EDITORIAL

Anticipation is growing for HOST 2023: an event that has always been important to us, given the interest it arouses and the relationships it fosters.

In the past, HOST has been the setting for the launch of products that have marked crucial milestones in Sanremo's history: Opera (2013), Café Racer (2015), F18 (2019), YOU and X-One (2021).

Once again, we are introducing a revolutionary new product: not a “simple” product, but a real platform of tools that will have a profound impact on the world of single boilers.

We have named it D8: in reference to the starting position of the black queen on the chessboard. A name that evokes the purpose of this machine: to offer coffee professionals a powerful, versatile and dynamic means to compete.

After HOST 2021, we had set ourselves the goal of developing and presenting at HOST 2023 a solution capable of bringing Sanremo's iconic, exciting and distinctive performance and style to the single boiler segment.

A challenge faced by mapping and reviewing our processes (from design to industrialisation and sales), concentrating the efficiency and sustainability of a modern industrial design to combine performance and innovation with intuitive and user-friendly operation.

This work was possible thanks to an exceptional team of professionals from all sectors and departments of the company. The result, the D8, which manages to bring together in a single platform all the features from the previous range of Sanremo Single Boiler machines updated with the latest technology.

The D8 provides different configurations and can be customised with a wide range of both technical and aesthetic options. Possibilities that make each machine potentially unique and highly responsive to the personal needs of baristas and roasters alike, thanks also to the use of IoT for remote control.

None of this would have been possible without the People of Sanremo. I want to thank everyone who has worked tirelessly on the D8 project and all those who form a part (now or in the past) of the Sanremo project, providing passion and team spirit.

Every man and woman in our team, from the most visible to those working behind the scenes, has contributed to making Sanremo what it is today.

It is thanks to their dedication, even in difficult times and under testing conditions such as the present, that I feel satisfied and positively confident about the future.

D8 is the starting position of the black queen on the chessboard. D8 has been designed to emulate the queen of chess: an extremely powerful and dynamic tool, the best ally for developing a winning strategy in your coffee business.

The Black Queen

The platform offers a variety of combinations that make it adaptable to the needs of a highly diversified target audience, encompassing both functional aspects and investment considerations. Visitors from 155 countries gathered in Rimini for the professional dessert fair

The enthusiasm of Martin Shabaya and the Café Racer were the highlights of the Sanremo booth at the 44th edition of Sigep, the Dolce World Expo.

As every year, the event drew many coffee lovers, dessert professionals and private individuals from all over Italy and 155 other countries to Rimini: an exceptional opportunity to introduce the Sanremo models to the general public and have them tested.

Our team of experts and Martin literally embraced the warm Italian community, who were able to see the YOU and the X-One live at work. Also at the coffee stations available to baristas, coffee roasters and lovers of good coffee are the Cube, F18SB, F18 and the iconic Café Racer.

Sharing our passion for coffee is always exciting, an experience we look forward to enjoying again at future live events.

In the heart of the Amsterdam Coffee Festival, Sanremo was once again able to share its passion with the international specialty coffee community.

Every year, ACF offers the opportunity to network with a whole range of industry players, and the Sanremo booth becomes a platform to give visibility not only to the coffee machines, but also to the roasters that use them. By putting the tools provided by Sanremo to the test, roasters can let the guests at the trade fair taste their blends, prepared to perfection. The booth thus became a meeting point for coffee lovers from all over the world.

This year, Sanremo decided to sponsor the Roast Masters Championship. The Café Racer and X-One were the official machines of the competition between specialty roasters and this allowed the performance of both models to be tested under pressure.

Exciting and highly anticipated, the Specialty Coffee Expo 2023 lived up to the hype: the Portland event was a triumph of novelty, competition and love for coffee.

Sanremo was present with a dual role: Diamond sponsor of the Expo and title sponsor of the “Roaster Village”.

One of the most exciting aspects was precisely the sponsorship of the Roaster Village. It is here that the desire to experiment can be felt at its most intense and new trends in the world of coffee can be discovered at their inception. Thanks to this event, Sanremo had the opportunity to network with micro-roasters and small importers of green coffee, who often do not have high-profiles but are key players in the sector.

At the official Sanremo booth, the undisputed star was the single-group multiboiler YOU, which has just been launched on the US market. With its cutting-edge features and compact, striking design, YOU has captured the attention of enthusiasts and industry insiders alike. The highlight was the Latte Art Throwdown. The prize at stake, the new YOU. The competition was astounding, both in terms of the creativity and expertise of the participating baristas, and also due to the support they showed each other. Once again, Sanremo was proud to stand by those who seek the highest quality in the preparation of the world's best-loved drink.

