAR RIMS TO CREATE A LITTLE PIZAZZ AT YOUR NEXT GATHERING.
INGREDIENTS
4 cups cranberry juice
½ cup Cointreau
1 cup vodka
Juice of 1 large lime, keep the squeezed lime halves
For the sugar glass rims:
4 tbsp CSR Caster Sugar METHOD
Mix the ingredients together in a freezer proof container. Cover and freeze for at least 4 hours or overnight. Keep the squeezed lime halves in the fridge.
When ready to serve, place the caster sugar on a flat plate in a shallow layer. Rub the lime halves around the rim of the glasses, dip the glasses in the sugar to form a decorative sugar rim.
Remove the cosmos from the freezer, break the ice crystals up with a large spoon until you have a smooth slushy texture. Spoon into the sugar rim glasses and serve. Drink responsibly.
TIP:
Make and freeze them the night before for easy entertaining.

THERE’S NOTHING QUITE LIKE THAT HIT OF PASSIONFRUIT TO ROUND OFF A DELICIOUS COCKTAIL.
INGREDIENTS
1 glass brandy
2 glasses orange juice
Juice of 3 passionfruits
2 CSR White Sugar Cubes
Dash of dry vermouth
Crushed ice
1 lemon, sliced
METHOD
Place a small piece of sliced lemon into a highball glass. Combine all ingredients into a cocktail shaker and shake. Once all ingredients are mixed together, pour into the highball glass and enjoy responsibly.

INGREDIENTS
150g butter, softened
¾ cup (165g) CSR Caster Sugar
1 egg
1½ cups (225g) White Wings Plain Flour red food colouring (see notes)
½ cup (80g) CSR Pure Icing Sugar
2½ tsp water
100g peppermint candy canes, chopped finely (see notes)
METHOD
1. Beat butter and sugar in a small bowl with an electric mixer until pale and creamy. Add egg, beat until just combined. Add sifted flour; stir to combine.
2. Gently knead on a lightly floured surface until smooth. Divide dough in half. Tint one half red. Shape dough halves into separate discs; wrap in plastic wrap. Refrigerate for 15 minutes.
3. Preheat oven to 180°C. Grease an oven tray; line with baking paper.
4. Roll each dough half between sheets of baking paper into a 20cm x 30cm rectangle; remove top sheet of baking paper.
5. With one long side of the dough facing you, place the red dough on top of the plain dough, leaving a 1cm border on the long side closest to you; starting at this end, and using paper as a guide, roll dough to form a log. Wrap with plastic wrap; refrigerate for 30 minutes or until firm.
6. Using a small sharp knife, cut log into 1cm thick slices; place on oven tray.
7. Bake for 10 minutes or until lightly golden and a pinwheel can be pushed gently without breaking. Cool pinwheels on trays.
8. Mix sifted icing sugar and the water in a small bowl to form a smooth paste. Place the candy cane on a small plate. Spread a little icing around the edge of a biscuit, then roll edge in candy cane; repeat with remaining biscuits. Stand biscuits until set.

KICK BACK AND RELAX WITH AN ESPRESSO MARTINI (OR TWO!).
INGREDIENTS
60ml Kahlua
60ml Vodka
60ml Espresso
½ cup CSR Coffee Sugar Crystals
METHOD
1. In a shallow bowl, dissolve 1 teaspoon of CSR Coffee Sugar Crystals in hot water to make a thin syrup. Pour the remaining CSR Coffee Sugar Crystals onto a small dinner plate.
2. Dip the rim of the glass into the sugar syrup, then dip it into the sugar to coat. Set aside.
3. In a bar shaker, fill ¼ full with ice cubes. Pour in espresso.
4. Add Kahlua and vodka. Apply lid and shake vigorously for 2 minutes or until you can no longer hear the rattle of ice cubes.
5. Pour through a small sieve into prepared glasses.
