hances are, even if you are not a diehard sports fan, you have probably witnessed a crowd slam a referee for a call or even blame a loss on them (think of the 2011 Stanley Cup Final in Vancouver). For impassioned sports lovers, it’s easy to get heated and play the blame game, especially when they don’t know the countless hours, dedicated discipline, and steadfast qualities required to be a referee. North Mankato native Andrew Bruggeman knows firsthand the joys and labors of being a professional hockey referee. Beginning as a five-year-old hockey forward with the Mankato Area Hockey Association to refereeing the gold medal game at the 2022 Beijing Olympics, Bruggeman has trotted the globe as a humble, dedicated, and awarded official. Bruggeman began his hockey career as a tot with his twin brother Tyler in Mankato. At 13, Bruggeman began pivoting his energy towards officiating games to get more ice time and earn a little money. “I learned I was pretty decent at it,” Bruggeman laughs. And thank goodness he did. He kept climbing the ranks. He participated in summer development camps with USA Hockey to focus on officiating. After graduating from Mankato West in 2009, he connected with the Advanced Officiating Development Program when he was 19 years old; the same year he hung up his competitive blades and laserfocused his energy on the new challenges of officiating. He began working with various junior hockey leagues until he was 26 when he moved up to officiate junior hockey leagues. Soon after, he was assigned to referee international assignments. In 2019, he traveled to Vancouver to work the World Junior Championships —the game was Canada vs. Russia. As most know or can easily assume, Canadians take their hockey


pretty gosh-darn seriously. Especially when they have home-ice advantage. It was New Year’s Eve, and the largest crowd Bruggeman had ever officiated in front of: 19,000+ fans. “During the warm-up lap, my heart was racing, and I had full body chills, but I settled in quickly and remembered I was there for a reason.” Those reasons are determined by the International Ice Hockey Federation (IIHF) evaluations. The IIHF defines the expectations around the intensive requirements of being an international game official. They expect selected officials to be prepared mentally and physically for demanding schedules and activities while remaining in excellent mental and physical condition. Selected officials are expected to perform at the “highest level.” Besides strenuous practice, training, studying, and physical fitness, Bruggeman always defaults to some of the most challenging things to learn: “You just have to be calm under pressure, confident, but you have to maintain some humility. People just want to be heard, and sometimes you must deal with relationships and strong emotions.” Well, that chill stoicism proved him well. He kept moving forward in officiating, but his next gig in Switzerland in 2021 was canceled due to COVID-19 protocols. Eventually, he went to Latvia, where he officiated a game in a quarantined bubble. From 19,000 fans to none. Bruggeman skated around the unknowns due to the global pandemic and managed to keep on the circuit. He was staying in Germany with a friend and fellow referee when a list of 30 top-evaluated officials was listed. Bruggeman and his friend were among the elite. “From there, it’s all a bit of a whirlwind,” Bruggeman says. In early January of 2022, he was notified that his ultimate dream was a close reality. He was selected to referee for the Winter Olympics in Beijing. But it wasn’t that simple. Because COVID was still wreaking havoc, Bruggeman had to receive testing from a Chinese-approved laboratory (the closest being Golden Valley or Chicago, Illinois). He and his colleagues were walking on eggshells, trying to ensure their health wasn’t compromised before their departure to the Olympics. Bruggeman made the wise yet difficult decision to quarantine for three weeks before his flight to Beijing. After being on skates for multiple days every week for several consecutive years, he had to hunker down and remain idle. “You know how you watch a game and the announcers say the players look rusty? Well, it’s the same for officials. Repetition is needed to stay physically and mentally sharp,” Bruggeman shares. true for Bruggeman, although he insists “it’s a bit more slippery.” After three weeks of isolation and days after the Olympic opening ceremonies, he left the US, Beijing-bound with 15 other top referees and 16 linesmen from across the globe. Though Bruggeman had reached the pinnacle of his career, the experience was unlike anything he had envisioned. Due to anti-COVID protocols, the experience was much different, but the excitement was not. Bruggeman, among the world’s elite, hit the ice as one of the trusted referees to monitor the games. After officiating, he and his cohorts were escorted back to their hotel, where he said they “played a lot of cards and watched a lot of Olympics on TV” because there was not much more they could do. At the Olympics, Bruggeman worked face-to-face with timekeepers, scorekeepers, coaches, and linemen and aided in calling penalties, awarding goals, and he “was typically yelled at more than anyone else,” he recalls. While at the Olympics, Bruggeman received notification that he was selected for the most significant honor of his life (thus far): the Olympic gold medal game. “Everyone wants to work the gold medal game. It’s a recognition of our hard work and elite performance. It’s such an honor to be there.” With his friends, family, and country to represent, Bruggeman hit the ice as one of the top officials in the world officiating the top ice hockey competition: Finland vs. the Russian Olympic Committee—his dedication and hard work apparent with each stride. But Bruggeman is always quick to thank his family and mentors who helped him get to the gold medal game. Bruggeman’s father, Dave, encouraged him to keep climbing the ranks, and his mother, Julie, and twin brother Tyler, always welcome Bruggeman home from his travel-intensive officiating schedule. So, what’s next for Andrew Bruggeman? “I’ve got my sights set on the NCAA Frozen Four,” Bruggeman says. He also looks forward to paying forward all the knowledge and mentorship he has received through the years by connecting with more youth education opportunities to help inspire and encourage young talent. And even though Bruggeman’s golden persistence and talent takes him all over the world, North Kato remains home. “North Kato has the best small community feel. It’s just so welcoming and warm,” Bruggeman says. And coming from a guy who spends 28 days out of each winter month on the ice, he definitely knows the value of warmth. 