WE PUT YOU TO THE TEST

During the Specialty Coffee Expo, the YOU was tested, examined, stressed and operated to its full potential. Two days of intense work, under the scrutiny of demanding, creative and very sharp-minded professionals. Here is their feedback

TOWER 15 COFFEE PACIFIC PALISADES (CALIFORNIA)

It was Jacob who had fun with the YOU for Tower 15 Coffee: “After studying it for 20 to 30 minutes, I could see it was a great machine to use. I understood how to best extract our singleorigin coffee in just 20 minutes. I love the fact that the pre-infusion settings are really customisable and that it allows you to save custom profiles on the menu so that you can quickly go back and use them again and again, as many times as you want”.

MOOD CUP JERSEY CITY (NEW JERSEY)

Evan from Mood Cup focused on how to enhance a particular espresso blend: a coffee fermented with peach pulp. “I wanted to enhance the fruity notes of our coffee”, he explained, “and I experimented with different time and pressure values for pre-infusion. I learnt how to work with the manual settings of the YOU and was able to bring out the fruity flavour of the peach”. “I would like to test this machine again”, Evan added, “to better understand how to manage the temperature and how to save my profiles... in just 2 days my experience with the YOU has been great!”.

SORELLINA COFFEE EDMONTON (ALBERTA, CANADA)

“I would love to have a YOU at home so I could play around with it”, was the enthusiastic reaction of Sarah, a barista at Sorellina Coffee. “This machine has so much interesting potential and I feel I have only begun to explore it. In particular, I would like to find out more about the pressure setting options and the effects this has on extraction. The steam is perfect and the interface layout is very intuitive. Truly a remarkable machine”.

PORTLAND APRIL 21-23, 2023

PALACE COFFEE COMPANY AMARILLO (TEXAS)

At the Palace Coffee Company booth, the YOU was put to the test by a team of 11 people. “We were definitely impressed by this model”, said Robert, Palace's director of coffee. “The design is attractive and the performance is really consistent in terms of both temperature and pressure. Also, the manual control paddle is really easy to use”.

“Personally”, added Robert, “I really appreciated the steam wand: perfect for frothing milk easily and quickly. The boiler also heats up quickly. I am really impressed in general by all the features of the YOU”.

SANREMO FAMILY AT WORLD OF COFFEE

With a packed programme of activities, the World of Coffee 2023 in Athens was a concentration of enthusiasm and innovation. For the occasion, Sanremo brought in coffee expert Hugh Kelly, who held workshops and practical demonstrations exclusively for visitors to the booth

Hugh's experience and passion fascinated and inspired the participants and also the Sanremo team itself. As always, sharing and direct contact are strong incentives to improve and overcome both large and small obstacles. Other guests of honour at the Sanremo booth were the roasters, invited to experience firsthand the performance of the iconic Café Racer (customised for the occasion with a total blue livery) and the versatile YOU (in the Special Edition Copper Gold).

It was an opportunity for everyone to appreciate the potential of the Sanremo machines, tasting the fine coffees of the roasters who were willing to put themselves to the test with us. See you at the next WOC.

4 – 6 May 2023

Last May, the Kenya National Barista Championship was held in Nairobi. A true celebration of Kenya's vibrant coffee culture. Sanremo was present as Platinum sponsor of the event. Our team was impressed by the talent, creativity and passion shown by the competing baristas.

Many were surprised by its precision and performance, which helped them extract the flavours they wanted from each coffee bean, exceeding even their own expectations.

“Watching the Café Racer in action”, Martin Shabaya, Sanremo brand ambassador, tells us, “the baristas felt inspired to push their limits, to experiment with different techniques and to perfect their skills. Both the more experienced and the newcomers felt their passion and desire to engage in their work reinvigorated”.

Beyond the competition, the Kenya National Barista Championship 2023 had a strong impact on the local community of baristas, roasters and coffee enthusiasts. He emphasised the importance of providing professionals around the world with the best tools to unleash their full potential.

For Sanremo, it was an incredible opportunity to spark conversations and discuss the pursuit of excellence and the role of collaboration in creating unforgettable coffee experiences.

COFFEE NURTURES COMMUNITY

From 26 to 28 July, the city of Durban was the venue for an event that brought together coffee enthusiasts, experts and industry players from across Africa and beyond: Creative Coffee Week 2023.

Among the highlights of the show was the official launch of the X-One grinder, presented by Martin Shabaya and Andrea Zamprogno with a demo that closed the opening day. Sanremo's latest innovation was enthusiastically received, and met with a public that was extremely interested in the latest technological innovations

Despite the challenges, the South African coffee scene is vibrant, up-to-date and aware of global trends: from the role of women in the industry to the use of artificial intelligence in roasting.

