Stuffed Acorn Squash Ingredients

Instructions

1 medium to large acorn squash, washed and patted dry Olive oil cooking spray 8 ounces cremini or button mushrooms, finely chopped ½ medium yellow onion, diced small (about 1 ½ cups) 1 small pink lady apple, cored and diced 3 garlic cloves, minced 1 teaspoon dried sage 1 teaspoon dried thyme 1 teaspoon dried rosemary, crushed ½ – ¾ teaspoon iodized salt ¼ teaspoon black pepper 4 cups of baby spinach ⅓ cup pomegranate seeds ¼ cup toasted, chopped pecans ¼ cup shredded Parmesan cheese + more for sprinkling on top

1. Preheat oven to 375℉ and refer to squash roasting instructions on the back of this page. 2. While the squash is baking, heat a large skillet over medium-high heat. Once hot, spray with cooking spray, then add mushrooms, onions, and apples. Cook for 9-10 minutes. 3. Add the garlic, sage, thyme, rosemary, salt, and pepper to the mixture. Stir and cook for an additional 30 seconds or until the garlic is fragrant. 4. Stir the spinach into the mushroom mixture and reduce the heat to medium. Continue cooking for 2-3 minutes or until the spinach is wilted, stirring occasionally. 5. Remove from the heat and stir in the pomegranates, pecans, and ¼ cup Parmesan cheese. Taste and season with additional salt if needed. 6. Scoop the mixture into the baked squash halves, mounding them as needed to use up all of the filling. Sprinkle each squash halve with a little more Parmesan. 7. Bake the stuffed squash for an additional 8-10 minutes or until the cheese is melted. 8. Remove from the oven and serve.

Prepare

Carefully cut the squash in half, removing the top is optional but may make it easier. Next, use a spoon scoop out the seeds

Roast

Depending on the size of the squash, roast for 30-55 minutes at 375°. The squash is done when; The skin starts to separate. A fork can pierce the thickest part.

Season

Rub oil all over the squash:inside & out. Salt generously. Lay face-down on a baking sheet or cast iron pan lined with parchment paper.