STITCHED WITH LOVE Father Honors Son's Legacy by Giving Back BY DARLA MAKELA

When I asked Charlie Thompson what he was doing in retirement, I was surprised when he responded, “I am quilting!”

His most recent and longstanding mission has been to sew quilts and donate them to various charitable organizations or any needs he might hear about.

Surprised in a good way, of course! Especially as this gentle, 80-something-year-old man began to share his passion for giving back with quilts.

Once I heard about this, I knew I needed to sit down and hear more about the details of this life-changing work. Here is what I learned:

If you have been around North Mankato over the past 25 years, you may have seen or heard of some of Charlie’s efforts to give back to his communities to keep his son’s memory living large.

Me: Tell me how you got started sewing quilts.

In 2007, Charlie and his wife, Barb’s son, Army Staff Sgt. Jacob died during active duty in Iraq, doing what he was passionate about and giving his life for the sake of others. Since then, Charlie has made it his life mission to keep his son’s memory of giving back alive in everything he does.

Charlie: 12 years ago, I was doing a lot of woodworking and started having trouble with my arm. I watched my wife, Barb, quilt, and I thought that maybe that was something I could easily pick up. So, I took some of her scraps, grabbed her sewing machine, and made my first table runner. From there on, I was hooked! I began imagining how to use my newfound hobby to bless others. Me: How did your quilting hobby become a charitable activity?


Charlie: I got involved in a quilting group that did charitable work. There were 15 of us, and I made about 200 quilts a year. Once I started, it just became so easy to find individuals to share my gifts with. 1200+ quilts later, I am happy I listened to my heart! Me: Who are some individuals who have received your gifts of love? Charlie: In Florida, I worked with a lady who put on a Warrior Beach Retreat a couple of times a year. Warrior Beach Retreat was a time for wounded warriors and their caregivers to be pampered and catered to for an entire week. I provided 40-50 quilts a year to this cause. Locally, I have donated quilts to The Salvation Army, Churches, Generations Long Term Care, Birchwood Manor, Foster homes, and any other needs that come my way. I am always interested in learning how I can be a blessing by providing the security and love of a quilt. In fact, just this morning at 2 a.m., I was awake making a Twins quilted wall hanger for one of my friends. He is a sports fan, so he can expect a new one for each sports season! Oh, by the way, I do not just do quilts. I enjoy making smaller items such as wall hangings, personalized towels and napkins, and anything else that I see that might bring someone joy. I remember a dear friend who had cancer and was leaving to get treatment. As I was saying goodbye to her, I knew in my heart that I was supposed to give her a wall hanging that I had made with a scripture verse to remind her that she was not alone. Just sharing this brings tears to my eyes as I hated to see her suffer, but I knew that while I could not do much to help, I could give her this gift of comfort. It is times like these that I know I am doing what I am supposed to be doing.