Between tastings, competitions and debates, CCW 2023 was an exciting time of coming together and taking stock for the South African coffee community, but that was not all! Bringing together coffee specialists and connoisseurs from all over the world with local producers and professionals, the event placed a strong emphasis on networking and comparison between different generations and nations

“Creative Coffee Week was an extraordinary experience that allowed us to bring together a wealth of knowledge and excellent coffees”, Martin Shabaya enthusiastically commented. “The event highlighted the importance of collaboration between the different players in the sector and the innovative power that links between people have.”

DISCOVERING SOUTH AFRICA'S GROWING COFFEE SCENE

A 3-stage Roadshow to introduce the YOU and the X-One to the South African coffee community

Cape Town, Johannesburg and Durban became three special places for Sanremo. These are the three stages of the Sanremo Roadshow in South Africa, which last July gave Martin Shabaya and Andrea Zamprogno the opportunity to meet and engage with the local coffee community. A triple encounter that will long be remembered by the Sanremo Team for the warmth and enthusiasm with which it was received.

The Roadshow, organised by Sanremo South Africa, was structured over seven days of travelling masterclasses, dedicated to technology and the quest for excellence in the cup, and concluded with participation in Creative Coffee Week.

Between creativity and technology, Martin Shabaya and Andrea Zamprogno have impassioned and inspired

With his experience and humour, Andrea Zamprogno, technical project manager for Sanremo, took the Roadshow participants on a proper immersion into coffee technology, delving into the features of the YOU and the X-One in particular. Andrea's passion was contagious and his ability to clarify even the most refined functionalities of the new Sanremo models left a lasting impression on all those who attended the tour's technical sessions.

Martin Shabaya delighted the audience with his artistry and his tireless search for the perfect cup. The Sanremo brand ambassador showed that the journey to perfection starts with the bean and culminates at the moment of extraction, thanks to the right tools. South African coffee specialists were fascinated by Martin's dedication and found renewed enthusiasm for the intricacies of coffee making.

Courses, workshops, social gatherings: Sanremo HUB aims to become the new “place to be” for the British coffee community

Amidst the buzz of London, a new “place to be” for the British coffee community has emerged. Sanremo HUB has opened in South Kensington. A point of contact and reference for coffee professionals and enthusiasts alike.

Designed to be much more than a showroom, it will host courses, workshops, presentations, events and above all conversations and exchanges of opinion around a cup of coffee.

To celebrate its opening, in June the Londonbased Sanremo team hosted “Chasing the perfect Cup”, a series of workshops led by Sasa Sestic, Hugh Kelly and Professor Chahan Yeretzan.

The main focus during “Chasing the Perfect Cup” was the latest findings on the importance of volatile aroma compounds in coffee and how important it is to preserve them, during both grinding and extraction, in order to achieve the perfect cup.

Former World Barista Champion Sasa Sestic explained how coffee preparation at high temperatures causes a loss of volatile aroma compounds. Losses that result in less flavour, complexity and aroma in the cup.

One method to avoid this is “Extract chilling” Sasa Sestic and Hugh Kelly have jointly developed a series of technologies dedicated to precisely this “chilling” technique: the Paragon line of products.

It was then 3-time Australian barista champion Hugh Kelly who revealed the effects of extract chilling on espresso.

In an engaging workshop, Hugh showed how this extraction technique enhances the flavour of the beans and how it can transform the fullness and body of the drink.

The session given by Professor Chahan Yeretzian, Professor of Chemistry and leader of the Coffee Excellence Centre at the University

of Zurich, was no less engaging. Professor Yeretzian focused on the moment of grinding. It was a real revelation to see, with data and graphs in hand, how fast the loss of aromaticity occurs the instant the grain is ground.

Together with the professor, the audience then explored the technology contained in the X-One. An insight that left visitors amazed at the scientific rationale and technical commitment that went into the development of this innovative coffee grinder.

If there is one thing that became clear from this event, it is how much more we can discover, learn and experiment to achieve perfection in coffee. A journey that never ceases to fascinate.

We have been waiting a long time for an ally like the X-One!

Factors such as grinding speed and quality, quietness, integrated weighing scales, simple and error-free operation make the difference.

It was Germany that hosted the X-One's first European tour. Three different stages to unveil to dealers and customers all (or almost all) of the secrets hidden behind the livery of the innovative Sanremo coffee grinder.

The technical features and thoroughly investigated construction details intrigued the participants, but it is in the practical test where X-One wins everyone over.

We know that problems occur under stress, which is why we used the X-One in all our activities for 10 weeks.

Preparing perfect single and double espressos at the same time is difficult, because Single Shot and Double Shot require different doses and grinds. The Sanremo Australia team, led by Timothy Sweet, travelled across the continent to meet the local specialty coffee community

The desire to share know-how and passions with the specialty coffee community literally set Sanremo Australia in motion.

