The Lamb & The Club Chef

"Porters Neck CC is finding sustained menu success with dishes featuring Australian lamb."

James 'JP' Patterson, Corporate Executive Chef with McConnell Golf and Executive Chef of Porters Neck CC, was featured in the recent edition of Club & Resort Business Magazine. The article, written by Joanna DeChellis, JP discusses a special dish that was offered, in the fall of 2021.

The dish was an Australian lamb shank with a sundried-tomato white-bean ragout, arugula, and crispy caper breadcrumbs.

"Our membership loves anything we make featuring Australian lamb,” says Patterson, adding that some of the other most successful lamb dishes were Australian lamb loins, Australian lamb Bolognese, Australian lamb flatbreads, Australian lamb ravioli and, most recently, a Mediterranean Australian lamb rack with curried couscous.

DIRECTIONS 1. Beat the softened butter and sugar in a large bowl using an electric mixer.

2. Mix in the egg yolk and vanilla extract.

3. Mix in flour, salt and chopped toasted pecans. Mix until well incorporated.

4. Cover with plastic wrap and refrigerate for 30 minutes.

5. Using a cookie scoop, scoop out mounds of the cookie dough into a baking sheet lined with parchment paper.

6. Using your thumb or the back of a teaspoon, press into the center of each cookie.

7. Fill a piping bag with raspberry jam and pipe the jam into the center of each cookie.

8. Bake at 350°F for 30-35 minutes, or until golden brown in color.

For us, this jump will be a direct link to protecting the Arctic and the polar bear population by restoring the loss of sea ice habitat.

Q: My ball lay in a bunker that had a lot of temporary water in it. It would be difficult to play the ball where it lay. What are my options?

A: If there is a nearest point of complete relief in the bunker, use that as the reference point for defining the one club-length relief area, which must be in the bunker. If there is no nearest point of complete relief in the bunker, you may take relief by using the point of maximum available relief in the bunker as the reference point for the one club-length relief area, which must also be in the bunker. A third choice is the back-on-the line option. Imagine a line from the hole through the spot where the ball lay in the bunker. Choose a point on that line behind the bunker to be the reference point for a one club-length relief area. The reference point may be as far back from the bunker as desired. There is 1 penalty stroke for this option.

Players will be expected to share a cart. Four Person Team Scramble. Team is comprised of one player from an A, B, C and D category. All play will be at scratch, no handicaps will be involved. Each player will hit a tee shot, then the team will select the best tee shot and all members of the team will hit from that point. Continue this process until ball is holed out. 3 Tips to Help Your Short Game Now that we have this fantastic short game area, everyone should be out practicing their chips and pitches. Here are a 3 drills that may help you get better.

CHIPPING DRILL 1: MAINTAIN THE “Y” WITH AN ALIGNMENT STICK To get started, take your standard grip on the club together with the alignment rod. A significant portion of the stick should extend past the grip (running parallel to the shaft).

CHIPPING DRILL 2: DROP THE HAND TO GET OVER THE YIPS While the alignment stick drill above is excellent for out on the practice green, we can’t or wouldn’t do it out on the course mid-round. For that, here’s a drill from renowned instructor Butch Harmon that can be done on the spot if you’ve found yourself with a case of the dreaded yips.

CHIPPING DRILL 3: STOP THE CHUNKS WITH A HEADCOVER A second drill from Butch Harmon is designed to help the average golfer with another type of disastrous chip shot – the chunk. A chunk is caused by the clubhead hitting behind the ball, digging into the ground, and making weak contact, if at all.

The most common cause of this is that many amateur golfers, whether they are conscious of it or not, think they need to help the shot into the air, so they chip off their back foot, smacking the club into the ground. Unfortunately, this removes using the bounce of the wedge, which is its “safety net.” In reality, the loft of the club will provide the height on the shot; no help is needed there, so the key is proper contact on the clubface.

To practice this contact, Harmon has a simple drill done with just a headcover. Place the empty headcover about a foot behind the ball and then practice your chipping. If you hit the headcover at all, then you’re likely going to strike the turf before the ball. If you play the ball a bit back, lean left, and don’t touch the headcover, then most likely, you’re going to be striking the ball flush.

Team Dodson consisted of George Dodson, Bob Baker, John Sawyer and Ronald Lake. Team Smith / Soracco consisted of Karol & Robert Soracco and Daniel & Barbara Smith. We look forward to seeing everyone back on the Bocce court for season III starting in April.

Pickleball Beginner Clinic MONDAYS (BIWEEKLY) | 11:00 AM - 12:00 PM Learn the fundamental strokes and strategies of pickle ball through instruction, drills, and practice play! This Clinic is for beginners and will focus on rules, scoring, technique and proper positioning.

Open Play means that all players, of any skill level, are invited to play. Members can register for open pickleball via the club calendar. When attending open pickleball it is recommended that winning teams split up after they play. If waiting to play all players should place their paddles on the paddle holders in order to determine who is next to play. This will allow for a fair order of play and same playing experience for everyone.