Me: How much do you charge for your quilts? Charlie: I have NEVER charged for one quilt! And I never will. I have been blessed in my lifetime, and I always say that the good Lord is watching me to be sure that I am being generous to others because of the generosity shown to me during my lifetime. With that being said, there have been many times when people have seen a need and donated toward the cause. A few years back, I was gifted with A LOT of fabric that has kept me going strong for a long time. I will never ask for money, but I am always grateful any time someone wants to contribute. Me: When we first met, you shared that when your son passed away, you decided that you would never let him be forgotten. How does your quilt mission help you keep his memory alive? Charlie: Jacob was one of the most giving people! At his funeral, I heard story after story of how he had shown generosity and love to his friends and those in need around him. I know that he would want me to keep on giving in his name and showing others how special they are. Because that is what giving a quilt is all about. It is about making someone feel cared for and that they matter. When I hand a quilt to someone, just seeing the joy in their eyes inspires me to keep going! Me: With no dry eyes in the room, you have inspired me to never stop giving back! Is there any last thing you would like to share? Charlie: Look around you. Find a way to give back that brings you joy. It probably will not be making quilts, and that is ok. Whatever it is you are meant to do, do it! Every day, I look around to see what I can do and who I can bless. You never know who might go home with a quilt today. Just listen to your heart and be a blessing! 

How much: 1 -1.5 ounces per day Why: Monounsaturated fats fight inflammation. One study showed that people who consumed the most nuts over a 15-year period had a 51% lower risk of dying from an inflammatory disease.

Preheat oven to 425 degrees. Lightly spray a large rimmed baking pan with cooking spray.

Pat salmon dry with paper towels. Place salmon in center of pan. Tuck under thin edges of salmon, if necessary. Lightly sprinkle with sea salt and black pepper.

Combine walnuts, mustard, honey, 1 T oil, and 1/2 tsp. thyme in a small bowl. Spread mixture on top of salmon.

Toss broccolini and bell pepper pieces with remaining 1-1/2 T oil. Spread vegetables around salmon in pan.

Bake for 15 to 20 minutes or until salmon reaches 145 degrees and vegetables are crisp-tender. Garnish with additional thyme, if desired.

The flowing golden hair, the workmanlike mustache, the gift of gab, the bawdy laugh: Karl Pagel tends to make an instant and dynamic impression on those he meets. This North Mankato resident is the preeminent cheese and charcuterie man of the Kato area, but he is more serious a character than one who might label his frivolities, fables, foibles, and fervor as simple "Karl-cuterie." Nay. Karl Pagel is a more than that. He is a deadly delightful fellow whose depth of creativity and wit comes through in the range of topics he's more than happy to discuss

with anyone who is, like him, authentically curious about the finer things in life. The topics could be as different as chalk and cheese. Food, music, travel, sports, art, dreams, parenting, lawnmowing.... It doesn't matter. What matters to Karl is passion. Born and raised in New Ulm, Karl grew up as the youngest of four siblings in a dedicated family. Says Karl, "My grandmother taught me the value of delicious, home-cooked food and my parents showed me the value of travelling and trying new things. My father always had a taste for the finer things in life. Karl graduated high school there at the turn of 

the century. It was in New Ulm also where he met Molly, his cosmic match and the woman who would eventually become his wife. When, as teens, they began dating, their respective families headed up competitive automobile dealerships in New Ulm, namely Pagel Ford and Martinka Motors. As such, kinfolk on both sides had reservations about Karl and Molly joining forces. The bond the two formed, however, was tight and lasting. In 2007 they moved to an apartment in lower North Mankato, and in 2010, they bought a house on McKinley Avenue, one they'd walked by many times on neighborhood walks. "As soon as we lived here, it felt like home," says Molly. The birth of their daughter, Amelia, cemented their homespace in LoNo all the more, and the young family began to thrive in fits and starts. Karl first started working for Hy-Vee in 2002 as a night stockman, and this was followed by a long spell in produce. More recently, he was sent by the company to study cheese intimately through the Institut du Fromage. Karl excelled in classes and, with the support of Molly, who had been encouraging him for years to get in touch with his creative side, found a specialty that he could really embrace: cheese and charcuterie. "He just kinda found himself there," says Molly, who learned a thing or two about fostering artistic creativity by studying studio art in college. "He didn't seek it out as a path, necessarily, but that's where he ended up, and it's been a good fit. He's really talented, but he doesn't think he is. Once he started doing charcuterie, he was like, 'I'm not creative— you're creative!' But once he bit into and went for it, he was like, 'Okay, I am creative, and I can do this. I can do my own thing and make this beautiful.'" In addition to giving his wife props, Karl gives credit to a couple of others, namely former Hy-Vee store manager Dan Vondrak, who hired him and promoted him, and Chef Edi Cucurullo, a native Italian who works these days alongside Karl in the Seafood and Meats Department at Hilltop Hy-Vee. With Edi and Karl, it seems to be a case of creativity inspiring creativity. Karl says that Chef Edi's ingenuity, love of his roots, and zest for life are contagious. And Karl shows a solemnity for his work that is admirable. "I am the last line between the farmer and the consumer," says Karl, "so I get to really play an integral part where I'm honoring the product and all the work that goes into making the cheese. Plus," he adds with a smile, "I cut the cheese for a living." 