Over the past few months, the team, led by expert Timothy Sweet, has been on a training road trip to major cities on the continent: from Brisbane to Perth, via Sydney, Melbourne and Adelaide.

At each stage, Sanremo experts and technicians conducted interactive master classes dedicated to extraction techniques. Not just lectures, but engaging workshops that encouraged participants to share doubts and ideas and put themselves to the test by trying out the Café Racer, YOU and X-One.

In this interview, Javier tells us how he approached the drink we all love, how he is facing the challenge of developing the Sanremo brand in the Iberian Peninsula and how the YOU has revolutionised his espresso experience.

How do you like your coffee?

I drink coffee in good company whenever I can. I love espresso! It is a passion I also share with my daughter Mar (along with my passion for the sea and travelling). Since we launched the YOU model, a universe of tasting possibilities has opened up to me that previously seemed impossible to obtain at home. I use any technique that allows proper coffee preparation.

How did you get into the coffee business professionally?

My relationship with the coffee sector started when I was managing outlets in the catering industry. Contacts with different operators and the desire to learn more about coffee led me to manage a well-known coffee franchise brand. This led spontaneously to an evolution towards coffee machines.

What are you most proud of in your career?

I don't know how to define a specific moment or event... I suppose it is the overall path that led me to gain the confidence of Sanremo to develop the market in Spain and Portugal.

What would you like a Sanremo coffee machine user to experience?

What is the biggest challenge you have faced working for Sanremo?

Starting from scratch and giving continuity to the structure of technicians, service management and spare parts supply for the Iberian peninsula with the aim of giving the Sanremo brand the recognition it deserves.

What makes Sanremo unique in your opinion?

Today, there is no company in the industry with comparable vision, inspiration and innovation The Sanremo family is a benchmark and a mirror in which many are reflected.

What would you never compromise on?

I would never stop striving to make my small contribution to help achieve the best result in the cup and leave our customers satisfied.

Who is Elisa?

Tell us about yourself

I have two great passions, travelling and hiking. I owe both of them to my parents, who ever since childhood have had me roaming through villages and mountains.

So my curiosity, desire for firsthand experience and the constant challenging of my limits have become the hallmarks of my personality.

I really wanted my professional life to also fulfil these passions: so here I am working at Sanremo. Another particular characteristic which I identify with is that I always try to get the most out of every situation, I am quite ambitious even if I prefer to work “behind the scenes”.

How did your journey into the world of coffee begin?

Coincidentally, it all started in 2016 when I joined Sanremo, before that I had had some experience in administration.

At Sanremo I found a very welcoming environment and immediately established special bonds with my colleagues.

What challenges have you faced during your career at Sanremo?

Many, but certainly the biggest one was the change of role that led me to become the marketing contact person in a highly specialised context with no specific training. It was a challenge that required a lot of application, but with study and a lot of support from my colleagues, I was able to achieve my first goal: to become the link between the company, the distributors and the marketing team. I owe special thanks to this extraordinary group, including Carlo B. Carlo S., Niamh, Tecla, David, Cristina, Manuel, Tommaso and Laura. We are all working hard to increase the perception and recognisability of the Sanremo brand in the market.

It cannot have been easy to reach your current position, can you tell me more?

What made it all possible was basically the support of the CEO Carlo de Sordi who always believed in me, making sure I never lacked support and trust, giving me the means, opportunities and time for this professional development. Also, as I already mentioned, the support of my colleagues and the entire marketing team. In particular, working closely with Carlo de Sordi gave me the enthusiasm and drive needed to complete projects. It was by adopting this mentality that I gradually revolutionised my way of working.

Participating in international trade fairs also allowed me to get to know people from different backgrounds and cultures. It was crucial to get in touch with and be inspired by fascinating people, views and trends from all over the world.

What challenges do you think are waiting for you?

Fly high

The challenges I face are all demanding, but when you work with passion they become enjoyable. In particular, what I prefer and gives me most satisfaction is to deal with the communication of a product from its inception. From the market survey to understand what can help customers in their business to the sales strategy.

Does your professional path continue to bring you satisfaction?

Yes, a lot. I owe special thanks. First, from the bottom of my heart, to Carlo de Sordi for giving me this role, I will do my best to live up to it.

In my role, it is crucial to meet people, intercept inspirations, and trends from all over the world

Thank you also to Danilo who continues to be my mentor, to Valentina for being the sister I didn't have, to Niamh for being my right-hand man, to Cristina for her guidance and help, and to Sofia for the perseverance with which she spurs me on!

Every day there is a new challenge, and I have decided that each day I will face it head on, certain that it will be an opportunity to learn even more. My main goal at the moment is to continue to grow as a professional and as a person.