There are many unique terms regarding style and fashion floating around social media these days. One that you may be hearing more of is “dopamine dressing.” Simply put, dopamine dressing is wearing clothes and accessories that bring you JOY! Easy, right? EXACTLY! Have you ever noticed that your mood instantly improves when you wear a particular color or a unique item in your closet that holds sentimental value? This joyful feeling is much like the rush of the feel-good neurotransmitter dopamine. Who doesn’t want to feel good getting dressed every day? You may have first noticed this trend for yourself in lockdown back in our quarantine days. Did you notice that you felt better when you wore something fun than when you lounged around in casual clothes and drab colors? Even scientists have taken note of how

joyful dressing can improve your mood. A 2012 study published by the University of Hertfordshire Press found a connection between what people wore and their moods. Unsurprisingly, people were happier wearing bright colors and items of personal value. Style is all about personal taste, so everyone’s version of dopamine dressing will be different. Maybe it’s a pop of bright, bold blue. Perhaps it’s using a handbag that looks like one of your favorite books. Or, possibly, it’s injecting fun graphic sweatshirts and tees into your outfit. There is no right or wrong. Just joy! So, grab a color you love next time you are getting dressed. Rock the dress you bought on vacation, where you made beautiful memories. Wear a special necklace. Don’t worry about what people think, and embrace your joy through the simple act of dressing. You may find that it totally changes your day!

Winter Herbal Remedies BY N. M. SMITH

In my early twenties, I attended a small school nestled in the redwoods of Northern California to study plant medicine. On the first day of class, my teacher and internationally renowned medical herbalist, David Hoffmann, began: "If you have a serious medical emergency, please go to a medical professional." Herbal medicine and its effects are quite effective but should not be considered a substitute for modern medicine's progress. In the last twenty years, the benefits of plant medicine have become increasingly recognized for their health benefits. Most herbalists have a core list of herbs they recommend. Since we are preparing for yet another long winter in Minnesota, I'd like to share what plants I grow and harvest each year to use as tonics and simple potions to get me through the cold season. Elecampane: Elecampane (Inula helenium) is part of the Asteraceae family and has a long history of being used for respiratory support. The root is the part of the plant that is medicinal, and if you choose to grow it yourself, it takes about three years before the plant is mature enough to harvest. Elecampane is an expectorant that loosens phlegm, which in turn helps you to cough it up with greater ease, especially at

the tail end of a long-lasting cold. I take approximately two dropper fulls of tincture, straight or in some tea. Horehound: If Elecampane doesn't work for you, try Horehound (Marrubium vulgare). Horehound has excellent expectorant abilities. It also supports dilation or the opening of blood vessels. Aside from Horehound's benefits in the lungs, I also like to use it as a bitter to aid digestion or stimulate appetite before or after meals. The leaves and flowering tops are used, so there is no need to dig the entire plant up. Nettle: Stinging Nettle (Urtica dioica) is full of vitamins and minerals. It contains vitamins A, C, and K and several B vitamins. Nettle is an all-around great herb as a daily tonic to promote overall well-being. To avoid getting stung (as its name suggests), grab some at your local co-op as a tincture or tea. Licorice: Licorice (Glycyrrhiza glabra) is often found in remedies targeting sore throats because many of its constituents have anti-inflammatory properties. Adding some propolis and honey to some licorice tea may help soothe the early onset symptoms of a cold. Always consult your healthcare professional before using herbal medicine.

Heat olive oil in a large Dutch oven or heavy-bottom skillet over medium heat. Add onion, celery, carrots, garlic, thyme, and salt to Dutch oven, Saute 5 minutes, or until onions have softened. Add in flour, stirring to evenly incorporate. Stir in chicken broth and bring mixture to a simmer, stirring occasionally until slightly thickened. Stir in milk, and bring back to a simmer. Add gnocchi to soup; simmer 3 minutes or until gnocchi is cooked through. Add shredded chicken and spinach to soup. Heat through. Serve immediately garnished with black pepper and thyme sprigs, if desired.

Heat oil in an 8-quart Instant Pot or pressure cooker on SAUTÉ setting. When HOT displays, add carrots and celery, onions, Italian seasoning, garlic, salt and pepper. Cook, uncovered for 3 to 4 minutes or until onions are softened, stirring frequently. Turn off Instant Pot. Transfer vegetable mixture to a small bowl; set aside. Add water, vegetable stock, dried beans soup mix and tomato paste to Instant Pot. Lock lid in place and set valve to SEALING position. Cook on HIGH PRESSURE for 30 minutes. Allow pressure to release naturally for 20 minutes. Place towel over release valve; move to VENTING

HOLIDAY FIRE SAFETY BY ASHLEY HANLEY

As the temperatures cool down, things in the kitchen start to heat up. Whether it be the cozy comfort of the fireplace, the lighting of our favorite scented candles, or the smell of homemade bread or cookies, the winter weather poses an increased risk of fires in our homes, especially when it comes to cooking.


Some tips the Chief suggests you follow, especially with so many of us being so reliant on technology as a part of our daily lives, include: While many of the tips to prevent these fires may seem elementary and hopefully common sense to many, the North Mankato Fire Department encourages all residents to embrace the mantra of “Cooking safety starts with YOU.”

1. Always follow the manufacturer’s instructions.

“A cooking fire can grow quickly,” said North Mankato Fire Chief James Zwaschka. “We have seen many residences damaged by fires that could easily have been prevented. Last year in Minnesota, the leading cause of structure fires was cooking and caused nearly $6 million in damage.” Zwaschka reported these numbers in the latest North Mankato Newsletter.

4. Only use the charging cord that came with the device.

The North Mankato Fire Department offers these safety tips to help reduce the risk of a cooking fire: 1. Watch what you heat. Always keep a close eye on what you are cooking. Set a timer to remind you that you are cooking. 2. Turn pot handles toward the back of the stove. Always keep a lid nearby when cooking. If a small grease fire starts, slide the lid over the pan and turn off the burner. 3. Have a kid and pet-free zone of at least three feet around the stove or grill and anywhere else hot food or drink is prepared or carried. According to the National Fire Prevention Association, cooking is the leading cause of home fires in the United States. Unattended cooking is the leading cause of cooking fires and deaths. Year after year, cooking remains the leading cause of home fire by far, accounting for nearly half (49 percent) of all U.S. home fires. Chief Zwaschka also said that an additional area that is getting a lot of attention as of late is the issue of Lithium battery fires. This is something to be particularly aware of around the holidays and gift-giving time when new gifts may present new opportunities for the use of batteries. “The increased possibility of incidents with rechargeable items is due to many popular items being powered from these batteries, including smartphones, laptops, e-scooters and e-bikes, e-cigarettes, smoke alarms, toys, and even cars. If not used correctly, or if damaged, these batteries can catch on fire or explode.”

2. Only use the battery that is designed for the device. 3. Put batteries in the device right away.

5. Do not charge a device under your pillow, on your bed, or on a couch. 6. Do not keep charging the device or device battery after it is fully charged. 7. Keep batteries at room temperature when possible. Do not charge them at temperatures below 32 degrees or above 105. 8. Store batteries away from anything that can catch fire.

Even with the hustle and bustle of the holiday season, Chief Zwaschka also reminds residents that one of the most basic fire protection devices during any season is the smoke detector. “That is something you never want to neglect,” he said. “New smoke detectors are available as 10-year life units that only need testing monthly. Homes that have installed hardwired detectors have a backup battery system that needs to be changed regularly- at a minimum, once a year. Detectors that are reaching the 10-year mark give an end-of-life signal, usually a chirp every 30 seconds. If you hear a chirping, check the back for dates and replace the detector.” One final note the Chief wanted people to know is that if you ever have any fire safety-related questions or suggestions, or anything you’d like to see done in the community, you can reach out by calling 507-625-5378 and leaving a message for him at Fire Station #2. If it is an emergency, dial 911 and the department will respond as quickly as possible. The holiday season is, without a doubt, a funfilled time to gather with family and friends, but by following these few safety reminders, we can all be sure that everyone gets home safely for the holidays as well.
